This study was designed to : (a) develop the nutrition education program for preschool children (b) actually apply the program in the child-care center and evaluate its educational effects by a Non-equivalent control group design. Nutrition education program was developed on the basis of the conceptual framework which consisted of nutrition nutrients. food handling, life cycle and social.psychological needs. Also the program was devised to contribute children's motor, social, emotional and sensory developments. Nutrition achievement test(NAT) based on the table of specifications coinciding with the conceptual framework and was utilized to evaluate the nutrition education program. Subjects consisted of 42 preschool children, with 22 in control group and 20 in treatment group. All the subject completed a pretest and a posttest and the posttest means between control and treatment groups were compared. The control group had a score of 15.08 and the treatment group, 16.76 and the difference was not significant The treatment group's pre and post test means were 14.20 and 16.76, and showed the difference to be significant (p$\leq$0.05).
Objectives: A mobile health intervention program was provided for employees with overweight and obesity for 12 weeks, and a process evaluation was completed at the end of the program. We investigated participant engagement based on app usage data, and whether engagement was associated with the degree of satisfaction with the program. Methods: The program involved the use of a dietary coaching app and a wearable device for monitoring physical activity and body composition. A total of 235 employees participated in the program. App usage data were collected from a mobile platform, and a questionnaire survey on process evaluation and needs assessment was conducted during the post-test. Results: The engagement level of the participants decreased over time. Participants in their 40s, high school graduates or lower education, and manufacturing workers showed higher engagement than other age groups, college graduates, and office workers, respectively. The overall satisfaction score was 3.6 out of 5. When participants were categorized into three groups according to their engagement level, the upper group was more satisfied than the lower group. A total of 71.5% of participants answered that they wanted to rejoin or recommend the program, and 71.9% answered that the program was helpful in improving their dietary habits. The most helpful components in the program were diet records and a 1:1 chat with the dietary coach from the dietary coaching app. The barriers to improving dietary habits included company dinners, special occasions, lack of time, and eating out. The workplace dietary management programs were recognized as necessary with a need score of 3.9 out of 5. Conclusions: Participants were generally satisfied with the mobile health intervention program, particularly highly engaged participants. Feedback from a dietary coach was an important factor in increasing satisfaction.
The purpose of this study was to implement and evaluate the nutrition education program for elementary school children Subjects were 5th graders (n = 142) of an elementary school in Seoul, and 138 children completed four sessions of nutrition education during March-April, 2008. One group pretest-posttest design was used to evaluate the program effectiveness. Anthropometric measurements and measurements on nutrition knowledge, eating attitudes and eating behavior were done before and after education. Data were analyzed using paired t-test, t-test and ${\chi}^2-test$. After completing nutrition education, body mass index (from 19.3 to 18.9), fat mass (from 10.9 kg to 10.1 kg), percent body fat (from 25% to 23.3%) of subjects decreased significantly (p < 0.001). Percentages of overweight or obese children were 24.6% at pretest and decreased to 20.3% at posttest, although it did not reach statistical significance. Total score of nutrition knowledge increased significantly from 11.9 (59.5/100) at pretest to 14.7 (73.5/100) at posttest (p < 0.001). After nutrition education, percentages of correct answers increased significantly in 10 knowledge items out of 20 items. These included items such as desirable weight control, energy requirements for boys, food groups, snack, and function of fat and balanced meals (p < 0.001). Total score of eating attitudes increased significantly from 35.1 to 36.9 (p < 0.001). Attitude of applying nutrition knowledge to daily life (p < 0.001), interest toward nutrition and health (p < 0.001), attitude of moderating food intake (p < 0.01), and attitude toward eating habit and future health (p < 0.05) were significantly different between pretest and posttest. Total score of eating behaviors increased significantly from 46.7 (possible score: 20-60) to 49.5 by nutrition education (p < 0.001). Improvement in eight eating behaviors were noticed after nutrition education. These included eating meals slowly, eat protein foods (p < 0.001), eating breakfast, eating meals regularly, eating meals with diverse foods, having dairy foods, eating foods using plant oils (p < 0.01), and having grains (p < 0.05). Subjects evaluated quite positively in attractiveness of program, understanding of program contents, helpfulness of program in improving nutrition knowledge and meal management. Study results show that the nutrition education program was effective in improving nutrition knowledge, eating attitudes and changing eating behaviors of children. This program can be used in nutrition education of children at school or at public health centers.
