본 연구에서는 보육교사의 배식관리 및 식사지도에 대한 중요도와 수행도를 파악하기 위하여 서울시 금천구의 어린이집에 근무하고 있는 보육교사 179명을 대상으로 2013년 12월에 설문조사를 실시하였다. 응답한 어린이집의 유형은 가정 어린이집 (39.7%), 민간 어린이집 (31.8%), 국공립 어린이집 (28.5%) 순으로 많았다. 요인분석 결과, 보육교사가 수행하는 배식관리 및 식사지도는 '개인 위생관리 (요인 1)', '식사지도 (요인 2)', '식재료 위생관리 (요인 3)', '맞춤형 배식 서비스 (요인 4)'의 총 4개의 요인, 11개의 항목으로 추출되었다. 보육교사는 '배식 시 위생모를 착용한다', '배식 시 일회용 장갑을 착용한다' 등의 요인 1 (개인위생관리)과 관련한 항목에 대한 중요도를 가장 낮게 인지하고 있었으며 수행도도 가장 낮았다, 반면 '영유아의 연령을 고려하여 음식을 잘라서 배식한다', '영유아의 연령별로 1인 분량을 달리하여 배식한다'의 요인 4 (맞춤형 배식서비스)와 관련된 항목에 대한 중요도를 가장 높게 인지하고 있었고 수행도도 가장 높았다. 중요도-수행도 분석 결과, 중요도와 수행도가 모두 높은 1사분면에는 '영유아의 식습관을 격려하고 칭찬한다', '식사 전 후 감사인사를 한다', '영유아와 함께 앉아 식사한다' 및 '영유아의 연령을 고려하여 음식을 잘라서 배식한다'의 4개 항목이 포함되어 있었다. 이에 비해 중요도와 수행도가 모두 낮은 3사분면에는 '배식 시 위생모를 착용한다', '배식 시 일회용 장갑을 사용한다', '배식 시 배식용 앞치마를 착용한다', '영유아의 연령별로 1인 분량을 달리하여 배식한다'의 4개 항목이 포함되어 있었다. 중요도는 낮다고 인지하고 있으나 수행도는 높은 4사분면에는 '조리 완료 후 2시간 이내에 배식한다', '먹다 남은 우유 (분유)를 바로 버린다', '식사 중 영유아의 이름을 부르며 대화한다'가 포함되어 있었다. 본 연구결과, 전반적으로 보육교사는 배식과 관련한 정부 지침에 대해 중요하다고 인식하고 있었으며 현장에서 이를 수행하고 있는 것으로 파악되었다. 그러나 보육교사는 배식 시의 개인 위생관리 및 식재료 위생관리에 대해서는 중요하다고 인지하는 정도가 맞춤형 배식 서비스에 비해 낮은 것으로 나타났다. 특히 개인 위생관리는 중요도뿐만 아니라 수행도도 낮은 것으로 나타났다. 이에 보육교사를 대상으로 개인 위생관리의 중요성에 대한 교육이 실시 되어야 하며, 특히 배식 시의 위생적인 복장 착용에 대한 주제로 한 교육이 필요할 것으로 생각된다. 또한 보육교사가 이를 실천할 수 있는 어린이집의 급식 환경 마련이 필요할 것으로 생각된다. 이를 위해 정부 및 관련 기관에서는 보육교사를 대상으로 한 위생교육을 지속적으로 제공하고 교육 이론을 현장에 적용할 수 있도록 환경을 조성해야 한다.
Purpose: The purpose of this study was to develop a child health care protocol for teachers in child day care centers. Methods: The ADDIE model with 10 Kid Keys was applied to develop this child health care protocol. All contents were developed through content validity test by 7 professionals and need assessment and evaluation by child day care center teachers. Results: This protocol consisted of 10 keys, as follows: "Health Examination/Growth & Development", "Practice of Health Life", "Management of Communicable Disease", "Negligent Accident", "Coping with Emergency and Transference", "Child Abuse", "Nutrition/Obesity", "Quality Assurance of Staff", "Parent Education", "Guidance & Supervision of Child Day Care Centers". The contents contained goals, objectives, teaching content, suggested activities for children, writing forms related to each subject, and self-evaluation sheet. Conclusion: This protocol can be practical and effective for child health care in child day care centers and it is hoped that it will be utilized in more child day care centers.
