십전대보탕 부산물과 발효홍국 홍삼박의 혼합제재를 여러 가지 제형에 따라 오리사료에 첨가 시 오리 가슴육의 변화 (Physicochemical Properties of Pekin Duck Breast Meat from Ducks Fed Diets Containing Different Types of Sipjeondaebo-Tang by- Products and Red Ginseng Marc with Fermented Red Koji)

  • This study investigated the physicochemical properties of Pekin duck breast meat obtained from ducks fed diets consisting different types of sipjeondaebo-tang by-products and red ginseng marc with fermented red koji during storage. A total of 180 Pekin ducks (0-day old) were divided into four groups, each consisting of three replicates (15 ducks per pen). This study investigated diets with four types of treatments: control (basal diet),1% blend powder, pelleted 1% blend, and coated pellets of 1% blend; the blend was a mixture of sipjeondaebo-tang by-products powder and red ginseng marc with fermented red koji. There was no significant difference (p>0.05) in duck breast meat pH on storage days 3 and 7, TBARS on storage days 0 through 7, and DPPH radical scavenging on storage days 0 and 7. However, the pH values on storage day 0 and DPPH radical scavenging on storage day 3 were significantly different (p<0.05) in the meats from control and treated diet fed ducks. Especially, on storage day 7, the breast meat from ducks treated with different types of sipjeondaebo-tang by-products and red ginseng marc with fermented red koji showed lower TBARS values and increased DPPH radical scavenging activity compared to the control. In conclusion, addition of different types of sipjeondaebo-tang by-product and red ginseng marc with fermented red koji to 1% blend might be helpful in increasing antioxidant effects and reducing product wastage.

발효 머루 부산물을 급여한 돈육의 품질 및 기호성 (Quality and Palatability of Pork Meats Fed with Fermented Wild Grape By-product)

  • This study was carried out to investigate the feeding effects of fermented wild grape by-product on pork meat qualities. The samples consisted of the pork not fed fermented wild grape byproduct(FWG-X) and the pork fed fermented wild grape byproduct(FWG-O). The moisture, crude protein, crude fat and crude ash were not significantly different between samples. The cholesterol and TBARS of FWG-O were lower than those of the FWG-X, and the salt soluble protein extractability of FWG-O was higher than that of the FWG-X(p<0.05). The calorie, cooking loss, water holding capacity, pH and volatile basic nitrogen were not significantly different between FWG-X and FWG-O. The meat colors of the a and b value of FWG-O were higher than those of the FWG-X, and in case of the fat color, the a value of FWG-O was higher than that of the FWG-X. The hardness, springiness, cohesiveness, gumminess, chewiness and shear force were not significantly different between FWG-X and FWG-O. The total amino acid contents of FWG-X and FWG-O were 74.35 and 69.59g/100g protein, respectively, The raw meat color of FWG-O was higher than that of the FWG(p<0.01), and the cooked meat color(p<0.05), taste(p<0.001), flavor(p<0.001), juiciness(p<0.01) and palatability(p<0.01) were superior to those of the FWG-X. This study showed that fermented wild grape by-product decreased the cholesterol content and lipid oxidation with enhancing the sensory score.

Partial replacement of pork backfat with konjac gel in Northeastern Thai fermented sausage (Sai Krok E-san) to produce the healthier product

