  • The principal objective of this study was to determine the importance of obesity management nutrition programs for obese male workers after performing a 10-week nutrition program and to compare changes in the obesity index, health behavior, meal intake, and blood constituents. The study subjects included 44 individuals, all without chronic disease. After the program, the weight, body mass index (BMI), body fat percentage, and waist-hip ratio (WHR) of the subjects dropped. Dietary life behavior scores increased. In particular, more than 30% increases were detected in self-control of surfeit, control of eating speed, temperance, and regular exercise items. Total caloric intake and average drinking intake dropped. Though insignificant, systolic pressure, total cholesterol, LDL-cholesterol, and sGPT all dropped as compared to the levels measured prior to the program. Fasting blood sucrose, triglyceride, $\gamma$-GTP, and atherogenic index dropped significantly. HDL-cholesterol, though insignificant, increased. As the result of examining correlations between the subjects' health life behavior, caloric intake, and improvement in obesity, we noted a significant correlation between self-control of surfeit and temperance in the health life behavior item, along with significant correlations among total calorie intake, surfeit percentage, and daily average drinking intake. These results demonstrated that nutrition program for obese workers performed at the Community Health Center had the effect of reducing obesity, improving health behavior, and improving clinical levels. Thus, it is advisable that obesity management programs be achieved, linking the center of local societies' health promotion projects, community health centers, and workplaces, and various programs should be developed to maintain and continue changes in workers' behaviors, such that the positive effects of improvement in obesity could be maintained, even after the program.

  • The purpose of this study was to examine 1) the relationship between the vegetable eating behavior of care givers and that of children, 2) the effectiveness of nutrition education with vegetable playing using direct visual stimulating programs on vegetable eating behavior of preschool children, and 3) the times and period of nutrition education with vegetable playing for significant changes on vegetable eating behavior. A total number of 56 individuals, aged 42 to 66 months old, participated in this study in which three kinds of vegetables (30 g)/meal were served per individual, and vegetable eating behavior was measured by the residue on the dish during 5 weeks (25 days). To the simple visual stimulating group, vegetable dish was served without education, and other groups included education 1 group (nutrition education 1 time/week), education 2 group (nutrition education 2 times/week), and education 3 group (nutrition education 3 times/week) with simple visual stimulation by the vegetable dish. The results showed 1) the significant relationship (P<0.001) between the vegetable eating behavior of the care giver and that of children by analysis of the questionnaire, 2) the effectiveness of nutrition education using vegetable playing on vegetable eating behavior of preschool children (P<0.05), and 3) the significant changes in vegetable eating behavior by the 3rd week in the education 3 group. This study shows that food neophobia caused behavior problems in children regarding vegetable eating and repeated exposure was able to reduce food neophobia.

Methods: To achieve the goal of this survey as mentioned, we have carried out a research targeting on a total of 636 elementary school students, 505 children of standard body weight and 131 children of obesity, all of whom belong to elementary school students in Seoul, the capital city of Korea. And we have itemized the research into 'eating habits', 'physical activity, 'dieting experience in the past', and 'stress and release management' in order to spot the specific health behavior leading to obesity. Results: 1. Factors for diseases mainly from obesity were statistically significantly differentdepending on degree of the subjects' self-respect and a history of obesity in their families, father($x^2$=7.172, p=.007), mother($x^2$=9.011, p=.003), and siblings($x^2$=12.431, p=.000). 2. Regarding the subjects' eating habits, some items were statistically significantly different: taking algae($x^2$=3.324, p=.043), eating breakfast($x^2$=6.070, p=.010), and eating fast($x^2$=8.551, p=.002). 3. There were some statistically significant differences in the subjects' dieting experience. For the latest 1 year, they made some attempts for that: fasting($x^2$=4.229, p=.040), reduction of eating($x^2$=25.377, p=.000), eating one meal a day($x^2$=5.582, p=.018) 4. • This study was aimed for examining the changes of eating habit and behavior according to the degree of stress of elementary school students. It was tried to identify their daily stress levels and their relevances with the changes of their eating habits and behaviosr. The subjects were 500 students from fifth and sixth grades in three elementary schools in Seoul. The students surveyed showed to get moderately stressed in general. The stress level of girls were higher than that of boys(p<0.001) in the individual area. The breakfast ratio of the low stressed group(LS) marked higher(p<0.001) than those of both the middle-(MS) and highly-stressed group(HS). In other words, the LS group had regular breakfast. The main reason why they were skipping breakfast was lack of time. The amount of a meal in the HS group was noticeably bigger than the other two groups(p<0.05) and the amount of salt and spices used was higher(p<0.01). The amount of food taken when they got stressed was increased remarkably higher in the HS group and students in that group had snacks as the way of relieving the stress. The HS group displayed higher ratio of the unbalanced diet habit. There were noticeable differences in the eating habit and behavior, i.e. the amount of meals, of salt used and whether eating breakfast or not, in accordance of the levels of stress.

Also, there were no significant differences in nutrition attitude score (39.5 to 39.8 points). Female subjects showed significantly (p < 0.05) higher nutrition knowledge scores (12.3 points) than male (11.4 points). $20\%$ of the subjects smoked and $82.9\%$ had alcohol drinks and $24.4\%$ exercised more than 3 times per week. The subjects who ate regular meals significantly increased from 9.3 to $12.5\%$ after the lecture, and smoking subjects decreased from 20 to $13\%$, but alcohol drinking subjects did not changed significantly.

Health promoting lifestyle showed significant positive correlations with self-esteem (r=0.446, p<0.00l), life orientation test(r=.493, P<0.0l) and score(F=6.157, P=0.002) 3. Perceived health state showed significant correlation with alcohol & smoking subscale(r=-.134, P<0.05) of health promoting lifestyle. Self-esteem showed significant correlation with total health promoting lifestyle(r=.538, P<0.01), and showed significant correlation self-actualization subscale(r=.657, P<0.01) health responsibility subscale (r=.272, P<0.01), food regulation subscale(r=.126, P<0.05), interpersonal relationship subscale (r=.468, P<0.0l), stress management subscale(r=.349, P<0.01) sanitary life subscale (r=.282, P<0.01) sleep & rest subscale(r=.123, P<0.05). Life orientation test showed significant correlation with total health promoting lifestyle(r=.493, p<0.01), selfactualization subscale(r=.643, p<0.01) health responsibility subscale(r=.192, P<0.0l), habit of meal subscale(r=.215, p<0.01), interpersonal relationship subscale(r=.423, p<0.01), stress management subscale(r=.345, p<0.01) sanitary life subscale(r=.191, p<0.01) sleep & rest subscale(r=.137, P<0.05). Stress response showed significant correlation with sleep & rest subscale(r=-.137, P<0.05) of health promoting lifestyle. 4. The combination of self-esteem. life orientation test explained $33.2\%$ of the variance in health promoting lifestyle. On the basis of the above findings. self-esteem and Life Orientation Test were identified as the variables which explained most of Pender's health promoting model. Nursing strategies enhancing self-esteem and Life Orientation Test which have a more significant effect on health promoting lifestyles should be developed.
