Objectives : This study was conducted to evaluate the antioxidant activity and inhibitory activity of pancreatic lipase in vitro using natural products sangju dungsi, chungdo bansi, kabju baekmok three kind of young persimmon fruit extracts and to develop a high - functional anti - obesity substance with reduced body fat. Methods : The antioxidative effect of the three kind of young persimmon fruit extracts was determined by hot water extraction, 30% EtOH extraction and 70% EtOH extraction. The antioxidant activities were evaluated through radical scavenging assays using 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radicals. Furthermore, we examined total phenol and flavonoids contents. And the pancreatic lipase inhibition was measured by selecting the sangju dungsi extract with antioxidant effect. Results : The yield of water, 30% and 70% EtOH extract from young persimmon fruit was sangju dungsi (water 8.3%, 30% EtOH 18.1%, 70% EtOH 16.9%), chungdo bansi (water 16.2%, 30% EtOH 16.1%, 70% EtOH 11.6%), kabju baekmok (water 16%, 30% EtOH 16.8%, 70% EtOH 11.5%). The sangju dungsi 30% EtOH extract eminent DPPH ($IC_{50}$, $19.25{\pm}2.94{\mu}g/m{\ell}$) and ABTS ($IC_{50}$, $19.94{\pm}4.07{\mu}g/m{\ell}$) radical scavenging activity, and total phenol $52.37{\pm}0.78mg/g$ and flavonoid $7.97{\pm}0.13mg/g$ contents were also excellent. It also showed excellent pancreatic lipase inhibition efficacy. Conclusion : The extracts from the three kind of young persimmon fruit extracts showed excellent antioxidant activity. sangju dungsi 30% EtOH extract may be a new anti-obesity material by reducing fat absorption through the inhibition of pancreatic lipase.
The nutritional status of fruit leaves of sweet persimmon and soil conditions were observed in the fifty five blocks of fruit farms of sweet persimmon in Gimhae, Gyeong-nam area. 1. The soil of fruit farm was composed of more than 20% of gravel in the most part of the fruit farms. 2. The strong acidity was observed in the soil of young fruit farms but the acidity of the farm soils was improved to week acid with increase of age of fruit trees. 3. The great variation in the content of available phosphate were observed in the soil from different fruit farm blocks and the lime content were relatively low in the most of the farm soils. 4. The contents of nitrogen, phosphate and potassium in leaves of sweet persimmon collected in July and October were lower than those collected in May but reverse tendency was observed in the content of calcium, magnesium and sodium. 5. The content of boron in leaves collected in May was similar to that collected in July but extremely high content of boron was observed in the loaves collected in October, harvesting period of sweet persimmon. 6. The contents of iron and manganese in the leaves of sweet persimmon were observed to be relatively high compared to the content in the leaves of other fruit trees. 7. The relatively great variation in such inorganic components as iron, copper and boron was observed in the fruit leaves of sweet persimmon according to the different fruit farm blocks. 8. The ages of fruit trees didn't have an effect on the content of inorganic components in the fruit leaves except the content of nitrogen which was decreased with the increase of the ages of fruit trees.
Relationships among climate changes, early frost, and fruit growth were studied during the final month to harvest of late-maturing 'Fuyu' persimmon (Diospyros kaki) to assess the changes in fruit characteristics during this critical period. The heavy frost on Nov. 16 defoliated more than 70% of the leaves, but with little damage on the fruits. However, all the leaves were defoliated by the heavy frost on Nov. 20, and all the fruits were cold-damaged by $-3.3^{\circ}C$ on Nov. 21. Fruit weight increased by 8-25 g per week from Oct. 25 (142 days after full bloom) to Nov. 15, reaching to 250 g, but it decreased by 3-4 g per week after the frost. Hunter a value of fruit skin gradually increased until the last harvest on Nov. 29 with a temporary halt in early Nov. when temperature was high, whereas fruit firmness rapidly decreased after the frost on Nov. 21. Fruit soluble solids were $15.7-16.1^{\circ}Brix$ for the final month. When some branches were covered with non-woven fabrics to avoid direct contact with frost, the fruits on the branches were not visually damaged by the low temperature although 40-60% of their leaves were defoliated on Nov. 16. However, low temperature on Nov. 20 and 21 defoliated all the leaves, causing cold damage on the fruits. There was a highly significant correlation between the fruit diameter and its weight ($R^2$ = 0.73-0.91). So, the regression equations could be used to estimate weight from diameter of the fruits sampled from the branches with the non-woven fabrics. The calculated fruit weight reached to a maximum of 240 g on Nov. 15. Daily increases in fruit weight were 1.1-2.5 g from Oct. 25 to 31, 1.9-3.5 g from Oct. 31 to Nov. 7, and 1.4-1.6 g from Nov. 7 to 12. However, fruit weight decreased by 0.3-1 g per day after the cold damage on Nov. 21. The results indicate that the most appropriate harvest time could be dependent on relationship of fruit growth to climate.

