This study had purpose to examine the consumers preference and buying property of processed products by rice, barley, wheat, bean. For the study, the interview was conducted of 300 samples more than 19 years of age. We attempt to examine consumers' preference and individual properties when purchasing processed grain products. Questionnaire was filled for the 23 variable by referring to previous studies to investigate the properties to consider when consumer purchasing the products. To conceptualize, reduce the high correlation parameters by factor analysis. The results attribute to seven factors that safety, brand/image, taste/shelf life, convenience seeking, preferred high-quality, price, consumption patterns. These properties showed significant differences in demographics. First, there was statistically difference by age in safety, brand/image, high quality preference, taste/shelf life. Second, Safety and high-quality preference were the difference between jobs, and depending on household income were significant difference in consumption patterns. We analyzed the purchasing preference by purchase frequency. Ramen, bread, beer are higher purchase frequency than any processed grain products. On the other hand, frozen rice, soybean paste, red pepper paste that are used primarily domestic raw, were lower purchase frequency. But the difference of purchase property according to products was very similar that the highest factor is price, the following factor as taste. Based on these findings, the implications and the limitations of the study were presented.
The purposes of this study are to investigate American university students′responses to Kimchi and their preference on different kinds of Kimchi as indicated by a survey and sensory evaluation and to globalize Kimchi. About 400 Indiana University students in IN, USA participated in perception survey of Kimchi, which consisted of 64.8% of male and 35.2% of female.37.3% of all the participants knew what Kimchi was and 30.3% had eaten Kimchi before the survey. The students′responses to the 12 questions about Kimchi were measured on 5 point Likert scale. The item "Kimchi is nutritious and healthy" was totally received the highest point and "Kimchi is a good side with beer or wine" roamed the lowest. Furthermore, gender and the precious visitation to Korea laid an important part in the experiment. As the result of sensory evaluation, the American students preferred Kimchi that made out of soaking Baechu for 3 hours to 5 hours. When the Kimchi was fermented at room temperature(20~22$^{\circ}C$), the score decreased as the fermentation period was increased. However, the scores for the Kimchi preserved in the refrigeratior(5~1$0^{\circ}C$) did not vary remarkably. And the most preferred Kimchi by the students was one-day old. The dishes using Kimchi as the main ingredient are lifted according to the students preference as follows : Kimchi Ramen, Kimchi Mandu, Kimchi Hamburger, and Kimchi Bokumbap, and so on.
As stomach cancer is very prevalent in Koreans, various factors, especially dietary factors, related to stomach cancer incidence were examined in a case-control study. The study population consisted of 105 individual s diagnosed for stomach cancer in two general hospitals and 124 control subjects, matched for age and sex, in Seoul. Data for general characteristics, family history, smoking and alcohol consumption, personality , dietary habits and food preference were obtained by self-administered questionnaire and personal interview. Heredity was found to be one of the most important factors causing stomach cancer. In addition, genetic inheritance tended to differ between the sexes. The male patients showed significantly higher incidence of their father's relatives than mother's relatives but the female patients showed higher incidence of their mother's relatives that father's relatives. Smoking was significantly related to stomach cancer. It was also found that the cases drank alcohol more frequently and in much greater quantity than the controls. Personality was related to the incidence of stomach cancer. The cases tended to be more sensitive , impatient, and anxious to do things quickly. With regards to dietary habits, the male cases had meals significantly more irregularly than the male controls.
This study was to investigate dining behaviours of 420 businessmen living in urban regions (Taegu, Gumi, Young-Chon and Chang-Won) in Kyungbuk and Kyungnam. This survey was carried out by questionnaires. The results were summarized as follows; Among all respondents, dining out once a day was most frequent. Education (p<.05), age (p<.001) and marital status (p<.001) were significant. Socialization was the most frequent reason for dining out. In the choice of food, Korean food was the most frequent (68.1%). Taste (41.4%) was the most frequently cited reason for food selection followed by variety of food (18.8%) and price (8.8%). The respondents favorite foods were: Korean food; Doen Jug Soup (31.9%); Western food; Pork Cutlet (47.6%); Chinese food; Gan Ja Jang (31.2%); Flour-bared food; Kal Gook Su (55.4%), and Fast food; Ramen (26.4%). Sasa borealis leaf has been known to have anti-diabetic properties. In this study, we tried to evaluate the effects of Sasa borealis leaf extract (SBE) on the inhibition of $\alpha$-glucosidase activity and postprandial glycemic response following ingestion of four carbohydrate-rich foods; cooked rice, ramen (instant noodle), noodle, and bread. Fourteen healthy female adults consumed 50 g of glucose (control) or one of the four foods containing 50 g of available carbohydrate with or without 2,000 mg of SBE. The activity of $\alpha$-glucosidase was inhibited dose-dependently by SBE. With SBE, blood glucose concentration at 15 min and the positive area under the curve (AUC) of postprandial glycemic response at 15 min and 30 min after consuming each of the four foods were reduced significantly. As the result, total positive AUC during 120 min was decreased in case of taking cooked rice or bread. Glycemic index and glycemic load of the four foods were declined from 13% to 23% with SBE. The results of this study suggest that SBE may be effective for postprandial glucose control by inhibiting $\alpha$-glucosidase activity.
These days, online media, such as blogospheres, online communities, and social networking sites, provides the uncountable user-generated content (UGC) to discover market intelligence and business insight with. The business has been interested in consumers, and constantly requires the approach to identify consumers' opinions and competitive advantage in the competing market. Analyzing consumers' opinion about oneself and rivals can help decision makers to gain in-depth and fine-grained understanding on the human and social behavioral dynamics underlying the competition. In order to accomplish the comparison study for rival products and companies, we attempted to do competitive analysis using text mining with online UGC for two popular and competing ramens, a market leader and a market follower, in the Korean instant noodle market. Furthermore, to overcome the lack of the Korean sentiment lexicon, we developed the domain specific sentiment dictionary of Korean texts. We gathered 19,386 pieces of blogs and forum messages, developed the Korean sentiment dictionary, and defined the taxonomy for categorization. In the context of our study, we employed sentiment analysis to present consumers' opinion and statistical analysis to demonstrate the differences between the competitors. Our results show that the sentiment portrayed by the text mining clearly differentiate the two rival noodles and convincingly confirm that one is a market leader and the other is a follower. In this regard, we expect this comparison can help business decision makers to understand rich in-depth competitive intelligence hidden in the social media.
Purpose: This study aimed to compare dietary patterns (missed meals, eating instant foods, skipping fruits/vegetables) between general and multicultural adolescents in Korea. Methods: Data from the 9th Korea Youth Risk Behavior Web-based Survey (2013) were used, and analysis was done for the 66,951 youth using SPSS 18.0. Results: The rate of lunch absence accounted for 7.3% in general adolescents and 8.3% in multicultural family adolescents. However, the response of breakfast absence for a week was higher than the rate of the absence of lunch and dinner. For eating instant foods at least more than once a week, there was a significant difference for carbonated drinks, snacks, ramen and fast food in multicultural adolescents. More multicultural adolescents also noted "never ate fruits and vegetable within the recent week." Conclusion: For the healthy diet of adolescents, more careful observation and nursing education should be implemented. Furthermore, parents should also be included in the education altogether.