  • Objective: The influence of konjac gel level on fermentation process and product qualities were assessed to evaluate the feasibility of using it as fat analog in Northeastern Thai fermented sausage (Sai Krok E-san). Methods: Five treatments of fermented sausages were formulated by replacing pork backfat with 0%, 7.5%, 22.5%, and 30% konjac gel. The changes in lactic acid bacteria (LAB) and important physicochemical properties of samples were assessed during 3 days of fermentation. After the end of fermentation at day 3, water activity ($a_w$), instrumental texture, color, microbial counts, and sensory evaluation were compared. The best product formulation using konjac for replacing pork back fat were selected and used to compare proximate composition and energy value with control sample (30% pork backfat). Results: An increase in konjac gel resulted in higher values of LAB, total acidity, and proteolysis index with lower pH and lipid oxidation during 3 days of product fermentation (p<0.05). It was noted that larger weight loss and product shrinkage during fermentation was observed with higher levels of konjac gel (p<0.05). The resulting sausage at day 3 with 15% to 30% konjac gel exhibited higher hardness, cohesiveness, gumminess, springiness, and chewiness than control (p<0.05). The external color of samples with 22.5% to 30% konjac gel were redder than others (p<0.05). Mold, Salmonella spp., Staphylococcus aureus, and Escherichia coli in all finished products were lower than detectable levels. Product with 15% konjac gel had the highest scores of sourness linking and overall acceptability (p<0.05). Conclusion: The product with 15% of konjac gel was the optimum formulation for replacing pork backfat. It had higher sensorial scores of sourness and overall acceptability than control with less negative impact on external appearance (product shrinkage) and weight loss. Moreover, it provided 46% fat reduction and 32% energy reduction than control.

Comparison of Sensory Traits and Preferences between Food Co-product Fermented Liquid (FCFL)-fed and Formula-fed Pork Loin

  • Sensory traits and preferences regarding food co-product fermented liquid (FCFL)-fed pork loin were compared with those of formula-fed pork. The FCFL-fed pork was expected to have improved fat meltability. Thirty-nine laboratory panelists took part in a sensory test. The fat meat and the lean meat of FCFL-fed pig were judged more meltable and tender, respectively, than the corresponding meat from the formula-fed pig. These sensory traits agreed closely with the results of a mechanical investigation of fat melting patterns and with Warner-Bratzlar shear force values. However, the overall preference was not significantly associated with sensory fat meltability and meat tenderness, as assessed by chi-square and correspondence analyses, but it was significantly related to the whole fat preference and the fat texture preference. The fat texture preference, however, did not correlate with sensory fat meltability. These results indicated that FCFL feeding altered sensory fat meltability in pork loin, but the preference for such meltable fat differed among individual panelists.

Effects of a Dietary Fermented Mushroom (Flammulina velutipes) By-Product Diet on Pork Meat Quality in Growing-Fattening Berkshire Pigs

  • This study was carried out to investigate the effects of fermented mushroom (Flammulina velutipes) by-products on meat quality characteristics in fattening Berkshire pigs. The fermented diet mainly contained 40.0% mushroom by-products, 26.0% rice bran, and 20.0% formula feed and was fermented for 5 d. The basal diet for the control (C) was substituted with 10% (T1), 30% (T2), 50% (T3), and 70% (T4) fermented diet. Warner-Bratzler shear forces (WBSF) were significantly lower (P < 0.05) in treatments than that in C. The meat color (lightness, redness, and yellowness) was significantly lower (P < 0.05) in treatments than that in C, whereas fat color (redness and yellowness) was significantly higher in treatments than that in C (P < 0.05). The compositions of palmitoleic acid and arachidonic acid were significantly higher (P < 0.05) in T4 than that in C. The amino acid composition of longissimus dorsi (LD) and the sensory evaluation of cooked meat were not affected by diet type. In conclusion, a diet of fermented mushroom by-products increased pH and backfat color, but decreased cooking loss, WBSF, and meat color of LD in growing-fattening Berkshire pigs.

Isolation and Characterization of a Protease-Producing Bacterium, Bacillus amyloliquefaciens P27 from Meju as a Probiotic Starter for Fermented Meat Products

  • This study was performed to select protease-producing Bacillus sp. as a potential probiotic starter for fermented meat products. In order to isolate protease-producing bacterium from meju, measured the diameter of the clear zone on agar plate (TSA, 1% (w/v) skim milk) and analyzed for intracellular protease activity, then 10 Bacillus-like strains were isolated. Three Bacillus-like strains (P19, P27, and P33) among 10 strains were able to tolerate in acidic condition (TSB, pH 2.5, 2 h incubation). These 3 strains were showed antimicrobial activity against food-borne pathogenic bacteria. These vegetative cells of 3 strains were showed a survival rate of 0.04% to 0.08% under the artificial gastric acidic condition (TSB, pH 2.5 with 1% (w/v) pepsin), but spore-forming cells were 56.29% to 84.77%. Vegetative cells of 3 strains were the least bile-resistant, while spore-forming cells of 3 strains showed higher survival rate more than 76% under artificial bile condition (TSB, 0.1% (w/v) oxgall bile). In these strains, P27 strain was finally selected as a good probiotic strain. P27 strain was tentatively identified as Bacillus amyloliquefaciens by API CHB kit and 16S rDNA sequence analysis. The results of this study suggest that B. amyloliquefaciens P27 can be used as a potential probiotic starter for fermented meat product.