This study finds methods to activate culinary education by surveying the level of recognition for culinary practice from the culinary teachers of vocational high schools. The number of individuals surveyed is 103. Data is verified by using SPSS 14.0 (SPSS Inc, Chicago, USA). The results of the survey on recognition for culinary education showed that learning requirements are very high as well as that theoretical education and trial demonstrations are necessary to enhance the effects of culinary practice education. Desired teaching learning materials were cooking materials by a certified technician. Their desired supplementary data for enhancing practical techniques were practical demonstrations, various materials and language instruction to learn other culinary practices. It is reported that there was increasing work other than learning time and complication for preparing practice. In addition, they desire more websites for cooking need to be built. Plans for activating culinary education are as follow: First, how to enhance the professional abilities of culinary teachers. Second, to show the necessity of theoretical education, video-based education, and culinary practice demonstrations. Third, to show the necessity to increase the ratio for culinary practice classes. Fourth, to display various teaching and learning materials. Fifth, to enhance websites for culinary data. Sixth, to provide opportunities to augment a sense of achievement.
This study developed and implemented a teaching · learning process plan for Home Economics in middle school by converging Habermas's three systems of action. It also examined the effect of the class through the evaluation of students and teachers who participated in the class. This study developed 10 sessions for a teaching and learning process plan by converging three systems of action and reconstructing learning elements related to 'balanced meal plan' and 'food choice' according to the practical action teaching model. After class, we surveyed the degree of help for students, analyzed the learning activity sheets, and analyzed the reflection journals of teachers to evaluate the effects of the class. This class was found to be the most helpful in practicing the healthy dietary life of students, expanding their thoughts, understanding learning contents, and helping them change their lives. As a result of analyzing the learning activity sheet, students gained enlightenment by reflecting and evaluating their action through the class; in addition, changes in interest, awareness, and action appeared. Through the convergence of three systems of action, teachers who practiced the class criticized and realized the act that students were unconsciously accepted. In addition, it confirmed the possibility that students could change their lives, family and society by promoting optimal nutrition and health for a good life that pursues the best good.
The status of general food service administration and nutrition education was investigated in 111 elementary schools located in Inchon Metropolitan Area by questionnaires. The results are as follows ; 1. Most schools served 5 lunches per week. Meal cost per capita was 1212.1 won in urban type school and 979.0 won in rural type school. Most schools(91.9%) had 1 regular dietitian and 1 regular cook. With increasing number of students the number of temporary employees increased significantly. Most school dietitians(86.5%) were in their twenties and had 2 year careers. 2. Most dietitians(90.1%) planned the menu based on the RDA with the first consideration in nutritional needs of the students. Many dietitians(81.8%) surveyed on the food preferences of the students at least once a year. About 86% of the schools had the food service committee which was helpful. Dietitians were the first one in charge of food purchasing and checking, and sometimes a manager in general school affairs worked together. One third of the schools used the volunteer parents in food services. 3. Most school dietitians(97.2%) gave the students nutrition education using handouts once a week. However, they could not teach the students through the classroom lecture because they are not the regular teachers. Food garbages were removed by the professional trash collecting company or by using fermentation machines or by giving them to animals as feeds. School events concerning the food and nutrition were mostly drawing pictures and composition. Only 36.4% of the school dietitians had experienced in nutrition counseling for an individual student. Most of them(99.1%) thought that individual counseling is necessary if they have enough time and chances to do.
