Relationship of Slaughter Age and Carcass Traits of Hanwoo Cattle

  • Two experiments were carried out to investigate the relationship of slaughter age and carcass traits of Hanwoo cattle. A total number of 11,284 heads of cattle (4,624 bulls, 6,120 steers, and 540 females) were used in the experiment (Exp.) 1. In the Exp. 2, 3,887 heads of steers slaughtered at age of 24-36 mon were used. After 24 h post-slaughter chilling, the carcasses were weighed and evaluated by an official grader of carcass traits according to the Korean carcass grading standard. Backfat thickness was the main variable in yield index and grade whereas marbling score was the main variable in carcass quality grade. Meat color was an important factor affecting carcass quality grade of bulls; fat color was an important factor affecting those of steers and females; and maturity was an important factor affecting that of females. After 24-mon-old, extension of slaughter age did not automatically increase the quantity and quality of meat. However, 29 mon of age can be regarded as the optimum time to slaughter steers to attain the highest take home money for farmers.

A Study on Systematizing Contents of Sex Education in Elementary School (초등학교 성교육 내용체계에 관한 연구)

  • The purpose of this study was to be of use for the preparation of more desirable sex education system at elementary school, by making content analysis of the current textbooks related to sex education and surveying what opinions the persons concerned had about it. The purpose of this study were as follows; Elementary school textbooks were analyzed to find out what kind of sex education was included in them. And questionnaires on how to improve school sex education content were prepared, by which 207 male and female teachers were surveyed in the city of Paju and Koyang, Kyonggi province. The conclusions were as follows; 1. Content Analysis of Textbook Sex Education The content related to sex education was relatively much included in textbooks of the right life, morality and physical education. Although morality was a subject to be instructed for the third-grade students or older, elementary school students virtually received sex education from the first grade, as the right life and the joyful life were a subject for the lower-grade students, and this met the goal of sex education or the need of the times. However, sex education content leaned heavily toward family, family life or parental love. There was no mutual complement among subjects, and no link among grades, either. 2. Teacher Opinion on Sex Education Content for Each Grade When the subjects were asked about if sex education content was appropriate for each grade, they answered 20 items should be more emphasized and 6 items might be left out. And there were 6 items regarded by them as one that should be rearranged in consideration of grade. 3. The Ideal Opinion of Sex Education Content The following model could be recommended for elementary school sex education, which was designed to meet the objectives of school sex education as much as possible and to offer a systematic link among grades, based on the findings by textbook analysis and Questionnaire survey, and on elementary school sex education materials recommended by the Ministry of Education: The content selected for the first grade of elementary school was my body, cleanness of genitals, male-female cooperation, and family cooperation. For the second grade, the selected content was male-female physical difference, male female psychological difference, parental and I(origin of a birth). For the third grade, the selected things were important a body(cleanness of genitals), birth of a life, and male-female comprehension and cooperation. For the fourth grade, the selected things were physical development, management of genitals, physiology and management of menstruation, propagation and growth of organism, concern for the other sex, comprehension of and cooperation with the other sex, and prevention of sexual violence. Four the fifth grade, the selected things were secondary sex characteristic, physiology and management of menstruation, operation for phimosis, understanding of seminal emission, structure and function of the genital organs, birth and growth of a baby, television/sex information, and mass communications/sex information. For the sixth grade, the selected things were secondary sex characteristic, understanding of seminal emission, male-female cooperation, male and female role, male-female manners, mass communications/sex information, family and family life. Finally, what should be taught in sex education must be studied constantly, as it should be revised or supplemented periodically, according to student's sexual maturity or social, cultural changes.

Chemical and Gelation characteristics of Pectins Obtained from Ripened and Unripened Crabapples (과일 내의 pectin 함량 및 성숙도에 따른 pectin 특성 변화에 관한 연구)

