Determination of Quality Index Components in High-Acidity Cider Vinegar Produced by Two-Stage Fermentation (2단계 발효로 제조된 고산도 사과식초의 품질지표성분 설정)

  • In this study, high-acidity cider vinegar (HACV) was produced by alcoholic and acetic acid fermentation of apple concentrate without any nutrients and then the optimum alcohol concentration was determined through a qualitative study. HACV was fermented with different initial alcohol concentrations (6-9%) during the process of acetic acid fermentation. The highest content of reducing sugar, organic acids, and free amino acids was observed at 6% of initial alcohol concentration. Approximately 20 types of volatile compounds were identified by solid-phase microextraction (SPME) and GC-MS. The total volatile content was the highest at 6% of initial alcohol concentration, and the acid content was the lowest at 9% of the initial alcohol concentration. The HACV produced by a two-stage fermentation process was qualitatively better than commercial HACV presenting the highest value at 6% of initial alcohol concentration. Malic acid, aspartic acid, and hexyl acetate were selected as quality index components of HACV production by two-stage fermentation on the basis of correlation between their physicochemical properties and the sensory attributes of HACV.

Comparison of Various Cooked Wheat Noodles from Four Countries in Terms of Texture and Sensory Characteristics (4개국 밀가루 국수의 품질 특성 및 소비자 기호 비교 연구)

  • This study compared the texture characteristics and consumer acceptance of cooked wheat noodles produced in four countries, which were Korea, Japan, China, and Italy. Noodle types were selected after FGI (focus group interview). Eleven noodles were studied, and they were categorized into four types: udon, fried udon, oriental noodles of various thickness, and pasta. Color was measured as L (lightness), a (redness), and b (yellowness) values using a colorimeter. Lightness decreased when noodles were cooked, whereas redness and yellowness of cooked noodles were unchanged. Texture properties of wheat noodles in terms of hardness, springiness, cohesiveness, and chewiness were measured using the Rheometer. Italian spaghetti (spgt_IL), Korean fried udon (yk_udng_KR) had highest values for hardness. Korean udon had the highest value for springiness, whereas Chinese medium noodle (mid_CN) had the lowest value (p<0.05). Chinese thick noodle (thick_CN) and fettuccine (fettc_IL) showed lower hardness but higher springiness. Cohesiveness was significantly higher for Japanese udon (udng_JP), Chinese medium noodle (mid_CN), and Chinese thick noodle (thick_CN), whereas values for Korean thin noodle (thin_KR) and Korean fried noodle (yk_udng_KR) were significantly low (p<0.05). Spaghetti (spgt_IL) showed significantly high values for chewiness (p<0.05). For overall acceptability, thick Korean noodle showed the highest score with a level of 'slightly like'. Taste and texture attributes were highest among all noodles, and its high scores for chewiness and smoothness might contribute to its overall acceptance. Korean thick noodle, Korean udon, and Japanese udon were not significantly different from Korean or Japanese thin noodles. Japanese fried noodle (yk_udng_JP) showed the lowest acceptance among noodles in terms of color, flavor, taste, and texture. Chinese thick and medium noodles showed lower scores for overall acceptability, whereas chewiness was not significantly different from other noodles. Spaghetti and fettuccine showed lower scores in terms of overall acceptability, taste, texture, springiness, and chewiness.

  • The purpose of this study is to investigate the antecedent variables of customer citizenship behavior selected by a social exchange point of view on the Boryeong Mud Festival. Of all the questionnaires collected, 239 were included in the analysis which was performed using SPSS. Date analysis method used to frequency analysis, factor analysis, reliability analysis and canonical correlation analysis. As the results of the canonical correlation analysis between the customer citizenship behavior and the social exchange point of view, there was a significant relationship between the attributes of customer citizenship behavior - loyalty, cooperation, Participation and social exchange point of view - customer satisfaction, customer confidence, perceived support of customers, justice perception. Therefore, marketing practitioner should recognize the importance of customer's perception in the service circumstance and make a managerial effort to offer the best service to customer. The result of this paper may help local festival planner and marketers for festival marketing strategy.

