유아 대상 활동북과 동영상 중심의 채소 편식 개선 교육자료 개발과 평가 (Development and Evaluation of Booklets and Video Clips to Prevent Children from Developing Picky Eating)

  • Objectives: The purpose of this study was to develop and evaluate booklets and video clips to prevent children from picky eating. Methods: Based on a survey conducted on food preferences of preschool children aged 2 to 5 years, 14 kinds of less preferred vegetables were selected. Accordingly, educational videos, activity books, and teaching-learning guides were produced for preschool children using the 'food bridge' theory, and the educational materials were named "Friendly vegetables". Educational materials were distributed to childcare institutions, and their effectiveness was investigated for preschool children who were instructed on these materials once every 30 days from March to November, 2019. The children were examined for changes in their knowledge of names, colors, taste/texture, methods of cultivation, and preferences for vegetables before and after the instructional course. Results: The awareness of vegetables increased significantly in younger children and the picky eating group. When the assessment was carried out in terms of vegetable knowledge, it was observed that the younger the age or the pickier the in eating food, the more effective the education is compared to the counter part. The preference for vegetables also increased after the instruction compared to the pre-instruction period, but significant changes were seen only in the 2~3 year age group for boys and girls. Also, only the picky group of girls showed changes in preference. The children's average interest in the education materials was 3.85 points out of 5 points. Conclusions: Through this study, we have developed educational materials for standalone use in childcare facilities and confirmed that they have a significant effect on improving awareness and preferences related to vegetables. In summary, the younger the age or the pickier the child in eating food, the more effective the education. It is believed that additional education on mealtime guidance is needed which can alter the eating behavior of preschool children and improve their diet. It is proposed to widen the scope of use of the materials by collecting diverse opinions from child care teachers.

한국인의 외식행태에 관한 실증 연구 (A study of consumer한s eating-out pattern in korea)

  • This study assesses consumer's eating-out pattern for Foodservice industry in Korea. Foodservice industry has become increasingly important because many businessman are looking it difficult to develop successful business as a consequence of the rapid growth in Foodservice industry in Korea This exploratory study originally nation-wide surveyed a 1450 consumer over the country. A research was conducted from July 1, to July 10, 1996 using as its subject domestic consumer over the country. The data obtained from the returned questionnaires was coded and transcribed for statistical analysis. The Statistical Package for social science program (SPSS) was used for computer analysis of the data. Findings indicated the problems of management structures, managerial techniques, and laggard counter measure against the korean government's open-door policy for dining-out industry. It is found that taste, F/B price, atmosphere are considered important in choice of restaurant. And korean consumer think it is that restaurant location, physical, evidence, quality of service, Ads of mouth and cleanliness. With the importance of dining-out industry to the business, economic, and social development of korea, it is imperative to bridge this gap for sustained growth and development. Moreover, this study for advancement and improvement through concrete and multi-directional data collection and in-depth analysis of consumer's eating-out pattern realities is required.

전라북도 일부 초등학생의 외식 및 간식섭취 실태조사 (A study on eating out and snack intake of elementary school students living in Jeonbuk province)

  • This research investigated the eating out and snack intakes situation of five hundred eighty five $5^{th}\;and\;6^{th}$ graders living in the city and rural parts of Jeonbuk province. The results of this study are as followed: Nuclear families in urban area and rural community are 84.5% and 64.7% respectively. On the other hand, extended families are 7.9% in urban area and 18% in rural communities. Out of all the households, 34.3% (urban: 37.2%, rural community: 31.5%) answered they like to eat out. Over 50.3% preferred eating Korean style food and the reason was 'the taste': urban (71.4%) and rural community (67.8%). People living in urban communities seemed to eat out more frequently than rural places and $3{\sim}4$ times a month was the average. Usually people seemed to eat out during the weekends and in the evening time 84.3% (after 7:00 p.m.). Based on each family's living standard, people answered 'we hardly ever eat out' for those in the lower class (59.1%), the middle class said once or twice a week (47.1%), and the upper class (35.7%). It was obvious that people in the middle and upper class tend to eat out more frequently than those in the lower class. The most common period of time which snacks were taken was after school (38.5%), on the way back from educational institute (35.0%) and the choices of snacks which they purchased were frozen sweets (56.4%)chips & cookies (25.2%) beverages (9.9%) Fast foods (4.6%) and fried foods (3.9%) in order. Urban children seem to eat more frozen sweets and rural children ate more chips & cookies. Also, amount of snacks between meals showed a higher percentage to those who had more pocket money, The type of snacks were fruits (37.1%) chips and cookies et cetera (19.2%) instant foods (12.8%) dairy products (11.1%) confectionary (10.3%) fried foods (5.1%) in order. The result shows that urban children eat out more frequently than those in rural areas, Eating around 7:00 p.m. was most common and the middle and upper class tend to eat out more frequently than those in the lower class, Also, snacks were most often bought before and after school. After 10:00 p.m frozen goods and chips were the most preferred choice. Specially, the reason for eating fast foods was because of the pleasing taste. From this study, it is clear that eating out and having snacks became pervasive into our lives in both urban and rural areas. Hereafter, an appropriate eating habit should be correctly educated to elementary students by spoken words and textbooks in a curriculum. In reality, snacks are classified as being the leading factor of obesity. Therefore more products containing balanced nutrition should newly develop rather than snacks with high fat content.