This study is attempted to propose a quality evaluation method of the materials for nutrition education by applying readability test of printed materials for nutrition education. It is significantly important for the teaching class with nutrition education materials to consider students understanding level and education materials topics or choosing words in developed printed materials. This study performed an evaluation of the readability of text in teachers' guidebook, which is devised for elementary school students' education material about sugar, sodium and trans-fat and attempted to estimate the developing materials through analyzing difficulty level of the text. We utilized "The Teacher's Guidebook for Cooking Activity" that had been developed for elementary school by Ministry Education Science and Technology, as the readability evaluation standard. Compared with the average score of readability about "The Teacher's Guidebook for Cooking Activity", $72.94{\pm}6.85$, "Sugar Guidebook" was 70.94{\pm}7.46, "Sodium Guidebook" was $68.76{\pm}14.50$, and "Trans-fat Guidebook" was $58.87{\pm}10.79$. Considering the subjects careers or ages, "The Teacher's Guidebook for Cooking Activity" has little deviation by the subjects careers or ages and was "intermediate" or "easy" level; however, "Sugar Guidebook", "Sodium Guidebook", "Trans-fat Guidebook" was "intermediate" or "difficult" level (p < 0.05). Readability score was especially low when the contents of some particular subjects were too professionalized or scientific terms were frequently used, and thes results were definitely seen in the "Sodium Guidebook" and "Trans-fat Guidebook". With Cloze test score, the readability evaluation will be using as an evaluation tool for the nutrition education materials.
Childhood obesity has rapidly increased worldwide and is one of the most serious health problems in this age group. In order to prevent and manage childhood obesity, we developed a nutrition education website. The website consisted of three parts. The first part was made for self-assessment with regard to obesity index, dietary habits, food frequency, dietary attitude, nutrition knowledge, nutrient intake, energy expenditure, and the stage of behavioral change, and tailored messages and advice according to the assessment results. A total of 612 real-size food photos as well as a nutrient database of 3,346 foods and 541 dishes were created to help children estimate nutrient intakes accurately. In addition, an energy expenditure database of 156 activities for children was established to calculate calorie consumption. The second part was made for setting long-term and short-term goals and keeping track of the changes in energy intake and expenditure in one's own page. The third part was made for education. Various types of nutrition information were provided; texts, pictures, calculators and games. The readability and design of the website were evaluated by 46 obese children. Usefulness, design and readability of the website were found to be desirable for children. This website is expected to be used by an obese child alone or with parents or nutrition teachers in order to control body weight through healthy dietary habits and physical activities. In addition, a non-obese child can also use this website for maintaining healthy dietary habits and preventing obesity.
본 연구는 중학교 1학년 가정과의 '청소년의 영양과 식사' 단원에 가네(Gagn$\'{e}$)의 수업사태별로 비계설정을 적용한 교수 학습 과정안을 개발하고 수업을 실행하여 평가하는데 목적이 있다. 이에 '청소년의 영양과 식사' 단원을 중심으로 교수 학습 과정안과 학습자료를 개발하여 71명의 중학생에게 시행되어 평가되었다. 개발된 교수 학습 과정안은 총 5차시로 구성되었으며 주제는 영양과 건강, 6대 영양소의 기능(1차시), 한국인 영양섭취기준과 청소년기의 영양 특징(2차시), 청소년의 하루 식사구성(3차시), 청소년의 영양문제(4차시), 그리고 미래 건강과 직업(5차시)으로 구성하였다. 이 과정안의 특정은 다음과 같다: (1) 가네의 9가지 수업사태별로 각각 다른 비계설정을 적용하여 가정과교사가 수업에 바로 투입할 수 있도록 구체적인 수업방법과 예를 상세히 제시하였다; (2) 매차시마다 기본탐구와 심화탐구로 수행평가와 채점기준표를 개발하여 제시하였다; (3) 학습주제는 '청소년의 생활'에 초점을 맞추었고 매차시마다 2가지 학습주제를 제시하였다. 교수 학습 과정안에 제시된 비계는 모두 45개 이었고 교수 학습 자료는 27개(활동지 14, 읽기자료 6, 수행평가 7)이었다. 이 수업을 받은 중학생들은 수업에서 교사의 설명이 재미있고 알아듣기 쉬웠으며, 학습 자료와 학습 내용이 이해가 잘되어 전반적으로 수업에 만족하는 것으로 응답하였다. 개발된 교수 학습 과정안의 평가에 대해서 21명의 가정과 교사는 중학생의 발달단계에 적합하며, 교사의 질문은 명확하였고, 학습자료를 포함한 학습내용은 이해가 쉬웠으며, 가네의 수업사태에 따른 학습내용이 적합하였고 현장 실행에 유용하고 용이한 것으로 응답하였다.
