한국인의 연령.성별 따른 외식행동 비교 (A Comparative Study on Korean's Dining-Out Behaviors Classified by Age and Gender)

  • In this paper, Korean's dining-out behaviors were compared and investigated according to gender and age. The change and the problem of dietary pattern in Korea were understood and we intend to provide the basic information for guidelines of Korean's dietary habits. The subjects are composed of 46.5% male and 53.5% female. According to age, groups aged $10{\sim}19$ are 26.3%, 20's are 24.6%, 30's are 16.8%, 40's are 18.7%, and 50 and over age group is 13.6%. All of the age groups ate out for celebration of a special day or for social purposes. When dining-out, the most important criteria for selecting a restaurant was the taste of food. All age groups liked Korean-style restaurants the most. All age group eat a house meal at breakfast. At lunch, age groups 40 and below go to a restaurant in school or company and 50 and over age group eats house meal. In general, all age groups ate a house meal at dinner. At breakfast, all the age groups do not eat out. For lunch, they eat out four or five times a week. For dinner, the most of age groups except the 20's eat out two or three times a month and for the 20's age group, two or three times a week. The reason for selecting a Korean-style restaurant is that the food is 'well matched with one's appetite'. According to the above results, the dietary habits of 30 and over age groups are relatively good. On the other hand, in 10's and 20's age groups, they have an irregular meal and the ratio of skipping a meal is high. And they frequently use fast-food restaurants. In the future, the unbalance of nutrition in these age groups is expected. Therefore, the correct nutritional facts should be educated so that these age groups have a healthy dietary habit.

서울지역 음식점 주방 및 식당의 청결도 평가 (Evaluation for Cleanness of Kitchen and Hall of Restaurants in Seoul)