The purpose of this study was to develop a reliable questionnaire to assess the effectiveness of the healthy restaurant program, which was implemented by Seocho-gu District in Seoul. Evaluation indices were deduced from the logic model of the healthy restaurant program. The questionnaires consisted of three sections (process evaluation, outcome evaluation, and general characteristics) for restaurateurs and customers who were participating in the program or not. To validate the questionnaire, 133 restaurateurs and 246 customers were sampled using convenient methods. Data were collected by interviews. Reliability was tested by Cronbach's alpha coefficient. The alpha coefficient for restaurateurs was 0.75-0.99 for the process and 0.79-0.97 for the outcome evaluation questions. The alpha coefficients for customers were 0.76-0.92 for the outcome evaluation questions. Face and content validity were examined for all questions, and construct validity was tested for latent variables. We are confident that more accurate and significant information will be collected using this questionnaire.
This study was performed to evaluate the effectiveness of a nutrition education program developed for nutritionally imbalanced adolescents. A summer nutrition camp was held for 23 overweight and 16 underweight subjects. Its effectiveness with regard to was evaluated at the end of the camp and 6 months later. Nutrition knowledge, nutritional attitude, food behavior, nutrient intake, exercise habit and ideal body figures desired by the subjects. The results showed significantly higher nutrition knowledge scores at the end of the camp as compared to those obtained prior to the camp program, and these scores were maintained for at least six months. Nutrition attitude scores also improved after the education program, and these improved scores also lasted for 6 months. However, the food behavior scores measured 6 months after the education program were not significantly different from those obtained prior to the camp. Also, the exorcist habit, the ideal body figures and the body figures desired by the subjects remained unchanged. When nutrient intakes of subjects were assessed before the program and 6 months later, the mean daily vitamin C intake was significantly increased after the education program. Also, the intake of iron from plant food sources increased in the overweight subjects, while less iron from animal source were consumed by the underweight subjects. Both groups tended to consume more vegetables and fruits 6 months after the education program which may have contribute to the higher vitamin C and plant-based iron intakes. These results indicate that a 4-day nutrition education camp program sustained changes in nutrition knowledge and nutrition attitude for 6 months. The increased intake of vegetables and fruits was also achieved through this education program. However, changes in dietary behavior in adolescents may require repeated education. This study was aimed at development of a nutrition education program, which was designed for children, their parents and personnel in preschool nursery facilities and carried out by dieticians. The program was conducted at 6 preschool nursery facilities for 3 months from July to September 1998. Four-hundred thirty-three children aged 2 to 7 years were engaged in the program. Children in each class were given nutrition education practice once a week by dieticians using education materials and a guide book based on a 12-week program. The themes of nutrition education for children consisted of 'knowledge of food sources and foods', 'relations between food and health', 'other roles of food', 'right eating habit', and 'cooking practice'. Each of five leaflets on nutrition education for parents was delivered eery three weeks in a series and leaflets were posted on a bulletin board. Nursery school teachers were educated by their participation in the class with dieticians using education materials. Evaluation of nutrition education by children, parents and personnel was carried out by interviewing and using questionnaires before and after the program. Children responded more positively more positively on their eating behavior and sanitary behaviors after nutrition education. Parents'opinions on the nutrition education program were positive : 72.3 described the nutrition education program as 'very good'and 'good'. In addition, 71.3% answered that the education materials for parents were helpful. A majority(93.8%) of personnel in facilities evaluated the nutrition education program effective. Nursery personnel evaluated the importance of general nutrition knowledge, childhood nutrition, and obesity control for nutrition management and nutrition education more highly after nutrition education. This study indicates that nutrition management and nutrition education programs for preschool nursery facilities are necessary and they would be effective when implemented by dieticians.
