Velvet antler (VA) is a historically traditional medicinal supplement and is well known in Asian countries for its pharmaceutical and health benefits. The objectives for this study were to optimize the hot water extraction (HWE) of VA for the Korean VA industry, and to determine the most effective pretreatment method among microwave (MW), ultrasonication (US), and enzymatic (EZ) techniques. Using response surface methodology, optimum extraction temperatures and times were determined by central composite design configuration based on extraction yield and sialic acid content. Various quality parameters of VA extract including yield, soluble solid, protein, and sialic acid contents were also compared with the conjunction of HWE and pretreatment. The yield and sialic acid content of VA extract were determined to be 40% and 0.73 mg/g, respectively, under an optimum temperature of 100℃ at 24 h of extraction time. The yields from VA extracts pretreated with MW, US, and EZ were 17.42%, 19.73%, and 29.15%, respectively. Among the tested commercial enzymes, pepsin was the most effective proteolytic enzyme and led to the highest yield (47.65%), soluble solids (4.03 °brix), protein (1.12 mg/ml), and sialic acid (3.04 mg/ml) contents from VA extract.
The physicochemical and sensory properties of Campbell Early and Gerbong juices prepared by various pressing methods were studied. The yields of these juices by mixed method were 83.5% and 87.5%, the highest value of various pressing methods. And soluble solids and amino nitrogens of them decreased as heating temperature increased and was lowest when mixed method was performed. Titratable acidities of Campbell Early juice was 0.86∼1.00%, higher than that of Gerbong juice, 0.60~o.69%. Also the strength of astringent taste and sour taste of Campbell Early and Gerbong juice increased as heating temperature increased, and increased strength of these tastes gave good sensory evaluation to grape juices.
Twenty lactating crossbred cows yielding 10 to 15 litres of milk daily during mid lactation were selected and divided into four groups of five animals to assess the effect of feeding calcium soaps of palm oil fatty acids (bypass fat) on milk yield, milk composition and nutrient utilization in lactating crossbred cows. The animals in groups 1 (control), 2, 3 and 4 were fed concentrate mixture containing 0 (no bypass fat), 2, 4 and 6% bypass fat, respectively. The average daily dry matter consumption in the various groups ranged from 13.1 to 13.6 kg and showed no significant difference among treatment groups. There was no significant difference among different groups in digestibility of DM, OM, CP and CF, however, ether extract digestibility in cows of groups 2 and 4 was significantly (p<0.05) higher than the control group. The average milk yields of the cows in group 3 (4% bypass fat) showed a significantly (p<0.05) higher value than cows of groups 1 and 2. Similarly, a significant (p<0.05) increase in fat yield, 4% FCM yield and SNF yield was observed for the cows in group 3 (4% bypass fat). The milk composition in terms of total solids, fat, lactose, protein, solids-not-fat and ash percentage showed a varying response and bypass fat feeding did not have any effect on milk composition of cows in different groups. The gross and net energetic efficiency of milk production ranged from 23.6 to 27.5% and 37.1 to 44.4%, respectively, and showed no significant difference among different treatment groups. The gross and net efficiency of nitrogen utilization for milk production ranged from 24.0 to 28.7% and 37.2 to 43.5%, respectively, and no significant difference was noted among different treatment groups. The supplementation with calcium salts of palm oil fatty acid reduced the proportion of caproic, caprylic and capric acids and significantly (p<0.01) increased the concentration of palmitic, oleic, stearic, linoleic and linolenic acids in milk fat with increase in level of bypass fat supplementation. It was concluded that incorporation of calcium salts of palm oil fatty acids at a 4% level in the concentrate mixture of lactating crossbred cows improved the milk production and milk quality in terms of polyunsaturated fatty acids without affecting the digestibility of nutrients.
