어머니의 이유식 준비 태도가 유아의 식습관 및 성장 발달에 미치는 영향 (Effect of Mothers' Weaning Attitudes on Their Children's Food Habits and Development)

  • This study was carried out to evaluate the effect of mothers' attitudes on preparing baby foods for their children's food habits and development. The subjects were allocated to 419 preschool children, aged 3 - 5 years. This study surveyed by questionnaire, which was answered by the children's mothers. Subjects were classified by two groups, active and passive, based on their mothers' weaning attitudes. In the active group, mothers tried to make a variety of foods for preparing the baby foods, whereas mothers in the passive group didn't try to make it too much. Family income was higher in the active group and the subject' mothers had more jobs than those in the passive group, whereas their parent's education levels showed no differences. According to Rohrer index, 2.6% of subjects were obese in the active group, whereas 7.7% in the passive group. These data were shown significantly different between the groups. There were no differences in mother's food habits and breast-feeding versus formula feeding between the two groups. However, children's food habits were shown statistically different between the two groups. Higher regularity of meals, higher frequencies of snacks at home, higher frequencies of fruit, com, sweet potato as a snacks and less instant foods were revealed in the active group more than in the passive group. The major problem of children's food habits was an unbalanced diet (52.7%) and the major reasons for unbalanced diet were the taste (58.7%) and the texture (23.2%). The active uoup used more fruits and vegetables than the passive group. Also there were significant differences to solve problems of children's unbalanced diets. In the positive group, 14.4% of mothers tried to develop new cooking methods for solving the problem of an unbalanced diet, but 8.2% did in the passive group. furthermore, 2.3% of mothers in the positive group removed unpleasant items of the food, whereas 6.9% did in the passive. The average nutritional knowledge scores on a 10 scale were 7.2 and 6.9 in active and passive groups, respectively, and they were statistically different. Mothers among the active group explained the knowledge for food and nutrition to their children more than those in the passive group. These results suggest that mothers' attitudes for baby food are an important factor for forming their children's food habits. Therefore, it is necessary to develop a nutritional education program, materials and new recipes for a variety of baby foods to mothers.

충남지역 중학생의 채소 섭취실태와 식습관에 관한 연구 (A Study on Vegetable Intakes and Dietary Habits of Middle School Students in Chungnam)

  • The purpose of this study was to provide basic data for nutritional education for juveniles' desirable vegetable intake by analyzing their vegetable intake, dietary habit and nutrient intakes according to gender of middle school students in Chungnam. The average age of the subjects was 15.0, height was 162.5 cm, weight was 53.5 kg and their average BMI was $20.1kg/m^2$. The frequency of eating supper in girls was lower than that in boys. Many respondents answered that a meal-time was 10~20 minutes. Without gender difference, more than 90% respondents thought that vegetables were good for health. As for the preference of vegetable, subjects responded, "I am in the middle", "I like them", "I dislike them", "I like them very much", and "I dislike them very much" in order, without gender difference. The frequent eaten leaf vegetable was Chinese cabbage, the frequent eaten fruit vegetable was cucumber, and the frequent eaten root vegetable was radish. The favorite leaf vegetable was lettuce, the favorite fruit vegetable was corn, and the favorite root vegetable was sweet potato. The preference degrees of taro and ginger were very low. The reasons why they liked a vegetable were that it was delicious and they ate it at home often. In addition, the reason why they disliked vegetables was that they are untasty in flavor or texture and it showed that many students had a prejudice that vegetables were untasty. The intakes of plant protein, dietary fiber, ash and INQs of dietary fiber, calcium, vitamin C, folate, vitamin E in the group with high preference of vegetables were significantly higher than those of low preference group. The study results indicate that intake frequency and preference of root vegetables in juveniles are low and the major reasons of these results are taste and eating experience of vegetables. In addition, the intake amounts of dietary fiber and folate are poor in the subjects with low preference of vegetables. Therefore, families and schools should make efforts that juveniles can recognize the importance of vegetable intake and select various vegetables properly through the development of cooking methods and systematic nutrition education.

