To improve the quality of traditional Doeniang, the sea tangle, sea mustard, or anchovy powder were added to soybean paste and matured for 90 days. The quality and sensory evaluation of the Doenjang were analysed. The addition of anchovy showed higher fat and protein contents in the Doenjang. In the mineral contents, the sweet tangle and anchovy addition significantly increased Mg and K contents. The reducing sugar content showed 9.4% in the Doenjang prepared with sweet tangle and anchovy powder than 6.0% of the control. However, the pH and acidity were not showed any significantly difference at the 5% level by Duncan's multiple range test. The amino nitrogen content was 618.7 mg% in the anchovy Doeniang that is higher than 531.1 mg% of the control. The addition of sweet tangle and anchovy to the Doenjang showed higher score in the sensory evaluation.
Construction development and greenhouse gas emissions have globally required a strategic management to take some steps to stain and maintain the environment. Nowadays, recycled aggregates, in particular ceramic waste, have been widely used in concrete structures due to the economic and environmentally friendly solution, requiring the knowledge of recycled concrete. Also, one of the materials used as a substitute for concrete cement is wollastonite mineral to decrease carbon dioxide (CO2) from the cement production process by reducing the concrete consumption in concrete. The purpose of this study is to investigate the effect of wollastonite on the mechanical properties and durability of conventional composite concrete, containing recycled aggregates such as compressive strength, tensile strength (Brazilian test), and durability to acidic environment. On the other hand, in order to determine the strength and durability of the concrete, 5 mixing designs including different wollastonite values and recovered aggregates including constant values have been compared to the water - cement ratio (w/c) constant in all designs. The experimental results have shown that design 5 (containing 40% wollastonite) shows only 6.1% decrease in compressive strength and 4.9% decrease in tensile strength compared to the control plane. Consequently, the use of wollastonite powder to the manufacturing of conventional structural concrete containing recycled ceramic aggregates, in addition to improving some of the properties of concrete are environmentally friendly solutions, providing natural recycling of materials.
Building on/with expansive soils with no treatment brings complications. Compacted expansive soils specifically fall short in satisfying the minimum requirements for transport embankment infrastructures, requiring the adoption of hauled virgin mineral aggregates or a sustainable alternative. Use of hauled aggregates comes at a high carbon and economical cost. On average, every 9m high embankment built with quarried/hauled soils cost $12600MJ.m^{-2}$ Embodied Energy (EE). A prospect of using mixed cutting-arising expansive soils with industrial/domestic wastes can reduce the carbon cost and ease the pressure on landfills. The widespread use of recycled materials has been extensively limited due to concerns over their long-term performance, generally low shear strength and stiffness. In this contribution, hydromechanical properties of a waste tyre sand-sized rubber (a mixture of polybutadiene, polyisoprene, elastomers, and styrene-butadiene) and expansive silt is studied, allowing the short- and long-term behaviour of optimum compacted composites to be better established. The inclusion of tyre shred substantially decreased the swelling potential/pressure and modestly lowered the compression index. Silt-Tyre powder replacement lowered the bulk density, allowing construction of lighter reinforced earth structures. The shear strength and stiffness decreased on addition of tyre powder, yet the contribution of matric suction to the shear strength remained constant for tyre shred contents up to 20%. Reinforced soils adopted a ductile post-peak plastic behaviour with enhanced failure strain, offering the opportunity to build more flexible subgrades as recommended for expansive soils. Residual water content and tyre shred content are directly correlated; tyre-reinforced silt showed a greater capacity of water storage (than natural silts) and hence a sustainable solution to waterlogging and surficial flooding particularly in urban settings. Crushed fine tyre shred mixed with expansive silts/sands at 15 to 20 wt% appear to offer the maximum reduction in swelling-shrinking properties at minimum cracking, strength loss and enhanced compressibility expenses.
Objectives: We examined the effects of a mixed formula consisting of dried pomegranate concentrate powder (PCP) and the aqueous extracts of Eucommiae cortex (EC) and Achyranthis radix (AR) in rats with surgically induced osteoarthritis (OA). Methods: Two weeks after OA-inducing surgery, a PCP:EC:AR 5:4:1 (g/g) combination or single formula was orally administered. Changes in body weight, knee thickness, maximum knee extension angle, bone mineral density of the knee joints, femoral and tibial articular surfaces, and compressive strength of the femoral and tibial articular cartilage (AC) were assessed, along with the prostaglandin E2 level, 5-lipoxygenase, matrix metalloproteinase (MMP)-2 and MMP-9 activity, and chondrogenic gene mRNA expression in the femoral and tibial AC with the synovial membrane (SM). In addition, the number of cleaved poly(ADP-ribose) polymerase, cyclooxygenase and tumor necrosis factor-${\alpha}$-immunoreactive cells in the femoral and tibial AC with SM were monitored, and the rate of cell proliferation was determined with a 5-bromo-2'-deoxyuridine uptake assay. Results : The signs of surgically induced OA in rats were significantly inhibited by both PCP, EC and AR combined and single formulas. In particular, the combination formula-treated OA model rats showed dose-dependent, significantly increased inhibitory activity against all tested criteria compared with single formula-treated rats. Conclusions: Taken together, our results suggest that the combination formula synergistically increased the anti-OA effects of its components through anti-inflammatory and chondrogenic activity in rats with surgically induced OA. In addition, 200, 100 and 50 mg/kg combination formula treatments showed dose-dependent inhibitory activity against all of the tested criteria.
