Purpose: The purpose of this study was to analyze the effects of a health education program to improve knowledge about environmental health and allergy symptoms among elementary school students. Methods: This study has nonequivalent control group pre-post test design. Participants of this study were 60 elementary students (30 experimental and 30 control) who agreed to participate in the study. The education program consisted of information on environmental health and allergies, the atmosphere, indoor environments, food and allergies, and activities with parents. The program was carried out one time (50 minutes) per week during 6 weeks. Knowledge and symptoms of allergies were recorded before and after the program among both groups. The collected data were analyzed by ANCOVA and t-test using SAS program. Results: There was a significant increase in knowledge about allergies in the experimental group compared to the control group, but allergic symptoms were similar in the two groups. Conclusion: These findings suggest that environmental health education programs are effective in the area of school health nursing for increasing knowledge about environmental health and allergies. Further research is needed to develop programs for reducing allergic symptoms as an environment health problem among children.
The purpose of this study was to assess the nutrition education and training needs as a basis for program planning for day care providers. A sample of 239 day care teachers responded to a questionnare assessing demographic characteristics, nutrition education experiences, and measuring the level of basic knowledge of food & nutrition. Menu planning was added to the questionnarie for 158 day care center directors. The results of this study can be summarized as follows: 1) majority(92.5%) of day care teachers and 74.1% of day care directors were interested in receiving nutrition education and training programs. 2) The topics generating the greatest interest for day care teachers were good food habits, food preparation & meal planning and food sanitation. 3) As a result of measuring the level of basic nutrition knowledge, day care teachers possessed the moderate amount of knowledge about five basic food groups, cholesterol, protein containing food, fat, while they possessed the poor knowledge about vitamin and calorie. 4) Day care teachers and directors possessed a certain level of knowledge about what the good snacks are and how to teach the unbalanced diet oriented children, while they possessed a low level of knowledge about children's nutrition requirement.
Nowadays, a knowledge management becomes more important as it recognizes and utilizes a industrial knowledge as a significant sources for the improvement of enterprise competitiveness. Moreover, a industrial value tends to be evaluated by a knowledge value. In this study, influencing factors (processes, compensation system, leadership and information technology) on the knowledge sharing for strategies in foodservice Enterprise were investigated. For processes, it was important that the sharing and collecting factors for restaurants in hotel, the knowledge sharing and collecting for family-restaurants, the knowledge utilization and collecting for fast-food restaurants and the knowledge utilization and sharing for special restaurants. In compensation system, both mental and physical compensation were not related with the knowledge sharing in hotel-restaurants. On the other hands, the knowledge sharing in family-restaurants, fast-food restaurants and special restaurants was highly affected by the mental compensation, which indicated that food-service. Enterprise should lay emphasis on mental compensation than physical compensation. In industrial cultures, the influencing factors on the knowledge sharing were rational culture and progressive culture for restaurants in hotel and fast-food restaurants, and for special restaurants and family- restaurants, respectively. The ordering leadership was important factor for restaurants in hotel, fast-food restaurants and family-restaurants, while the knowledge sharing in special restaurants was more influenced by the supporting leadership. For information technology, it was important that the information utilization for restaurants in hotel, special restaurants and fast-food restaurants, and both information utilization and ability for family-restaurants.
This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of health promotion at community level. Nutrients intake of 135 housewives were assessed by 24 hour recall methods. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Our results indicated dietary intake of calcium and vitamin $B_2$ were insufficient when they were compared to Korean recommended dietary allowances(RDA). Among five food groups, intakes of milk and dairy product was inadequate as compared to the recommended amount. When we compared the fatness indices to self-evaluated meal problems, overeating and speedy eating were significantly related to fatness indices. Fatness indices such as relative body weight(RBW) and body mass index(BMI) were significantly higher in the subjects who self-evaluated their unsound food behavior as overeating. However, there were no significant differences of food habit score and nutrition knowledge among groups classified by fatness or meal problem. Body fat ratio, frequencies of night snack and skipping meal significantly increased with age. Food habit score was positively related to health-concerned attitude and active attitude toward change. We concluded that nutrition education program for housewives should include detailed strategies to modify unsound food behaviors for healthy weight.