The application of persimmon for making new products was investigated by analyzing the degree of astringency removal, softness of fruit, and sensory properties of Daebong persimmons (Diospyros kaki L) treated with three different astringency removal methods of steeping in water, steeping in 1% salt solution, and vacuum packing at $40^{\circ}C$. The weight of persimmon fruit increased with increasing steeping time, but decreased with increasing vacuum packing time. The fruit steeped in $40^{\circ}C$ salt solution (1%, w/w) was not detected with soluble tannin and not developed color with ferric chloride after steeping for 9 h. A total of 12 h of steeping time was required for removing soluble tannin using other methods. The lightness (L) in color and hardness in texture decreased when storage time increased, regardless of astringency removal methods. In overall, the preference was shown with the highest score in persimmon steeped in salt solution for 9 h and 12 h that were vacuum packed at $40^{\circ}C$. In conclusion, the astringency removal condition of Daebong persimmon was good after being steeped on 1% salt solution for 9 h at $40^{\circ}C$.

BACKGROUND: In korea, sweet persimmon(Diospyros kaki) cultivation is front to abiotic stresses such as frost damage at fruit maturing stage. The cold and rapid freezing stresses are most damaging to fruit production which is most actively progressed in late fall. This study was performed to evaluate the validity of chlorophyll fluorescence imaging(CFI) technology to determine the degree of frost damage in sweet persimmon fruits. METHODS AND RESULTS: The sweet persimmon fruits were measured separately for each treatment(15, 30, 60 minutes) at 24 hours after treatment(HAT) rapid freezing. A CFI FluorCam (FC 1000-H, PSI, Czech Republic) was used to measure the fluorescence images of the fruits. In rapid freezing for 15 minutes, photochemical parameters were not changed. However, in rapid freezing for 30 and 60 minutes, photochemical parameters were lowered. Especially, $F_m$, $F_v$, $F_v/F_m$ and ${\Phi}PSII$ values were declined under rapid freezing. CONCLUSION: In our study, it was clearly indicated that the rapid freezing could be a stress in sweet persimmon fruits. The CFI analysis and its related parameters are applicable as a rapid assessing technique for the determination of frost damage.

This study was conducted to analyze the relationship between climate factors and fruit characteristics of 'Sangjudungsi' persimmon (Diospyros kaki THUNB) has been mainly cultivated in Sangju of Korea. We has been surveyed the yield and fruit characteristics such as fruit weight and soluble solids of 'Sangjudungsi' persimmon from 2010 to 2015 for five years. Also, as major meteorological factor, mean air temperature, cumulative temperature and days, the data of sunshine duration, diurnal range, and rainfall were collected from Sangju Regional Meteorological Administration. As result of that, the annual variation of fruit weight was affected by sunshine duration for April and October related starting point of fruit weight increase. The content of soluble solids was affected by sunshine duration for April and October similarly with fruit weight and was negatively correlated with the number of days with precipitation in the year. These results indicate the characteristics related to fruit quality like the above were affected by the sunshine duration and precipitation which is critical factor for the intensity of radiation during rapid growth period (April and October). Fruit number and yield per tree was commonly affected by mean air temperature of April and cumulative temperature days of October. These results also indicate that temperature for period of rapid growth stage of persimmon may have an important role in the fruit number and yield per tree.

