Measurement and Evaluation of Optimum Salt Concentration in Usual Dishes for the Menu Suggestion (적염 섭취 식단 모델을 제시하기 위한 상용 음식의 최적 염미도 측정 및 적염 식단 모델)

  • This study was to seek menu model in usual dishes to guarantee the optimum salt intake considering the optimum gustation of salt surveyed on Korean adults. First, a pilot test was practiced using rice gruel to determine the criteria and a meaningful interval of salt concentration. Based on the criteria and interval so determined, a test was performed to seek the optimum gustation of salt concentration in usual diets. Subjectgroup for the above tests was university students living in Kyung-Book area. The results were as follows: 1. Mode value of the optimum gustation of salt was 0.5% and the received threshold difference of salt was 0.2% in the pilot test. 2. Mode values of the optimum gustation of salt in a la carte, soups and stews were lower than those of other side dishes. 3. But the portion size of a la carte, soups and stews is much larger than that of other side dishes, so that a la carte, soups and stews are sources of relatively larger amount of salt than other side dishes. 4. Considering the recommended optimum salt intake, it is desirable to reduce the amount of stock in soups and stews and to select fried food or salad more frequently.

Recipes for dishes controlling diabetes and its blood glucose response effect (당뇨조절식의 조리법과 혈당반응효과)

  • This stydy was performed to improve recipes for dishes with seaweed, spinach, wild parsley, and yam as food source of low blood glucose and to select better favorite dishes controlling diabetes trough sensory test of 9 scoring method. Also the effect controlling blood glucose based on observation of blood glucose and glycemic index was applied for the normal person. The traditional recipes gained high acceptability in the sensory test. The Segogiguk, Daenjanguk, Guonsaeujuk, Sujebi, Bokeum and Beoseokhoi of seaweed ranged from 8.2 to 7.2. The Danggun juice, Daenjangguk, jeon and Dubumuchim of spinach was evaluated as 8.2 to 7.3. The Gulsaengche, Beefmuchim, Juice and Chodae of wild parsley showed high acceptability as 7.9 to 6.8. The Jorim and Jeon of yam ranged form 7.7 and 6.8. Addording to the result of blood glucose response of normal person meals controlling dishes showed GI 57.9-GI 91.3 compared to GI 100 of usual meal. The rice boiled with 30% of black soybean and additional dishes controlling diabetes were most effective as GI 57.9.

A Study of the Dietary Intake Status and One Portion Size of Commonly Consumed Food and Dishes in Korean Elderly Women (노년기 여성의 식이 섭취실태와 주요 음식의 1일 1회 섭취분량 조사연구)

  • The use of semiquantitative food frequency questionnaires to estimate dietary intake has become widespread in nutritional epidemiologic studies. It had been suggested that knowledge about a person's usual portion size of each meal in addition to consumption frequency will improve the accuracy of this method. This study was performed to investigate the dietary intake status(nutrient, food, and dish intake) and one portion size of commonly consumed food and dishes to develop a semiquantitative food frequency questionnaire that will be used to expore the relationship between the incidence of cardiovascular disease and diet in Korean women after menopause. Intake of food or dish in 123 elderly women were measured by 3-day food records in March to May, 1996. The results obtained in this study were summarized as follow : 1) Calcium, vitamin A, and vitamin E intakes were less adequate than Recommended dietary allowances(RDA). 2) The subjects who consumed more than 20% of the energy from fat were 35% and the subjects consumed dietary cholesterol more than 300mg were 18$\%$. 3) The most frequently consumed foods or dishes by the subjects were Korean cabbage kimchi〉cooked rice, well-milled〉laver〉apple〉strawberry〉mixed rice〉soybean soup. 4) The major dish groups which contributed to most daily nutrient intakes were cooked rice, Korean cabbage kimchi, soybean soup because of large amount and high frequency of intake although they do not contain large amount of most nutrients. 5) One portion size of commomly consumed foods and dishes in elderly women was different from one portion size suggested in the Korean nutrition society. This study provides information for the design of data-based semiquantitative food frequency questionnaire. for Korean elderly women. A Study on nutritional status and one serving size of commonly comsumed dish in Korean college women (여대생의 영양섭취 실태 및 주요섭취음식의 1인 1회 분량에 관한 연구)

  • The use of food frequency questionnaire to estimate dietary intake has become widespread in epidemiologic studies. It has been suggested that knowledge about a person's usual serving size of each food, in addition to consumption frequency, will improve the accuracy of this method. This study was performed to investigate the nutritional status and one sowing sizes of commonly consumed dishes in Korean college women. Intakes of dish or food in 156 college women were measured by 7-day weighed food records in May, 1992 and May, 1993. For each dish or food, variance in one serving size was partitioned into within-person(intraindividual) and between-person(interindividual) components. All nutrient intakes except vitamin A and vitamin C were less adequate. The major dish groups which contributed to the most daily nutrient intakes were boiled rice, bread, fruits, dairy product, and biscuit and snack groups. In more than 50% of dishes, the within-person variation was greater than between-person variation. And the variety and amount of food which was used in one dish were too variable to make standard recipe.

