멸치육젓필레 기름담금통조림의 제조 및 특성 (Processing and Characteristics of Canned Salt-Fermented Anchovy Fillet in Olive Oil)

  • 상온에서 저장이 용이하고 기호도가 우수한 멸치육젓필레 기름담금통조림을 제조하기 위하여 멸치를 fillet 작업한 후 식염 15%를 첨가하여 $5^{\circ}C$에서 15일간 숙성시킨 후 $16{\pm}1^{\circ}$에서 1시간 냉풍건조 시켰다. 반건조된 멸치육젓필레 85 g을 올리브유 60 mL와 함께 통조림관에 살쟁임한 후 이중밀봉기로 밀봉하여 Fo 값이 9 및 11분이 되도록 살균하여 멸치육젓필레 기름담금통조림을 제조하였으며, 각 살균 조건별로 제조한 시료에 대하여 내용물의 이화학적 및 관능적 특성에 대하여 살펴보았다. Fo 값이 9 및 11분이 되도록 살균한 멸치육젓필레 기름담금통조림의 경우 모든 살균조건에서 균이 검출되지 않았으며, 외관도 변함이 없었다. 멸치육젓필레 기름담금통조림의 일반성분은 원료 멸치에 비해 수분 함량은 감소하였고, 조지방, 조단백질 및 회분 함량은 증가하였다. 수분 함량의 경우 Fo 값이 높게 살균될수록 감소하였고, 조지방은 증가하는 경향이었으며 조단백질과 회분은 함량의 차이가 거의 없었다. 살균조건의 차이에 따른 pH의 변화는 거의 없었으며, 휘발성염기질소 함량은 원료 멸치보다 가열살균 처리한 멸치육젓필레 기름담금통조림의 그 값이 더 높았다. 그리고 Fo 값이 높게 살균된 제품의 휘발성염기질소 값이 더 컸다. TBA 값은 고온가열 살균 후 약간 감소하였고, 가열처리정도에 따른 TBA 값의 차이는 거의 없었다. 아미노질소 함량은 Fo값이 증가함에 따라 그 값이 증가하였고, 염도는 고온가열처리 정도에 따른 차이가 거의 없었다. 색조의 경우 Fo 값의 증가에 따라 명도, 적색도 및 색차의 값은 미미하게 증가하였으나, 황색도는 미미하나마 그 값이 감소하였다. 각 시료 통조림의 조직감을 레오메터로써 측정한 결과 Fo 값이 증가할수록 경도가 증가하였다. 관능검사 결과 색조, 냄새, 맛 및 조직감은 Fo 값에 따른 차이가 거의 나지 않았고, 관능검사원들이 관능적 차이를 구별하기 힘들다는 의견이 지배적이었다. 따라서 살균원가가 가장 저렴하고 상업적 살균 조건에도 만족되는 Fo 값 9분으로 살균하는 것이 바람직하다고 판단되었다.

시판 식해의 관능적 특성 (Sensory Characteristics of Commercial Sik-haes)

  • Sik-hae is a traditional and well-liked salt-fermented seafood with a low salt concentration in Korea. However, it is challenging to find data on market degradation. This study was conducted to investigate sensual characteristics, such as taste, odor and color, of 10 types of commercial Sik-haes [flounder (5 type), Alaska pollock (2 type), black edged sculpin, anchovy, and sandfish] as basic data for developing new products. The salinities of the commercial Sik-haes were significantly difference in the range of 3.0-6.7%. The pH and total acidity of 10 types of commercial Sik-haes were 4.45-5.24 and 0.84-1.46 g/100 g, respectively. The amino acid nitrogen and free amino acid contents, and total taste value were 72.0-333.0 mg/100 g, 425.6-1,726.4 mg/100 g and 17.0-115.9, respectively. According to the taste value, the major taste-related amino acids were aspartic acid and glutamic acid. Volatile basic nitrogen content and Hunter redness value of commercial Sik-haes were 24.5-80.9 mg/100 g and 10.9-28.5, respectively. However, food-grade additives, such as citric acid and monosodium, are occasionally used in commercial Sik-haes to achieve a lower pH or enhance flavor and aroma.

