The purpose of this study was to search the calcium and iron rich foods in Korean people. The food sources presented in the current home economics textbooks of middle and high school were investigated. And 40 kinds of calcium and iron rich foods were selected by the quantity in 100g edible portion. one serving size and according to 1997 food supply data. Also 3 major food groups of calcium and iron supply in Korean were identified, and 10 rich foods for each food groups were selected. The results were summarized as follows. 1. The food sources of calcium 1) The food sources of calcium presented in the home economics textbooks of middle and high school are milk and dairy products. small fishes such as anchovy icefish and dried strip and green vegetables etc. 2) The calcium rich foods by 100g edible portion were in order of skim milk powder river snail sesame sea mustard. whole milk powder. snapping turtle loach sea tangle(dried) opossum shrimp and sea lettuce(dried). And the calcium rich foods by the calcium content in one serving were in order of river snail snapping turtle opossum shrimp loach spiny lobster skate skim milk powder small alaska pollack freshwater crab condensed milk whole milk powder skate ray and milk. 3) The 3 major calcium supply food groups in Korean were vegetables fish and shellfishes and milk and dairy products. 4) The calcium supply foods according to the quantity of food supply in 1997 was in order of sea mustard, milk anchovy chinese cabbage soybean skin milk powder laver shrimp welsh onion and maize. The vegetables were the important sources of calcium in Korean. 2. The food sources of iron 1) The food sources of iron which are commonly presented in the textbooks of middle and high school were meat liver egg(egg yolk) and green vegetables etc 2) The iron rich foods on the basis of the iron content in 100g edible portion were in order of surf clam marsh clam laver(dried)( sea lettuce(dried), crayfish pelilla seed little neck clam orient hard clam, venus clam, and freshwater carab. And the iron rich foods by the iron content in one serving were in order of surf clam marsh clam crayfish little neck clam orient hard clam freshwater crab venus clam hen cockle green confertii(fresh) pen shell and spiny lobster. 3) The 3 major iron supply food groups in Korean were cereals an cereal products fishes and shellfishes and vegetables. 4) The iron supply food according to the quantity of food supply in 1997 was in order of soybean sea mustard maize rice meat edible viscera laver wheat flour, pook, red pepper, egg and bovine meat.
The effect of different phytogenic feed additives on reducing odorous compounds in swine was investigated using in vitro fermentation and analyzed their microbial communities. Soybean meal (1%) added with 0.1% different phytogenic feed additives (FA) were in vitro fermented using swine fecal slurries and anaerobically incubated for 12 and 24 h. The phytogenic FAs used were red ginseng barn powder (Panax ginseng C. A. Meyer, FA1), persimmon leaf powder (Diospyros virginiana L., FA2), ginkgo leaf powder (Ginkgo biloba L., FA3), and oregano lippia seed oil extract (Lippia graveolens Kunth, OL, FA4). Total gas production, pH, ammonianitrogen ($NH_3$-N), hydrogen sulfide ($H_2S$), nitrite-nitrogen ($NO_2{^-}$-N), nitrate-nitrogen ($NO_3{^-}$-N), sulfate (${SO_4}^{--}$), volatile fatty acids (VFA) and other metabolites concentration were determined. Microbial communities were also analyzed using 16S rRNA DGGE. Results showed that the pH values on all treatments increased as incubation time became longer except for FA4 where it decreased. Moreover, FA4 incubated for 12 and 24 h was not detected in $NH_3$-N and $H_2S$. Addition of FAs decreased (p<0.05) propionate production but increased (p<0.05) the total VFA production. Ten 16S rRNA DGGE bands were identified which ranged from 96 to 100% identity which were mostly isolated from the intestine. Similarity index showed three clearly different clusters: I (FA2 and FA3), II (Con and FA1), and III (FA4). Dominant bands which were identified closest to Eubacterium limosum (ATCC 8486T), Uncultured bacterium clone PF6641 and Streptococcus lutetiensis (CIP 106849T) were present only in the FA4 treatment group and were not found in other groups. FA4 had a different bacterial diversity compared to control and other treatments and thus explains having lowest odorous compounds. Addition of FA4 to an enriched protein feed source for growing swine may effectively reduce odorous compounds which are typically associated with swine production.