For the purposes of participation in research projects, living in a laboratory has become popular among male university students who tend to have less opportunity for nutrition education and overestimate their own health, suggesting possibilities of many undesirable practices of lifestyle and dietary habits. Therefore, this study was conducted to investigate and compare health-related lifestyle practices, dietary habits, nutrition knowledge, food preference and dietary behaviors of the male university students according to residence type. The subjects were 260 (34, 15, 44, and 167, respectively for lab-living, self-boarding, dormitory and commuting) male engineering majors in the Gyeonggi area. Self-administered questionnaires consisted of general characteristics, health-related lifestyle practices, dietary habits, fast food consumption, nutrition knowledge, preference for foods and tastes, and self-examination of dietary behaviors. Lab-living subjects showed many undesirable practices, particularly with more smokers (p < 0.05), irregular eating (p < 0.01), overeating (p < 0.05) and skipping breakfast (p < 0.01), compared to the dormitory students and more time in computer/TV usage (p < 0.05), overeating (p < 0.05), more frequent use of fast-food (p < 0.05), less nutrition knowledge (p < 0.01) and less intake of milk/dairy products (p < 0.01) and fruits (p < 0.01), compared to commuting subjects. More smokers (p < 0.05) and irregular (p < 0.01) and unrelaxed meal times (p < 0.05), compared to the dormitory group, and less intake of fruits (p < 0.01) and dietary fiber (p < 0.01), compared to the commuting group were shown as undesirable practices of the self-boarding group. Therefore, continuous effort should be made to correct undesirable health- and diet-related practices found in this study in order to improve nutritional status as well as general health by developing a nutrition education program and contents of lectures focusing on more specific problems according to each subgroup such as lab-living and self-boarding male university students.
This study was to investigate the recognition level of food contamination with residual pesticides and hazardous heavy metals from 365 male and female adults in Taejon area using questionnaires. Among the recognizing level of residual pesticides in overall foods, 69.1% were 'serious', 25.6% were 'average' and 5.3% were 'not serious'. Over 94.7% of the subjects recognized residual pesticides pollution infoods. for hazardous heavy metals in food, 47.8% responsed as 'serious', 40.5% as 'average' and 11.8 as ' not serious' . Over 88.3% of the subjects recognized contaminated pesticides seriously in fruits, 72.1% in vegetables and 51.7% in cereals, whereas 55.7% of the subjects recognized hazardous heavy metal contamination seriously in fruits, 53.4% in vegetables, 40.8% in fishes and shellfishes and 35.0% in seaweeds. The subjects recognized residual pesticides contamination more seriously in overall foods, cereal, potatoes and starches, bean, vegetables and fruits, whereas hazardous heavy metal contamination was recognized more seriously in fishes and shellfishes, and seaweeds food groups. Comparisons were shown based on individuial's occupation. Farmer, forester, iner and fisher showed the lowest recognizing level of food contamination in most food groups. The mean score of the dietary effect by mass media's information on food contamination from residual pesticides and hazardous heavy metals were 3.51±0.96 out of 5 points. By Duncan's multiple range test, sex, age, marriage, food cost per month, concerns about health and nutrition knowledge showed significant differences in the mean effect score at p<0.05. According to a pesticides contamination in several food groups were affected by food cost per month, mass media's information on food contamination, health status, and concerns about health, But a recognition level of hazardous heavy metals in food were affected by income and, food cost per month mass media's information on food contamination, health status, concern about health and nutrition knowledge. People who need to take extreme precautions of food contamination were in order of producers, government officials, homemakers, the consumer's association and consumers.