The purpose of this study was to develop a nutrition education program for dietary salt reduction using various nutrition education materials. The effect of a 5-week nutrition education program on salty taste assessment, nutrition knowledge, salt attitude for a high-salt diet, salt content in food, and individual satisfaction with the salt concentration of meals during the education period was evaluated. Nutrition education materials included two animations, a pamphlet, panels, and a website, as well as other training resources. Subjects participating in this study were 335 employees (164 male, 171 female) at 15 foodservice operations in Daegu. Preference for higher levels of salty taste and food containing higher amounts of salt were lowered. Knowledge regarding the necessity for dietary salt reduction was higher (p < 0.001) than before nutrition education, and salt content in a meal was reduced. As the program progressed, average salt concentrations of soups were significantly lowered (p < 0.05), and there was greater satisfaction with the lower concentration (p < 0.001). This was a positive indication of the program's success. In addition, it was found that subjects who participated in the program several times have changed their preference to lower levels of salty taste and have increased their nutrition knowledge (p < 0.05, p < 0.001). Thus, the positive effect of this 5-week nutrition education program developed for, and applied to, foodservice employees, concerning dietary salt reduction was confirmed.
This study evaluated the satisfaction and healthy eating index of nutrition-plus program providing nutritional supplements to pregnancy, lactating women, infant and children. This program was carried out at Public Healthcare Center, Seodaemun-gu in Seoul from February 2014 to June 2014. The subject selected among applicants for low income family financing of the government included 159 subjects. There was no statistically significant difference for degree of satisfaction with supplementary food by age, but the degree tends to get higher at lower age. Degree of satisfaction with supplementary food by the duration for participation was shown higher as the duration gets longer. For questions of 'Do you check nutrition label?' and 'Do you preserve food as described at food label?' in healthy eating index evaluation, the scores appeared higher at younger age group as they check the nutrition label more. Also as the duration for participation gets longer, the scores appeared higher which can be interpreted as effect of nutrition education from Nutrition-Plus. Frequency of having breakfast gets lower at higher age of subjects. And it gets higher as the duration for participation gets longer even though that there's no difference between '3 to 4 months' and '5 to 8 months' of the duration of participation. For evaluation of food security in recent 1 year, 86.8% of subjects responded 'Food sufficiency' and 'Enough but not always the kinds of food we want', and there is no difference by age and the duration of participation. As a result of this research, it is shown that the subjects of nutrition support project are relatively satisfied with the support. And healthy eating index gets improved as the duration of participation gets longer which can be considered as effect of nutrition education. It seems to be necessary to keep nutrition education as well as food support so to perform food life education on appropriate purchase and consumption of food.
This study was designed to develop the nutrition education program for the mothers of preschool children in kindergarten and evaluate its educational effects. Nutrition education program was developed on the basis of the concept which consisted of nutrition, nutrients, menu planning, cooking, recognition of nutrition education, food selection and menu planning, will of nutrition improvement. Subjects consisted of 41 mothers. All the subjects completed a pretest and a posttest. The nutrition knowledge score of pretest was 33.77$\pm$12.53 and that of posttest was 55.25$\pm$16.32 and the difference was significant(p<0.001). The Food attitude score of pretest was 66.40$\pm$6.26 and that of posttest was 70.76$\pm$6.05 and the difference was significant(p<0.001). Food attitude score of high score-group of nutrition knowledge was higher than that of low score-group of nutrition knowledge significantly, in pretest(p<0.001) and posttest(p<0.01) respectively. Nutrition knowledge score and food attitude score of children of educated parents of nutrition program was higher than that of children of uneducated parents of nutrition program but the difference was not significant. The nutrition densities of vitamin A(p<0.001), vitamin B$_1$(p<0.05), vitamin B$_2$(p<0.001), folic acid(p<0.05), Ca(p<0.001), p(p<0.001), calculated using the INQ(Index of Nutritional Quality), was significantly improved by nutrition consult and education program. The MAR(Mean Adequacy Ratio) of pretest was 0.79$\pm$0.23 and that of posttest was 0.91$\pm$0.16 and the difference was significant(p<0.05). (Korean J Nutrition 34(2) : 230-240, 2001)