Precise, fast, and cost-effective identification of crop cultivars is essential for plant breeder's rights. Traditional methods for identification of persimmon cultivars are based on the evaluation of sets of morphological characteristics. However, it is difficult to distinguish closely related cultivars using only morphological traits. This study was conducted to develop DNA markers for identification of the 32 persimmon cultivars in Korea and Japan. A total of 309 randomly amplified polymorphic DNA (RAPD) markers were identified using 40 different random primers. Various number of polymorphic bands ranged from 4 (OPP-08) to 14 (UBC159) were detected with an average of 7.7. Resulting 57 RAPD fragments were selected, and their sequences were determined for developing sequence characterized amplified region (SCAR) markers. As a result, 15 of 57 RAPD fragments were successfully converted to SCAR markers. Single polymorphic bands of the same size as or smaller than the RAPD fragments were amplified depending on SCAR markers. Among these markers, a combination of eight SCAR markers (PS225_200, PSN05_420, PSF13_523, PSN11_540, PS372_567, PS485_569, PSP08_635, and PS631_735) provided sufficient polymorphisms to identify 32 persimmon cultivars. These newly developed markers will be a fast and reliable tool to identify persimmon cultivars.

It is a serious situation that the farmers' income has gradually decreased due to the decline of productivity of fruit trees infected with viroids. It has been known that Persimmon viroid (PVd) and Citrus viroid (CVd) are economically important viroids that can infected persimmon. In this study, the incidence of CVd and PVd in 'Fuyu' persimmon were identified as 41% and 34% in JeollaNam-do, respectively. The collected persimmon samples infected by both PVd and CVd were used for testing efficiency of the viroid inactivation methods. The samples were subjected to single treatment of the heat treatment ($37^{\circ}C$), cold treatment ($4^{\circ}C$), or antiviral agent treatment (Ribavirin), and double treatment of combinations of the three methods. Viroid inactivation efficiency was confirmed through RT-PCR. In the case of the samples subjected to cold treatment for 4 weeks, the viroid inactivation efficiency was most significantly high as 67% against the survival rate of 100%. In addition, in the case of the samples treated for 2 weeks with the antiviral agents and cold treatment, the viroid inactivation rate was similar to that of the cold treatment. In conclusion, the cold treatment showed the highest viroid inactivation efficiency, and this result will provide valuable information for production of viroid-free persimmon.

This experiment was carried out the quality of astringent and dried persimmon according to various cultivars and harvesting time. There were need for proper selecting cultivar of astringent persimmon and knowing proper mature degree of persimmon in order to enhance the quality of dried persimmons. Immature persimmons showed lower moisture content, color value and higher hardness than riped and over-riped persimmons. The total quality of riped and over-riped fruit were superior than un-riped fruit.
This study was investigated pattern changes of tannin isolated from astringent persimmon fruits. The contents of total phenolics and soluble tannins decreased as the maturing and softening of persimmon fruits proceeded. Green and mature persimmon tannins reacted with acetaldehyde. The more contents of tannin increased, the more reactions became. And the reaction of green Persimmon tannin was more active than mature persimmon tannins. But tannin from soft persimmon fruits did not react with acetaldehyde. Tannins were more polymerized during maturing and softening of fruits. So there was a little difference in chromatography of persimmon tannins. Also green and mature persimmon tannins obtained 4 bands respectively after thin layer chromatography analysis. But there was only 2 bands in soft persimmon tannin. As softening of persimmon fruits proceeded, most of tannins reacted with acetaldehyde, so coagulated. Also the component of soluble tannins was changed during softening of persimmon fruits.