천연색소 함유 화장료 조성물의 항균효과 및 항산화활성 (Antimicrobial Effects and Antioxidative Activities of the Cosmetic Composition Having Natural Plant Pigments)

  • 천연색소를 이용한 천연 색조화장품 개발을 위한 기초자료로 활용하고자, 15종의 천연색소를 사용하여 제조한 화장료 조성물에 대하여 항균활성 및 항산화능을 조사하였다. 실험에 사용한 6종의 균주 중 Bacillus subtilis, Staphylococcus aureus, Listeria monocytogenes, Vibrio parahaemolyticus, Aspergillus flavus에 대해 대부분의 색소혼합조성물에서 항균활성이 나타나는 것으로 확인되었으며, Proteus vulgaris에서는 다른 균주에 비해 항균활성이 상대적으로 낮았다. 색소종류별로는 자색고구마, 여주, 파프리카, 뽕잎, 지치 등의 색소 조성물에서 다른 색소 조성물에서보다 더 높은 항균활성을 보였다. 또한 DPPH 라디컬 소거능은 양파껍질, 파프리카, 적양배추, 뽕잎, 포도과피, 오디, 레드비트 색소 함유 조성물에서 상대적으로 높은 활성을 보였으며, 아질산염 소거능에 있어서는 특히 pH 1.2에서 적양배추, 포도과피, 오디, 백년초를 제외한 대부분의 색소에서 70% 이상의 높은 활성을 나타냈다. 다양한 천연색소를 이용하여 수행한 본 실험을 통해 천연색소의 높은 항균효과와 항산화능을 확인할 수 있었으며, 향후 이러한 기능성을 활용한 안전한 천연 색조화장품 개발에 유용한 자료가 될 것으로 기대한다.

성별과 연령에 따른 친환경 유기농 식품에 대한 인식도, 선호도, 외식이용현황조사 - 대구 수성구지역 성인대상으로 - (Study on Awareness and Preferences in Adults regarding Consumption of Environmentally friendly Organic Food while eating-out according to Gender and Age - Focused on Adults in Su-seong Area in Daegu -)

  • This study conducted a survey to analyze awareness, preferences, and the current state of consuming environmentally friendly organic food while eating-out in 435 adults aged 20 and above in Daegu, Korea. Most subjects (95%) showed awareness of environmentally friendly organic food, and 88.5% of subjects answered environmentally friendly organic food is 'needed'. The percentage of eating out for families was 58.9%, and 49.0% of subjects said they eat out one to three times per month on average. In addition, subjects preferred a price range between 10,000 and 20,000 won per person when eating out, and they mostly favored Korean restaurants when ordering environmentally friendly organic food. Analysis of awareness of environmentally friendly organic food showed that among 'health' factors, 'environmental' factors, 'social' factors, and 'dietary essential' factors, 'health' factors showed the highest percentage for awareness. A survey on preferred foods by gender showed that both genders preferred vegetables the most. The results show that subjects in their 20s and 30s favored vegetables and fruits while subjects in their 40s preferred vegetables and grain animal products. Analysis of preferred types of environmentally friendly organic foods showed that men preferred polished rice while women preferred brown rice. Subjects in their 20s and 30s preferred strawberries, whereas those in their 40s preferred cherry tomatoes and those in their 50s and above favored tomatoes (p<0.001). Among root and tuber crops (63.4%), sweet potato was the most preferred. Among fruits, subjects preferred apples while among special crops, they most preferred oyster mushrooms; both genders preferred Korean beef. The most preferred livestock product of subjects in their 20s was pork, whereas subjects in their 30s preferred Korean beef. Subjects in their 40s preferred Korean beef and pork in the same proportions, whereas subjects in their 50s and above favored eggs the most.

고효율 바이오 에탄올 생산을 위한 당화효소 개발 및 동시당화발효 공정 연구 (Development of Glucoamylase & Simultaneous Saccharification and Fermentation Process for High-yield Bioethanol)

  • 화석연료의 사용은 개발 한계성 및 고갈 그리고 지구온난화 등과 같은 심각한 문제를 지니고 있어 이를 극복하기 위해 환경 친화적이고 재생 가능한 바이오에탄올이 대두 대고 있다. 현재, 공정의 최적화와 미생물 개발을 통한 생산 단가를 낮추기 위한 많은 연구가 진행되고 있다. 본 연구에서는 쌀보리, 현미, 옥수수, 절간의 국내산 원료를 바탕으로 각각의 원료의 최적의 전처리 조건을 탐색하여 원료별 특성을 파악하여 동시당화공정발효를 이용하여 에탄올을 생산하였다. 또한 에탄올 생산성과 수율을 높이기 위하여 당화효소를 UV-mutation을 통해 개발한 SGA와 기존의 당화효소인 GA를 비교하였다. 그 결과 모든 원료에서 SGA가 GA보다 우수한 당화력을 나타내어 에탄올의 생산성과 수율을 향상 시켰다. 특히 가장 큰 차이를 보인 현미의 경우 에탄올 최대 농도가 1.25배 증가하여 18.4 g/L가 향상되었다. 또한 최대 농도의 95%도달시간을 비교해 본 결과 GA는 88시간, SGA는 35.98시간을 기록하였다. 이는 SGA의 당화력이 매우 우수함을 입증해준 결과라 할 수 있다.

