패스트푸드 식당이용자의 식사행동에 관한 실태조사연구 (A Survey of Fast Food Ding out Behaviors)

  • A survey was conducted of 1,454 customers to investigate dining out behaviors at fast food restaurants of Youido department compound, Myung-dong and Gang-nam district in Seoul, in April, 1988. The results are summarized as follows; The majority, 85% of customers, were aged 14 to 30, consisting of junior and senior high school children, college students and company employees. The reasons given by customers for patronizing fast food restaurants were the following, from most to least frequent; "convenient to dining," "the adequate place for the companionship", "the surroundings and dining equipment are pleasant and hygienic", "to be able to stay as long as I want". The fast foods purchased by the customers were mostly for a between meal snack or ice cream or drink rather than a full meal. The majority of the customers ate the purchased foods at the fast food restaurnats. However, a limited number of female customers preferred to take the packed fast foods to their homes. Tast Preference was a major factor in food selection from available food items. Ice cream, juice, French fried potatoes, salad, fried chicken, rolled rice with laver, and coke were high on the list of liked foods; in constrast, lower preference was for porridge, fish burger, doughnut, chicken burger and rice cake. Preference by food nationality was highest for Korean food, then Western food, Chinese food, Italian food and Japanse food, in that order. Customers offered suggestions for better fast food service, such as lowering the price, greater variety in the menu, increasing the propotion of vegetables and fruits on the fast food menu adn developing fast foods from traditional Korean foods. The customers, in particular, emphasized a need for the development of Korean traditional beverage of malted drink and persimmon punch, as well as mungbean pan cakes and sweet-spicy rice noodles(docbokki), as fast foods.y rice noodles(docbokki), as fast foods.

Work Sectors with High Risk for Work-Related Musculoskeletal Disorders in Korean Men and Women

  • Background: To identify work sectors with high risk for work-related musculoskeletal disorders (MSDs) in Korean men and women. Methods: We analyzed nationwide data to identify ergonomic risk factors in Korean employees. In particular, we analyzed data on exposure to five ergonomic risk factors (painful/tiring postures, lifting/moving heavy materials, standing/walking, repetitive hand/arm movements, and hand/arm vibration) according to employment sector, sex, and age, using the 2014 Fourth Korean Working Conditions Survey. We also used workers' compensation data on work-related MSDs in 2010, which is available by sex. Results: The different work sectors had different gender distributions. "Manufacturing" (27.7%) and "construction" (11.3%) were dominated by males, whereas "human health and social work activities" (12.4%), "hotel and restaurants" (11.7%), and "education" (10.4%) were dominated by females. However, "wholesale and retail trade" and "public administration and defense" employed large numbers of males and females. Furthermore, the work sectors with a greater proportion of work-related MSDs and with multiple ergonomic risk factors were different for men and women. For men, "construction" and "manufacturing" had the highest risk for work-related MSDs; for women, "hotel and restaurants" had the highest risk for work-related MSDs. Conclusion: Ergonomic interventions for workers should consider gender and should focus on work sectors with high risk for MSDs, with multiple ergonomic risk factors, and with the largest number of workers.

외식기업의 멘토링 기능이 조직몰입에 미치는 영향 - 상사신뢰의 매개효과를 중심으로 - (The Effect of Mentoring Functions in Foodservice Company on Organizational Commitment - Focused on Mediating Effect of Trust toward Supervisor -)

  • The aim of this study was to better understand the factors of the mentoring function in the foodservice industry that improve the organizational commitment of subordinates, and to asses the roles that trust towards supervisors play in the relationship between the mentoring and organizational commitment. A survey was of subordinates who were conducting the mentoring in foodservice companies (hotels, family restaurants) located in Seoul and Gyeonggi area was conducted from May 1 to May 30, 2008. The questionnaires were distributed to 400 employees in 50 restaurants and, 341 of them were received and a total of 320 were finally analyzed. The results were as follows. First, the effect of mentoring functions on the organizational commitment of subordinates indicated that the career developing function and psychosocial function had a significant positive effect on the emotional commitment and normative commitment (p<.01), and the career developing function, psychosocial function and role modeling function had a significant positive effect on the enduring commitment (p<.01). Second, the mediating roles of supervisory trust in the relationship between mentoring functions and organizational commitment of subordinates indicated that supervisory trust mediated the relationship between the career developing function of the mentoring functions, and enduring commitment and normative commitment in addition, it met the mediating requirements in terms of the relationship between the role modeling function, and the emotional commitment, enduring commitment and normative commitment. Consequently, the high career developing function, psychosocial function and role modeling function in mentoring raised the level of organizational commitment;thus, the mentoring system should used as on of the mentoring functions in the foodservice industry and mentoring functions should be also established.

