Applying a New Process for Local Food Menu Development in Gimpo

  • Recently, increasing interests in local foods have been highlighted along with active efforts and activities from autonomy organizations to develop local cultures and promote local economies by generating value added products and profits through the development of local foods. Subsequently, useful effects might result by making local foods attractive to tourists, such as by using indigenous Gimpo products to make menu items that incorporate the social, economic, and cultural aspects of the Gimpo area, and contributing to its food culture, the development and use of its indigenous products, and promoting local restaurant businesses, etc. The items of the survey used to select the local food menu items to be developed were limited to ideas offered by expert groups, and were implemented by a new menu development process. In order to derive the menu items to develop, the following method was applied: a brainstorming session with experts to generate and draft ideas, a questionnaire to chefs and cooks in special grade hotels is Seoul to select the menu items to develop from those drafted, and sensory evaluations by experts to evaluate the developed items. Frequency analysis and technical statistical analysis were performed using the SPSS 12.0 program package, where 13 kinds of local foods were ultimately developed using indigenous products of Gimpo. The developed local food menu items were rice & grape sujaebi, grape sikhae, fried rice embryo bud, grape yanggaeng, rice pancakes, rice spaghetti, grape seed oil dressing, grape sauce, rice pizza, grape pie, rice & grape ice cream, grape chocolate, and rice roll cakes.

주요 유기농산물 수요분석 및 전망 (A Study on the Demand for Organic Farming Products)

  • This study is to analyze the demand for organic farming products . The demand for organic farming products is increasing rapidly but the study to analyze the demand system by the methods of econometrics is not tried at all because there is no any formal statistical data about the demand. Therefore, this study tries to estimate the raw statistical data to expect the demand trends of organic farming products in the future. To analyze the demand functions of organic farming products such as rice, bean, apple, grape, beef, and park, this study uses AIDS model by using several assumptions and estimates the price and income elasticities of the demands. The results demonstrate that the demands of organic farming products will be increased in the future and the prices of organic farming products will be the key factor in the demand, In 2004, the quantity demanded of the organic grape will account for 3% of total grape market. As a result, consumer's concerns about organic farming products will be high and the demand for organic farming products will be increased. Thus, the reasonable price system has a significant influence on the market of organic farming products.

포도가공 부산물로부터 화장품용 항산화물질의 추출 및 분리 (Extraction and Isolation of Antioxidant Fraction from Waste of Grape Products for Cosmetic Application)

  • 본 연구는 포도가공부산물로부터 유용성분을 추출하여 자원의 활용과 환경오염을 줄이고, 공정을 간결하게 하여 실제산업현장에서 이용할 수 있는 공정의 개발을 목적으로 하였다. 포도가공 부산물을 포도과피와 포도씨로 나누어 과피에서는 anthocyanin을 씨에서는 oligomeric proanthocyanidin (OPC)를 주 대상물질로 하여 추출하기 위한 공정을 개발하였다. 추출된 항산화물질은 HPLC를 이용하여 정량하였으며, 이들의 효능은 DPPH법, SOD법을 이용하여 대조군들과의 비교를 통하여 확인하였다. 두 방법 모두 포도씨 추출물의 효능이 포도과피 추출물보다 뛰어난 항산화도를 보였다. 이렇게 생산된 추출물을 이용하여 multiple lamella emulsion의 화장품 제형을 개발하였고 이 제형의 안전성과 안정성을 실험적으로 확인하였다.

Polyphenolic Contents and Antioxidant Activities of Underutilized Grape (Vitis vinifera L.) Pomace Extracts

  • Grape pomace is an abundant source of underutilized winery by-products. Polyphenols were extracted from grape pomace using cellulase and gluco-amylase enzymes. 2,2-diphenyl-1-picrylhydrazyl (DPPH) and Folin-Ciocalteu's assays were used to measure antioxidant activity and total polyphenolic contents. Both cellulase, and gluco-amylase digested grape pomace showed efficient radical scavenging activity. In addition, the total polyphenolic contents of cellulase digested grape pomace showed lower concentrations were effective compared to higher concentrations, whereas glucoamylase enzyme did not show remarkable variations. The DPPH radical scavenging activity and total polyphenolic contents were significantly higher in the cellulase digested grape pomace compared to the gluco-amylase digested and the not digested grape pomace. It is notable that enzymatic digestions were efficient for extracting polyphenols from grape pomace. The underutilized grape pomace polyphenols can be further used for food safety as a natural antioxidant.