Antioxidative function of uncooked powdered food (Sangsik) was evaluated in rats consuming nutritionally unbalanced diet including 1% cholesterol, high proportion of animal lipids (lard : soybean oil : 8 . 2) , sub-optimal levels of vitamin and mineral mixture along with 0.5% ethanol in drinking water. The uncooked powdered food tested in the present study was a mixture composed of 42 kinds of plant foods (cereals, legumes, seaweeds, vegetables, and fruits) supplemented with vitamins and minerals, and dietary fiber. Control rats were fed the semi-purified diet based on the AIN-93G composition, and nutritionally unbalanced rats were divided into 3 groups, and fed one of the following diets with 0.5% ethanol in drinking water for 5 weeks : unbalanced control diet (UC) ,20% Sangsik powder supplemented diet (S20), and 40% Sangsik powder supplemented diet (S40) . Food efficiency ratio was significantly higher in rats fed S40 compared to the value for rats fed UC (p < 0.05). Hepatic level of thiobarbituric acid reactive substances (TBARS) was significantly lower in rats fed UC compared to that for control rats (p < 0.05) , and was not influenced by dietary supplementation of the Sangsik powder. Hepatic superoxide dismutase (SOD) activity was significantly higher in rats fed UC compared to that for control rats (p < 0.05) , and significantly reduced in rats fed S20 or S40 compared to the value for unbalanced control rats. Feeding unbalanced control diet significantly reduced the ratio of hepatic GSH-Px + catalase/SOD activities compared to the value for control rats, and this decrease in the ratio of antioxidant enzyme activities was reversed by adding the Sangsik powder to the diet at 20% (p <0.05) . Based on the results of antioxidant enzyme activities, feeding uncooked powdered diet appears to provide a favorable environment for body's antioxidative defense mechanism. Serum levels of Fe and Cu were significantly lower in rats fed the Sangsik powder supplemented diets compared to the value for unbalanced control rats (p < 0.05) , and levels of Se, Mn, and Zn were also tended to be decreased by dietary supplementation of the Sangsik powder. These results postulate the possibility that ingredients used in the uncooked powdered food may decrease the bioavailability of trace elements in rats.
To understand the effects of the powdered manganese nodule and sea bottom sediment pumped up with nodules on the mining process, the shattering ratio of manganese nodule and their physical properties are analyzed. The self shattering ratio and crushing shattering ratio are about 27% and about 3%, respectively. Then total shattering ratio is about 30%. The initial turbidity of the powdered manganese nodule and the bottom sediment show high, i.e., about 3,100 and 1,850 respectively. But their turbidities decrease rapidly with time. After 1 hour, turbidity of the powdered manganese nodule drops to about 1,570 and that of the bottom sediment to 1,310. The turbidity of Na-bentonite changes from 820 to 730 after 1 h and to 700 after 2 h. The viscosity of powdered manganese nodule is $1.4{\sim}1.5cP$, and the viscosity of bottom sediment is less than 1 cP. The viscosity fo Na-bentonite is initially 37.2 and increase with time to 86.4 cP after 30 min. The high initial turbidity of powdered manganese nodule is due to dark color of the powder. The high specific gravity makes rapid precipitation and then decreases the turbidity rapidly. The bottom sediment shows high initial turbidity because of easy suspension with very fine particle size. But it cannot be hydrated and formed gel in suspension, then it is easily precipitated. However Na-bentonite is hydrated to the expended state and makes gel state, then it shows high turbidity and high viscosity. These physical properties of the powdered manganese nodule suggest that the powder of manganese nodule should not make scaling inside of lifting pipe or pump. And the bottom sediment lifted up with manganese nodule should not play the role of drilling mud shch as Na-bentonite.