경영자의 인적자원관리에 따른 고객만족, 고객충성도 그리고 재무성과의 관계에 관한 연구: 한식당을 중심으로 (A Study on the Relationships among an Executive's Human Resources Management, Customer Satisfaction, Customer Loyalty, and Financial Performance: Focusing on Korean Traditional Restaurants)

  • 본 연구의 목적은 한식당 경영자의 인적자원관리수행 수준에 따라서 고객만족(제품만족, 서비스만족)과 고객충성도에 어떠한 차이가 있는지 살펴보고, 고객만족이 고객충성도에 어떠한 영향을 미치는지 살펴보고자 하였다. 또한, 고객충성도와 재무성과 간의 어떠한 연관성이 있는지 살펴보고, 경영자의 인적자원관리와 재무성과 간의 어떠한 연관성이 있는지 살펴보는 것이다. 조사기간은 2012년 1월 2일부터 1월 17일까지 15일 동안 점심시간과 저녁시간에 진행되었다. 객단가 12,000원 이상의 대구, 경북지역 15개 한식당을 대상으로 실시하였고, 경영자 15부와 고객 336부가 최종분석에 사용되었다. 분석결과, 한식당 경영자의 신규직원교육 및 합리적인보상에 대한 인적자원관리수행 수준이 높은 경우 고객들이 지각하는 제품만족과 서비스만족수준이 유의하게 높은 것으로 나타났고, 신규직원채용, 신규직원교육, 업무성과평가에 대한 인적자원관리수행 수준이 높은 경우 고객들이 지각하는 충성도의 수준이 유의하게 높은 것으로 나타났다. 또한, 제품만족과 서비스만족은 고객충성도의 유의한 영향을 미치는 것으로 나타났으며, 충성도와 재무성과는 유의한 관련성이 있는 것으로 나타났다. 아울러 경영자의 인적자원관리와 재무성과 간에도 유의한 관련성이 있는 것으로 나타났다.

레스토랑의 친환경 기능성 인덕션이 이용자 만족과 재구매 의도에 미치는 영향 (The effect of restaurant's eco friendly inductions on the user's satisfaction and the repurchase intention)

  • 본 연구는 최첨단 친환경의 인덕션 렌지를 매립한 음식점 테이블의 인덕션 서비스스케이프와 이용자 만족 및 재구매 의도의 영향관계에 대한 선행연구의 내용을 바탕으로 연구모형을 설계하고, 변수들 간의 영향관계를 분석하였다. 본 논문의 주요 분석결과는 다음과 같다. 조사 대상자의 인구 통계학적 특성으로서 남성 응답자가 104명, 여성 응답자가 106명으로, 남·여의 비율이 거의 비슷하게 참여하였으며, 응답자들의 직급 및 직책으로는 레스토랑 대표가 68명, 레스토랑 운영자 혹은 관리자가 142명이었다. 인덕션 렌지를 매립한 음식점들의 종업원 숫자 또한 5명 이상의 음식점이 62.4%로 나타나 일반 음식점 평균(2.8명) 보다 대형매장의 형태로 확실히 구분되어 나타났다. 회귀분석에 의한 가설 검증결과 ①레스토랑의 친환경 기능 인덕션 서비스스케이프가 이용자 만족에 유의한 영향을 미치는 것으로 나타났으며, ②레스토랑의 친환경 기능 인덕션 서비스스케이프가 재구매 의도에 유의한 영향을 미치는 것으로 나타났고, ③레스토랑의 친환경 기능의 인덕션을 매립한 음식점운영·관리자의 만족이 재구매 의도에 유의한 영향을 미치는 것으로 나타나 본 연구에서 제시되었던 가설은 채택 되었다.