Variation of the antioxidant activity of squid jeotgal by altering the level of added soy isoflavones and storage duration

  • In this study, we propose a squid jeotgal, Korean fermented seafood, supplement with different soy isoflavones supplements, followed by fermentation for different time intervals at $4^{\circ}C$ to increase the antioxidant activity and improve the food value. In the first month, fermented jeotgals with at lowconcentration ($2mg\;g^{-1}$) of added soy isoflavones showed a significant increase in the activity of up to 55%, whereas, at high concentration ($10mg\;g^{-1}$), the activity almost doubled compared to that of the sample without isoflavones. Moreover, the squid enriched with isoflavones also exhibited significantly decreased total volatile base nitrogen, thiobarbituric acid reactive substances, and biogenic amines, indicative of higher inhibition of the formation of these substances. The changes in the microbial profile were also evaluated. This use of soy isoflavanones as an additive could aid in improving the nutritional value of fermented seafood to reduce the incidence of age-related and chronic disorders.

온라인에서 유통 중인 국내산 및 수입산 오징어(Todarodes pacificus) 젓갈의 미생물학적 오염도 조사 (Microbiological Contamination in Domestic and Imported Squid Todarodes pacificus Jeotgal Distributed at On-line Marketplaces: An Investigation)

  • Squid jeotgal is a very popular traditional, salted, and fermented seafood in Korea. Due to the development of a distribution structure, a lot of imported squid jeotgal has recently entered Korea. In this study, we analyzed and compared the microbial contamination levels of domestic and imported squid jeotgal. The total viable bacterial count in domestic and imported jeotgal was 5.20 and 5.38 log CFU/g, respectively. The highest contamination level was 6.94 log CFU/g in one of the imported squid jeotgal samples. Coliforms were not detected in domestic jeotgal but were detected at 50% with 2.21 log CFU/g in imported jeotgal. Escherichia coli and Staphylococcus aureus were not detected (ND: <1 log CFU/g) in both domestic and imported jeotgal. All samples of jeotgal were negative for Bacillus cereus and Clostridium perfringens. The microbial contamination levels determined in the current study may be utilized as primary data to execute microbial risk assessments on domestic and (or) imported jeotgal.

시판 샛줄멸 젓갈의 식품성분 특성 (Food Component Characteristics of Commercial Salt-fermented Silver-stripe Round Herring)

  • This study was conducted to compare the food quality of commercial salt-fermented silver-stripe round herring (SFS) to that of commercial salt-fermented anchovy (SFA). The contents of moisture and crude protein of SFS were higher than those of SFA. However, the crude lipid and crude ash contents of SFS were lower than those of SFA. The salinity of SFS was 13.2%, which was lower than that of SFA. The taste value of SFS was 148.1, which was higher than that of SFA. The total amino acid content of SFS was 18.1 g/100 g and its major amino acids were glutamic acid (9.5%) and aspartic acid (8.1%). The contents of calcium, phosphorus and iron in SFS were 647 mg/100 g, 363 mg/100 g and 4.1 mg/100 g, respectively. Twenty six types of fatty acids were detected in SFS and the major components were 16:0, 18:0, 18:1n-9 and 22:6n-3. The angiotensin I converting enzyme (ACE) inhibiting and the antioxidative abilities of SFS were 50.0% and 1.15, respectively, which were similar to those of SFA. Sensory evaluation revealed that SFS had a superior taste and color to SFS, while to the flavor of two products was similar.

The improvement effect of antioxidant activity of Aronia extract that fermented by Lactic acid bacteria isolated from the fermented seafoods

  • The purpose of this study was to evaluate the improved antioxidant activity of Aronia extract fermented by lactic acid bacteria isolated from fermented seafoods. Aronia fruits were collected from Sunchang, Chonbuk, South Korea. And these collected fruits were lyophilized for fermentation. For the selection of effective lactic acid bacteria useful for fermentation. Aronia fermented by lactic acid bacteria that isolated from fermented seafood was extracted with 60% ethanol. Antioxidant activity of Aronia extract was evaluated on the DPPH radical scavenging activity and total polyphenol contents were studied. To determine the optimal fermentation conditions, the changes of antioxidant efficacy was evaluated by controlling temperature (25, 30, 37, $40^{\circ}C$), Time (0~5 day) and inoculation dose of lactic acid bacteria (0.125~0.5ml). To confirm the antioxidative effect of Aronia fermented under optimal conditions, the DPPH & ABTS radical scavenging activity, total polyphenol & flavonoid contents were compared before and after fermentation were studied. 16 different kinds of lactic acid bacteria were isolated from fermented seafood, and of which antioxidant activity of Aronia fermented by Pediococcus pentosaceus B1 was maximum. Aronia fermentation at $37^{\circ}C$ was maximized when fermented for 3 days and fermentation time is decreased as the start inoculation amount of lactic acid bacteria increased. The degree of increase in antioxidant activity after Aronia fermentation is that DPPH & ABTS radical scavenging activity was increased about 27%, 20% and total polyphenols & flavonoids contents was increased about 12%, 15%. In the result of this experiment indicated that fermentation process enhances the antioxidant efficacy of Aronia.

