The effectiveness and safety of Enzyme Food, a group of dietary supplements designated by Korean Food Law, were evaluated and the possibility of HACCP (Hazard Analysis Critical Control Point) application was investigated. Chemical composition, enzyme activities and the degree of bacterial contamination in 12 samples of different brands sold in Korean market were measured. The chemical composition of the selected products varied and inconsistent to those claimed in the label description. It is known that effectiveness of Enzyme Food depends on enzyme activity, but enzyme activities of ${\alpha}-amylase$ varied from $1,793\;{\mu}g/min$ g to $159\;{\mu}g/min$ g and those of ${\beta}-amylase$ ranged from $171\;{\mu}g/min$ g to $11\;{\mu}g/min$ g. The protease activities varied from $27.57\;{\mu}g/min$ g to $0.18\;{\mu}g/min$ g. In coli-form bacterial test, positive reactions were appeared in the 50 % of the samples. Numbers of bacteria ranged from $1.3\;{\times}\;10^5\;to\;1.2\;{\times}\;10^9$. Five CCPs were identified; heating, inoculation, cultivation, drying and granulation. Consideration of HACCP system indicated that the pretreatment of raw material, checking of bacterial contamination and stability of enzyme activity during fermentation process were important factors for the quality of Enzyme Foods.
Two kinds of soy pastes with different colors (reddish brown and yellowish white) were dehydrated by freeze drying in powder form. Hygroscopic behaviors of powdered soy pastes were investigated under the conditions of various water acitivities (0.11-0.88) and three different temperatures (25,40 and $50^{\circ}C$), and presented a kinetic and thermodynamic interpretatons in the view point of qualities and storage stability. Moisture absorption isotherms of powdered soy pastes were of type II according with BET classification and can be described by the Henderson's empirical equation. The safe storage moisture levels calculated by the Laurie's equation were ranging from 5.5 to 3.98% dry basis with oaring temperatures. The moisture absorption process for powdered soy paste followed the Ist order kinetic in the difference of equilibrium moisture content and arbitrary moisture content and the initial step was characterized by very fast absorption of moisture. The change of, dispersion capacity and color difference for powdered soy paste were extremely dependent upon water activity under the storage and the maximum stability was found at safe storage moisture levels. Also, the variation of thermodynamic parameters with moisture content was significant at safe storage moisture content levels and suggested d the considerable correspondence to storage stability of powdered soy paste.
In spite of high ionic conductivity, the polymer gels have poor mechanical properties and high reactivity with lithium metal anode. To solve these problems, the dry solid systems and polymer composites have been intensively studied, due to their good mechanical, thermal, chemical, and electrochemical stability. The objectives of this experiment were to improve ionic conductivity and mechanical properties of the solid polymer electrolytes based on PEO-LiClO$_4$. To obtain higher ionic conductivity and better mechanical properties, ceramic or rubber phase was added in the PEO-LiClO$_4$(8:1) matrix. The results showed that ionic conductivity and mechanical properties were improved. The ionic conductivity of the samples was as high as 10$\^$-5/ S cm$\^$-1/. This value is similar to the best ionic conductivity ever reported in the solid drying system. To obtain better results, we used PEO with various molecular weights (600∼8000) and changed the salt contents. By using DSC, we found that the addition of salt reduced the crystallinity of PEO. The mobility of polymer dependence on salt contents was examined by FT-IR.