  • 서울특별시 25개 자치구에서 추천한 모범음식점 546개소 중 업태별로 한식(292개소), 중식(46개소), 일식(114개소), 양식(94개소) 음식점의 식당 및 주방의 청결도를 영양사 실무 경력 5년 이상인 현직 영양사가 직접 방문 평가하였다. 평가 항목 및 지표는 주방 영역이 6개 (주방의 공개 여부, 주방내부설비, 살균$.$소독, 종업원의 작업환경, 급 배수설비, 식기 및 조리기기 보관상태), 식품 취급영역 이 3개(식재료 보관상태, 식자재 창고 유지상태, 불량부정식품 사용 여부), 조리원 위생영역이 1개, 음식폐기물 처리영역이 2개(남은 음식 폐기 또는 재사용 여부, 음식폐기물 위생적 폐기정도)와 식당의 청결상태 영역 2개(식당 내부청결, 식당 집기 청결 등)로 총 14지표를 조사하였다. 1. 음식점 유형별 청결도의 결과를 보면 한식당의 청결도 14개 지표 총점은 20.65점(지표 평균 1.48 점), 중식당은 20.67점(지표평균 1.48점), 일식당은 20.75점(지표평균 1.48점), 양식당은 21.84점 (지표평균1.56점)이었다. 한식당. 중식당과 일식당의 청결도는 지표평균으로 환산하면 ‘보통’수준이었고 양식당이 이들 보다 약간 높았으나 유의적인 차이를 보이지 않았다. 또한 양식당이 모든 평가지표에서 가장 우수하였으며, 중식당은 식기 및 조리기구의 보관 상태를 제외한 모든 지표에서 가장 낮은 점수를 받았다. 한식당은 급수 및 배수설비 상태에서, 일식당은 급수 및 배수설비 상태와 식기 및 조리기구의 보관 상태에서 낮은 점수이었다. 2. 식품 취급은 냉장$.$냉동보관온도 유지(지표7)는 음식점별로 유의성은 없었으나, 식재료 창고의 유지상태(지표 8)와 불량부정식품 사용여부는 양식당과 중식당이 한식당이나 일식당보다 유의적으로 우수하였다. 3. 조리원의 위생상태는 한식당, 중식당, 일식당은 서로 유의적인 차이를 보이지 않았다. 4. 음식점 유형별 남은 반찬의 폐기 여부는 우수하였으며, 음식폐기물 처리상태에 대한 결과는 양식당과 중식당이 높았고, 한식당과 일식당은 1.56으로 유의적으로 낮았다. 5. 음식점 식당내부 청결상태 평가는 한식당이 중식당과 유의적인 차이가 없었으나 일식당이나 양식당보다는 유의적으로 낮았다. 6. 음식점 유형별 청결도에 대한 종합평가에 미치는 지표별 영향은 한식당의 경우지표 2, 12, 14, 7로, 중식당은 지표 4, 12, 2로, 일식당은 지표 4,10, 2, 7로 나타났다. 음식점 전체로 보면, 주된 지표는 4(72.6%), 11(11.4%), 6(5.3%), 13(3.4%)으로서 이들 4개 지표로서 전체의 927%를 설명할 수 있다. 7. 자치구별 평가는 모든 음식점에서 식재료 보관시설(냉장, 냉동), 불량부정식품 사용여부, 남은 반찬의 폐기, 식당상태 등에서는 비교적 양호하였으나, 주방의 청결상태, 식재료 창고의 관리 및 주방 근무직원의 위생상태는 열악하였다. 평가 지표 14개의 총 평가결과가 가장 우수한 자치구는 동작구였으며, 다음으로 서대문구, 금천구, 성동구, 마포구의 순서이었다. 나머지 20개 자치구는 모두 보통이상으로 평가되었다. 8. 음식점 업태 별로 주방과 식당의 청결도 평가에서 가장 중요한 요인은 주방의 내부설비(바닥, 벽면, 천장, 환풍기, 기구 등) 또는 주방종업원의 근무 환경(주방의 환기설비, 설치 및 쾌적한 환경상태유지)이었다. 그러나 음식점 유형에 관계없이 주방과 식당의 청결도 평가에 가장 큰 영향을 주는 인자는 주방종업원의 근무환경이었다. 우리나라의 2002년도 섭취장소별 식중독 발생현황)을 보면 총 발생건수 78건 중 29건(37.2%)이 음식점에서, 16건(20.5%)이 집단급식소에서 발생되어 음식점의 개인위생을 포함하여 청결도에 많은 문제점이 제기되고 있다. 따라서, 앞으로 한식당, 일식당 및 중식당의 경우 주방의 환기시설과 근무환경 개선이 시급히 요구된다. 또한 음식점을 대상으로 시설 위생, 개인 위생 및 식자재 위생관리를 위해서는 정기적인 위생교육과 체계적인 음식점 관리가 제도적으로 필요하다고 사료된다.

호텔 한식당의 유니폼 디자인 현황에 관한 연구 (A Study of Present Circumstance of Uniform Design for Korean Restaurant Employees in Hotels)

  • The purpose of this study was to survey the present circumstance of uniform's design and to suggest a design for employees who work for Korean restaurants in Hotels. The subject of study are 10 restaurants which are located in the first class hotels in seoul. And the period of research were 2 months between November, 2003 and December, 2003. The result of research was analyzed by various methods - which consider the frequency, percentage, T-test, crosstabs, and one-way ANOVA. The results are as follows: $1.40{\%}$ of subject adopt a general style which is not traditional style and $60{\%}$ of subject do a Han-Bok or casual Han-Bok which is traditional style. 2. About satisfaction of uniforms, $50{\%}$ of people who is wearing general style has been satisfying their uniform. And $33{\%}$ of people who is wearing traditional style has only been satisfying. 3. People prefer uniform that is made of wrinkle free fabrics and has pockets. In shape of design, they want that ankle-length of trousers, 7/8 sleeves's jackets with waist line-length, and narrow ends. They prefer that a coat has a knob button and there is a zipper in a skirt.