경북지역 초.중.고.대학생의 채소류 기호도와 섭취빈도 비교 (The Differences in Preference for Vegetables among Primary School to University Students in Gyeongbuk Area)

  • Objectives: Vegetables are the most left over side dishes in school lunch programs. This study intended to analyze the differences in preference for vegetables among the students of different age groups in order to determine potential ways of increasing vegetable consumption in this study group. Methods: A total of 308 primary to university students in Gyeongbuk area were recruited and a questionnaire-based survey was conducted. The preference score (7-Likert scale: very much dislike (1)~so-so (4)~like very much (7)) and intake frequency (5-Likert scale) of 48 kinds of vegetables in 4 vegetable groups, such as vegetable (fruit-, root-, leaf-, and stalk-vegetable), seaweeds, mushrooms, and kimchi were investigated, and data were analyzed by SPSS WIN (ver 12.0). Results: The preference scores of vegetables except for seaweeds were significantly different among school groups, university was the highest, followed by high school. Primary and middle school students showed the lowest preference score, especially for leaf- and stalk- vegetables. The preference score for seaweeds was the highest of 5.28, followed by kimchi of 4.99. With regard to kimchis, the preference score was the highest in university', followed by high school, middle school, and primary school' was the lowest. The number of vegetables with < 4.0 preference score was the highest in primary school of 16, 15 in middle school, 11 in high school, and 7, the lowest in university. The vegetable with preference score of < 4.0 in all 4 school groups were mallow, chard, bud, radish leaf, mugwort, butterbur and sweet potato stalk. With regard to the intake frequency of vegetables, kimchis, an indispensable part of the Korean diet, was the highest of 2 times/day, followed by cooked vegetables of 1.5 times/day. The correlation coefficients between preference scores and intake frequencies were statistically significant in all groups of vegetables. As for the coefficient of variation (CV) of preference score, primary school' was the highest and university' was the lowest. The number of vegetables with high CV and high inexperience were highest in primary school students. Conclusions: Providing more opportunities for consuming a variety of vegetables, such as leaf- and stalk-vegetable, it may be possible to increase vegetable consumption, especially for the primary school students.

Beauveria bassiana 대량배양을 위한 탄소원, 질소원 및 고체 기질 선발 (Selection of Carbon, Nitrogen Source and Carrier for Mass Production of Beauveria bassiana)

  • Two-phase fermentation을 통한 Beauveria bassiana 149균주의 대량 배양을 위한 탄소원, 질소원, 기질 그리고 배양 조건 선발 실험을 실시하였다. 1차 액체 배양을 위한 적정 탄소원으로는 옥수수 분말, 전분 그리고 쌀가루가, 질소원으로는 펩톤과 효모 분발을 첨가한 것에서 포자 생산량이 높았다. 포자 대량 생산을 위한 기질 및 첨가물로는 톱밥+밀기울+옥수수 분말, 톱밥+밀기울, 쌀겨+밀기울 혼합에서 포자 생산량이 높았다. B. bassiana 149 균주의 포자 대량 생산을 위한 고체 배양 결과, 포자 생산량은 $30^{\circ}C$ 배양에서 $20^{\circ}C$보다 2배 정도 높은 경향을 보였다. B. bassiana 149 균주의 포자 생산량은 $25^{\circ}C$, 수분함량 60%와 70%에서 배양 시 $26.9{\times}10^8conidia/g$$38.6{\times}10^8conidia/g$로 40%와 50%의 $13.9{\times}10^8conidia/g$$11.6{\times}10^8conidia/g$ 보다 상당히 높았다.

