The Content Analysis of the Korean Food Menu Naming Standard (한식 메뉴 명명 기준에 대한 내용분석)

  • This research analyzed the naming standard of Korea menu names divided into two groups, main dish and side dish. The research was conducted by contents analysis of selected literature articles and multiple-response cross tabulation analysis. The result demonstrated that the naming standard of Korea food consisted of the main ingredient name - sub ingredient name - main condiment name and main recipe. On the other hand, the menu name that is in native language or has a historical origin is exempt from this classification. Therefore, this study proposes a new standard, 'Hansik Menu Naming', to assist the food service industry and correct the names of unknown foreign dishes.

Protective Effects of the Postbiotic Levilactobacillus brevis BK3 against H2O2-Induced Oxidative Damage in Skin Cells

  • Postbiotics have various functional effects, such as antioxidant, anti-inflammatory, and anti-obesity. Levilactobacillus brevis BK3, the subject of this study, was derived from lactic acid bacteria isolated from Kimchi, a traditional Korean fermented food. The antioxidant activity of BK3 was confirmed through the measurements of 2,2-diphenyl-1-picryl-hydrazyl (DPPH), 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), and total antioxidant capacity (TAC). The wrinkle improvement effect was validated by assessing elastase inhibitory activity and collagenase inhibitory activity. The intracellular activity was confirmed using human keratinocytes (HaCaT) and human fibroblasts (HFF-1). BK3 protects skin cells from oxidative stress induced by H2O2 and reduces intracellular reactive oxygen species (ROS) production. In addition, the expressions of the antioxidant genes superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPx) were upregulated. Meanwhile, matrix metalloproteinase-1 (MMP-1) and collagen type I alpha 1 (COL1A1), involved in collagen degradation and synthesis, were significantly regulated. These results suggest the possibility of utilizing BK3 as a functional ingredient with antioxidant and wrinkle-improving effects.

A Scientific Analysis on the Glass Beads Excavated from the Daho-ri site NO. 6, Changwoen (창원 다호리 유적 6호분 출토 유리구슬의 과학적 분석)

  • A scientific analysis was carried out on the 14 pieces of glass beads excavated from the Daho-ri site NO. 6, Changweon. Most of the glass pieces were made of light blue transparent glass with round bubbles aligned in a regular direction. As a result of the SEM-EDS analysis, all the glass pieces turned out to be within the potash glass group (K2O-SiO2) and were identified to be the LCA (Low CaO, Low Al2O3) series glass, of which the concentration is 5% or below for CaO and Al2O3 respectively. In addition, it is presumed that plant materials were refined or a mineral (saltpetre, KNO3) was used as the raw materials for making potash and also that the ingredient acting as a colorants for light blue color was affected deeply by CuO.

  • Ginsenoside Rb1 (Rb1), one of the most important ingredients in Panax ginseng Meyer, has been confirmed to have favorable activities, including reducing antioxidative stress, inhibiting inflammation, regulating cell autophagy and apoptosis, affecting sugar and lipid metabolism, and regulating various cytokines. This study reviewed the recent progress on the pharmacological effects and mechanisms of Rb1 against cardiovascular and nervous system diseases, diabetes, and their complications, especially those related to neurodegenerative diseases, myocardial ischemia, hypoxia injury, and traumatic brain injury. This review retrieved articles from PubMed and Web of Science that were published from 2015 to 2020. The molecular targets or pathways of the effects of Rb1 on these diseases are referring to HMGB1, GLUT4, 11β-HSD1, ERK, Akt, Notch, NF-κB, MAPK, PPAR-γ, TGF-β1/Smad pathway, PI3K/mTOR pathway, Nrf2/HO-1 pathway, Nrf2/ARE pathway, and MAPK/NF-κB pathway. The potential effects of Rb1 and its possible mechanisms against diseases were further predicted via Kyoto Encyclopedia of Genes and Genomes (KEGG) pathway and disease ontology semantic and enrichment (DOSE) analyses with the reported targets. This study provides insights into the therapeutic effects of Rb1 and its mechanisms against diseases, which is expected to help in promoting the drug development of Rb1 and its clinical applications.

