  • Purpose: The purpose of this study was to analyze the meal types by cooking methods provided at different meal provision places using the 2015 Korea National Health and Nutrition Examination Survey. Methods: A total of 42,441 meal data on adults from the 2015 Korea National Health and Nutrition Examination Survey were used for analysis. The data were analyzed by complex sample $x^2-test$ of independence and complex sample logistic regression analysis using SPSS 23.0 for Windows. Results: The meal provision place showing the highest frequency was home (60.2%), followed by commercial (32.5%) and institutional foodservices (7.3%). The meal types by cooking method most frequently consumed were rices (18.3%) and kimchis (16.6%). The results of the complex sample logistic regression analysis showed that breads & snacks, steamed or braised dishes, fried dishes, and fresh seasoned vegetables were more likely to be consumed at commercial or institutional foodservices than at home. In addition, noodles & dumplings were more likely to be consumed at commercial places, and Korean soups were consumed at institutional foodservices. Conclusion: From the results of this study, it is suggested to develop recipes for substitution of fried dishes and to develop low sodium recipes at commercial and institutional foodservices. In addition, education of consumers of commercial foodservice is needed to reduce consumption of fried dishes, salted seafoods, and pickled vegetables and encourage consumers to choose meals from institutional foodservice managed by dietitians.

The survey was conducted on 631 individuals over 55 years old in either urban or rural areas. The survey was carried out using a questionnaire including dietary behavior, mini dietary assessment, and a food frequency questionnaire. The average age of the rural elderly was higher than that of the urban elderly whereas, education level and economic status were higher in the urban elderly compared to the rural elderly. The intake of dairy products, meats, instant foods, snacks, and the use of nutrient supplementation were significantly higher in the urban elderly than those of the rural elderly (p = 0.000). The intake of vegetables was significantly higher in the rural elderly (p = 0000). Furthermore, the rural elderly were more satisfied with food-related life and had better balanced diets than those of the urban elderly. Taken together, the results of this study revealed that customized nutritional management and education for adequate meals in different regions should be developed and provided in order to improve the quality of healthy living for the elderly.

The subjects were 580 children. Mother's LOHAS attitude index was 66.85 points and 100 points was a perfect score. The mother's high LOHAS attitude items that children perceived were "My mother often communicates with the family"(3.99 points) and "My mother thinks that the family's health is more important than her health"(3.93 points). In contrast, the LOHAS attitude items for "My mother does community service activity on weekends"(2.78 points), and "My mother participates in environmental protection service activity for the local community"(2.78 points) were very low. The high LOHAS behavior index of mothers was "resource saving", whereas "social welfare" scored low. When self-perceived health status and monthly income of children was high, the mother's LOHAS score was high. The LOHAS attitude index of mothers had a meaningful impact on the children's dietary quality, dietary habits, food behavior and health-related lifestyles. The most frequent food behavior variables were "high skipping rate", "frequency of snacks is 2~4 times per week", "speed of eating is rapid", and 'meals' amount is sufficient. The highest daily life habits item was "I try to maintain a pleasant and enjoyable life style"(3.42 points). The highest nutrient intake attitude score was "I tend to eat rice everyday."(3.41 points). They were highly recognized with "moderate physical activity", "high exercise preference", "positive posture exercise", "exercise <2 days per week", and "over 30 minutes exercise time per day" for the exercise performance status items. It was verified that the higher mother's LOHAS lifestyle score is, the higher children's food behavior, daily life habits, nutrient intake, exercise performance state score are.

  • The purpose of this study was to compare the nutrition intakes and factors related to dietary behaviors according to age in female. The subjects included 579 females aged 15 - 59 years. This survey was conducted using a selfadministered questionnaire to obtain data about eating behaviors, living habits, eating disorders by EAT-26 (Eating Attitude Test-26), and nutrition knowledge. In younger women aged 15 - 20 years, the living habits related to health such as smoking, drinking and exercising were undesirable. In addition, the younger women group had significantly higher levels of skipping meals and frequency of eating snacks compared to the older women group and their eating times were not regular. And they showed a lower score of health eating index by mini dietary assessment (MDA). Although, all age groups consumed energy, Ca, Fe, and thiamin below the Korean RDA; especially, in adolescent, Ca intakes ($67.1\%$ RDA) were extremely low. In addition, mean score of EAT-26 was significantly higher in young women aged 15 - 29 years than older women. Also, they had rather lower levels of accuracy and perception for nutrition knowledge compared to older age group. These results suggested that Korean adolescent had undesirable nutritional intakes and attitude, and nutrition knowledge, indicating inadequate eating behaviors. These poor dietary behaviors can affect the health status. Therefore, the nutrition counseling and education to help people to have correct nutrition knowledge and to form better eating habits needs to be established.