Variation of anthocyanin contents were analyzed by different growing environments, three locations over three years with 3 black colored soybeans. Anthocyanin contents were different according to growing location, genotypes and planting time, so it can be concluded that anthocyanin content was effected by environmental and genetic variation. Planting date seemed to have a much greater influence on anthocyanin content than cultivar and location. Among different planting dates, anthocyanin contents increased in the seeds planted on June 15 rather than did May 30 and May 15. Compared with 3 cultivars and 3 locations, Ilpumgeomjungkong and Yeonchun had higher contents such as 11.58 mg/ and 9.85 mg/g, respectively. The correlations between color index and anthocyanin content were analyzed by Hunter'value. L (lightness) and b (yellowness) values were correlated negatively with D3G, C3G, Pt3G and total anthocyanin content while a (redness) value was correlated positively. The correlations between meteorological factors and anthocyanin content were analyzed. Anthocyanin content was correlated negatively with mean temperature and accumulated temperature whereas mean daily temperature difference showed positive correlation. We could conclude that the area in which mean temperature was low and daily temperature difference was high is good for attempts to improve black soybean seed quality by the increase of anthocyanin contents.
Vegetable soybeans were blanched at 80, 90 and $100^{\circ}C$ for 30, 20 and 10min, respectively. NaCl(3%) was also used to measure the protective effect of soybean color. The color of vegetable soybeans was measured by colorimeter, -a value (greenness) was highest at $100^{\circ}C$-10min. However, the chlorophyll contents was highest at $80^{\circ}C$-30min. NaCl (3%) decreased the loss of chlorophyll in blanched vegetable soybeans. The reaction rate constant for the thermal degradation of chlorophyll and greenness doubled per $10^{\circ}C$. The activation energy chlorophyll a of pod for thermal degradation of chlorophyll a in pods were 138.02 (unsalted), 146.63 (salted) Kcal/mol, respectively.

This study investigated the effect of coated feed using mixed oil on rumen fermentation characteristics. Two experiments were conducted based on materials that were mixed. First, cashew nut and soybean oils were mixed with white mineral oil. And second, different plant extracts were mixed with white mineral oil. At first experiment, inclusion levels of mixed oil on diet (0.03%, 0.1%, 0.5%) were applied as variables. A coated diet was fermented with rumen inoculum according to in vitro rumen fermentation and its parameters were investigated. In the result of first experiment, no negative effects on rumen pH were found. Significantly decreased dry matter digestibility was detected at 0.5% treatment (P<0.05). Total gas productions in control and 0.03% were significantly greater than those of others (P<0.05). Significantly reduced methane productions were found in all treatments compared to the control (P<0.05). Inclusion of mixed oil did not affect on ammonia production. Total volatile fatty acid production was also not influenced by coating with mixed oils. Rumen fermentation parameters were greatly changed according to introduced plant extracts at second experiment. The significantly lowest and greatest ammonia productions were found at treatments with Ixeris dentata and Plantago asiatica, respectively (P<0.05). The significantly greatest acetate and propionate productions were detected at treatments with Crucuma longa and Zizyphus vulgaris 1, respectively (P<0.05). All treatments, except Chrysanthemum idicum, Euyale ferox seed, Moringa leaf and fruit and Zizyphus vulgaris 1, showed significantly increased total volatile fatty acid production compared to the control (P<0.05). Only Paeonia lactiflora showed significantly lesser gas production than the control (P<0.05). In methane production, Ceramium, Zizyphus, Paeonia, Agrimonia, Torilis, Mugwort, Foeniculum, Euphorbia, Taraxacum, Artemisia, Momordica, Curcuma and Moringa reduced methane significantly compared to the control (P<0.05).
The solid and protein yields and extraction properties of color pigments were compared for 7 varieties of soybeans during soaking in water at $4-100^{\circ}C$. The varieties investigated were Paldal, Danyeob, Jangbaek, Baegun, Jangyeob and 2 cultivars of Local 1 and Local 2. The Hunter values showed that Jangbaek was the highest in 'L' value while other varieties except Local 1 and Local 2 were comparatively high in 'L' value. Local 1 and Local 2 were low in 'b' value. The yields of solid and protein during water extraction showed that most of solids and proteins were recovered with three consecutive extractions. The cumulated yields were 73.2 % for solid and 83.2 % for protein. Extraction of color pigments of seed coats in $4-100^{\circ}C$ water showed that the extraction rate was very much dependent on extraction time and temperature. A linear relationship of A=aT+b was obtained for equilibrated absorbance(A) and extraction temperature(T). The activation energy calculated from initial extraction rate of cole. pigments and temperature had two different values of low($4-60^{\circ}C$) and high($60-100^{\circ}C$) temperature range.