Quality Characteristics and Content of Available Components of Freeze-dried Ear Mushroom by UVB (Ultraviolet B) Treatment Conditions (동결건조 목이버섯의 자외선(UVB) 처리조건에 따른 품질 특성 및 유효성분 함량)

  • In order to investigate the optimal UVB (ultraviolet B) treatment conditions for vitamin D2 enhancement of freeze-dried ear mushroom, sample size (below 300 ㎛~whole), UV treatment temperature (30~60℃), treatment density (6.25~50.0 mg/cm2) and the samples mixing frequency (1~32 times) were treated differently. After that, chromaticity, vitamin D2 and ergosterol (vitamin D2 precursor) contents were investigated. As a result of the investigating, effective UVB treatment conditions for vitamin D2 enhancement are as follows. The sample sizes were 2~4 mm and finely crushed pieces. The treatment temperatures were 50℃ and 60℃. The treatment density was 12.5 to 25.0 mg/cm2, and the number of sample mixing was 8 times or more. As the amount of vitamin D2 increased by UVB treatment, the ergosterol content generally tended to decrease. However, under some UVB treatment conditions, the vitamin D2 content was not high despite the decrease of ergosterol content. Under the conditions set in this experiment, it was possible to obtain ear mushrooms with enhanced vitamin D2 up to 26,968.7 ㎍/100 g. Therefore, it is thought that the ear mushroom is highly likely to be used as a vitamin D source and nutritionally fortified food ingredient.

Influences of silicate fertilizers containing different rates of iron slag on CH4 emission and rice (Oryza sativa L.) growth

  • Methane (CH4) is an important greenhouse gas, with a short-term greenhouse effect 80-fold that of carbon dioxide. Blast furnace slag used as a base ingredient for silicate fertilizer, and contained Fe3+, which acts as reduction of CH4 emissions in flooded rice paddy. This study was evaluated the effects of the silicate fertilizer with different rates of the iron slag on CH4 emissions and rice growth. In this study, the SF 0.0% was applied with silicate fertilizer containing 0.0% of the iron slag, while the SF 2.5% and SF 5.0% were treated with silicate fertilizer containing 2.5 and 5.0%, respectively. The CH4 emissions during rice cropping period were assessed using a closed-chamber method and then determined by Gas chromatography. The CH4 fluxes were reduced by 17% (SF 0.0%), 17% (SF 2.5%), and 8% (SF 5.0%) compared to the treatment with only-inorganic fertilization (control). Conversely, rice grain yield increased by 15 - 30% compared to the control owing to the improvement of soil quality by silicate fertilization. In particular, soil pH, available phosphorus and available silicic acid content were increased with the increase in the iron slag rates from 0.0 to 5.0%. These contributed to a significant increase in rice growth such as 1,000-grains weight and percentage of filled grains. Consequently, these findings were indicated that the application of silicate fertilizer containing 2.5 - 5.0% of iron slag would be the most effective in both CH4 reduction and rice growth.

Effects of biochar-based fertilizer on ammonia volatilization under controlled conditions

  • As the interest in sustainable and environmentally friendly agriculture continues to grow, there is a corresponding increase in organic fertilizers utilization. However, studies on ammonia (NH3) emissions, which are primarily generated in the agricultural sector, by organic fertilizers are lacking. Additionally, the reliance on imported ingredients in the production of organic fertilizers hinders the widespread adoption of organic fertilizers. This study aims to evaluate NH3 volatilization by incorporating rice husk biochar into organic fertilizers. The study also aims to assess whether domestically produced rice husk biochar can serve as a viable substitute for imported ingredients. Here, the dynamic chamber method was used under controlled conditions. Results show that inorganic fertilizers readily undergo hydrolysis, thereby rapidly generating significant amounts of NH3, particularly in the initial stages. In contrast, organic fertilizers decompose gradually, leading to relatively long-term NH3 emissions. The incorporation of rice husk biochar into organic fertilizers demonstrated diminished daily NH3 emissions compared to those from commercial organic fertilizers, resulting in decreased total NH3 volatilization. These findings show that the combination of rice husk biochar can reduce NH3 volatilization and serve as an alternative to imported ingredients for organic fertilizers. The results of this study can be utilized as fundamental information for the assessment of biochar as a potential ingredient for organic fertilizers.