본 연구의 목적은 20대 성인의 치과보험지식과 구강건강지식이 치과보험인식만족도에 미치는 융합적 관계를 보고자 함이다. SPSS WIN 18.0로 분석해 유의성 있는 결과를 얻었다(p<.05). 치과건강보험인식만족도 '치과치료에 적용되는 진료과목의 수는 확대시킬 필요성이 있다'가 높았으며 '치과보험이 적용되는 치과치료 진료비에 만족한다'가 낮았다. 치과보험유무지식은 치아미백, 교정치료, 구강건강지식은 '섭취하는 음식이 치아에 영향을 미친다.' 높았다. 치과 건강보험인식만족도는 민간치과보험을 가입한 경우 높았다. 치과건강보험인식만족도는 치과건강보험지식과 양의 상관 관계를 나타냈다. 총괄적으로 치과건강보험 인식 만족를 높이기 위해서는 치과보험지식과 구강건강지식에 대한 체계적인 교육이 이루어져야 할 것이다.
In this study, we want to investigate the nutrition knowledge, eating habits, and food intake patterns of adults who have a strong preference for sugary snacks or sugary drinks. In this study, 83 students, or 33.1% of the 267 adults, were found to belong to the sugary food group, and the results of the survey were as follows. In terms of the level of eating habits, both male and female adults see significant differences among the groups. In the question of the regularity of the three meals, the quality of breakfast, the balance of meals, the level of consumption of green vegetables, meat, fish and milk, the number of sugars was low, and the number of sugars, instant foods, ham and sausages was high. In terms of nutritional knowledge, both male and female adults had a low number of sugary foods, and there were significant differences among the groups. In terms of the frequency of food intake, the frequency of eating rice and mixed grain rice was low, and the frequency of eating ramen and bread was high.
The tendency o taking supplements as the means of promoting health status has been increasing. This research was performed to reveal the influence of nutritional knowledge and health-consciousness on taking-supplements and to reveal that of general characteristics and related factors. The data were obtained by self-administering questionnaire and study population was adults aged 18-81 years living in Soul(N=1300) The overall response rate was 70%(N=910) The results can be summarized as follows: 1) A substantial percentage(82.5%) of the subjects used some kinds of nutrient supplements Forth nine percent of respondents used both drug type supplements and food type supplements 2) The main reasons for taking supplements were ; to prevent illness and to treat illness' and ' to recover from fatigue and to give me energy' The main reason for not-taking was 'Because I am Healthy' 3) The factors influencing on taking supplements were sex marital status disease exercise recognition of knowledge and health-consciousness. When the confounders of health-conscious-ness recognition of knowledge and self-estimated score were controlled threr were significant correlations between health-consciousness and taking-supplements.
Fat consumption has decreased since the 1950's in the United States, and coronary heart disease mortality rates have gradually declined as well. These changes might be associated with changes of attitudes due to increased information about the relationship between fat consumption and hear disease. The purpose of this study was to determine whether knowledge and attitudes concerning fat and foods high or low in fat had an impact on peoples' actual fat consumption. for this study, the data of fat consumption and knowledge/attitudes of people came from the 1989-1991 Continuing Survey of food Intakes by Individuals/Diet and Health Knowledge Survey (CSFII/DHKS), conducted by USDA. It was found that women 65 years ed older tried to avoid more fat and consume more vegetables than those aged 25-64 years ; in fact, the actual fit consumption of those over 65 years was lowest among all age categories. However, the elderly did not have as much nutrition knowledge as people aged 25-64 years. Attitudes concerning vegetables and health were a better predictor of fat consumption than those concerning fat itself. However, low-fat milk consumption was influenced by nutrition knowledge as well as attitudes about fat intake people with better knowledge and attitudes concerning fat intake consumed more low-fat milk. This could be resulted from the reason that low-fat milk is a good substitute for whole milk. The conclusion of this study is that there are two essential elements in healthy eating patterns: a) good attitudes towards fat and vegetable consumption, and b) correct nutritional knowledge concerning the fat-content of foods and the availability of alternatives.
