Colorimetric and Fluorescent Recognition of Fluoride by a Binaphthol Thioureido Derivative

  • A new thiourea based receptor (1) was synthesized and applied to fluoride ion recognition in acetonitrile solution. Receptor 1 displayed dual changes in absorption and fluorescence emission intensities selectively for fluoride ions. The interaction of 1 with fluoride undergoes a deprotonation process that is confirmed by $^1H$ NMR titration.

  • Mushrooms and their extracts including purified ingredients, are currently used as foods, functional foods (and/or nutraceuticals), and medicines. These products have numerous bioactive compounds such as polysaccharides (mainly ${\beta}$-glucans), glycoproteins, nucleotide analogs, terpenoids, and polyphenols, which have exhibited antioxidant, antimicrobial, anticancer, antiviral, anti-obesity, and immunomodulatory activities. In this review, we discuss the current information on the biactivities of 10 popular mushrooms in Korea. We also summarize the information on mushrooms and the active compounds derived from them, as well as mushroom-based products such as foods, functional foods, and medicines. We believe this review could provide useful information for scientists and consumers who seek to develop new products and promote healthy food habits and lifestyle.

데침조건에 따른 감태의 생리활성 성분 및 항산화 활성의 변화 (The Changes of Biologically Functional Compounds and Antioxidant Activities in Ecklonia cava with Blanching Times)

  • This study was performed to investigate the change of biologically functional compounds and antioxidant activities in Ecklonia cava with blanching times. As biologically functional compounds, the contents of minerals(K, Ca, Na, Mg, Fe, Cu, Mn and Zn), vitamins($vitamin\;C,\;{\beta}-carotene\;and\;{\alpha}-tocopherol$) and total polyphenol were analyzed. And antioxidant activity was determined through free radicals(DPPH radical, superoxide anion radical, hydroxyl radical and hydrogen peroxide) scavenging activity and linoleic acid peroxidation inhibitory activity. As the blanching time increased, the contents of minerals, vitamin C, ${\beta}-carotene$ and total polyphenol were decreased however ${\alpha}-tocopherol$ was not affected by blanching time, and antioxidant activities were decreased with blanching time.

  • This study was performed to investigate the change of biologically functional compounds and antioxidant activities in Hizikia fusiformis with drying methods. As biologically functional compounds, the contents of minerals(K, Ca, Ma, Mg, Fe, Cu, Mn and Zn), vitamins(vitamin C, ${\beta}-carotene\;and\;{\alpha}-tocopherol$) and total polyphenol were analyzed. And antioxidant activity was determined through free radicals(DPPH radical, superoxide anion radical, hydroxyl radical and hydrogen peroxide) scavenging activity and linoleic acid peroxidation inhibitory activity. The contents of minerals were not affected by drying methods however vitamins and total polyphenol were lost more by sun-drying than other drying methods studies. Total polyphenol was preserved by freezing-drying than other drying methods studies, resulting in high antioxidant activities.

Physicochemical Quality Changes in Chinese Cabbage with Storage Period and Temperature: A Review

  • Background: Recent inquiries into high-quality foods have discussed the importance of the functional aspects of foods, in addition to traditional quality indicators such as color, firmness, weight, trimming loss, respiration rate, texture, and soluble solid content. Recently, functional Chinese cabbage, which makes up a large portion of the vegetables consumed in Korea, has been identified as an anticancer treatment. However, the investigation of practical issues, such as the effects of storage conditions on quality indicators (including functional compounds), is still limited. Purpose: We reviewed various studies on variations in the quality indicators and functional compounds of Chinese cabbage in response to different storage environments, focusing on storage temperature and storage period. In particular, we emphasized the effect of storage temperature and storage period on glucosinolate (GSL) levels, in order to provide guidelines for optimizing storage environments to maximize GSLs. Additionally, we used response surface methodology to propose experimental designs for future studies exploring the optimal storage conditions for enhancing GSL contents. Review: Large variations in quality indicators were observed depending on the cultivar, the type of storage, the storage conditions, and the harvest time. In particular, GSL content varied with storage conditions, indicating that either low temperatures or adequate air composition by controlled atmospheric storage may preserve GSL levels, as well as prolonging shelf life. Even though genetic and biochemical approaches are preferred for developing functional Chinese cabbage, it is important to establish a practical method for preserving quality for marketability; a prospective study into optimal storage conditions for preserving functional compounds (which can be applied in farms), is required. This may be achievable with the comprehensive meta-analysis of currently published data introduced in this review, or by conducting newly designed experiments investigating the relationship between storage conditions and the levels of functional compounds.

데침조건에 따른 참나물의 생리활성 성분 변화 (Change of Biologically Functional Compounds of Pimpinella brachycarpa(Chamnamul) by Blanching Conditions)

  • Wild edible plants are consumed as raw and/or processed. Analytical data for raw biologically functional compounds were relatively well established. The changes on functional compounds during processing are, however, not well studied. This study was carried out to investigate the change of the quality of wild edible plants, Pimpinella brachycarpa(Chamnamul) at various conditions. Samples were blanched at the salt concentration of 0%, 1% or 2% for 1, 2, and 3 minutes each. The biologically active compounds, vitamin C, ${\beta}-carotene$, chlorophyll, flavonoids, polyphenols and minerals were analyzed. The concentration of vitamin C in Chamnamul decreased as blanching time increased. Beta-carotene in Chamnamul showed high concentration when Chamnamul was treated under longer blanching time. Higher salt concentration of blanching water, however, resulted in the increased concentration of ${\beta}-carotene$ in the blanched Chamnamul. Higher salt concentration of blanching water also reduced the loss of total flavonoids and total polyphenols from the blanched Chamnamul. The change of colors in the blanching water seemed to be corresponding to those of total flavonoids and total polyphenols concentrations in the blanching water.