Anti-inflammatory Efficacy of HK Shiitake Mushroom Mycelium in LPS-treated RAW 264.7 Cells Through Down-regulation of NF-κB Activation (LPS로 활성화한 RAW 264.7 세포에서 HK표고버섯균사체의 NF-κB 활성 억제를 통한 항염증 효과)

  • HK shiitake mushroom mycelium (HKSMM), containing 14% β-glucan, is a health functional food ingredient individually approved by the Korea Ministry of Food and Drug Safety for liver health. The anti-inflammatory effect of a 50% aqueous ethanol extract of HKSMM (designated HKSMM50) was studied in RAW 264.7 macrophage cells treated with lipopolysaccharide (LPS). An active hexose correlated compound (AHCC) was used as a positive control. LPS-activated RAW 264.7 cells were treated with HKSMM50 and AHCC (0, 20, 100, 500 ㎍/ml) and cultured for 24 hr. Inflammation-related elements in the supernatant were measured using enzyme-linked immunosorbent assay (ELISA) kits, and the expression of inducible nitric oxide synthase (iNOS) and cyclooxygenase-2 (COX-2) proteins in the cells was analyzed by Western blotting. The HKSMM50 lowered iNOS and COX-2 protein expressions, and nuclear factor-kappa B (NF-κB), nitric oxide (NO) and prostaglandin E2 (PGE2) contents in a concentration-dependent manner as compared to LPS treatment. Similarly, the HKSMM50 lowered the content of pro-inflammatory cytokines interleukin-1β (IL-1β), tumor necrosis factor-α (TNF-α), interleukin-4 (IL-4) and interleukin-6 (IL-6) contents and increased the activity of antioxidant enzymes superoxide dismutase (SOD) and catalase (CAT). The efficacy of the AHCC treatment was similar to that of the HKSSM50 treatments. These results indicate that HKSMM50 showed an anti-inflammatory effect in LPS-treated RAW 264.7 cells by down-regulation of NF-κB signaling and suggest that HKSMM could be used as a health functional food ingredient to help improve immune function.

Effects of Ingredients of Wet Etchant on Glass Slimming Process (유리기판 박막화를 위한 습식공정에서 식각액 성분의 영향)

  • The etching solution for slimming of glass substrates was manufactured and HF was used as the main ingredient of wet etching solutions. Various types of strong acids such as HCl, HNO3, H2SO4, amino acids and carboxylic acids such as citric acid, and etched solutions, respectively, were used to measure the etching rates and changes in surface shape of the glass. Regardless of the type of strong acids, the etching rate of the glass increased linearly as the added amount increased, and the sludge removal effect of the glass surface was also shown. The etching solution containing HCl showed more efficient results than other strong acids in the etching rate and the effect of removing sludge. The addition of carboxylic acid did not significantly affect the variation of etching rate, but had the effect of removing sludge. However, if amino acids were added, changes in etching rate and sludge removal were not significant.

Comparative study on antioxidant activity of Gold 1, a new strain of Pyropia yezoensis

  • The global output of Pyropia yezoensis (dried seaweed or laver, also called 'Gim' in Korea) has been reduced over the half-decade due to the wide spread of red rot disease, a serious algal disease affecting P. yezoensis. Recently, Gold 1 (G1), which is a resistant strain of P. yezoensis to red rot disease, was developed and commercialized in South Korea, yet its physiological activity has not been investigated. In this study, a comparative study was performed on G1 and commercially available strain of P. yezoensis (CP) for their antioxidative activities. Aqueous extract of G1 showed more marked 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activity compared to that of CP. In 293T cells, antioxidant activity against H2O2-induced reactive oxygen species (ROS) formation was only observed in G1 extract. In addition, G1 extract showed more potent inhibitory effect on H2O2-induced apoptotic cell death than CP extract, as examined by 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide assay and fluorescence microscopy. Expression levels of various apoptosis-related genes, including B-cell lymphoma 2-associated X protein, p53, capase-3, and inflammatory cytokines, in H2O2-treated cells were significantly decreased by the treatment of G1. Taken together, the present study suggests that a new strain of red seaweed G1 can recover oxidative stress effectively by improving the imbalance of ROS generation and has a potential to be used a functional ingredient as an antioxidant source.