  • This study was attempted to determine the pectin contents of various fruits(Cherry, strawberry, plum, peach, apricot, apple, crabapple) and to investigate the changes in the properties of pectin and pectin gel during crabapple ripening. Methoxyl content, molecular weight and intrinsic viscosity were measured in ripened and unripened crabapples. In order to determine the characteristics of pectin gel, percent sag was measured by exchange Ridgelimeter, hardness and textural characteristics of jellies were measured by a penetrometer and a texturometer. The experimental results are summarized as follows: 1. The pectin contents of various fruits were 1.16% for cherry, 3.17% fir strawberry, 4.29% for plum, 5.51% for apricot, and pectin contents of peaches and apples varies depends on varieties from 4.54% to 5.61% to 6.52, respectively. The pectin contents of unripened and ripened crabapple wee 9.21% and 9.84% respectively, indicating that pectin content increased with fruit maturity. 2. The methoxyl contents, which was 6.61%~6.95%, was very low and it increased significantly during fruit ripening. Further, a decrease in acetyl content, intrinsic viscosity, molecular weight occurred during the ripening of crabapples. 3. The percent sag of crabapple jellies increased with fruit maturity from 5.26% to 5.79%, and the corresponding jelly grade decreased in ripened crabapple. 4. The hardness of jellies determined by a penetrometer was 79.15 pp.U. for ripened crabapple jelly, 90.62 pp.U. for unripe ned crabapple jelly. 5. In the textural characteristics of gels measured by a texturometer, the gels made from unripened crabapple were shown to have the highest values in hardness, cohesiveness, adhesiveness and gumminess.

The Relationship between Critical Thinking Disposition and Basic Nursing Science (비판적 사고 성향과 기초간호과학 간의 관계)

  • Objectives : The purpose of this study to investigate the Critical Thinking disposition in Nursing College students and related to ability of basic nursing science. Methods : Data were collected from 36 students who were students belong to one of province University. The instrument used in this study was California Critical Thinking Disposition Inventory(CCTDI) by Facione & Facione. The instrument was composed of 7 sub-items, truth-seeking, analyticity, systematicity, open-mindness, critical thinking, self-confidence, inquisitiveness, and maturity. The data were analyzed by descriptive statistics, t-test, ANOVA, Pearson Correlations with SPSS 12.0. Results : The result of this study were as follow; The average of total score in critical thinking disposition was 44.8, which means middle level(below 40: low, above 50: high level). Maturity was the highest while open-mindness was the lowest with an average score 5.01. There was significant difference between critical thinking and basic nursing science grade while there was no difference between age, gender, and religion. There was strongly relation between critical thinking disposition and basic nursing science(F=2.84, p=.01). Conclusion : According to the results of this study, nursing curriculum should be considered critical thinking disposition.

Effect of the Convergent Mock Interview Program on the Program Demand, Career Attitude Maturity, Job Preparation Stress (융합적 모의면접프로그램이 프로그램 요구도, 진로태도성숙도, 취업준비스트레스에 미치는 영향)

  • The purpose of this study is to investigate the effects of the convergent mock interview program on college students who are preparing for employment and their effects on program demand, career attitude maturity and job preparation stress. The study subjects were 73 nursing students and pre - 4th grade college students. Data collection was done before and after the application of the program. The collected data were analyzed using the SPSS WIN 23.0 program. The results of the study showed that there was a statistically significant difference between the program demand (t = 7.92, p <.001) and career attitude maturity (t = 3.35, p = .001).but Job stress (t = .98, p = .327) was not found to have any effect Based on these results, we propose to increase the program period and to develop and apply a customized convergence program tailored to the characteristics of the students.

Affecting Factors of Self-efficacy and Clinical Practice Satisfaction on Career Attitude Maturity in Nursing Students (간호대학생의 자기효능감과 임상실습만족도가 진로태도성숙도에 주는 영향)

  • The purpose of this study to investigate the effects of self-efficacy and clinical practice satisfaction among nursing students and to provide counseling and guidance for nursing. There are 121 nursing students 4th grade students who accomplished all clinical practices cited one specific location. Collected data were analyzed using Pearson's correlation and Multiple regression. The results shown by the study were shown to be positively correlated. The results of the study were clinical practice satisfaction 13.3%(${\beta}=.248$) and self-efficacy 38.6%(${\beta}=.570$), respectively. A total of 44% were the factors affecting the career attitude maturity. Therefore, it is necessary to develop a curriculum to enhance the self-efficacy of nursing students and to improve the satisfaction of clinical practice.

