Effect of Soil Water Content on Growth, Photosynthetic Rate, and Stomatal Conductance of Kimchi Cabbage at the Early Growth Stage after Transplanting (정식 후 초기 생장기 배추의 생장, 광합성 속도 및 기공전도도에 미치는 토양수분의 영향)

  • The objectives of this study were to determine the impact of soil water content on the growth, stomatal conductance, and photosynthesis of Kimchi cabbage and to evaluate proper parameters for development of growth models. There were five levels of irrigation amount treatments (0, 200, 300, 400, and 500 mL/d/plant) and those were commenced at one day after transplanting (DAT). We measured soil water content, stomatal conductance, photosynthesis characteristics, and the A-Ci curve. The growth of Kimchi cabbage as affected by irrigation amount was evaluated at 38 days after transplanting, however, the growth with 0 and 200 mL/d/plant irrigation amount treatments measured at 29 DAT. The relationship between soil water content and stomatal conductance was highly correlated ($r^2=0.999$) and the function represented by y = 6097.4x - 4.2984. The stomatal conductance of Kimchi cabbage leaves showed $300mmol{\cdot}m^{-2}{\cdot}s^{-1}$ when the soil water content was below $0.05m^3/m^3$. The stomatal conductance was rapidly decreased by scarcity of soil moisture. A-Ci curve indicated normal curve in fully irrigation treatment (500 mL/d/plant), however, $CO_2$ couldn't diffuse through the intercellular Kimchi cabbage leaves treated with 0 mL/d/plant. The dry weight of full irrigation treatment was greater approximately 6.8 times than that of deficit irrigation (0 mL/d/plant). In addition, leaf area index showed a logarithmic function (y = 16.573 + 3.398 ln x) with soil water content and that of R-squared represents 0.913. Results indicated that the soil water content was highly correlated with stomatal conductance and leaf area index. Indeed, the scarcity soil moisture reduced photosynthesis and retarded growth.

Responses to 1-MCP during Storage of Kimchi Cabbage Ryouckgwang Cultivar (배추 력광 품종의 저장 중 1-MCP에 대한 반응)

  • The effect of 1-methylcyclopropene (1-MCP) in the storability of kimchi cabbage at cold storage condition was investigated. Kimchi cabbage (Brassica campestris L. cv Ryouckgwang) was divided four groups, forced air cooling (FAC), FAC + 0.03 mm linear low density polyethylene liner (Liner), $FAC+2{\mu}L{\cdot}L^{-1}$ 1-MCP (1-MCP), and FAC + 1-MCP + Liner. After each treatment kimchi cabbage was stored at $2^{\circ}C$, 95% RH. Quality parameters were weight loss, soluble solids content (SSC), firmness, and color ($CIE\;L^*$, $a^*$, $b^*$, chroma, hue angle). Weight loss during storage was showed significant difference by Liner treatment. In particular FAC + 1-MCP + Liner treatment showed 12.5% reduction after 6 weeks of storage period and minimized the weight loss rate compared to other treatments. SSC of kimchi cabbage was $2.5^{\circ}Brix$ at harvest and FAC + 1-MCP + Liner treatment maintained the SSC until 3 weeks, while in other treatments gradually were increased. The firmness of kimchi cabbage was 24.0 N immediately after harvest and the firmness at harvest time tended to be maintained at 22.6 N after 6 weeks of storage in FAC + 1-MCP + Liner treatment. During the storage period, the color change of the kimchi cabbage leaf can be confirmed by $CIE\;a^*$ and hue angle value. 1-MCP treatment alone did not affect the color change, however 1-MCP + Liner treatment was able to maintain the chromaticity at harvest time while minimizing the change of $CIE\;a^*$ and hue angle. These results suggest that 1-MCP treatment is not effective for the storage of kimchi cabbage but can be maintained for up to 6 weeks when treated with Liner.