色彩環境이 肉鷄의 攝食行動에 미치는 影響 (Effect of Environmental Color on the Eating Behaviour in Broiler Chicks)

  • An experiment was carried out to study the effect of environmental color on the eating behaviour in broiler chicks. A total of ninety broilers with average 350g of initial body weight were randomly assigned in the $3{\times}3$ randomized complete block design with 3 treatments(yellow, blue, red) and 10 birds per replication of various environmental color at walls, feeders and electric bulbs. The results obtained from these experiments are summarised as follows: 1. Feed Intake and average daily gain were significantly(P<0.05) increased by yellow colored environment. 2. Eating time and eating rate were significantly higher in the red colored than the other, indicating that yellow colored environment would maximize body weight gain and feed conversion for broiler chicks.

농촌초등학생의 식습관 및 식품기호에 관한 연구 (A Study on Eating Habits and Food Preference of Rural Elementary School Students)

  • This study was undertaken to assess eating habits of 230 rural elementary school students living in ChunNam province. Anthropometric data showed that their mean height of girl students was significantly higher than that of boy students. Irregular eating pattern of girl students was noted. There was a significant difference in concerning on weight control between girls and boys. Girls especially view themselves as too obese even though their weight was in normal range and they were more concerned on weight control due to appearance. Nutrition education at school was an important factor ruling out peaky eating habits in participants. More effective nutrition education might be suggested to form a good eating habit which result in maintenance of ideal weight and promote health for rural elementary school students.

영.유아의 연령과 성별에 따른 식행동과 식품 기호도에 관한 연구 (Study of Eating Behavior and Food Preference in Young Children: Differences by Age and Gender)

  • The primary object of this study was to examine both preferences in a variety of foods and snacks and the eating habits among young children (aged 13 months through 50 months old). In addition, this study examined whether there would be significant differences in the preferences and eating habits by of young children of different ages and gender of young children. This study included 193 infants (85 boys, 108 girls) of aged 13 through 50 months of old who were enrolled in early childhood education and care settings in Seoul and Gyunggi Province. The information regarding food and snack preferences among young children were gathered through surveys filled out by their mothers and the children's overall eating habits were assessed by their teachers. The main results of this study were as follows. Overall, there were some patterns in eating bere asss and food preferences in foods and snacks among young children. There were no significant differences in both eating bere asss and food preferences by gender of young children. But, however, there were significant differences in food (p<0.001) and snack preferences (p<0.001) by of children of different ages of young children.

갱년기 비만 여성의 식사태도와 복부지방과의 상관성 (The Relationship between Abdominal Fat and Eating Attitude in Obese Climacteric Korean Women)

  • Objectives : This study was performed to find out the relationships between abdominal fat and eating attitude in obese climacteric women. Methods : 42 obese climacteric women were recruited in August 2007. Anthropometry has been done and abdominal fat distribution had been assessed by CT scan at the level of L4-5 and eating attitude was measured using Korean Eating Attitude Test-26. Results : There were significant correlations between body mass index, percent of body fat and eating attitude. Total abdominal fat and visceral fat also increased with KEAT-26. Conclusions : There were relationships among eating attitude total fat, abdominal fat and visceral fat in obese climacteric women.