본 연구는 충북지역 영양(교)사들을 대상으로 친환경 식재료에 대해 학교급식에 적용하고 있는 이용실태, 인식 및 의견, 친환경 급식제도 개선을 위한 요구도와 구매절차 개선방안을 조사하였다. 가장 사용빈도가 높은 친환경 농산물은 '잡곡류(58.9%)'였고 가장 사용하고 싶은 친환경 농산물은 '과실류(43.6%)'로 나타났다. 가장 사용빈도가 높은 친환경축산물은 '계란(36.6%)'이었고 가장 사용하고 싶은 친환경축산물로는 '돼지고기(40.8%)'로 응답되었다. 친환경 수산물을 사용한 적이 없다는 응답은 81.7%로 매우 높게 나타났고, 가장 사용하고 싶은 수산물은 '어류(54.5%)'로 조사되었다. 친환경 식재료 선택 시 '신선도'가 가장 중요시 되었고, 수산물은 농 축산물에 비해 친환경의 사용빈도가 매우 낮았고 수산물 인증에 대한 개념의 이해 정도가 낮게 나타났으며, 인증에 대한 신뢰도와 필요성도 낮은 수준으로 응답되었다. 중요도는 '친환경 인증 여부'와 '공급능력'이 높게 평가되었다. 친환경 식재료 공급업체의 납품능력에 대해 농 축산물은 보통 정도로 나타난 반면에 수산물의 경우 납품능력이 낮은 것으로 조사되었다. 친환경 식재료를 검수하기 위해 농산물은 '부착된 마크', 축산물은 '친환경 인증서류', 수산물은 '친환경 인증서류', 가공식품류는 '부착된 마크'를 각각 활용하였다. 친환경 식재료 최소 품질 요구 기준으로 무농약 농산물 수준 이상이 납품되어야 한다는 의견이 가장 많았다. 친환경 급식제도 개선을 위해 신뢰할 수 있는 납품업체 확보에 대한 요구도가 가장 높았고, 구매절차에 대한 개선안으로는 친환경 학교급식 전담센터 설치에 대한 요구도가 높게 조사되었다.

Sensory factors are important determinants of appetite and food choices but little is known about factors affecting taste acuity and preference of Koreans. Any factors causing deficits in sweet taste perception may lead to over consumption of simple sugar, which is related to several chronic diseases. This study was conducted to determine factors affecting sweet taste sensitivity and preference. Subjects were 30 government employees who were serving as school dietitians or in the area of public health while they were studying in the program for the qualification to become nutrition teachers. Sweet taste threshold and the optimally-preferred sweetness of omija jelly were determined by a sensory evaluation and general characteristics, health-related lifestyles, dietary habits and food preferences were determined using a self-administered questionnaire. For the subjects of this study, detection threshold concentration of sucrose solution was $0.184{\pm}0.06%$ and optimally-preferred sucrose concentration of omija jelly was $13.88{\pm}2.28%$ and there was no significant correlation between the sweet taste sensitivity and preference. Subjects who had higher(${\ge}4$ out of 10) physical or psychological stress and who had late getting-up time (after 7am) tended to have lower sweet taste threshold (higher sensitivity) than their counterpart. The sweet taste preference determined by optimally-preferred sucrose concentration of omija jelly tended to be lower in the subjects who eat slowly. Those who answered in the questionnaire to prefer sweet foods did have significantly higher optimally-preferred sucrose concentration of omija jelly. Further research is required to determine whether decreased sensitivity and increased preference for sweetness can increase the actual intake of simple sugar.