  • The purpose of this study was to investigate the elementary, middle and high school food service utilization of traditional Korean food in Gwangju and Jeonnam Area dietitians, and to provide basic data for the utilization of traditional food in school food service. The conclusions of this study are as follows. The utilizations of traditional Korean food was remarkable among the dietitians who are elderly, have worked for a long time, are married and in elementary schools. For the elementary, middle and high schools, the utilization of rice was remarkable in Bombop(boiled rice and nuts)(p<.001), Okeukbop(boiled rice mixed with five grains)(p<.001), Potbop(boiled rice and red-bean)(p<.001), Boribop(boiled rice and barley)(p<.01), and Kongbop(boiled rice and beans)(p<.01) The utilization of one-dish meals was remarkable in Kongnamulbop(boiled rice and bean sprouts)(p<.001). The utilization of porridge was remarkable in Hobakjuk(pumpkin porridge)(p<.001) and Potjuk(red-bean porridge)(p<.001). The utilization of noodles was remarkable in Mandu soup(a bun stuffed with seasoned meat and vegetables)(p<.001) and Kalkuksu(cut noodles)(p<.001). The utilization of soup and pot stew was remarkable in Kongnamul soup(p<.001), sagolugeoji soup(p<.001), Calbitang(p<.001) and sullungtang(p<.001), kongbiji stew(p<.01), and soondubu stew(p<.05). The utilization of steamed dish and hard-boiled food was remarkable in green perilla stew(p<.001), fish stew(p<.001) and seasoned and steamed pollack(p<.01). The utilization of pan-boiled food stew was remarkable in small octopus stew(p<.001). The utilization of fried food or grilled food was remarkable in grilled fish(p<.001), bindaetteok(vegetable pancake)(p<.001), fried green pumpkin(p<.001), fried sea food with stone-leek(p<.001) and Buchu fried food(p<.001). The utilization of salad and cooked vegetables was remarkable in spinach salad(p<.001), cucumber salad(p<.001) and Kongnamul(bean sprouts)(p<.05). The utilization of Kimchi was remarkable in Baek kimchi(p<.001), Gat(leaf-mustard) kimchi(p<.001), Youlmu(young radish) kimchi(p<.01) and Oisobaki(p<.01). The utilization of desserts was remarkable in seasonable fruits(p<.001), Kangjung(p<.01), Tteok(rice cake)(p<.01) and Sik Hye(Cinnamon flavored persimmon punch)(p<.01).

Variation of Nitrate Content on Distributed Vegetables in Korea (국내유통 채소류의 질산염 함량변이)

  • Nitrate contents of lettuce and chinese cabbage which aye consumed mostly in vegetables in Korea were $403\~6,935$ (mean 3,088), $31\~5,391$ (mean 2,412), and $310\~6,374$ (mean 3,017) mg/kg, respectively. Nitrate contents of root vegetables and fruit vegetables were lower than those of leaf vegetables. There was no different of nitrate content in vegetables by area, but the nitrate contents of summer vegetables were higher than those of winter vegetables. Nitrate contents of Danmugi, Kimchi, and Young radish Kimchi were 346, 1,411, and 3,240 mg/kg, respectively. Nitrate contents of juice of Danmugi, Kimchi, and younger radish Kimchi were 340,979, and 1,383 mg/kg, and there was no different of nitrate content by area.

Seedling Conditions for Kimchi Cabbage, Head Lettuce, Cabbage and Broccoli for a Riding-type Transplanter

  • Purpose: We have studied the necessary qualities of seedlings of some leafy vegetables for a riding-type two-row automatic transplanter. When seedlings are planted using a transplanter, long roots may be rounded in the bottom of the tray, and this can interfere with the separation of the seedlings. Uprightness related to leaf spread angle is an important quality for seedlings in mechanical planting. Methods: To select cultivars suitable for the transplanter, we compared varieties of Kimchi cabbage (Chukwang, Daetong, Whipalam and Namdo), head lettuce (Abi and Sensation), cabbage (YR Onnuri, YR Hogel, Harutama, and Ogane), and broccoli (Nicegreen and Earlyyou). To compare the effect of bed soil on root formation and growth, we used five types of soil: Chologi, Burger, Wonjomix, Bio, and Baroker with 2.6-3 L per tray. Growth increment and the degree of root formation were measured according to the RDA guidelines 25 days after sowing for Kimchi cabbage and head lettuce and 44 days after sowing for cabbage and broccoli. Conclusions: According to the plug tray, the optimum seedling age in both 128- and 200-hole trays was 28 days for Kimchi cabbage and 44 days for cabbage and broccoli. Head lettuce took 35 days in 128-hole trays and 31 days in 200-hole trays. Burger soil was most effective for root formation and growth of the four kinds of leafy vegetables; it appeared that smaller soil volume led to faster root formation.

The Changes of Vitamin C Content in Yulmoo Mulkimchi According to the Shift of Fermentation Temperature (발효 온도의 변화에 따른 열무 물김치 중 비타민 C의 함량 변화)

  • The vitamin C contents in Mulkimchi (watery kimchi prepared with Yulmoo, leaf radish) were analyzed during its fermentation and storage at 30$^{\circ}C$, 15$^{\circ}C$ and 4$^{\circ}C$, respectively. The total amount of vit. C in Mulkimchi fermented for 1 day at 30$^{\circ}C$ was rapidly increased to the highest level of 20 mg%. At this time, Mulkimchi showed pH 4.5 and 0.2% of total acidity expressed in lactic acid. The total microbes of the kimchi amounted to 10$\^$8/ cfu/$m\ell$ which are mostly found to be lactic acid bacteria. However, the amount of vitamin C in Mulkimchi was decreased gradually during the storage at 30$^{\circ}C$, 15$^{\circ}C$ and 4$^{\circ}C$ for 9 days. In the Mulkimchi fermentated at 15$^{\circ}C$, the maximum amount of vitamin C was 15 mg% at 4 to 5 day-fermentation. The pH of this kimchi was 4.0 and its acidity was 0.15% as lactic acid. When the storage temperature was dropped to 4$^{\circ}C$ after 1 day-fermentation at 15$^{\circ}C$, its vitamin C didn't reach the above level after 9 day storage. As the fermentation temperature was kept at 4$^{\circ}C$, the content of vitamin C in Mulkimchi remained at 10 mg% of its initial storage and didn't change through the 9 days storage.

