The proximate, fatty acid and dimethyl acetal (DMA) composition, and mineral and total amino acid content of limpets Cellana spp. were studied. Limpets contained 17.6% protein, 1.82% lipids, and 1.28% ash. The most prominent fatty acids in limpets were 20:4n-6, 20:5n-3, 18:1n-9, 16:0, 18:0, and 22:2 nonmethylene-interrupted diene (7,13). Limpets contained significant amounts of 18:0DMA (7.79%) and 20:0DMA (2.45%) derived from plasmalogen. They also contained large amounts of calcium (192.4 mg/100 g) and iron (9.4 mg/100 g), which are components of limpet teeth. The most prominent total amino acids were glutamic acid, arginine, aspartic acid, leucine, lysine, and glycine. These results suggest that limpets are a good source of n-3 and n-6 fatty acids, plasmalogen, calcium iron, and arginine.

This study was evaluated the dietary affect of ceramics on laying performance, intestinal microflora population, NH$_3$ and VFA gas emission from excreta and fatty acids composition of egg yolk in laying hens. A total of 180 layer at 34 weeks of age were fed the experimental diets containing 0.0 % (Control), 0.4 % and 0.8 % of ceramics powder for 6 weeks. It is concluded that 0.4 % ceramics powder supplementation in the 34 to 40 weeks laying hens diet, improves the laying performance and ratio of egg yolk n-6/n-3 fatty acids contents and decreasing emission of NH$_3$ and VFA gas from excreta.
The effects of dietary Int levels on lipid metabolism under fixed P/S (1.3) and n-6/n-3 (5.1) fatty acid ratios were examined in rats using palm oil, soybean oil and perilla oil. These ratios correspond to the recommended composition of dietary fat for humans. The range of dietary fat levels was 5-20% by weight (11.8-39.3% of total energy). The levels of dietary fat did not influence the concentrations of serum and liver cholesterol, whereas the level of triglycerides was gradually elevated with increasing levels of dietary fat, especially in the liver. The fatty acid composition of tissue phosphatidylcholine seemed to vary with the different levels of fat. The ratio of linoleic acid to arachidonic acid was increased more significantly in the heart than in the liver. In adipose tissue total lipids, the percentages of saturated and monounsaturated fatty acids decreased, whereas the percentage of polyunsaturated fatty acid increased, with increasing dietary Int levels. In addition, though the level of aortic prostacyclin was not uniformly affected by increasing dietary fat levels, thromboxane A2 production by platelets tended to increase with higher levels of dietary fat, suggesting an increased risk of thrombosis in this situation. Thus, even though dietary fat may have desirable compositions of fatty acids, these excessive consumption can produce unfavorable metabolic responses.
The effects of eicosapentaenoic (EPA, 20:5n-3) and docosahexaenoic acids (DHA, 22:6n-3) on the phospholipase $A_2$ ($PLA_2$)-mediated release of arachidonic acid (AA, 20:4n-6) were studied in kidney microsomes from rats fed diets containing sunflower oil (SO) or fish oil (FO) concentrate for 11 months. The amounts of AA released by the endogenous $PLA_2$ enzyme were significantly lower by 38% in the FO, compared to the SO-fed rats (23.2 nmol versus 60.7 nmol AA released/mg protein/h in the FO- and SO-treated groups, respectively). The FO-derived microsomes released less linoleic acid (LA, 18:2n-6) and adrenic acid (22:4n-6), but larger amounts of the n-3 fatty acids, including EPA, DHA, docosapentaenoic acid (DPA, 22:5n-3), and 20:4n-3 than the SO-derived microsomes. A similar replacement of the AA and adrenic acid with the n-3 fatty acids including EPA and DHA was also observed in the microsomal phospholipid fraction from the FO-fed rats relative to the SO-treated group. The results suggest that the $PLA_2$-mediated release of AA is reduced and that of EPA is increased in compensation for AA decline in kidney microsomes from FO-fed rats (0.7 nmol EPA/mg protein/h versus 22.7 nmol EPA/mg protein/h for the SO and FO-treated groups). Replacement of the n-6 with n-3 fatty acids may explain the reduced synthesis of the AA-derived prostaglandins and the concomitant rise in the EPA-derived prostaglandins observed in kidneys of FO-treated rats.

