This study deals with the conditions of nutritional intake of the urban elderly (age sixty years and older). This study analysis is based on factors that are influenced on the prevalent conditions of dietary-intake of the urban elderly either it be for better ment of health or desire. The method of this research was based on the interview-survey with questinaire in the Seoul area. In comparison to the surveys taken of the rural society and the urban slum elderly the urban elderly standard nutritional requirements was higher. Of the standard nutritional requrieemtns the twomen's nutrition intake was higher than of the men. But still the problem of malnutrition existed in the urban elderly both men and women at the probability nutritional deficienty rate higher than 30%. The food intake frequency factors which might influence the condition of nutritional intake was significant more than condition of eating. Another important factors of the conditions of nutritioal intake of the urban elderly are one's self-consciousness of health and degree of one's will change . In healthy case of the aged, their will was almost maintained and hand -grip strength was high when they had regular meal with their family . For elderl with the lower academic career and the one with more satisfactory to his meal, their wills didn't change before or after retirement. The objectiveness of this survey is to convince the elderly that the problems of nutritional deficiency can only be solved by reeducation and to improve their nutritional diet to have the enjoyments of a healtheir elderly life.
The purpose of this study was to investigate nutritional knowledge, nutrition attitude and food preference among middle school students and to evaluate the effect of nutrition deucation in middle school. The survey was conducted from June 15, to June 25, 1993 by questionnaires which was composed of ntrition knowledge test, nutrition attitude test and food preference test. The subjects of this study were composed of 106 male and 105 female students of middle school. The results obtained were summarized as follows: Nutrition knowledge score Nutrition Knowledge score Nutrition knowledge score of female group was significantly higher than that of male group at P<0.001 Nutrition Attitude Score Nutrition Attituds Score of female group was significantly higher than that of male group at P<0.001 Correlations between nutrition knowledge and nutrition attitude scores in both group were significant Food Preferences Preferences for pork cutlet, hot dog, chicken, beef, kim chi, cooked rice, ptoato were high in both groups.
This study was carried out to investigate the future plan for infant feeding practice and its associated factors among university students so as to develop focus for nutritional education program for the promotion of breastfeeding. The subjects were 301 students (males 130, females 171). The results obtained were as follows. In this survey, the subjects had a basic knowledge of breastfeeding and lactation, especially of the ingredient of breastmilk. However they were not well informed about the physiology and method of breastfeeding and benefits of breastfeeding for mothers. The average scores far attitude toward breastfeeding and lactation were 3.09 points on a 4 point scale, which indicated a slightly positive attitudes toward breastfeeding. However the participants had a negative attitude toward its emotional and practical aspects. Their future plan for infant feeding was breastfeeding 40.3%, formula feeding 3.0% and mixed feeding 56.7%. A concern was that the students showed a high rate with regard to a mixed feeding plan, and Dey decided this based on an incorrect knowledge of breastfeeding. The group who planned to breastfeed in the future (BF) showed higher scores with respect to knowledge and attitudes than those who planned to formula feed or mixed feed (FF + MF). Therefore, to encourage mothers to breastfeed and support breastfeeding, breastfeeding nutritional education is urgently needed among university students. In addition, nutrition education programs should promote the benefits of breastfeeding for mothers and the physiology and practical method of breastfeeding. Also a practical and culturally sensitive course about food and nutrition is recommended to inform participants about breastfeeding. (Korean J Community Nutrition 8(2) : 240∼249, 2003)
The purpose of this study was to provide fundamental data on the importance of eating breakfast by analyzing the dietary habits, dietary attitude, dietary behavior, and nutrition knowledge between of male high school students according to breakfast eating status. The subjects consisted of 400 male high school students living in Chungnam. There was no significant difference according to grade, height, and weight between students who skipped breakfast and those who ate breakfast. Further, satisfaction and perception about body weight were not statistically different between the two groups. Regarding relationships with friends, to the response 'I have a lot of relationships with friends' was 25.5% in the skipping breakfast group and 45.7% in the eating breakfast group. The academic records of the students who ate breakfast were much higher. Meal regularity, meal satisfaction, and dietary attitude of the eating breakfast group were better than those of the skipping breakfast group. Regarding the level of nutritional knowledge, students who skipped breakfast scored $7.6{\pm}2.9$ points while the students who ate breakfast scores $7.9{\pm}3.1$ points, indicating no significant difference. The students who ate breakfast had better friendships, higher academic achievement, and better dietary behavior and attitude. Therefore, it is necessary to increase nutrition education and reduce the skipping of breakfast through a variety of methods, such as school food service and simple recipes for Korean food. It should also be considered that nutrition education for parents be widely provided.