Quality and Probiotic Lactic Acid Bacteria Diversity of Rabbit Meat Bekasam-Fermented Meat

  • Rabbit meat bekasam is a traditional fermentation product from Indonesia. This study aimed to determine the chemical and microbiological characteristics of rabbit meat bekasam during the fermentation process in order to isolate, characterize (in vitro and in vivo), and identify lactic acid bacteria (LAB) as the probiotic candidate. The chemical contents of bekasam on 7-day fermentation were investigated in explorative and experimental methods in a completely randomized design. A proximate analysis reported a decrease in the moisture content, fat and carbohydrate content, and an increase in protein content. Also, lactic acid content was increased from 0.48% to 1.12%, and pH was decreased from 5.3 to 4.3. Other properties indicated different values, such as bacteria (2.75×106 to 4.45×107 CFU/g), total LAB (3.82×106 to 4.67×108 CFU/g), total yeast (9.89×106 to 3.82×108 CFU/g) and total mould (4.34×101 to 4.86×103 CFU/g). The experiment produced nine LAB isolates, including two probiotics subjected to further 16S rRNA gene analysis, which indicated that Lactobacillus buchneri was the potential probiotic isolate. After being tested on BALB/c mice, L. buchneri could improve the immune system by inhibiting the growth of Coliform and Salmonella.

Effect of Fermented Soybean, "Natto" on the Production and Qualities of Chicken Meat

  • Natto is a Japanese traditional soybean product fermented by Bacillus natto. The effect of natto supplement on the production and qualities of chicken meat was studied since the effective use of various waste foods is required in Japan. Dried natto prepared by heating at $60^{\circ}C$ was added to a basic diet at an amount of below 2%. The supplementation of dried natto did not influence the weights of the carcass, breast and thigh meat, fillet or abdominal fat. Growth of the thighbone such as the length, thickness of cortex bone, and Ca/P ratio in bone ash were not altered by the addition of natto. However, the pH of male meat decreased following the supplementation of dried natto from days 28 to 80. The water-soluble protein content in male thigh meat increased in the group fed 2% natto from days 28 to 80. Free peptides increased in male thigh meat by feeding 2% natto from days 0 to 80. The supplementation of natto increased free glutamic acid in thigh meat regardless of sex. Moreover, the supplementation of natto specifically decreased meat cholesterol in female chickens though the effect was not shown in male chickens.

발효산삼 배양액 부산물 급여가 비육돈의 생산성, 혈액성상, 육질특성 및 육내 Ginsenoside 함량에 미치는 영향 (Effects of Fermented Wild-ginseng Culture by-products on Growth Performance, Blood Characteristics, Meat Quality and Ginsenoside Concentration of Meat in Finishing Pigs)