현대화 된 중국식 레스토랑에 나타난 전통성 표현 특성 연구 - 홍콩 소재 MT 유형(Modernized Traditional Style) 레스토랑을 중심으로 - (A Study on the Characteristics of Traditionality Expression at Modernized Chinese Restaurants - Focused on MT(Modernized Traditional) Syle Restaurants in Hong Kong -)

  • The objective of this study was to analyze the characteristics of traditionality expressions at modernized Chinese restaurant in Hong Kong. As a case study, the study examined 12 modernized Chinese restaurants in Hong Kong. The gathered data were categorized and examined according to the ways of traditionality expressions, which included reproduction, transformation, and reinterpretation of traditional components. Each of the components was measured for the amount of traditional or modernity expression on a five-point scale. The five-point scoring system put an emphasis on heritage; 1 point was given to principal modernity(modernity: 90-100% + tradition: 0-10%), 2 points were given to principal modernity + auxiliary tradition(modernity: 70-90% + tradition: 10-30%), 3 points were given to the same ratio between tradition and modernity(modernity: 40-60% + tradition: 40-60%), 4 points were given to principal tradition + auxiliary modernity(modernity: 10-30% + tradition: 70-90%), and 5 points were given to principal tradition(modernity: 0-10% + tradition: 90-100%). The analysis performed according to those criteria and methodologies led to the following findings and conclusions: Traditional components were most reproduced in the ornaments placed all over the restaurant and applied to the chirography of the restaurant logos, walls, and windows/doors in a big number. The methodology of transforming tradition was evenly applied to each of the spatial components. With the most transformations occurring to the lattices, there were many different ways to transform tradition including the partition, chirography, pattern, red lantern, furniture and ornament, and traditional materials that were turned into modern ones. Few examples of reinterpreting tradition were observed in the restaurant titles, inside floors, and ceilings, but plenty of examples were found in the walls, windows/doors, lighting, and furniture in a range of ways. Most of them reinterpreted the traditional forms and added altered patterns to them to remind customers of tradition. In short, all of the three ways of expressing tradition were actively applied to each component in an array of ways.

  • We desperately recognize from the economic situation in IMF crisis that only competive goods and serviced. It is anticipated that this difficult situation will probably be continued till 1999. Therefore, it is necessary to think over real aspects of eating=outdoors in IMF period and to provide an opportunity to confront with this crisis. Analysis a recent tendency of domestic eating-outdoors business, there appears, first of all, dual types of eating-outdoors; the one is a sort of 'Cost Sale', which provides some special menu with lowest prices, and the other is a type of 'Family Restaurant', which regards the atmosphere of the place as one of the most essential elements. Both types are getting more popular today. As the result, neither of the alternative cannot recover the current Depression. It is natural that no other conditions can compete with good tastes, fancy atmosphere, and good prices. As a matter of fact, however, it is quite difficult to run this type of bussiness adjusted the above whole conditions. Therefore owners of eating-house must decide to run either ' Cost Sale' or 'Family Restaurant' first and investigate some problems and conditions accordingly. In ane way, the owner intensively visits to some eating houses which is similar style in size and management to that of his style in size and management to that of his and look over what is good and what is bad Right after this investigation, it is efficient for he or she to improve his or her business style in size and management in a short period. It is helpful to check some complements; improvement of signboards, cleaning up of the interior, selecting suitable menu, adjusted prices, tastes, and service quality etc. Although eating-outdoors business is hard hit by IMF, We hope that it would rapidly be brisk in 2000, becaused by that time the basis of each industry would be high qualified, and rich technology would be accumulated.

TM 유형 중국식 레스토랑의 전통성 표현 특성 연구 - 홍콩에 소재한 레스토랑을 중심으로 - (A Study on the Characteristics of Traditionality Expression at TM Style Chinese Restaurants - Focused on Chinese Restaurants in Hong kong -)

As for the design attributes of the styles, the TM style, they processed a majority of the spatial components as modern or reinterpretation of traditionality, which would be easily considered to be modern without careful observation, and applied a small amount of direct reproduction or transformation, which gives out a direct hint at traditionality, to attract more attention. Many of the spatial components did not express traditionality directly, expressing it indirectly or metaphorically. Traditionality was expressed in a small number of the spatial components, thus serving as a focus or impact point in the given space.