This stusy was designed to develop nutrition education program for the primary school children served by the national school lunch program and to evaluate ist educational effects. Subjects consisted of 61 elementary school children(30 in the control group and 31 in the treatment group) in the 5th grade. Only the treatment group participated in a twelve-week nutrition education program. To evaluate the effects of the nutrition education program, the control and treatment groups were given a pretest and posttest for nutrition knowledge, food attitude, food habits, food preference and plate wastes before and after nutrition education. The results obtained are summerized as follows ; the nutrition knowledge test score (30.4) of the treatment group was significantly higher than that (17.4) of the control group after nutrition education . However, there was no significant difference between the two groups in food attitude test scores after nutrition education. We also did not find any difference induced by nutrition education or the food preferences of the treatment group. After nutrition education , the amount of plate waste of some menus were significantly decreased in the treatment group, but the amount of plate waste of the control group was not significantly changed. However, there was no significant difference in the post test scores above food habits between two groups. It was concluded that a twelve-week nutrition education program can improve nutrition knowledge and decrease plate waste but is not enough to change food attitude , food preference and food habits. It can besard that the two components of foodservice are nutritional foodservice and nutrition education. Foodservice management alone without nutrition education is hardly enough to improve the nutritional status of school children. The result of this study indicate that applying the nutrition education program to elementary school children who are served by the national lunch program can maximize the effects of the national school lunch program.
The purpose of this study was to measure the nutrition knowledge, dietary attitude, eating behavior, physical ability and locomotion of 5-year-old-children, and thereby to provide the fundamental information necessary to develop a nutritionrelated physical education program. A survey was performed on 143 5-years-old boys and 113 girls. The results were as follows. The average score in the nutrition knowledge item, was 7.22 out of a possible 10 points; in the dietary attitude item, 32.46 out of 50 points; in the eating behavior item, 26.67 out of 40 points. According to body measurement, there was a significant difference in height by gender (p<0.05), Significant differences in muscle mass and basal metabolic rate were also observed by gender (p<0.001). Gender also influenced the flexibility and reflexibility (p<0.001), with significant difference in balance of the right side (p<0.01). Although this study was limited by its cross-sectional study design, the body muscle (p<0.05) and basal metabolic rate (p<0.05) were observed to have a positive relation with nutritional knowledge. In addition, there was a significant positive correlation between nutritional knowledge and dietary attitude (p<0.01). According to the results, it is necessary to develop a long-term and systematic program with the combination of nutrition and physical education to develop correct dietary habits and for the balanced growth of children.
The purpose of this study is to develop the nutritional survey indices such as the Knowledge(K), Knowledge Practice(KP), Attitude(A), and Food Practice(FP) as effective materials of the nutrition education and evaluation in spreading community nutrition service. These materials were applied to two groups(126 rural people and 117 urban people) from August 1st to September 10th, 1996. We investigated actual conditions of objects about K, KP, A, FP by interviews. Also we measured serum cholesterol levels of all objects by Accutelend G.C. The results of the research turned out as follows; 1). In the comparison of the nutritional Knowledge scores, the average score of urban people was much higher($84.2{\pm}2.4$) than rural people($42.1{\pm}3.1$). 2). In the scores of the Knowledge Practice, urban people had also significantly higher score than rural people. But only 19.5% of urban people had high scores between 80 and 100, and 42.4% of urban people and 87.3% of rural people had scores between 0 and 40. 3). The average scores of the Attitude were not significantly different between urban and rural people. The average scores of the Food Practice were not significantly different between urban and rural people. 4). In cholesterol measurements, only three of 243 people were in the abnormal high levels(more than 250mg/dl), and they are all over 60 years old, and two of them were rural people. 5). The people who were younger in age, higher in educational level and spent more money for foods had higher scores on K, KP, A and FP. And the people who were younger in age in age and more money spent for foods had higher scores on FP. Regression analysis showed that the serum cholesterol levels were not associated with the scores of FP.