포도와 포도 가공품에 함유되어 있는 trans-resveratrol의 함량 분석 (Analysis of trans-Resveratrol Contents of Grape and Grape Products Consumed in Korea)

  • 본 연구는 생물학적, 비생물학적인 스트레스에 대한 방어물질중의 한가지인 trans-resveratrol를 포도와 포도가공품(포도주, 포도쥬스)으로부터 분석하는 방법을 확립하였다. trans-Resveratrol 기기분석 조건은 다음과 같다. 분석 column은 Nucleosil 100-5 C18을 사용하였으며 이동상은 acetonitrile: water(40:60, v/v)로서 UV검출기(306 nm)를 이용하여 0.3 mL/min의 유속으로 측정하였다. 분석한 결과, 재현성과 반복성의 CV%는 10%이하였으며, 회수율은 $90{\sim}110%$이었다. 또한, 포도, 포도주 그리고 포도쥬스의 최소검출한계는 14.5 ng/g, 3.62 ng/mL 그리고 4.02 ng/mL이고, 최소정량한계는 14.8 ng/g, 3.69 ng/mL 그리고 4.10 ng/mL이었다. 표준물질인 trans-resveratrol 농도가 $0.048{\sim}2.4\;{\mu}g/mL$일때 $R^2$ 값은 0.999이었다. 32품종의 포도, 9종류의 포도주 그리고 9종류의 포도쥬스 내의 trans-resveratrol 함량은 각각 $0.76{\sim}207.14\;{\mu}g/100\;g$, $5.41{\sim}275.66\;{\mu}g/L$ 그리고 $63.25{\sim}751.55\;{\mu}g/L$로 분석되었다.

Anti-obesity effect of resveratrol-amplified grape skin extracts on 3T3-L1 adipocytes differentiation

  • Resveratrol (3,4,5-trihydroxy-trans-stilbene), a phytoalexin found in grape skin, grape products, and peanuts as well as red wine, has been reported to have various biological and pharmacological properties. The purpose of this study was to investigate the anti-obesity effect of resveratrol-amplified grape skin extracts on adipocytes. The anti-obesity effects of grape skin extracts were investigated by measuring proliferation and differentiation in 3T3-L1 cells. The effect of grape skin ethanol extracts on cell proliferation was detected by the MTS assay. The morphological changes and degree of adipogenesis of preadipocyte 3T3-L1 cells were measured by Oil Red-O staining assay. Treatment with extracts of resveratrol-amplified grape skin decreased lipid accumulation and glycerol-3-phosphate dehydrogenase activity without affecting 3T3-L1 cell viability. Grape skin extract treatment resulted in significantly attenuated expression of key adipogenic transcription factors, including peroxisome proliferator-activated receptor, CCAAT/enhancer-binding proteins, and their target genes (FAS, aP2, SCD-1, and LPL). These results indicate that resveratrol-amplified grape skin extracts may be useful for preventing obesity by regulating lipid metabolism.

발효 포도부산물의 단백질 분해물 매염제를 활용한 염색 최적조건에 관한 연구 (Optimum Dyeing Condition of Cotton by Fermented Grape By-products with Degraded Protein Mordant)

  • Many of the natural dyes used for natural dyeing are difficult to maintain colorfastness due to their complex structure and specific properties. Therefore, there is a need for developing of color sustainable ability for use as an advanced coloring agent for fabrics, which would eco benign or not. In this study, the natural dye extracted from the waste of grape fruits was used to dye cotton fabric. Thus, the present study aims at extraction of color from grape seeds, skin, and stem through fermentation and then employing the same in dyeing and mordanting of cotton. Dyeing experiments were done under different conditions of fermentation and protein type mordants which were treated before and after dyeing. Experimental fabrics were used with cotton after scouring. Color value of dyed fabrics and color fastness of cotton dyed fabrics to washing and light were measured. The fastness of dyed experimental fabrics was increased by mordanting of protein fermentation and the color of dyed cotton was light red purple. The color of dyed fabric found with the optimum mordant treatment when treated with pre milk-mordant at $40^{\circ}C$ for 30min and 3% grape seed extract. On the whole, reddish tone very slightly increased with the milk pre-mordant. The color fastness of dyed cotton fabrics to light and washing was increased after fermentation.