  • A prototype peeling device with rotating cutter blades was designed to peel altari radish skin. With the designed blades, the maximum peeling depth increased as the cutter clearance increased but the effect of the peeling speed was not significant. The optimal operating conditions for peeling was; the peeling speed was at 0.19m/s when peeled 2.5 blades/sec and the maximum peeling depth was 1.5mm, the minimum peeling depth was 0.5mm, and the leaf rotating speed was 12 rpm, respectively. In the peeling test fur the optimum operation conditions, with a auxiliary rolling device could adjust the rotational speed of the root uniformly, the altari radishes under 70mm diameter were peeled perfectly.

  • Korean cabbage, a member of the Brassicaceae family which also includes cauliflower, mustard, radish, and turnip plants, is a crucial leafy vegetable crop. Korean cabbage is harvested after completion of the leaf heading process and is often prepared for use in "baechu kimchi", a traditional Korean food. Many of the components in Korean cabbage are essential for proper human nutrition; these components can be divided into two groups: primary metabolites, which include carbohydrates, amino acids, fatty acids, and organic acids, and secondary metabolites such as flavonoids, carotenoids, sterols, phenolic acids, alkaloids, and glucosinolates (GSLs). Using gas chromatography-mass spectrometry, this study examined the variety of volatile compounds (including isothiocyanates) contained in Korean cabbage and its seed, which resulted in the identification of 16 and 12 volatile compounds, respectively. The primary volatile compound found in the cabbage was ethyl linoleolate (~23%), while 4,5-epithiovaleronitrile (~46%) was the primary volatile component in the seed.

Storage of Salted Chinese Cabbages for Kimchi - I. Physicochemical and Microbial Changes During Salting of Chinese Cabbages - (김치용 간절임 배추의 저장에 관한 연구 - I. 배추의 간절임시 일어나는 이화학적 및 미생물학적 변화 -)

  • This study was to investigate physicochemical and microbial changes that took place during the salting of chinese cabbages. Salinity(3%) that is suitable for kimchi preparation was reached when chinese cabbages were salted for seven hours in 10%, three hours in 15% and one hour in 20%. In the case of 5% it was not reached though they were salted for over twelve hours. In order to decrease salinity from 7% level of salted chinese cabbages to 3% level by soaking in tap water, 1.2 hours for leaf and three hours for patiole were spent. Volume, moisture, firmness and internal space of raw chinese cabbages were significantly decreased by salting (15%, 10 hours) : volume, 59.90%, moisture, about 31.92% and internal space rate, 35.06%. Contents of mono-and divalent cations$(K^+,\;Mg^{2+}\;and\;Ca^{2+})$ were reduced whereas $Na^+$ content was greatly increased; therefore, in the future the increase of Na-content remains open to question. By salting and washing, mold, yeast and bacteria were decreased by 58%, 40%, 45%, respectivity.

Bile Salts Degradation and Cholesterol Assimilation Ability of Pediococcus pentosaceus MLK67 Isolated from Mustard Leaf Kimchi (갓김치에서 분리된 Pediococcus pentosaceus MLK67의 담즙산 분해능 및 콜레스테롤 동화능)

  • The objective of this study was to evaluate the acid and bile tolerance, bile salt hydrolase (BSH) activity, and cholesterol assimilation ability of lactic acid bacteria isolated from mustard leaf kimchi. MLK11, MLK22, MLK27, MLK41, and MLK67 were relatively acid- and bile-tolerant strains, with more than $10^5$ CFU/ml after incubation in simulated gastric juice and intestinal fluid, while MLK53 was the most sensitive strain to acid and bile. Strains MLK22 and MLK67 deconjugated the highest level of sodium glycocholate with more than 3.5 mM of cholic acid released, while deconjugation was lowest by strains MLK13 and MLK41 which released only 1.35 mM and 1.16 mM, respectively. Specially, strains MLK22 and MLK67 showed higher deconjugation of sodium glycocholate compared to sodium taurocholate and conjugated bile mixture. Although strains MLK22 and MLK67 exhibited maximal BSH activity at the stationary phase, MLK22 had somewhat higher total BSH activity compared to MLK67 towards both sodium glycocholate and sodium taurocholate. Meanwhile, cholesterol removal varied among tested strains (p<0.05) and ranged from 5.22 to 39.16 ${\mu}g$/ml. Especially, MLK67 strain assimilated the highest level of cholesterol in media supplemented with 0.3% oxgall, cholic acid, and taurocholic acid (p<0.05). According to physiological and biological characteristics, pattern of carbohydrate fermentation, and 16S rDNA sequence, strain MLK67 that may be considered as probiotic strain due to acid and bile tolerance and cholesterol-lowering effects was identified as Pediococcus pentosaceus MLK67.
