Food and nutritional survey was made on two kinds of milk (one: 30 samples of bottled milk, the others: 30 samples of prepared milk), which are bottled market cow milk in Seoul city to examine the general ingredients, adulteration and degeneration. The results of survey indicated that the bottled milk delivered to home is relatively better than the prepared milk from the view point of food and nutrition. Moreover the quality of the prepared milk is poor because of adulteration through adding water or skim milk powder in order to increase quantity, consequently the prepared milk is under the nutritional standard. However it indicated that some of the bottled milk are rather inferior from the view point of food and nutrition, so certain measure is required for improving the quality of bottled and prepared milk. Most of the bottled milk and the prepared milk containing Coli-form bacteria have a possiblity to harm the citizen's health as a medium of infectious disease, such a fact is really serious problem from the view point of the national health, considering the general trend of milk consumption increase. It is urgent for us to take a scientific inspection on the sanitary management and take a formidable measure in handling of milk.
The international dairy federation's main objectives are to enhance the international dairy market and industry by producing an annual world dairy situation report. The IDF National committee and other international contributors provide a questionnaire to be completed for the country reports on top of other various official studies. Due to the economic boom of many developing nations, in 2014 the dairy market saw great increase in the total milk production. In this paper, we develop a dynamic structural model based on a dynamic supergame and measure market power for the Dallas-Forth Worth fluid milk market in the U.S. In particular, we compare the conduct parameter estimates from a static model with that from the dynamic model and illustrate bias in the market-power measure in a static model. And we also analyze the cyclical behavior of firm conduct. We find that the conduct parameter in a static model underestimates true market power if firms' behaviors are posited by a dynamic oligopoly game. We also verify that firm conduct in the Dallas-Forth Worth fluid milk market is countercyclical against demand shocks and expected future cost shocks. Our results indicate that the firms' conduct in the Dallas-Forth Worth fluid milk market is consistent with what dynamic oligopoly models predict. This implies that the firms consider not only the contemporary reactions of the other firms' but also future market competition. Therefore, the measurement of market power requires the specification of fully dynamic pricing relationship.
A survey to determine the zinc content of early-infant food sources was conducted. Collected samples from various lots were human milk from volunteer mothers and infant formula and market milk from markets. The determined results by Atomic absorption Spectrophotometer were as follows: 1. Averages of Zn were 201$\pm$144 $\mu\textrm{g}$/dl in human milk, 2.243$\pm$0.888 mg/100g in infant formula, 292$\pm$90$\mu\textrm{g}$/dl in market milk and showed the decline trend by the lactation periods in human milk. (p<0.01) 2. Estimated daily intake of Zn from human milk was higher than that from infant formula in 3 months old infants.
Recently, underdeveloped countries have exhibited slight increases in their share of global dairy production. However, this growth is mostly the result of an increase in the number of producing animals, rather than a rise in productivity per milking cow. Fortunately, with the increase in milk production, the world dairy trade reported that the abundance of milk has resulted in increased production of other dairy products, such as dairy powder and butter. This study was carried out to investigate the changes of physical and chemical properties according to the preserving periods and temperature in heat-treated market milks ($130^{\circ}C$, 2 sec). The market ilks were divided into 3 experimental groups, that is $4^{\circ}C$, $15^{\circ}C$ and $30^{\circ}C$ according to the preserving temperature during 7 days. There were analysed fat, protein, lactose, total solids, solids-not-fat, specific gravity and acid value of market milks in each experimental group. These observations indicated that heat-treated market milks ($130^{\circ}C$, 2 sec) may be acceptable physically and chemically after 7 days at $4^{\circ}C$. The results obtained were summarized as follows ; 1. Total microorganisms in market milks were found 12$\times$$10^1$ cells at 1st day Coliform and pathogenic bacteria were not detected. 2. Milk fats tended to decrease 3.69% to 3.48% according to the time lapsed in all experimental groups without concerning to the storage temperature. 3. Milk proteins were slowly decreased 3.18% to 3.13% according to the time lapsed without concerning to the storage temperature. 4. Milk lactose was slightly increased 4.41% to 4.55% in all experimental groups. 5. Specific gravity in market milks was 1.0316 to 1.0299, and showed no changes according to the preserving periods and temperature. 6. Total solids and solids-not-fat in market milks were slightly decreased 12.30 to 12.05 and 8.55 to 8.40. 7. Acid values were dramatically increased 0.1289 to 0.3116 at $30^{\circ}C$ storage group, while tended to be stable at $4^{\circ}C$ storage group for 7 days.