  • In Regarding urban geo-spatial information visualization in this study, visualization of physical attribute information is mostly related to the representation of spatial domain and physical objects, and visualization of non-physical attribute information has to do with visualizing citizens and their activity information in the physical environment. In particular, a citizen, one of the non-physical information attributes, is characterized by a constant mobility in the physical environment, and thus visualization of his/her activity information is vital in conveying information because this information may not be depicted with any given, fixed figures. In consideration of this difficulty, this study integrates interrelationship among urban space, human needs, social relations, and lifestyles into a 'high-tech' service where experience in time and space is possible. To analyze the web-service and visualization cases, the study has selected visualization indicators consisting of information representation objective, information representation means, and information representation result. The results of the case analysis through specific indicators set a range in information representation objective, means, and result, thereby forming a user-friendly environment in which representational results are readily available to users, and ultimately expanding the users' selection range coming with a variety of options. This study also assumes that a wide range of service provision is needed to reflect users' needs in developing urban geo-spatial service model, and the display of its results should visualize users' satisfaction to construct the best information needed to users.

Using Spatial Data and Land Surface Modeling to Monitor Evapotranspiration across Geographic Areas in South Korea (공간자료와 지면모형을 이용한 면적증발산 추정)

  • Evapotranspiration (ET) is a critical component of the hydrologic cycle which influences economic activities as well as the natural ecosystem. While there have been numerous studies on ET estimation for homogeneous areas using point measurements of meteorological variables, monitoring of spatial ET has not been possible at landscape - or watershed - scales. We propose a site-specific application of the land surface model, which is enabled by spatially interpolated input data at the desired resolution. Gyunggi Province of South Korea was divided into a regular grid of 10 million cells with 30m spacing and hourly temperature, humidity, wind, precipitation and solar irradiance were estimated for each grid cell by spatial interpolation of synoptic weather data. Topoclimatology models were used to accommodate effects of topography in a spatial interpolation procedure, including cold air drainage on nocturnal temperature and solar irradiance on daytime temperature. Satellite remote sensing data were used to classify the vegetation type of each grid cell, and corresponding spatial attributes including soil texture, canopy structure, and phenological features were identified. All data were fed into a standalone version of SiB2(Simple Biosphere Model 2) to simulate latent heat flux at each grid cell. A computer program was written for data management in the cell - based SiB2 operation such as extracting input data for SiB2 from grid matrices and recombining the output data back to the grid format. ET estimates at selected grid cells were validated against the actual measurement of latent heat fluxes by eddy covariance measurement. We applied this system to obtain the spatial ET of the study area on a continuous basis for the 2001-2003 period. The results showed a strong feasibility of using spatial - data driven land surface models for operational monitoring of regional ET.

Assessment of Root-Associated Paenibacillus polymyxa Groups on Growth Promotion and Induced Systemic Resistance in Pepper

  • Twenty-nine P. polymyxa strains isolated from rhizospheres of various crops were clustered into five genotypic groups on the basis of BOX-PCR analysis. The characteristics of several plant growth-promoting factors among the isolates revealed the distinct attributes in each allocated group. Under gnotobiotic conditions, inoculation of pepper roots with P. polymyxa isolates significantly increased the biomass in 17 of total 29 treated plants with untreated plants. Experiments on induced systemic resistance (ISR) against bacterial spot pathogen Xanthomonas axonopodis pv. vesicatoria in pepper by P. polymyxa strains were conducted and only one isolate (KNUC265) was selected. Further studies into ISR mediation by the KNUC265 strain against the soft-rot pathogen Erwinia carotovora subsp. carotovora in tobacco demonstrated that the tobacco seedlings exposed to either bacterial volatiles or diffusible metabolites exhibited a reduction in disease severity. In conclusion, ISR and plant growth promotion triggered by P. polymyxa isolates were systemically investigated on pepper for the first time. The P. polymyxa KNUC265 strain, which elicited both ISR and plant growth promotion, could be potentially used in improving the yield of pepper and possibly of other crops.

Analysis on the Characteristics of Government-dominant and Non-governmental Food Bank Programs from the Operators' Perspective (정부주도형 및 민간주도형 푸드뱅크(Food Bank) 사업의 운영 형태 및 특성 분석)