머루주 박의 급여가 돈육 등심의 품질에 미치는 영향 (Effects on Quality Characteristics of Pork Loin Fed with Wild Grape(Vitis amurensis Ruprecht) Wine By-product)

  • 본 연구는 머루주박 사료가 돈육의 품질에 미치는 영향을 검토하기 위하여 수행하였다. 일반성분, VBN, TBARS 및 pH는 대조구와 머루주박 급여구 사이에 차이가 없었으나 콜레스테롤 함량과 가열감량은 대조구보다 머루주박 급여구가 낮았고, 염용성 단백질 추출성은 머루주박 급여구가 높았다. (p<0.05). 돈육의 $a^{\ast}$$b^{\ast}$값이 머루주박 급여 돈육이 높았고, 지방은 대조구보다 머루주박 급여구의 $a^{\ast}$값이 높았다(p<0.05). 그러나 $L^{\ast}$값은 돈육과 지방에서 대조구와 머루주박 급여구 사이에 유의한 차이가 없었다. Cohesiveness, gumminess 및 chewiness는 대조구(각각 $66.2\%$, 428kg 및 189g)가 머루주박 급여구(각각 $61.4\%$, 357 kg 및 154 g)보다 높았다. (p<0.05). 총유리아미노산 함량은 두 시료 사이에 차이가 없었지만 공통적으로 많이 함유된 아미노산은 glutamic acid, leucine, arginine 및 aspartic acid의 순이었다. 지방산 조성에서 머루주박 급여 돈육의 arachidonic acid, EPA및 DHA함량이 대조구보다 높았다. (p<0.05) 그리고 머루주박 급여 돈육의 맛(p<0.001), 향기(p<0.05), 풍미(p<0.001), 다즙성(p<0.01) 및 전체적인 기호성(p<0.01)이 대조구보다 유의하게 높았다.

시판 포도 주스의 항산화 활성 및 총 페놀 함량 (Antioxidant Activity and Total Phenolic Contents of Grape Juice Products in the Korean Market)

  • 국내에서 제조 및 시판되고 있는 사과를 비롯한 과일 주스 5종, 포도 주스 10종의 총 페놀 함량과 항산화 활성을 DPPH 방법과 FRAP 방법으로 조사하였다. 시판 과일 주스 중 오렌지의 총 페놀 함량이 114.09 nlg/L로 가장 높게 나타났고, 포도주스 10종은 $57{\sim}205\;mg/L$의 함량으로 제품 별로 다양하게 나타났다. 과일 주스의 DPPH radical 소거 활성은 자몽이 가장 높았으며 사과, 파인애플이 낮았다. 포도주스의 항산화 활성은 제품에 따라 다양하게 나타났는데, 시료별로 GU4, GU5, GU9가 거의 80%정도의 DPPH radical 소거 활성을 보였다. FRAP방법에 의한 항산화 활성 역시 DPPH 라디칼 소거 활성과 유사한 결과이었다. 그리고 DPPH 및 FRAP, 총 페놀 함량 간의 상관계수는 각각 0.97 이상으로 매우 높은 상관성을 나타내었으며, 따라서 총 페놀 함량이 높을수록 과일 주스 제품의 항산화 활성능력이 크게 나타났다.

포도소비수준에 따른 포도선택속성 중요도-만족도 분석 (Analysis of the Importance-Satisfaction of the Grape Selection Attributes by Grape Consumption Level)

  • This paper provides data for product development and improvement of grape varieties by analyzing the satisfaction-importance of the grape selection attributes from a consumer's perspective. A survey was conducted on consumers aged 19-59 living in Seoul, Gyeonggi and Incheon on their fruit consumption level, preferences according to the grape quality characteristics, importance, and satisfaction with the grape selection attributes. Three hundred and eighty two valid samples were collected and analyzed statistically using SPSS 23. In the preference according to the grape quality characteristics, consumers tended to prefer a sweet taste, black color, and seedless grapes. Regarding the importance of the grape selection attributes according to the level of grape consumption, the high consumption group considers texture, size, shape, color, ease of removing seeds, country of origin, area of production, certification, and brand to be more important. In satisfaction, the high consumption group rated satisfaction highly in texture, odor, size, shape, color, ease of removing peelings, ease of removing seeds, price, country of origin, area of production, certification, and brand. An analysis of the IPA of the grape selection attributes showed that improvement of price and shape attributes will be prioritized, and the development and management of properties, such as seeds, peelings, certification, and brand will be required. These results can be used to help improve the grape varieties and develop products that meet the consumer needs, secure the competitiveness of grape farmers, and revitalize the local economy.