Quantitative Analyses of the Functional Constituents in SanYangSam and SanYangSanSam

  • Objective: SanYangSam and SanYangSanSam are traditional Korea-medical herbs that are grown from Panax ginseng C.A. Meyer. In our previous studies, we found that the functional compounds in SanYangSam and SanYangSanSam were different and depended on the type and the cultivation environment of ginseng. This study aimed to profile the functional constituents in SanYangSam and SanYangSanSam. Methods: To profile the functional aspects of the many compounds that have therapeutic activities in SanYangSam and SanYangSanSam extracts, we used liquid chromatography tandem mass spectrometry and quadrupole orthogonal acceleration time-of-flight mass spectrometry. Results: A total of four major compounds were detected; two of which were the natural flavonoids kaempferol and quercetin. Among others, two polyacetylene compounds, including panaxydol and panaxynol, were detected. Conclusion: In this study, we found that panaxydol, one of the polyacetylene constituents of ginseng, is a candidate anti-cancer agent in SanYangSam and SanYangSanSam pharmacopuncture. In addition, we found that the panaxydol levels in the SanYangSanSam extract were over 30 times those in the SanYangSam extract.

전자코 시스템에 의한 향미의 방향미 성분 분석 (Analysis of VolatHe Flavour Components in Aromatic Rices using Electronic Nose System)

  • 전자코를 이용하여 향미품종에 대한 방향성 성분함량비율을 조사한 결과를 요약하면 다음과 같다. 1. 작용기별로는 polar compound계열과 aldehydes compounds계열이 apolar compounds 계열과 sulphur compounds, aminated com-pounds계열에 비해 약 3배정도 높은 함량 비율을 보였다. 2. 백미와 취반상태에 있어서 방향성 성분 함량변화는 대부분 0.02에서 0.1수준으로 증가하는 경향을 보였으나, 찰성을 가진 밀양 14006의 경우는 취반 상태에서 방향성 성분의 함량이 오히려 감소하는 경향을 보였다. 3. 향기와 amylose함량 관계에서는 Japonica와 Indica계열 모두 아밀로스함량이 높을수록 방향성 성분의 함량이 증가하는 경향을 보였다. 4. Headspace 진행 후 센서에 감지되는 시간대는 대부분의 품종에서 30~35초에서 가장 많은 향기성분의 양을 검출할 수 있었으나, 이리 41003의 경우는 방향성성분의 검출이 30초대 이후에 급격히 감소하였다.

Polyacetylenes from the Tissue Cultured Adventitious Roots of Panax ginseng C.A. Meyer

  • Five polyacetylenes, ginsenoyne K (1), (Z)-1-methoxyheptadeca-9-en-4,6-diyne-3-one (2), panaxydol (3), panaxydiol (4), and (E)-heptadeca-8-en-4,6-diyne-3,10-diol (5) were isolated from the adventitious roots of Panax ginseng and their chemical structurFive polyacetylenes, ginsenoyne K (1), (Z)-1-methoxyheptadeca-9-en-4,6-diyne-3-one (2), panaxydol (3), panaxydiol (4), and (E)-heptadeca-8-en-4,6-diyne-3,10-diol (5) were isolated from the adventitious roots of Panax ginseng and their chemical structures were elucidated by interpretation of spectroscopic data. Among the isolated compounds, compounds 2 and 5 were reported for the first time as a natural product. Ginsenoyne K (1) showed dose-dependent inhibitory effect on dopa oxidase activity of tyrosinase.es were elucidated by interpretation of spectroscopic data. GS/MS 분석에 의한 천일염의 향기성분 (Aroma Profiling of Sun-dried Salt by GC/MS Analysis)

  • 바닥소재에 따른 천일염의 향기성분은 네 가지 종류의 천일염에서는 4-methyl-2-pentanone, 5-methyl-3-hexanone, 4-methyl-3-penten-2-one, 2-hexanol, benzothiazole, 2,4-bis-(1,1-dimethylethyl)-phenol, 1,3,5-tri-tert-butyl benzene 등 케톤류, 알콜류 그리고 방향족 화합물류와 같은 공통된 향기성분이 검출되었다. 친환경소금으로 알려진 토판염, 일반적으로 알려져 있는 천일염인 PVC 장판염과 그리고 친환경소재의 PP 장판염의 차이를 구별할 수 있는 향기성분은 검출되지 않았으며, 신안군에서 생산된 천일염에서만 methyl isobutyl ketone 성분이 검출되어 생산지역에 따라 차이가 있었다. 편백나무에 보관했던 천일염의 향기성분은 오동나무와 소나무에 보관했던 천일염의 향기성분보다 다양한 종류가 검출되었으며, 이는 저장용기의 나무소재에 따라 천일염에 이행된 향기성분이 다르기 때문으로 생각된다. 이와 같이 독특한 향기성분을 천일염에 부여하는 것은 천일염 산업에 새로운 고부가가치를 창출할 수 있는 방법이라 판단되며, 소금 유통시장에서 적용가능성이 높은 연구가 수반되어야 할 것이다.