외식업체 고객의 서비스 품질에 대한 기대도/만족도 분석 (Analysis of the Customers' Expectation and Satisfaction for Service Quality in Restaurants)

  • The effort to understand customer is essential and customer satisfaction measurement tool is needed in today's intensively competitive environment of restaurants. The objectives of this study were to measure customers' expectation and satisfaction of service quality attributes and to identify relatively important attributes for overall satisfaction in restaurants. The questionnaires were distributed to 232 customers at 78 family-style, pizza and fast food restaurants. Statistical data analysis was completed using SPSS for t-test, ANOVA, factor analysis, Pearson's correlation and regression analysis. The results of this study were as follows: 1) four and six- dimensional structures were established from 25 expectation and satisfaction attributes, respectively. 2) Demographic variables and usage characteristics didn't affect on service quality expectation, but expectations were significantly different according to the types of restaurant. 3) Expectation/satisfaction matrix showed different patterns in 3 types of restaurant. 4) 'Quality of food' and 'atmosphere' were the most relatively important attributes for overall satisfaction in restaurants.

  • This study aimed to identify efficient methods for the globalization of Korean food in Vietnam. For this, we interviewed owners of 11 Korean restaurants in Hanoi and 9 Korean restaurants in Ho Chi Minh. Due to the rapid economic development of Vietnam, the restaurant industry for the middle class has drastically increased. For the globalization of Korean food, new positioning of Korean restaurants is needed. Research has shown that Korean restaurants need to change their style of management. Although the first generation of Korean restaurant owners managed restaurants as a family business, a new professional management system is now required. Above all, it is necessary to develop and support a comprehensive food culture system in which the menu is suited to the taste of the natives and its recipe is distributed with food material quality control, hygienic control, and operation of a localized management system.

대학생의 외식행동과 식당 선택요인에 관한 연구 (A Study on the Eating Out Behavior and Its Factors in Restaurant Selection of University Students)

  • This study was conducted to investigate the eating out behavior and its factors in restaurant selection by students in Incheon area. Self administered questionnaires were collected from 297 students. Statistical data analysis was completed using a SPSS v. 10.0 program. The results are summarized as follows: The average age, weight, height, BMI and male and female students were $24.31,\;67.96\cal{kg},\;174.93\cal{cm},\;22.17\;;\;20.55,\;51.99\cal{kg},\;165.44\cal{cm},\;19.00$ reflectively. About $54.2\%$ of male students and $38.0\%$ of female students responded to eat out at least once a day. And lunch was most frequent meal for eating out. About $57\%$ of students responded to have eat at restaurants around campus, and $19.5\%$ of students used the university foodservice system. Korean-style food was most favorite dish when they ate out. Major source of restaurants information was recommended action by friends or family. But the use of internet or magazine was negligible. The factor of restaurants choice was in order 'taste', 'price', 'atmosphere' and 'hygienic'.

  • After the industrial revolution, we have changed whole life-styles. This trend has brought a change in our eating style. Nowadays, the great number of people go out to eat-even three meals a day. As a result, the growth rate of food service industry increases day by day. Some restaurants are managed by the large scale company and others by the small scale ownership. Though developed countries are in the maturity step of the product life cycle in this field, we are in the growth step. We will hold the in 2002. A lot of tourists and the press will rush to Korea. They must have their meals at the restuarant. Therefore, we need more practice to satisfy them and to lead to successful management in this field. Also, we need an evaluation to qualify each business so that our food service industry does not decline compared to other country's. This study is trying to find how to evaluate and qualify each business in the various areas: service, the quality of food, the mood of the restaurant and so on. In addition, it includes the restaurant rating form.