진주시 직장인의 성별 연령별 외식 선택과 선호도 (Restaurant Food Choice and Preferences of Salaried Employees in JinJu Classified by Age and Gender)

  • A total of 321 salaried employees were surveyed by questionnaires during September and October 2001 in order to investigate the bases for their choices between 26 popular menu items in JinJu restaurants. The subjects were aged 20 to 61 years, and were classified into 3 age groups (ages 20-29, 30-39, and over 40) and 2 gender groups. The data were analyzed using the SAS program for factor analysis. The results of this study were as follows: 1) The 26 popular menu items were classified into 6 factors by the 20-29 age group, into 5 factors by the 30-39 age group, and into 3 factors by the over 40 age group. The younger age group had the more numbers of factor which act as choice criteria of restaurant foods according to the purpose of eating out. 2) Because subjects classified steak and fast food into the same factor named 'new generation's food', we found that steak was an unfamiliar food for most of them, 3) The 20-29 age group had an aversion to Boshintang(dog soup), while the 30-39 age group and the over 40 age group liked Boshintang as a stamina food. 4) The over 40 age group, and men in all age groups, didn't choose Buffet and Shabushabu as a dinner food because they had negative attitudes toward novel or unfamiliar foods. 5) Women distinguished between a factor called 'social drink and party food' from a facor called 'dinner food', while men integrated the factor of 'dinner food' into the factor of 'social drink and party food' 6) Men preferred Samgyetang (chicken stew with ginseng) and Yangnyeumtongdak (spicy fried chicken) as a 'social drink and party food', while women preferred Dwaejibossam (boiled pork and kimchi) and Beef Bulgogi. In conclusion, most of subjects did not recognize fast food and steak as a meal, which were introduced recently in JinJu. The choice criteria and preferences of restaurant foods were different from the age and gender groups. The over 40 age group, and men in all age groups, had more negative attitudes toward novel or unfamiliar foods than the younger age and women groups.(Korean J. Nutrition 35(9) : 996~1006, 2002)

소규모 외식업체 경영주의 변혁적 리더십이 TMX와 조직시민행동에 미치는 영향관계: 성별조절효과 (The Influencing Relationship of Transformational Leadership of TMX, Organization Citizenship Behavior: Moderating Effect of Gender)

  • 본 연구는 부산에 거주하는 소규모 외식업체 경영주들의 변혁적 리더십이 TMX 및 조직시민 행동 간의 영향관계에서 성별의 조절효과를 검정하였다. 연구의 목적을 달성하기 위하여 통계프로그램 SPSS(V 21.0)와 AMOS(V 18.0) 프로그램을 사용하여 도출된 요인 간 구조방정식 모형(Structural Equation Modeling)을 사용하여 전체모형의 접합도 및 유기적인 인과 관계와 성별의 조절효과를 검정하였다. 검정결과, 소규모외식업체 경영주들의 변혁적 리더십은 TMX에, TMX는 조직시민행동에 모두 유의한 인과관계가 확인되었고, 성별의 조절효과는 지적자극이 팀멤버(TMX)에 미치는 영향과 TMX가 조직시민행동과의 인과관계에서 조절효과를 확인할 수 있었다. 이와 같은 결과는 소규모 외식업체 경영주들이 변혁적 리더십으로 팀 구성원들과 자유로운 소통을 통한 리더십을 발휘할 수 있다면 업장의 발전에 도움이 된다는 시사점을 제시하고 있다. 또한, 성별의 조절효과를 검정한 결과 지적자극이 TMX에, TMX가 조직시민행도에 조절효과를 나타내었다. 이는 남녀 성별에 따라서 지적자극과 TMX가 조직시민행동에 미치는 영향의 강도가 다르다는 것을 시사하고 있다.

대구지역 대형 식품접객업소 조리기기 및 환경에 대한 미생물학적 위해분석 (Evaluation of Microbiological Hazard of Cooking Utensils and Environment of Large Foodservice Establishments in Daegu city)