This study was carried out to investigate fast food consumption patterns, nutrition knowledge, dietary attitude of middle and high school students in Busan. A questionnaire survey was conducted among 562 students from April 8 to April 22 in 2006. The results are summarized as follows. Convenience to eat is the best motive for visiting fast food restaurants. Nutrition knowledge scores of middle school male students were lower than those of the other groups. The more nutrition knowledge female students have, the lower fast food consumption became. There was no significant difference in nutrition knowledge and fast food consumption in male students. There was a significantly positive correlation between education levels of their parents and dietary attitude of the subjects(p<0.01). Pocket money showed a significantly negative correlation with dietary attitude and with fast food use frequency(p<0.05). There was a significantly positive correlation between nutrition knowledge and dietary attitude of the subjects. The use frequency of fast food showed a negative correlation with dietary attitude(p<0.01) and nutrition knowledge(p<0.05) of the subjects. Therefore, proper nutrition education is required to improve their nutritional status and dietary attitude.
This study examined to find out the relationship between nutritional knowledge and food habit of the students majoring food & nutrition(218 students) and the students majoring Korean oriental medicine(286 students). The results of this study are as follows; 1)The intake of vegetable and dairy products is high for the students majoring food & nutrition(p<0.01), and the intake of instant food is low for the students majoring Korean oriental medicine(p<0.01). 2)In the value of diet, the ratio which acknowledges the importance of the relationship between the diet and the nutrients is high for the students majoring food & nutrition (p<0.01), and the ratio which acknowledges the diet as the way to remove hunger or to enjoy eating is high for the students majoring Korean oriental medicine(p<0.01). The ratio of the students who acknowledge taste, nutrition and preference as the important factors in selecting foods is high for the students majoring food & nutrition(p<0.01). The ratio of regularity in each meal, consuming time, and the food quantity is high for the students majoring Korean oriental medicine(p<0.01). 3)The total score of 20 inquiring items about nutritional knowledge is high for the students majoring food & nutrition(p<0.01), and especially the mark is high in such items inquiring the relationship between animal fat and nutrition(p<0.01), the relationship between water and obesity(p<0.05), the relationship between cholesterol and food(p<0.01), the recommended energy quantity(p<0.05), and the vitamin B group (P<0.01). According to this study, it is hard to determine that there is inevitable positive relationship between diet habits and nutritional knowledge. The students majoring food and nutrition know better than the students majoring Korean oriental medicine about the relationship between diet, health and nutrients however they can not practice what they blow when selecting foods. On the other hand the students majoring Korean oriental medicine show lower marks in food habits and nutritional knowledge than those of the students majoring food and nutrition; however, they show higher marks in practicing regular diet. According to this result it is necessary to increase the subjects related nutrition in the curriculum not only lot the students majoring food & nutrition to practice their nutritional knowledge in their actual life but also for the students majoring Korean oriental medicine to obtain correct nutritional knowledge and information.
The purpose of this study was to investigate dietary habits, dietary attitudes, perceptions for nutritional importance, nutritional knowledge and frequency of food intake to get the basic data of effective nutritional knowledge to form desirable dietary habits of students. This study was carried out through a questionnaire. The subjects were 362 teenagers (boys 161, girls 201) in some farming and fishing regions of Jeonnam. The most desirable dietary habit was that both boys and girls never skipped their lunch, the undesirable dietary habit was that boys ate too fast and girls had too many snacks. While boys ate faster than girls (p < 0.01), girls skipped dinner more frequently than boys (p < 0.01). In terms of dietary attitudes, boys had more desirable attitudes than girls in that they "choose nutritious food" (p < 0.01), "enjoyed healthy food more than favorite food" (p < 0.01), "think about basic food groups when having something" (p < 0.01) while girls had more desirable attitudes than boys in that they "only have favorite food" (p < 0.01). In nutritional knowledge, girls showed a percentage of more correct answers than boys in "is likely to suffer anemia without enough iron" (p < 0.05), and "it doesn't need to eat fat, which causes obesity" (p < 0.05). In general, girls had higher nutritional knowledge than boys. For frequency of food intake, boys ate more fried and broiled food than girls (p < 0.05). In general, boys had nutritional unbalanced diets more than girls. As a result, girls had higher levels of nutritional knowledge and boys had more desirable dietary habits and attitudes. We should have systematic and repetitive education about nutrition so that teenagers could practice their nutritional knowledge in diets. Moreover, it is necessary to develop proper education for their genders.