Rhodospirillum rubrum N-1 was inoculated to manipulated swine wastewater of 20,000 mg/L as Biochemical Oxygen Demand (BOD) to study the effect of aeration on swine wastewater deodorization. Biological and physico-chemical parameters were determined at 1 day interval for 9 days. Removals of BOD, volatile fatty acids (VFAs), and phosphate were 54.6%, 87.0%, and 54.5%, respectively. No significant changes were observed in the concentrations of total nitrogen, total phosphorus, nitrate, nitrite, hydrogen sulfide, and mercaptane.
This study was carried out to observe the effects of dietary n-6, n-3 fatty acids and vitamin A levels on serum lipid contents and hepatic tissues in rats. Sixty eight male Sprague-Dawley rats were fed 6 different experimental diets for 6 weeks. The diets were composed of 10% of either corn oil or fish oil with three levels of vitamin A ; defient (1240IU/kg diet), adequate (4000IU/kg diet), excess(400,000IU/kg diet). It was observed that triglyceride content and lipoprotein ratio in serum were not affected by dietary fat types and vitamin A levels. However, total serum cholesterol contents were significantly lower in fish oil groups than in corn oil groups, which were not affected by vitamin A levels. Under light microscope, vitamin A excess groups showed pathological abnormalites, such as fatty change and inflammation of the hepatic tissues. There abnormalities were less severe in fish oil groups. These results suggested that fish oil could be a dietary factor lowering the serum lipid contents, and it seems to relieve the abnormal changes in liver induced by excess vitamin A.
The level of long-chain n-3 fatty acids in chicken and pork can be increased by changing the diet of the animals. Increased levels of these essential fatty acids improve cardiovascular health in humans. The purpose of this study was to study the effects of the consumption of pork and chicken enriched in docosahexaenoic acid (DHA) on plasma lipids. The consumption of these products decreased the levels of two cardiovascular risk factors, LDL-cholesterol and triacylglycerols, in the plasma of female college students. The effect on LDL-cholesterol differed from that of fish oil, which does not affect the level of LDL-cholesterol. The proportions of DHA in the triacylglycerols and the glycerophospholipids were increased markedly. The greatest changes in the glycerophospholipids were in the ether types of the ethanolamine glycerophospholipids. Dietary DHA appears to be incorporated preferentially into the plasma ethanolamine plasmalogens, which can act as antioxidants. This agrees with our hypothesis that DHA stimulated the transcription of the genes for peroxisomal enzymes that are required for plasmalogen synthesis.

This study was carried out to investigate the rheological properties and composition of unsaturated fatty acid of farm butter made from the milk of cows grazing at high mountain pasture in Pyronogchang SKY ranch (above sea level, 935 m). From two groups containing 7 cows each, a group was fed in-door with TMR (total mixed ration) feed and whereas the other group was grazed pastures for 12 h. The daily intake of feed on basis of dry matter (DMI), milk yields, concentration of milk constituents, and fatty acid profile of pasture milk were compared with control TMR milk. In addition, the physiochemical properties and composition of unsaturated fatty acids of the butter were also compared with those of the butter made from control TMR milk. Upon comparison, the health-promoting index (HPI) of fatty acids; the ratio of omega-6 fatty acids to omega-3 fatty acids (n-6 to n-3 UFA), the atherogenicity index (AI), and the ratio of linoleic acid to ${\alpha}$-linolenic acid (LA to ALA) was apparently improved in farm butter than those of control butter. Thus, it could make the dairy farm visitors to consume the farm butter containing the health-promoting fatty acids from the milk of cows grazing on mountain pasture.

Atherosclerosis, a multifactorial disease, is closely related to lipid nutrition , Data from well known epidemiological studies including Seven Country , Framinghsam Study and several intervention trials have confirmed that serum cholesterol is the major risk factor and elevation of LDL-cholesterol level is most undesriable. On the basis of results concurring in that dietary saturated fat and cholesterol increase serum cholesterol while polyunsaturated fat decrease it, changes in serum choesterol level have been predicted by regression equations developed by Keys et al. and other investigators. Effects of individual fatty acids on the level of serum cholesterol have been further differentiated by chain length, cis-trans isomers and n-6 vs n-3 polyunsaturated fatty acids. Among them the effect of n-3 fatty acids has been well recogniaed as antiplatelet activity, thus reducing the incidence of atherosclerosis. Role of vitamin E in prevention of atherosclerosis has been evovled from works showing that LDL oxdiation stimulates formation of ateroma and also from epidemiologic studies. Dietary recommendations at present are : (ⅰ) 30 and 10 cal % as upper limit of total and saturated fat intakes, respectively (ⅱ) no more than 300 mg cholesterol/day, (ⅲ) 1-2 g of n-3 fatty acid/day and (ⅳ) some increase RDA of vitamin E which is 8-10 TE.
Changes of the fatty acid, amino acids and collagen contents in domestic broiler chickens of different marketing standard range from 5ho to 16ho were assessed. There were no significant trend in total ratios of saturated fatty acids and unsaturated fatty acids between breast samples taken from chicken in different weight ranges. The n6 fatty acids/n3 fatty acids decreased as weight ranges decreased and the ratio was decreased down to 5:1. Eicosapentaenoic acids(EPA) were detected from chicken in 10ho and tended to increase thereafter. The contents of EPA were 0.43% in 15ho. Docosahexaenoic acid(DHA) were detected from chicken in 14ho and DHA contents of breast taken from 15ho chicken were 0.94%. The contents of glutamic acids were 2.94∼3.59% and they increased as chicken weight increased. The collagen contents were higher in thigh than breast or wings. The results from this experiments will provide a basic information for establishment of marketing standard of chicken.