  • Objectives : This study examined the association between body mass index(BMI) and psychological factors; self-esteem, depression, restraint eating, disinhibition, and hunger. The difference of TFEQ(restraint eating, disinhibition and hunger) was analyzed in variety of current diet situations. Methods : The research was based on a sample of people who visited our website and submit the result of self test(self-esteem n=3183; TFEQ n=5167; BDI n=2457). Results : Self-esteem and BDI was slightly correlated with BMI. There is negative correlation between restraint eating and BMI and positive correlations were observed between hunger and BMI, and disinhibition and BMI. We studied diet situation and eating habits. We divided the sample into 4 groups in accordance with self-submitted result: non-diet group(n=2806), diet-failed group within 3 months group(n=371), maintaining group after successful-diet(n=233), on-going diet group(n=1757) As to restraint eating, non-diet group showed the lowest score in restraint eating and maintaining group after successful-diet showed the highest. The score in disinhibition and hunger was significantly lower in maintaining group after successful-diet group than one in diet-failed group. Conclusion : These results suggest that it would be essential to treat these psychological factors such as depression and self-esteem in weight loss program. Considering the result in diet-situation and TFEQ, we insist that restraint-eating and disinhibition should be controlled. If these psychological factors were not treated in place, even the successful diet might turn out to be a worse situation like binge-eating

대구지역 초등학생의 식습관, 단맛 미각 판정 및 당류 급원 식품 섭취 간 상관성 연구 (Association between eating habits, sweet taste assessment, and high-sugar food consumption among elementary school students in Daegu: a descriptive study)

  • Objectives: The purpose of this study was to analyze high-sugar food consumption habits frequency among elementary school students, and their correlations with eating habits and sweet taste assessment. Methods: The participants of the study were 164 elementary school students in Daegu, in the fifth or sixth grade, along with their parents. A questionnaire investigated eating habits, high-sugar food consumption habits and frequency, and sweet taste assessment. Results: The average eating habits score for elementary school students was determined to be 71.7 out of 100. Students with higher eating habits scores had lower high-sugar food consumption habits and frequency compared to those with lower eating habits scores. Sweet taste assessment revealed that students who preferred less sweetness chose a 5% sugar concentration, those with a preference for normal sweetness chose a 10% sugar concentration, and those who preferred sweeter tastes chose a 20% sugar concentration. Sweet taste assessment showed that students who tended to prefer less sweetness had the highest eating habits scores and the lowest scores for high-sugar food consumption habits and frequency. In addition, eating habits scores were found to be negatively correlated with high-sugar food consumption habits, high-sugar food consumption frequency, and sweet taste assessment. The sweet taste assessment was positively correlated with high-sugar food consumption habits and frequency. Conclusions: Our results indicate that students with good eating habits had more desirable overall sugar intake habits, and when the preference for sweetness was high, the frequency of high-sugar food consumption was also high. Our study highlights the importance of educating elementary school students and their parents about the harmful effects of excessive sugar consumption, as well as the benefits of adopting healthy eating habits and creating supportive environments.

간호대학생의 생활 스트레스, 식습관이 식행동에 미치는 영향요인 (The Effects of Life Stress and Eating Habits among Nursing Students on Eating Behavior)

  • 본 연구는 2018년 10월 10일~13일까지 G시 간호대학 2, 3학년을 대상으로 식행동에 영향을 미치는 요인을 파악하기 위한 서술적 조사연구이다. 연구결과, 식행동은 대상자의 용돈 중 식비(F=5.83, p=.003), 식생활 패턴(t.14, p<.001), 편식 정도(F=9.27, p<.001)에 따라 유의한 차이가 있었다. 변수 간의 상관관계는 식행동은 생활 스트레스(r=-.16, p=.001) 및 식습관(r=.50, p<.001)과 유의한 상관관계가 있었다. 식행동에 영향을 미치는 요인으로는 식습관(𝛽=.42, p<.001), 용돈 중 식비(𝛽=-.14, p=.007), 편식상태(𝛽=-.14, p=.007), 생활 스트레스(𝛽=-.13, p=.010) 순으로 나타났으며 설명력은 30.6%로 식행동 모형은 유의하였다(F=26.63, p<.001). 본 연구결과를 토대로 건강한 식생활 실천할 수 있는 방법을 모색할 필요가 있으리라 사료된다.