Sixteen multiparous Holstein-Friesian crossbred cows in mid-lactation were blocked according to days in milk (DIM) and previous lactation and randomly assigned according to a Randomized Complete Block (RCB) design with four replications to receive four dietary treatments. The dietary treatments consisted of T1: No cassava hay (CH) or stylo 184 hay (SH) supplementation, supplementation of concentrate to milk yield at 1:2 (control), T2: Supplementation of 1 kg of CH/hd/d, supplementation of concentrate to milk yield at 1:2, T3: Supplementation of 1 kg of CH+SH/hd/d, supplementation of concentrate to milk yield at 1:2, T4: Supplementation of 2 kg of CH+SH/hd/d, supplementation of concentrate to milk yield at 1:3. All animals received Ruzi grass from a cut-and-carry system as roughage source. The feeding trial lasted for 9 weeks. The results revealed that DMI of concentrate of supplemented treatments were significantly lower (p<0.05) than those in the control, but there was no significant difference between T2 and T3. There was no significant difference in forage DM intake between the control and supplemented treatments. CP and NDF digestibility of supplemented treatments were significantly (p<0.05) greater than the control and there were no significant differences among supplemented treatments. Milk yield and 3.5% FCM (14.3, 14.5, 14.7 and 14.8; 13.9, 14.3, 14.3 and 14.6 kg/hd/d, respectively) were not significantly different among treatments. Milk protein percentage of supplemented treatments was significantly (p<0.05) higher than the control, but there were no significant differences among supplemented treatments. There was no significant difference in milk fat percentage between the control and supplemented treatments. However, milk fat percentage tended to be higher for supplemented animals as compared to the control group. There were also no significant differences in lactose, solids-not-fat and total solids percentages among treatments. Cows in supplemented treatments gave incomes over supplement cost (IOSC) of 2.72, 2.74 and 2.93 US$/hd/d, respectively which were greater than for cows on control treatment. Furthermore, IOSC were greatest for cows in T4 as compared to other treatments. Based on this study it was concluded that, feeding cassava hay solely or in combination with stylo 184 hay as a supplemental protein source could be a potential valuable strategy in small-holder dairy farming systems in the tropics. This strategic supplementation significantly reduced concentrate use, which resulted in improved milk yields and milk quality for the supplemented cows. Moreover, it resulted in higher economical returns through increased productivity and lower ratios of concentrate to milk yield, from 1:2 to 1:3.
We investigated the effect of the cell-wall-degrading enzyme and its skin contact time on the brewing characteristics of Cheongsoo grape. The easy of juice extraction was excellent at the cell-wall-degrading enzyme and skin contact treatments, and the aroma was best after five days of skin contact treatment. Furthermore, the juice yields of the Chengsoo grape were more dramatically increased by the cell-wall-degrading enzyme and skin contact treatments than by the control. The data on the pH, total acidity, and soluble solids did not significantly differ among the treatments, and the pH range from 3.1 to 3.4; the total acidity from 0.5% to 0.6% (as tartaric acid); and the soluble solids, from 6.7 to 7.1 $^{\circ}Brix$. The alcohol content of cell-wall-degrading enzyme treatment was highest with 13.3%. The total polyphenol was gradually increased with the longer skin contact time, and was highest after 10 days of skin contact treatment, at 306.4 mg/L. The main organic acids detected in the Cheongsoo wine were malic and tartaric acid, and citric, succinic and lactic acid were also detected. Our results show that the cell-wall-degrading enzyme and skin contact treatments were better in terms of the easy of juice extraction and significantly increased the juice yield and the volatile compound of the Cheongsoo wine.
Fourteen varieties of soybeans grown in Korea were investigated for their chemical composition, yields and organoleptic properties of soybean curd. The soybean curd was prepared by soaking, grinding and heating of soybeans followed by filtration, coagulation with $CaSO_4$ and pressing. The proximate analysis showed that soybean curd had the moisture content of $75.0{\sim}82.0%\;and\;48.6{\sim}56.1%\;protein,\;14.8{\sim}40.4%\;lipids\;and\;6.4{\sim}26.8%$ carbohydrate by dry weight basis. The yield of volume total solids and protein from 100g of soybeans were $182.2{\sim}227.5cm^3,\;42.65{\sim}55.60%\;and\; 57.90{\sim}76.50%$, respectively. Among the 14 varieties, the highest volume yield was obtained from Suwon-141 which has the highest contents of moisture, carbohydrate and the lowest in lipids of soybean curd. The curd prepared with Baegun and Jangyeob contained relatively low values in moisture, protein and carbohydrate and yielded the lowest in volume yield. Therefor moisture, protein and carbohydrate contents in soybean curd affected greatly on volume yield. The organoleptic properties of odor and taste couldn't find any significant relationship with chemical composition of soybean curd eventhough there were some difference in their intensities among varieties.
The hypochlorite ion ($OCl^-$) is a widely used disinfecting agent in pig rearing in Korea, but its residual effect on $CH_4$ production from pig slurry is unclear. The objective of this study was to investigate the inhibition effects of residual $OCl^-$ on $CH_4$ production during the initial anaerobic digestion stage of pig slurry. Three organic concentrations (9.9, 26.2 and 43.7 g/L) of volatile solids (VS) were tested with the addition of 52.3 mg/L $OCl^-$, ten times of the typical concentration used in Korea, or without $OCl^-$ (Control) in anaerobic batch culture. The culture was run under mesophilic ($38^{\circ}C$) conditions for 20 d. At the lowest organic concentration with $OCl^-$, the VS degradation was 10.3% lower (p<0.05) than Control, while at the higher organic concentration with $OCl^-$, it did not differ from Control. $CH_4$ yields were higher in the control treatments than their $OCl^-$ counterpart cultures, and $CH_4$ yields of Control and $OCl^-$ treatments at the organic concentrations of 9.9, 26.2 and 43.7 g/L differed in the probability level (p) of 0.31, 0.04, and 0.06, respectively. Additionally, $CH_4$ concentration increased steeply and reached 70.0% within 4 d in the absence $OCl^-$, but a gradual increase up to 60.0% was observed in 6 d in the $OCl^-$ treated cultures. The $R_m$ (the maximum specific $CH_4$ production rate) and ${\lambda}$ (lag phase time) of 9.9 g/L with $OCl^-$ were 8.1 ml/d and 25.6 d, while the $R_m$ was increased to 15.1 ml/d, and ${\lambda}$ was reduced to 11.4 d in PS-III (higher organic concentration) with $OCl^-$. The results suggest that a prolonged fermentation time was necessary for the methanogens to overcome the initial $OCl^-$ inhibitory effect, and an anaerobic reactor operated with high organic loadings was more advantageous to mitigate the inhibitory effect of residual hypochlorite ion.