  • 대구지역 대형식품접객업소 한식, 양식, 일식, 중식 각 3곳씩 12개 업소를 대상으로 조리기기 및 용기(칼, 도마, 행주, 집게, 바구니 등),조리종사자 손 및 조리 작업환경에 대한 미생물학적 위해를 분석하였다. 일부 한식당 조리수와 음용수의 일반세균 및 대장군균수가 $10^5\;CFU/mL,\;10^2{\sim}10^3\;CFU/mL$범위로 검출되어 기준치에 부적합하였다. 특히 끓여서 식힌 보리차를 제공할 경우 음용수에 대한 미생물적 수치가 높은 것으로 나타났으며, 일부 양식당과 일식당의 음용수도 기준치에 부적합하였다. 모든 유형의 업소에서 대부분의 조리기구의 일반세균 및 대장균군수가 기준치인 $2.5{\times}10^3\;CFU/100cm^2,\;1.0{\times}10^1\;CFU/100cm^2$를 초과하여 위생상태가 매우 불량한 것으로 나타났다. 특히 일부 중식당의 칼, 도마에서 E. coli가 $10^1{\sim}10^2\;CFU/100cm^2$ 검출되어 이에 대한 시정조치가 필요하였다. 대부분 업소에서 맨손으로 작업하였으며 조리종사자의 손의 일반세균 수 범위는 $10^2{\sim}10^7/hand$, 대장균군의 범위는 $0{\sim}10^6/hand$로 그 수치가 높아 손에 의한 음식물의 오염 위험도가 높은 것으로 나타났다. 또한 일부 한식당 조리종사자 손에서 황색포도상구균이 $1.3{\times}10^3/hand$로 검출되어 조리종사자의 손의 위생상태가 불량한 것으로 조사되었다. 작업대와 주방에서의 일반세균 및 진균의 공중낙하균이 최고 52 CFU/plate/10 min, 19 CFU/plate/10 min로 검출되어 작업환경 오염도가 높았으며 일부 업소에서는 냉장고 내의 공중부유물 오염도 또한 높은 것으로 나타나 식품접객업소의 작업환경에 대한 전반적인 개선이 요구되었다.

패스트 푸드의 외식행동(外食行動)에 관한 2차(次) 실태조사(實態調査) -여의도(汝矣島) 지역(地域)을 중심(中心)으로- (A Secondary Survey of Fast Food Dining out Behaviours -Focused on Youido Apartment Compound in Seoul-)

  • A secondary survey was conducted of 503 customers, to investigate eating out behaviours at five fast food restaurants of Youido apartment compound in Seoul, in April of 1988. The results are summarized as follows: The majority, 84% of customers, were aged 14 to 30, consisting of junior and senior high school children, college students and company employees. In contrast to the previous survey of 1986, in which no elderly customers were found, a small number of elderly customers were observed in this study. The reasons given by customers for patronizing fast food restaurants were the following, from most to least frequent: 'convenient', 'allows for companionship', 'the pleasant place to eat', 'dining equipment and tableware are hygienic', 'to be able to stay as long as I want', and 'foods rapidly served'. Only 24.2% of the customers purchased the fast foods for a full meal, 38.3% purchased the foods for snacking, and others purchased ice cream only or drink only. The majority of the customers ate the purchased foods at the fast food restaurants. However, a limited number of female customers preferred to take the packed fast foods to their homes. Taste preference was a major factor in food selection from available menu items, among the younger customers; whereas customers over 30 years old were concerned with nutritive balance. Fried chicken, pizza, rolled rice with laver, ice cream, and juice were high on the list of liked foods; in contrast, lower preference was for fish burger, doughnut, spaghetti, Chajang noodles and chili beans. The survey discovered that the preference for fried chicken, pizza, and salad had increased compared to the previous survey of 1986. Preference by food nationality was highest for Korean food, then Western food, Chinese food, and Japanese food, in that order. Customers offered suggestions for better fast food service, such as lowering the price; greater variety in the menu; developing fast foods from the traditional Korean foods; and increasing the proportion of vegetables and fruits on the fast food menu. The customers, in particular, emphasized a need for the development of Korean traditional beverage of malt drink and persimmon punch, as well as mungbean pan cakes and sweet- spicy rice noodles (docbokki), as fast foods.

지역 축제와 연계한 향토 음식 개발 방안 - 함평 "나비축제"를 중심으로 - (Development of Native Local Foods Associated with Regional Festival - Focused on Hampyeong "Butterfly Festival" -)

  • This study was conducted to provide the information necessary for the development of native local foods associated with the "2008 World Insect Festival in Hampyeong" and to contribute to the efforts to market the festival as tourist attraction and increase the income of the local community. To assess the local foods and restaurants, we investigated the principal products, inclination for sightseeing and recognition of the "Butterfly festival" by distributing questionnaires to local restaurant operators, employees and general tourists. The result was as follows: 1. The general tourists chose scenery as the most important factor in a sightseeing tour, followed by food, lodging, and transportation. 2. The tourists enjoyed eating native local foods, and they indicated that the taste was important. 3. Regarding the cost of food, 53.6% of the respondents answer that 10 to 20 thousand won was a resonable price, and they also reported wanting to eat seafood in Hampyeong. Thus the Menu of seafood to be served at the Hampyeong festival needs to be developed first followed by that of the healthy food. This result showed that individuals prefer fish to meat and healthy food to high-calorie foods.