Health-Related Behaviors of Industry Workers Exposed to Unclean Work Environments and Changes in Nutritional Status in Response to Usual Pork Consumption (유해환경에 노출되기 쉬운 공장근로자의 건강관련 행동과 돼지고기 급여에 의한 영양소섭취 상태의 변화)

  • This study was conducted to evaluate the health status, life style, dietary habits and nutritional status of 44 industry workers that were routinely exposed to unclean environments while consuming 3 major pork dishes 2 times a week for 6 weeks. The health status, life style and dietary habits of the workers were investigated by a survey questionnaire, and the nutritional status was evaluated using the 24-hour recall method. Overall, the subjects reported that their health status was fairly good throughout the year, but that they felt dizziness and fatigue often. In general, the subjects did not exercise regularly and drank alcohol very often. The average daily energy intake increased from 1,708.3 kcal to 1,859.5 kcal without a change in the BMI or WHR when the respondents were fed pork dishes. However, the mineral intake did not differ significantly in response to the consumption of pork, although the Zn intake tended to increase. Moreover, the vitamin $B_1$, niacin, and E intakes increased after consuming pork(p<0.05), while the cholesterol intake decreased from 425.2 mg to 356.7 mg after eating pork(p<0.05). Additionally, both the fat intake and the PUFA intake increased after the consumption of pork with the intake of oleic, linoleic and linolenic acids increasing significantly(p<0.001). Finally, the intake of essential amino acids also increased significantly in response to the consumption of pork(p<0.01). Based on the results, regular consumption of pork dishes improved the nutritional status of industry workers without any adverse effect in terms of the intake of relative fat and cholesterol.

Comparison of Frequency and Amount of Dishes Reported in Semi-Quantitative Dish-based Frequency Questionnaire vs. 12-day Dietary Records (음식섭취빈도조사법과 식사기록법에 나타난 주요 음식의 섭취빈도와 섭취량 비교 분석)

  • A valid food or dish frequency questionnaire needs to be developed in Korea for accurate dietary assessment because the dietary practices of Koreans are very different from those of other countries. This study was conducted to evaluate the accuracy of the newly developed, semi-quantitative, dish-based frequency questionnaire (Semi-DFQ) with 12-day dietary records (12-DRs) as a gold standard. The study subjects were 115 men and 173 women aged 30-65 years old. We calibrated the frequency, portion size and daily intake of 112 dish items reported in Semi-DFQ with those in 12-DRs by Spearman rank correlation coefficients (SCCs). The consumption frequency and portion size reported in Semi-DFQ were higher than those in 12-DRs. The SCCs for the consumption frequency of various dishes ranged from -0.07 (fried seaweed) to 0.70 (instant coffee), the portion size ranged from -0.09 (cold seaweed soup) to 0.68 (soju), and the daily intake ranged from -0.07 (fried seaweed) to 0.71 (soju). The SCCs were higher for dishes consumed daily, such as steamed rice,milk, coffee and alcohol, than those of foods eaten rarely. The overall agreements between the Semi-DFQ and 12-DRs were low for categories of consumption frequency and portion size, even though some dishes showed high SCCs. The SCCs of the two methods in consumption frequency and amount were higher among the women and younger subject. The results revealed the limitation of the Semi-DFQ for evaluating the status of usual individual intake. Therefore, the Semi-DFQ can be used in addition as dietary records and 24-hour recall depending on the research aims.

A study on the Dietary Pattern in surone (수원지역 식생활 형태에 관한 연구)

  • This study aims to get basic datea on the usual dietary forms of many korean families bringing up either elementary, or junior high or senior high students. Our interest is focused on which factor is decisive in shaping their diet, which way of cooking is preferred and how the korean traditional way of diet is preserved. 407 of housewives of suweon city answered the questions, and the result shows that more than half of them (54.1%) decide the contents of their diet according to their husbands’ taste 77.4% of them regard dinner as the most important meal. The number of side dishes are usually 3 or 4 (57.2%). In preparing their diet, 41% take account of ‘taste’ first, but for many of college graduate housewives ‘nutrition’ is the primary concern. As for main dish, cooked rice (55.3%), and soybean soup (66.1%) are preferred. Both meat and fish are commonly grilled. 83.1% of them enjoy dining out once or twice a month, and when they they dine out, korean-style restaurant is preferred (43.7%). The most frequently used processed food is ham (19.2%), and secondly, ramyon (17.8%).