BACKGROUND/OBJECTIVES: The aim of this study was to estimate average total fat and fatty acid intakes as well as identify major food sources using data from the Korea National Health and Nutrition Examination Survey (KNHANES) VI-1 (2013). SUBJECTS/METHODS: Total fat and fatty acid intakes were estimated using 24-hour dietary recall data on 7,048 participants aged ${\geq}3years$ from the KNHANES VI-1 (2013). Data included total fat, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), n-3 fatty acid (n-3 FA), and n-6 fatty acid (n-6 FA) levels. Population means and standard errors of the mean were weighted in order to produce national estimates and separated based on sex, age, income, as well as residential region. Major food sources of fat, SFA, MUFA, PUFA, n-3 FA, and n-6 FA were identified based on mean consumption amounts of fat and fatty acids in each food. RESULTS: The mean intake of total fat was 48.0 g while mean intakes of SFA, MUFA, PUFA, n-3 FA, and n-6 FA were 14.4 g, 15.3 g, 11.6 g, 1.6 g, and 10.1 g, respectively. Intakes of MUFA and SFA were each higher than that of PUFA in all age groups. Pork was the major source of total fat, SFA, and MUFA, and soybean oil was the major source of PUFA. Milk and pork were major sources of SFA in subjects aged 3-11 years and ${\geq}12years$, respectively. Perilla seed oil and soybean oil were main sources of n-3 FA in subjects aged ${\geq}50years$ and aged < 50 years, respectively. CONCLUSIONS: Estimation of mean fatty acid intakes of this study using nationally represented samples of the Korean population could be useful for developing and evaluating national nutritional policies.
Crimson clover (Trifolium incarnatum), hairy vetch (Vicia villosa) and rye (Secale cereale) are common leguminous cover crops. Because they contain water-soluble allelopathic substances that show a variable level in tissue depending on growth stage of the plants, the weed inhibition effects are dependent on the growth stage of cover crops. This study investigated the allelopathic effects of crimson clover, hairy vetch and rye on soybean, radish, oilseed rape and lettuce seeds germination and seedling growth. We used extract that were prepared from the shoots of crimson clover, hairy vetch and rye at different growth stages, vegetative growth stage, flowering stage, and fruiting stage. Applications of aqueous extracts from three growth stage of cover crops strongly affected to oilseed rape and lettuce seeds germination but the treatment resulted in a slight inhibition of the germination in soybean and radish. Radical length was more sensitive to aqueous extracts than seed germination rate. Especially, three cover crops extracts at vegetative growth stage highly inhibited seedling root growth of oilseed rape and lettuce by over 80% and 90% respectively. Furthermore, the $GR_{50}$ values were lowest in the treatment of extracts from vegetative growth stage and the level of phenolics was decreased by the order of vegetative growth stage, flowering stage and fruiting stage.
Optimum plot shape and size in a uniformity trial in the newly founded experimental farm of KAERI were determined for seed yield with the basic units consisted of 2.5m $\times$ 0.6m plot. Various plot sizes and shapes were made by combination of the basic units. Coefficients of variations for yield were 21% in local branch type variety Kumkang-Dairip and 20% in the introduced branchless type variety Clark. This result indicates that the field in the new experimental farm is appropriate for soybean yield trials when adequate number of replications are employed in the field experiment. In general, C. V. values were gradually decreased with increase of plot sizes. Although the data were not consistant, the errors for the long narrow plots tend to have somewhat smaller than for the square shape plots. A sharp decrease in C.V. value was found from the $4.5\textrm{m}^2$ plot in the variety Kumkang-Dairip and from the $6\textrm{m}^2$ plot in the variety Clark. These results imply that 5-$6\textrm{m}^2$ plot could be used for yield trials in early generations of hybrid progenies. 2.5-5m long plot with 3-4 replications will be practical for yield trials in the early hybrid generations. The C.V. values with 7.5m long plot was about 16% in both varieties and 15.3% in 10m plot. These results indicate that 7.5-10m plot with 3-4 replications could be employed in accurate yield test in the advanced generations.
The variations of asparagine and aspartic acid contents among the soybean varieties and in the different parts of soybean sprout after the different durations of storage were investigated. Asparagine and aspartic acid are known to have the detoxifying effects on acetaldehyde, which is highly toxic metabolites in the process of alcohol metabolism in the human body. The contents of asparagine and aspartic acid of beansprout showed continuosuly increasing trends along with the days to cultivation with a great varietal difference, especially in the roots. The duration of seed storage did not affect contents of asparagine content; the longer storage decreased aspartic acid content remarkably.