  • 본 시험은 발효산삼 배양액 부산물 급여에 따른 돼지 생산성, 혈액특성, 육질 특성 및 돈육내 진세노사이드에 관하여 평가하였다. 시험 동물은 3원교잡종(Landrace×Yorkshire×Duroc) 비육돈 48두를 공시하여 7주간 실시하였고, 시험 개시체중은 76.26±1.06kg이었다. 시험 사료는 기초사료를 대조구(CON)로 설정하였고, 처리구 1(FWG1)은 기초사료에 발효산삼 배양액 부산물 2.5%을 첨가하여 배합하였고, 처리구 2(FWG2)는 기초사료에 발효산삼 배양액 부산물 5.0%을 첨가하여 배합하였다. 시험구는 각 처리당 4마리씩 4반복으로 완전임의 배치하여 실시하였다. 성장률에서는 49일간 일당증체량, 일당사료섭취량 및 사료 효율에서 처리구간 유의적 차이가 없었다(P>0.05). 건물 소화율에서는 CON 처리구에 비해 FWG1 처리구가 유의적으로 높은 결과를 나타내었다(P<0.05). 혈액내 콜레스테롤 농도에서 HDL 콜레스테롤은 FWG1 처리구에 비해 CON 처리구 유의적으로 증가하였다(P<0.05). 육질특성에서 지방산패도는 CON 처리구에 비해 FWG1과 FWG2 처리구가 유의적으로 감소하였다(P<0.05). 관능검사에서는 근내 지방도는 FWG1 처리구에 비해 CON 처리구가 유의적으로 높게 나타내었다(P<0.05). 경도는 FWG1와 CON 처리구가 FWG1 처리구에 비해 높게 나타내었다(P<0.05). 육색에서 등심의 L*은 FWG1 처리구와 비교하여 CON과 FWG2 처리구가 유의적으로 증가 하였다(P<0.05). 등심의 a*와 b*은 CON 처리구와 FWG1처리구와 비교하여 FWG2 처리구가 유의적으로 증가하였다(P<0.05). 육내 ginseno- side는 CON 처리구에 비해 FWG2 처리구가 유의적으로 높은 결과를 나타내었다(P<0.05). 결론적으로 발효산삼 배양액 부산물은 비육돈에서 건물 소화율, 지방산패도, 경도, 육색 및 육내 ginsenoside에 영향을 미치는 것으로 알 수 있었다.

무화과 발효물의 급여가 한우의 생산성, 혈액성상 및 육질에 미치는 영향 (The Effects of Fig Fermented Product Supplementation on Animal Performance, Serum Profile and Meat Quality in Hanwoo Bulls)

  • 본 연구는 한우 수소 10두를 공시하여 전남 영암군의 지역특산물인 무화과 열매와 잎를 발효시킨 발효물을 10% 첨가하여 출하전 8개월간 급여하였을 때 생산성, 혈액성상, 도체성적 및 육질특성을 조사하였다. 한우 수소에 무화과 발효물 10%을 급여했을때 사료섭취량은 무화과 발효물 급여구가 대조구에 비해 약간 증가하였으나, 종료체중과 일당증체량에서는 처리구간에 유의적인 차이는 나타내지 않았다. 혈액성상은 처리구간에 유의적인 차이는 없었다. 도체성적에서는 육량등급에는 처리간에 차이는 없었으나 육질등급에서 무화과 발효물 급여구에서 근내지방도가 유의적(P<0.05)으로 증가하여 육질등급 개선 효과가 있었다. 산육성적은 처리간에 유의적인 차이가 없었다. 등심의 이화학적 특성으로 조지방 함량이 무화과 발효물 급여구에서 유의적(P<0.05)으로 증가하였다. 물리적 특성에서는 pH와 육색, 가열감량에는 처리간에 유의적인 차이는 없었으나, 전단력과 cholesterol 함량은 무화과 발효물 급여구에서 유의적(P<0.05)으로 감소하였다. 지방산 조성에서는 등심부위에서 리놀레인산이 무화과 발효물 급여구에서 유의적(P< 0.05)으로 증가하였으며 무화과 발효물 급여구의 등심부위 피하지방에서 C16:0이 유의적(P< 0.05)으로 감소한 반면 C18:1는 유의적(P<0.05)으로 증가하였다. 따라서 무화과 발효물 급여구에서 포화지방산이 유의적(P<0.05)으로 감소한 반면에 불포화지방산은 유의적(P<0.05)으로 증가하였다. 관능평가에서는 냄새는 무화과 발효물 급여구에서 약간 개선되었으며 외관과 맛에 있어서는 무화과 발효물 급여구에서 유의적(P<0.05)으로 증가하였다. 이상의 결과, 무화과 열매와 잎을 발효시킨 발효물을 한우 수소에 급여시 도체등급 향상에 따른 축산농가의 생산성 향상과 더불어 한우고기의 연도개선과 저콜레스테롤 그리고 외관과 맛에 차별화로 고급육생산에 효과가 있는 것으로 사료된다.