Relationship between thresholds and self-assessed preference for saltiness and sodium intake in young women (젊은 여성에서 짠맛 역치 및 자기 평가 짠맛 선호도와 나트륨 섭취 간의 상호 관련성)

  • Purpose: We recruited 118 women in their early 20's to examine the relationship between sodium intake and salty taste thresholds and preference. We also examined the association of salty taste preference with sodium-related dietary behaviors and major dishes contributing to sodium intake. Methods: Daily sodium intake was estimated using a 127-item dish-frequency questionnaire. Salty taste thresholds and preference were measured using rating scales using water solution of NaCl and a self-administered questionnaire based on a Likert scale, respectively. Results: Salty taste preference showed positive correlation with daily sodium intake and sodium intake-increasing behaviors, and inverse association with sodium intake-decreasing behaviors, including salt and soy sauce use at the table, the frequency of eating out and home delivery of foods, broth consumption of soup, stew or noodle soup, the use of ready-to-serve or processed foods, fresh vegetable intake, and the accommodating attitude toward bland food. Intake of sodium-contributing dishes, including ramen, spicy soft-tofu stew, radish kimchi, and dishes containing kimchi, also showed positive association with salty taste preference. Unexpectedly, detection and recognition thresholds of salty taste showed no association with salty taste preference, sodium intake, and sodium-related dietary behaviors. Conclusion: These findings suggest that salty taste preference could reflect sodium intake of individuals rather than thresholds of saltiness, and may be used as a simple and effective proxy for usual sodium intake.

Public Recognition and Acceptance of Yookmee (‘6 dishes’) Designated by Daejeon Metropolitan City as the Foods Representative of the Daejeon Area (대전의 대표음식 발전 방향 모색을 위한 대전시가 선정한 ‘육미’에 대한 인지 및 수용성 조사)

  • This study was conducted to devise a scheme for the development of foods designated as Yookmee (“6 dishes), which are representative food of Daejeon area. The Yookmee consist of Seolleongtang(ox bone soup and boiled rice), Samgyetang (chicken stew stuffed with glutinous rice and ginseng), Dolsotbap (boiled rice mixed with vegetables), Goojeukmook (acorn jelly), Sootgol-naengmyeon (cold buckwheat noodles with broth) and Daecheongho minmulgogi-maeuntang (spicy hot freshwater fish soup). A questionnaire was developed and administered by means of an interview regarding the subjects' recognition of and preference for the six dishes, their usual eating places and eating frequencies, the need for some standardization of recipes and for nutrition labeling including serving sizes and nutrient content. The total number of subjects who participated in this study were 328 (male 112, female 216) living in Daejeon. The subjects who were aware of the presence of Yookmee were more in their thirties or older (15%) compared to those in their twenties (9.6%) The percentages of the subjects who recognized the Yookmee as the representative foods were twice among those in their thirties (over 60%), as compared to 31.5% in their twenties (p<0.001). Samgyetang was one of the favorite foods of all the Yookmee among those in their twenties and Goojeukmook was the favorite for all the other age groups. The incidence of those eating one of Yookmee more than once a month was 51.5% in all the age groups, but the intake frequency was lower among those in their twenties (43.8%). The percentage of those who recommended Yookmee as a food for guests was the highest among those in their fifties (54.7%). The first reason why the subjects do not recommend these foods was because they were unfamiliar with Yookmee; among those in their thirties and forties the 2nd reason was because it is not much enough in quality or quantity to be served as a food for guests. Over 60% of the subjects felt the need for standardization of Yookmee, recipes for especially those in their fifties did feel the needs (92.5%). Furthemore, regarding labeling of sowing sizes and nutrients contents, over 80% of the subjects wanted these, and this desire tended to increase with age. From these results, it seems reasonable to accept Yookmee as the representative foods of Daejeon, despite the fact that many people do not yet currently do so. Since most of the subjects (85.4%) partake Yookmee outside of their homes, it is recommended that efforts need to be expanded on enhancing the nutritional quality, the taste and the quality control of Yookmee by standardizing the recipes, labeling the serving sizes and nutrient contents, and providing educational and publicity programs.

Web Expert System for Nutrition Counseling and Menu Management

  • This study was conducted to develop a web expert system for nutrition counseling and menu management. This program manipulates a food, dish and menu and search database that has been developed. Clients can select a recommended general and therapeutic menu using this system. The web expert system can analyze nutrients in menus and compare nutrient contents of menus with Korean Recommended Dietary Allowances. It can access the food, dish and menu database. The expert menu database can insert, store and generate the synthetic information of age, sex, and therapeutic purpose of disease. With investigation and analysis of the client's needs, the menu planning program on the internet has been continuously developed. This system consists of the database that reaches to the food composition, the dishes and the menu. Clients can search food composition and conditional food based on nutrient name and amounts. This system is able to draw up the food with its order in dish. The menu planning can be organized and nutrients analysis can be compared with Korea Recommended Allowance. This system is able to read the nutrient composition of the each food, the dish and the menu. The results of analysis is presented quickly and accurately. Therefore it can be used by not only usual people but also dietitians and nutritionists who take charge of making a menu and experts in the field of food and nutrition. It is expected that the web expert system can be useful of nutrition education, nutrition counseling and expert menu management.