The purpose of this study was to search the calcium and iron rich foods in Korean people. The food sources presented in the current home economics textbooks of middle and high school were investigated. And 40 kinds of calcium and iron rich foods were selected by the quantity in 100g edible portion. one serving size and according to 1997 food supply data. Also 3 major food groups of calcium and iron supply in Korean were identified, and 10 rich foods for each food groups were selected. The results were summarized as follows. 1. The food sources of calcium 1) The food sources of calcium presented in the home economics textbooks of middle and high school are milk and dairy products. small fishes such as anchovy icefish and dried strip and green vegetables etc. 2) The calcium rich foods by 100g edible portion were in order of skim milk powder river snail sesame sea mustard. whole milk powder. snapping turtle loach sea tangle(dried) opossum shrimp and sea lettuce(dried). And the calcium rich foods by the calcium content in one serving were in order of river snail snapping turtle opossum shrimp loach spiny lobster skate skim milk powder small alaska pollack freshwater crab condensed milk whole milk powder skate ray and milk. 3) The 3 major calcium supply food groups in Korean were vegetables fish and shellfishes and milk and dairy products. 4) The calcium supply foods according to the quantity of food supply in 1997 was in order of sea mustard, milk anchovy chinese cabbage soybean skin milk powder laver shrimp welsh onion and maize. The vegetables were the important sources of calcium in Korean. 2. The food sources of iron 1) The food sources of iron which are commonly presented in the textbooks of middle and high school were meat liver egg(egg yolk) and green vegetables etc 2) The iron rich foods on the basis of the iron content in 100g edible portion were in order of surf clam marsh clam laver(dried)( sea lettuce(dried), crayfish pelilla seed little neck clam orient hard clam, venus clam, and freshwater carab. And the iron rich foods by the iron content in one serving were in order of surf clam marsh clam crayfish little neck clam orient hard clam freshwater crab venus clam hen cockle green confertii(fresh) pen shell and spiny lobster. 3) The 3 major iron supply food groups in Korean were cereals an cereal products fishes and shellfishes and vegetables. 4) The iron supply food according to the quantity of food supply in 1997 was in order of soybean sea mustard maize rice meat edible viscera laver wheat flour, pook, red pepper, egg and bovine meat.
As a part of investigation for utilizing seafood processing by-products as a functional food source, we investigated the processing condition (extraction methods and autoclaving time) of a functional calcium-based powder from fish bones and its characteristics. The calcium-based powder from Alaska pollack bone by autoclaving in water showed lower in the calcium content and higher in the yields and the soluble calcium ratio than those from fish bone by the other calcium extraction methods. As the autoclaving time elapsed up to 40 min, the content and soluble ratio of calcium increased, and the yield decreased. On the other hand, there were no difference found in those among calcium-based powders autoclaved for 40 min and over. Judging from the results, the calcium-based powder from Alaska pollack autoclaved in water for 40 min (CAP) was superior to those from fish bone by the other processing condition. The CAP was mostly solublized by shaking $(37^{\circ}C)$ for 1 hr at the acidic condition (pH 2.0). The soluble calcium ratio of acid-solublized CAP was about 59% by shaking $(37^{\circ}C)$ for 3 hr and over at the neutral condition (pH 7.0).

To enhance the quality of traditional Dasik, pollen Dasik containing brown rice flour fortified with 5, 10, 15 and 20% pollen powder were prepared, and their physicochemical properties were evaluated. Pollen Dasik possessed higher amount of mineral such as K and Ca than brown rice Dasik. The L value of pollen Dasik decreased with increasing pollen powder compared to brown rice Dasik, while the b value of pollen Dasik was increased with increasing pollen powder compared to brown rice Dasik(p<0.05). Hardness of pollen Dasik decreased with increasing amounts of pollen compared to the brown rice Dasik(p<0.05). Sensory evaluation on pollen Dasik preparewd with over 10% pollen showed the highest sensery evaluation value in overall preference.

This study was carried out to investigate the physicochemical and functional properties of Yacon (Polymnia Sonchifolia) powder. The proximate composition of Yacon powder as a dry matter basis was 3.53% moisture content, 1.13% crude protein, 0.40% crude fat, 0.79% crude ash, 1.63% dietary fiber and 92.52% carbohydrate. The major free sugars were identified as fructose and glucose. Analysing total amino acids, 18 kinds of components were isolated from Yacon powder. The essential amino acid contained in Yacon powder accounted for 28.40% of total amino acid, while the non-essential amino acid accounted for 73.61%. Analysing total fatty acids, only 2 kinds - palmitic acid and lauric acid - were detected. Oxalic acid was the major organic acid. The contents of vitamin A, vitamin C and vitamin E were 0.057 mg%, 0.670 mg% and 0.001 mg%, respectively. The mineral contents of Yacon powder were in the order of Zn