  • The purpose of this study was to examine the mediating effects of self-esteem on the relationship between adolescents' family environment(parent's child-rearing attitude, family cohesion), peer environment(quality of peer relationship, peer bullying) and career maturity. The subject of this study were students of third grade of middle school who reside in Seoul. 425 self reported questionnaires were used for final analysis. Findings of this study indicated that family environment of adolescents directly affected peer environment. Family environment and peer environment of adolescents directly affected self-esteem. Self-esteem was more highly affected by peer environment than family environment. Adolescents' self-esteem directly affected career maturity. The structural equation modeling showed that self-esteem mediated the relationship between family environment, peer environment and career maturity.

  • Actual condition by items based on the level of execution of Construction Company certified by Construction Safety and Health Management Systems (KOSHA 18001) was investigated, analyzed and evaluated reflecting various opinions fincluding safety experts, top management, audit experts, and construction engineers. Currently, the maintenance is being managed through internal audit after the safety and health management system has been certified, but it is difficult to identify the degree of continuous improvement. In order to present the standards to see the level of quantified system, this study was conducted. The purpose of this study is to present the system maturity evaluation tool to be used to reduce occupational accidents through proper establishment and continuous improvement of national health and safety management system. Results of this study are summarized through identification of current condition of implementation of KOSHA 18001 system, development of maturity measurement tool and verification as follows: First, priority of implementation for activities of headquarters and on-site was determined by importance of activities such as the risk assessment, safety and health accident prevention activities, performance assessment and monitoring, resource management and support, and management review and improvement in order. In addition, the expert group presented that association with continuous improvement activities could establish the system by presenting strengths, weaknesses and improvement subjects of system.

Objective Meat Quality from Quality Grade and Backfat Thickness of Hanwoo Steers

  • The objective of this study was to determine the effects of quality grade (QG), and back-fat thickness on the carcass traits and meat quality properties of Hanwoo steers. Fifty carcasses were sorted into two QG (QG 1+ and 1) and three back-fat thickness (<10 mm, 10 to 19 mm and ≥19 mm) groups. After investigating the carcass traits (rib eye, back-fat thickness, weight, color, yield index, maturity, marbling score, and texture), the longissimus lumborum muscles from the carcass groups were collected and analyzed for meat quality (pH, color, cooking loss, and moisture), texture profiles [Warner-Bratzler shear force (WBSF), and tensile tests], and fatty acid. Results showed that marbling score (p<0.001), moisture (p<0.05) and tensile tests values (p<0.05) had a significant differences between QG1+ and QG1. No differences in pH, color traits, cooking loss and WBSF values occurred between the QG groups. Regarding the back-fat thickness effect, we observed that the carcass weight, yield index (p<0.001), yield grade (p<0.001) and marbling score (p<0.05) had a significant differences among the back-fat thickness groups. Regarding the meat quality, moisture content and WBSF values (p<0.01) among the back-fat thickness groups. The back-fat thickness did not affect the pH, color, cooking loss and tensile tests. The QG and back-fat thickness did not affect the fatty acids contents (p>0.05). It may be concluded that the carcass traits and meat quality were significantly affected the QG and back-fat thickness.

Effect of Sex on Quality Grade Factors, Physicochemical and Sensory Traits of Longissimus Dorsi in Hanwoo (성별이 한우 등심의 육질등급요인, 이화학적 및 관능특성에 미치는 영향)

  • The effect of cattle sex (cow, bull, and steer) on carcass traits of quality grade factors, physicochemical, and sensory traits of Longissimus Dorsi in Hanwoo was evaluated. Carcass traits of 42,113 heads were collected nation-wide and 257 heads were slaughtered to analyze beef quality. Sex affected significantly marbling score, meat color, fat color, texture, maturity, and quality grade of Hanwoo (p<0.05). Hanwoo steer carcasses had the highest marbling score (5.02), maturity (2.17), and texture (1.31) than those of cows and heifers. Crude fat of steers was higher than that of other cows and bulls. Steers showed the highest $L^*$(39.01), Warner-Bratzler shear force (4.03 kg), and water holding capacity (57.08%), however, there was no significant differences between those of cows and bulls. Ultimate$pH_{24}$ was shown difference among sex (5.58-5.69), however, the values remained within normal range. In sensory evaluation analyses, sex affected significantly tenderness, juiciness, and flavor (p<0.05). Also, the over all acceptability of steer beef was significantly higher than that of cow and bull beef. These results could be used as fundamental data set for further research activities to elevate Hanwoo beef qualities (p<0.05).