Subjects consisted of 75 boys and girls (control group : 37, treatment group : 38) in the 4th grade of elementary school. The results showed as follows. The proportion of boys was a little higher than that of girls. Of their mothers age, the thirties and forties were 66.7% and 33.3%, respectively. 61.3% of mothers had jobs and 86.7% of mothers prepared meals. The average of the anthropometric data of the 2 groups show were all in the normal range. The degree of nutritional knowledge in treatment group after education was significantly increased in all concepts, however, the degree of the control group appeared to show significant increase in only two concepts, such as "snack" and "one-sided diet". The diversity of dietary intake was investigated to evaluate the educational effect using food picture cards. The treatment group showed significant increase in all food groups except "cooked rice", "potatoes" and "fruits", but the control group showed no significant change. The level of nutrition knowledge has a significant correlation with the dversity of the food intake in the treatment group. The preferred lesson for children were "games", "doll playing" and "role playing". The impressive lesson contents were "diverse food intake without one-sided diet", "eating breakfast everyday", "choosing good snacks for health" and "eating less procesed food". These findings indicate that a well-designed program for nutrition education can help to change food habits, and that childrens education helps them to grow and to live as healthy adults. The performance of an educational program for preventive nutrition is more beneficial for children than for the adults based on the cost reduction and effect of this education. nutrition is more beneficial for children than for the adults based on the cost reduction and effect of this education.

  • Objectives: This study was designed to find out factors that are needed to be improved for the Buddhist training environment of Sramanera Sramanerika monks, who have been newly adapted for their life style after becoming a monk, and to provide basic data for the development of the standard diet in Buddhist temples. Methods: A self-administered questionnaire was applied to 365 Sramanera Sramanerika monks at 11 Buddhist monk universities. The questionnaire was designed to investigate their dietary habits, dietary evaluation, satisfaction of food service, and food preferences. Results: The study population consisted of 52.6% men, and 47.4% women. The subjects who had a vegetarian diet before joining the Buddhist priesthood were 27.7% women, and 13.5% men (p<0.01). 42.2% of the total subjects felt that they are healthy now and 19.4% felt weak. The most difficulty of dieting adaptation as soon as entering the priesthood was the strict diet rules (42.9%). The subjects considered health or nutrition (40.0%) highly when having meals. 94.8% women, 84.1% men ate breakfast every day (p<0.001). Women (55.4%) frequently ate snacks more than men (26.6%) (p<0.001). The results of the dietary evaluation indicated that the intake of milk, soy milk or dairy products and beans or tofu received lower than 3 points and women had lower point result than men (p<0.001). Foods with higher preference were grilled mushrooms, grilled laver, miso stew, sweet and sour mushrooms, steamed tofu with seasoning. Conclusions: Women were more interested in their health than men but they also required to improve the nutritional eating habits. It appeared that the lower intake rates of the calcium containing food (milk and dairy), and proteins (beans and tofu) could result in nutritional imbalance. Therefore, it is necessary to offer food based on the standard menu plan with consideration given to their food preferences in order to maintain their health and desirable dietary habits.

  • Objectives: This study aimed to assess the adherence to dietary guidelines among college students in the post-COVID-19 era and examine the changes in their dietary habits as the learning environment transitioned from remote to in-person classes. Methods: We conducted a survey involving 327 college students in Daejeon from March to April 2023. The survey questionnaires included various factors, including age, gender, type of residence, frequency of use of delivery food, convenience food, and eating out. In addition, we investigated the extent of adherence to the dietary guidelines for Koreans and the degree of dietary changes following the post-COVID-19 shift in class format were investigated. For comparative analysis of the level of adherence to dietary guidelines in relation to dietary habit changes, an ANOVA and a post hoc Scheffe test were employed. We also performed a multiple linear regression analysis to identify dietary factors influencing the level of adherence to dietary guidelines. Results: The study revealed a high rate of convenience food consumption and a low rate of homemade food intake among students. There was a marked increase in the consumption of processed foods, convenience foods, dining out, sweet foods, high-fat fried foods, beverages, and alcohol following the transition from online to in-person classes. When examining adherence to Korean dietary guidelines, the highest scored practice was 'Hydration', and the lowest was 'Breakfast habit'. Increased consumption of convenience foods, late-night snacks, and dining out were negatively correlated with adherence levels to dietary guidelines, specifically correlating with 'Healthy weight', 'Hydration', 'Breakfast habit', and the total score of adherence. The adoption of 'regular meals' was positively associated with increased adherence levels to dietary guidelines. Conclusions: The transition from remote to in-person classes post-COVID-19 led to increased intake of convenience foods, dining out, sweet foods, high-fat fried foods, and alcohol. The rise in convenience food and late-night snack consumption negatively influenced several aspects of the dietary guidelines adherence, thereby suggesting the need for strategies to encourage healthy dietary habits among college students.