  • The objectives of this study were to: (a) examine the overall operating conditions of both government-dominant and non-governmental food bank programs, (b) understand the operational management attributes on the target based on IPA (importance performance analysis) (c) analyze the present status of donating management, and (d) suggest a direction based on the analysis of advantages and disadvantages of food banks in each part. The random samples of 120 food bank operators were selected by a proportionate stratified random sampling method. A total of 60 government-dominant food banks and 25 non-governmental food banks were analyzed. The main results of this study were as follows: Accord-ing to the Importance-Performance Analysis of operational management, 'assistance for operating funds' and 'deployment of experience staff' were placed at 'Focus Here'. There was a great shortage of experienced staff with food bank-specific knowledge. The average number of the government-dominant and non-governmental food bank program employees was 0.29 and 0.30 respectively, while the ratios of employees with other jobs were 0.96 and 0.83 respectively. Shortages of refrigeration facilities were an area that needs to be addressed. While 51.6% of donated food required cold storage, only 45% of government-dominant and 60% of non-governmental food bank programs had refrigeration facilities. Most of food bank operators (96.3%) were required to visit the donators' locations to pick up the donated foods. And the foods were distributed to the people in need, especially to the livelihood protectee.

A Study on the Development of the Korean Family Resilience Scale (한국가족의 기능 회복력 측정도구 개발 연구 - 만성질환아 가족을 대상으로 -)

  • The purpose of this study was to develop an instrument to measure family resilience for Korean families with a chronically ill child, and to test the validity and reliability of the instrument. Method: The items of instruments used based on the researchers' previous study of concept analysis of Korean family resilience. Nineteen item scales were developed with five domains. In order to test reliability and validity of the scale, data were collected from 231 families, who had a child with a chronic illness. Data was collected between August and September of 2001 in a 3rd level University Hospital in Seoul, Korea. Result: The results were as follows: As a result of the item analysis, 19 items were selected from the total of 37 items, excluding items with low correlation with the total scale. Five factors were evolved by factor analysis, which explained 56.4% of the total variance. The first factor 'Family strength' explained 28.5%, 2nd factor 'Family maturity' 8.7%, 3rd factor 'The ability to use of external resources' 7.0%, 4th factor 'Control' 6.6%, 5th factor 'The driving force for finance' 5.7%. The attributes in these factors were different with those identified by concept analysis of the family resilience in Korean families from the previous study. Cronbach's $\alpha$ coefficient of this scale was .8039 and Guttman spilt- half coefficient was .8184. Conclusion: The study support the reliability and validity of the scale. Because the main concept of family resilience was family strength, there were distinct differences in dimensions of family functioning scales.

  • The application field of OSS is being expanded farther and the existing studies are well established theoretically but not actually widely used. Because so many criteria and complexity of selection methods result in low efficiency and not proper for use. In this master's thesis, to solve these problems I propose a selecting technique for OSS with less criteria, which is more effective and easy to use than before. Based on the existing studies, we identify assessment criteria which common used and redefine 14 evaluation attributes as well as 31 assessment criteria through elimination and grouping. And evaluate the criteria in four steps such as Initial assessment, Functional assessment, Characteristical assessment and Supplemental assessment. To evaluate the adequacy of suggested technique, 29 database management tools for MySQL are selected as candidates, and applied to the technique I proposed. As the result, time and effort for evaluation is reduced sharply and we can use this technique more easily.

The Characteristics of Black Culture Inherent in the American Casual Fashion Design (흑인 문화의 특수성을 내재한 미국의 캐주얼 패션디자인 특성)

  • This study aims to identify the elements of black culture and use it to analyze the formative characteristics of casual fashion items as well as the symbolic meanings presented in the graphic designs of the items. First of all, in order to distinguish the identity of black culture, this study made a division into racial, social, and artistic aspects based on cultural specificities of Stuart Hall, a culture theorist. This was for a theoretical review and based on this review, a theoretical framework was developed to analyze the characteristics of American casual fashion design of black people. The case study selected 1719 fashion images of 137 male brands and 33 female brands from websites of companies manufacturing casual wear of black people in America. The following is a summary of the study results. The conceptual characteristics based on specificities of black culture can be categorized into ten attributes: playfulness in order to digest human grief and emotion positively, satire of the mainstream society, spontaneity through emotional expression from the heart, abstractness of various emotions elating suffering, humor trying to express negative aspects as the meaning of light and innocent laughter, dependence with passive attitudes toward discrimination and master-slave relationships in history, resistance against discrimination and disadvantages, African orientation and primitiveness pursuing natural conditions, aggressiveness against violence and unfair treatment, and confidence and defiance against social deprivation and corruption. Based on the results of an analysis through formative classification system founded on racial, social, and artistic aspects of black people, specificities of black culture are of formative characteristics of their casual fashion design. These elements are presented on graphic t-shirts through strong colors, loose silhouette, and details with many pockets. These characteristics were reflected in symbolic meanings presented in the graphic.