우리나라 야생잡초 참외의 자생지 분포지역 및 생태 (Distribution of Habitats and Ecology of Weedy Melons (Cucumis melo var. agrestis Naud.) in Korea)

  • 한국에서 야생(잡초)참외의 자생분포지역은 서해의 옹진군으로부터 남으로 보령 서산(태안), 서천, 군산, 부안, 고창, 영광, 무안, 신안, 해남, 진도, 완도, 고흥, 여수, 하동, 남해, 고성, 통영, 거제시 등의 해안 또는 도서 지방과 제주시, 북제주군 및 남제주군이었다. 이들 지역에서 농경지 또는 그 부근에서 현존하고 있음을 확인하였다. 야생참외가 자생하고 있는 장소는 농경지 및 그 부근이었다. 지방별 자생하고 있는 농경지내용은 대두밭에서 가장 많았다. 다음은 녹두밭, 고구마밭, 고추밭, 참깨밭, 목화밭, 땅콩밭 순위의 빈도였다. 조 밭 주변, 개울가의 논두렁, 밭두렁, 수박밭, 옥수수밭, 농가인접의 채소밭, 감귤밭, 퇴비무더기, 폐농지, 도로변 및 기타 농가정원에서도 자생하고 있었다. 대체로 키가 낮은 작물의 경작지이면서 광선공간이 있고 다소 건조한 곳에서 자생이 많았다. 과실의 숙기는 7월 상순에서 10월 하순까지였는데 9월의 응답빈도가 많았다. 과실이 성숙되면 꼭지가 빠지는데 이는 자생에 효율적인 특성으로 추정되었다. 과실의 용도는 장난감과 식용이 많았다. 과실을 사람이나 가축이 먹고 분으로 배설된 것을 밭거름으로 사용하면 거기서 발아되어 결실되고 익은 과실은 추수기에 사람이나 가축이 다시 먹게 되어 세대가 유지되는 것으로 추정되었다.

감마선 조사를 이용한 시판 분말원료의 위생화 (Sanitization of Commercial Powdered Products Using Gamma Irradiation)

  • Microbiological populations and the sterility of commercial powdered products treated with gamma irradiation at 0~10 kGy were investigated before using them as ingredients for a non-cooked Saengsik product. We evaluated a total of 14 powdered products: 8 powdered cereals, 3 powdered tubers, and 3 powdered leafy vegetables. The total numbers of bacterial populations in non-irradiated powdered cereals, tubers, and leafy vegetables were 2.7~6.9, 5.6~6.0, and $5.3{\sim}6.8\;log\; CFU{\cdot}g^{-1}$, respectively. Moreover, coliform bacteria were not indicated in adlay, millet, germinated brown rice, soybean, and mulberry leaves powder within detection limit ($2.0\;log\; CFU{\cdot}g^{-1}$). The number of Bacillus cereus exceeded $3.0\;log\; CFU{\cdot}g^{-1}$ (the maximum limit for Saengsik products) in all samples, excluding perilla seeds, buckwheat, barley, oat, potato, and Jerusalem artichoke powder. However, a dose of 6 kGy of gamma irradiation reduced the microbiological populations in all samples, and all the powdered products met the microbial requirements for Saengsik products. Futhermore, it was confirmed that all microorganisms in the 9 powdered products, except fermented brown rice, sweet potatoes, and 3 leafy vegetables, were sterilized by 10 kGy of gamma irradiation.

엽록체에 과발현된 PsAPX1 유전자 형질전환 벼의 다양한 환경스트레스 내성 증진 (Chloroplast-targeted Expression of PsAPX1 Enhances Tolerance to Various Environmental Stresses in Transgenic Rice)

  • 1. 본 연구에서는 완두유래의 세포질성 PsAPX1 유전자를 대상으로 산화스트레스 유도성 프로모터를 연결하여 엽록체에 targeting 되는 과발현 운반체를 제작하고 벼에 도입한 결과 형질전환체에서 도입유전자 수가 1~3 copy인 것으로 나타나, 적은 수의 유전자가 안정적으로 도입되었음을 확인하였다. 2. 염, 오존, 자외선, 한발과 같은 다양한 환경스트레스 조건에서 내성이 증진된 우수 계통을 선발하기 위하여 작성된 형질전환 벼 계통들을 대상으로 생물검정을 실시한 결과, 독립계통별로 스트레스원에 대한 반응에 차이가 있음을 확인하였으며, 오존이나 자외선과 같은 산화스트레스 조건에서 내성이 증진된 우수 계통들을 선발하였다. 3. 이러한 결과를 바탕으로, 다양한 환경스트레스에 내성이 증진된 우수한 형질전환 벼 계통들을 선발하기 위하여 최소한의 독립라인을 작성하여야 함을 확인하였으며, 선발된 계통들은 새로운 육종 소재로 활용될 수 있을 것으로 기대된다.