식염첨가량이 다른 멸치(Engraulis japonica)육젓의 15℃ 숙성 중 이화학적 특성의 변화 (Changes of Physicochemical Properties of Salted-Fermented Anchovy Meat Engraulis japonica with Different Salt Content During Fermentation at 15℃)

  • 원료멸치에 식염첨가량을 달리하여 $15^{\circ}C$로 설정된 incubator에서 110일간 숙성 중 멸치육젓의 이화학적 및 관능적 특성에 대하여 조사한 결과를 요약하면 다음과 같다. $15^{\circ}C$에서 식염 15, 20 및 25%를 각각 첨가하여 숙성 시킨 멸치육젓의 경우 숙성기간이 길어짐에 따라 수분 함량이 점점 감소하였으며, 조회분 함량은 증가하였고, 조단백질 및 조지방 함량은 거의 변화가 없었다. 그리고 식염첨가량이 많은 시료일수록 수분함량은 감소하였고, 조지방 및 조회분은 증가하였으며, 조단백질 및 pH는 식염첨가량에 따른 차이가 거의 없었다. 숙성기간이 길어질수록 TBA값, 아미노질소 함량, 염도 및 조직감은 그 값이 증가하였으며, 색도는 L값 및 b값은 감소하였으나 a값 및 ${\Delta}E$값은 증가하였다. 식염첨가량이 증가할수록 염도 및 조직감은 증가하였으나 TBA값 및 아미노질소 함량은 감소하였으며, 색도의 경우 적색도(a값)와 황색도(b값)는 증가하였으며, 명도(L값) 및 색차(${\Delta}E$값)는 큰 차이가 없었다. 총유리아미노산 함량은 110일 숙성 시킨 시료의 경우 식염 15%를 첨가한 시료가 가장 많은 함량이었으며, 그 다음으로 식염 20%를 첨가한 시료, 식염 25%를 첨가한 시료의 순이었다. 식염 15-25%를 첨가한 시료 모두 lysine, leucine 및 histidine이 주요아미노산이었다. 관능검사 결과 15, 20 및 25%를 첨가한 시료 모두 숙성 80일 이후 관능적 기호도가 3.0이상으로 좋아짐을 알 수 있었다. 색의 경우 15, 20 및 25%를 첨가한 시료는 차이가 거의 없었으며, 조직감의 경우 식염 25%를 첨가한 시료가 가장 선호도가 좋았고, 그 다음이 20%를 첨가한 시료, 15%를 첨가한 시료의 순이었다. 반면 냄새, 맛 및 종합평가의 경우 식염 15%를 첨가한 시료가 가장 선호도가 좋았고, 그 다음이 20%를 첨가한 시료, 25%를 첨가한 시료의 순으로 나타나 염도가 낮은 시료일수록 관능적 기호도가 좋은 것으로 판단되었다.

멍게(Halocynthia roretzi) 식해 및 조미 멍게의 영양 및 생리활성 특성 (Nutritional and Physiologically Active Characterizations of the Sea Squirt Halocynthia roretzi Sikhae and the Seasoned Sea Squirt)

  • This study was carried out to investigate nutritional and physiologically active characterizations of sikhae and the seasoned products from the sea squirt Halocynthia roretzi. The total taste values of sikhae fermented for 4 and 5 days were 10.9 and 15.4, respectively, which was lower than for commercially seasoned sea squirts. The sikhaes contained mostly glutamic and aspartic acids. The total amino acid contents of sikhaes fermented for 4 and 5 days were 5.5 and 6.0 g/100 g, respectively, which were lower than those of commercial seasoned-sea squirts or similar. An amount of 100 g of sikhae and its seasoned products contained P, K, Mg and Fe, and these minerals, which are deemed good for our health, were at 10% above the recommended daily requirements. The functional properties of sikhae fermented for 4 and 5 days were as follows: for ACE inhibiting activity, 69 and 69.5%, respectively; for antioxidative activity, 28.9 and 29.3%, respectively; for xanthine oxidase inhibitory activity, 52.8 and 53.1%, respectively; and for ${\alpha}$-glucosidase inhibitory activity, 2.4 and 1.4%, respectively. Antimicrobial activity of the 5 day fermented sikhae against Vibrio parahaemolyticus and Staphyloccus aureus was detected in 8 mm and in 7 mm against Escherichia coli.