The study Was carried out to determine the residue concentrations of peniccillin in Merket milk samples collected from some of the retail shops located in Seoul City. During the period from June to September 1974, 160 milk samples were collected and examined, using the Filter Paper Disk Method, for Screening test and Quantitative test of penicillin residue. The results obtained in the study were as follows: 1. Among the 160 Market Milk samples. 28 samples (17.5%) proved to contain some antibiotics residue. 2. In the case of the antibiotics residue positive milk samples, the rate of penicillin residue alone was 46.4% and the rate of the other antibiotics was 53.6%. 3. In the distribution of milk plants examined in relation-to the antibiotics residue positive milk samples, it was shown that S.K.H. and M.Market Milk plants had 15.0, 17.5, 20.0 and 17.5 percent respectively. 4. According to the monthly distribution, the highest antibiotics residue positive rate (25.0% of the samples) was shown in the samples collected in August, and the next (20.0% of the samples) in July. While the samples collected in June and September 1974 Showed lower rates of 7.5% and 17.5% respectively. 5. The range of the residue concentraction of penicillin in the positive milk samples were as follows: a. 53.8% of the total samples were found in the lowest range of 0.02-0.05 IU/ml. b. 30.8% of the total samples were found in the lower range of 0.05-0.1 IU/ml. c. 7.7% of the total samlpes were found in the higher range of 0.1-0.2 IU/ml. d. 7.7% of the total samples were found in the highest range of over 0.2 IU/ml.
A duplex PCR technique was applied for specific identification of cow and goat milk in milk products by using primers targeting the mitochondrial 12S rRNA gene. Duplex PCR using primers specific for cow and goat generated specific fragments of 223bp and 326bp from cow and goat milk DNA, respectively. Duplex PCR was applied to 15 milk products purchased from the market to verify label statements. The labeling statements of four market milk products, three yoghurt products, and one whole milk powder product were confirmed in the duplex PCR. The labeling statements of five of seven infant milk powder products were also confirmed by duplex PCR but the other two products were shown to be contaminated with either cow or goat milk. The proposed duplex PCR provides a rapid and sensitive approach to detection of as little as 0.1% cow milk in goat milk and one-step detection of cow or goat milk in milk products.

Own price elasticities are negative and most milk products are statistically significant. Advertising effects are marginal, and statistically significant except flavored milk. Seasonality is apparent from July through september except children's milk.
In March 2015, the milk quota system in Europe that had lasted for more than 30 years was abolished to improve the competitiveness of the European dairy sector in the international market. Despite an increase in the consumption of dairy products in Europe, the milk price is expected to stabilize in the next decade after a decrease between 2015 and 2016. This stabilization of prices will be caused by a significant increase in production, with the proportion exceeding domestic demand to be exported. In the international market, the price of milk will reduce in the next decade, leading to a restructuring of the milk sector with a lower number of farms, but with higher production and efficiency. Mountain farms will follow the same trend, although these farms play an important social role by providing ecosystem services such as maintaining cultural services, reducing greenhouse gas emissions, promoting soil stability, and improving the aesthetic value of the landscape. Nevertheless, they remain at a disadvantage compared with lowland farms. To prevent the loss of mountain farms, there is thus a need to valorize the ecosystem services that they provide and promote the processing of milk into certified products of high quality.