Ultrafiltration membranes have several advantages over conventional drinking-water treatment. However, this technology presents major limitations, such as irreversible fouling and low removal of natural organic matter. Fouling depends heavily on the raw-water quality as well as on the operating conditions of the process, including flux, permeate recovery, pre-treatment, chemical cleaning, and backwashing. Starting with the premise that the optimisation of operating variables can improve membrane performance, different experiments were conducted in a pilot plant located in Granada (Spain). Several combinations of permeate and backwashing flow rates, backwashing frequencies, and aeration flow rates were tested for low-quality water coming from Genil River with the following results: the effluent quality did not depend on the combination of operating conditions chosen; and the membrane was effective for the removal of microorganisms, turbidity and suspended solids but the yields for the removal of dissolved organic carbon were extremely low. In addition, the threshold transmembrane pressure (-0.7 bar) was reached within a few hours and it was difficult to recover due to the low efficiency of the chemical cleanings. Moreover, greater transmembrane pressure due to fouling also increased the energy consumption, and it was not possible to lower it without compromising the permeate recovery. Finally, the intensification of aeration contributed positively to lengthening the operation times but again raised energy consumption. In light of these findings, the feasibility of ultrafiltration as a single treatment is questioned for low-quality influents.

Objective: The aim of this study was to estimate genetic parameters for 305-day cumulative milk yield and components, growth, and reproductive traits in Guzerá cattle. Methods: The evaluated traits were 305-day first-lactation cumulative yields (kg) of milk (MY305), fat (FY305), protein (PY305), lactose (LY305), and total solids (SY305); age at first calving (AFC) in days; adjusted scrotal perimeter (cm) at the ages of 365 (SP365) and 450 (SP450) days; and adjusted body weight (kg) at the ages of 210 (W210), 365 (W365), and 450 (W450) days. The (co)variance components were estimated using the restricted maximum likelihood method for single-trait, bi-trait and tri-trait analyses. Contemporary groups and additive genetic effects were included in the general mixed model. Maternal genetic and permanent environmental effects were also included for W210. Results: The direct heritability estimates ranged from 0.16 (W210) to 0.32 (MY305). The maternal heritability estimate for W210 was 0.03. Genetic correlation estimates among milk production traits and growth traits ranged from 0.92 to 0.99 and from 0.92 to 0.99, respectively. For milk production and growth traits, the genetic correlations ranged from 0.33 to 0.56. The genetic correlations among AFC and all other traits were negative (-0.43 to -0.27). Scrotal perimeter traits and body weights showed genetic correlations ranging from 0.41 to 0.46, and scrotal perimeter and milk production traits showed genetic correlations ranging from 0.11 to 0.30. The phenotypic correlations were similar in direction (same sign) and lower than the corresponding genetic correlations. Conclusion: These results suggest the viability and potential of joint selection for dairy and beef traits in Guzerá cattle, taking into account reproductive traits.

The objective of this study was the development of the preparation method of fermented turnip juice. The yields and soluble solids of fermented turnip juice were 41.2, 52.8, 56.4 and 57.4%, and 34.3, 42.4, 48.6 and 54.7 $^{\circ}Brix$ with 40, 60, 80 and 100% addition rate of turnip quantity, respectively. The major organic acids in turnip juice were succinic acid, isobutyric acid and fumaric acid, and these organic acids were decreased after fermentation. On the other hand, lactic acid, formic acid, acetic acid, propionic acid and butyric acid were produced during the fermentation. Soluble solid and pH value in fermented turnip decreased by time-dependently. Free radical scavenging activity was increased by fermentation of turnips and nitrate scavenging effects were the highest in pH 3 and increased with adding Omija or Japanese apricot. The best preparation method of fermented turnip juice was fermentation at $24^{\circ}C$ 12-15 days after adding 40% of sucrose to total quantity. As adding Omija, organic acid contents were increased and sensory evaluation was improved in fermented turnip juice.