Hen egg white lysozyme (HEWL) is very valuable as a natural preservative in food processing due to its selective bactericidal activity. HEWL which traditionally isolated by crystallization or freeze drying was simply separated from 13 different hen egg white (HEW) proteins by a single-step ultrafiltration. Freeze dried HEW (0.25%, w/v) dissolved in a citrate-phosphate buffer (pH 4.6) was ultrafiltered with a PM30 membrane under various operating conditions, by changing concentration, temperature, transmembrane pressure $({\triangle}P_T)$, and stirring speed. Optimum separation conditions were decided when maximal flux was obtained. Under the optimum separation conditions, the effect of membrane material and fouling on flux as time passed as well as lysozyme concentration, protein concentration, specific activity (SA) in the permeate were measured. Best separation conditions of HEWL with PM30 membrane were sample concentration 0.25%, temperature $35^{\circ}C$, ${\Delta}P_T\;30\;psi$, and stirring speed 300 rpm. During the first 12 min, the flux of YM30 was higher, but at the steady-state it was lower than that of PM30. The SA of the PM30 permeate was over 2 times higher in spite of the lysozyme and protein concentration being lower than that of YM30 permeate. The flux of 5 times used PM30 decreased 30% compared to a new PM30, but both had the same tendency in flux decrease when time passed. Both of them reached a steady-state after 35 min and remained at 70% of the initial flux. In the PM30 permeate, the lysozyme concentration and SA were 110 units/mL and 2,821 units/mg protein, respectively. Therefore, PM30 membrane separation was very effective for separation of antimicrobial lysozyme.

The pupose of this study was to identify the material characteristics, firing environments and making techniques for the jar coffins from the Oryangdong kiln site and the Ungokdong tomb site in Naju. All jar coffins had very similar physical, mineralogical and geochemical characteristics, although it was excavated from the different sites. The wall thickness of the jar coffins was about 2.3 to 5.3 cm. Under the microscopy, the jar coffins include a large quantity of various quartz with some microcrystalline and showed partly orthoclase and biotite. It is presumed that the mineral sherds added to maintain the thick wall and to control the percentage of contraction during drying and firing of jar coffins and it has contained about 11.4 to 19.8 %. Firing temperature of the jar coffins is estimated as 1,000 to $1,150^{\circ}C$. Also, all jar coffins and soils show similar geochemical behavior of elements and clay-mineralization degree within the site. This indicates making that the soil is probable to be a raw material of the jar coffins. But it shows different characteristics in major elements of soils which is collected at the kiln floor and the trench region of the Oryangdong kiln site because of the lack of quartz and feldspar in the soils. Therefore, it can use of the jar coffins making clay, if it goes through a simple special process such as mixing temper.
A number of studies on eco-friendly and healthy building materials are being conducted as modern people are becoming more conscious about health and the environment they live in. Among those materials, studies on Hwangtoh are the most prevalent but due to its strength, crack coming from drying shrinkage, and susceptibility to water, the usage of Hwangtoh is incomplete and limited to be used as a common building material. Cement concrete, considered as one of the most widely used building materials, is extensively used in construction because it is economical, easily accessible and moldable and has proper compressive strength. Due to carbon dioxide created in the process of making cement concrete, it is recognized as pollution. Accordingly, there are a lot of studies on reduction of carbon dioxide in cement concrete industry. There are increasing numbers of researches as well as developments on Hwangtoh or traditional construction materials used in South Korea to reduce the environmental problems. Therefore, this study suggests the basic features of the construction material that can replace cement concrete in the future with the non-sindtered cement mixed with non-sintering hwangtoh which is made with the furnace slag and multiple stimulants.
Basic studies have been conducted regarding the crystal formation of hydroxyapatite which was produced in the treatment process of phosphate-containing wastewater using calcium ions as the precipitating agent for its employment as the material for artificial bones. The precipitation of hydroxyapatite were conducted in the synthetic solution which simulating human body fluid for its increased applicability. Ca($NO_3$)$_2$$.$$4H_2$O and ($NH_4$)$_2$$HPO_4$ were employed for the precipitation of hydroxyapatite and its composition was analyzed after drying at 80oC. The thermal behavior of precipitate was investigated by examining the change in its crystalline structure according to the sintering temperature. DTA/TG analysis showed that the escape of moisture from the precipitate occurred at ca. $100^{\circ}C$ and the decomposition of ammonia and the evaporation of lattice water were brought about at around $250^{\circ}C$. X-ray diffraction analysis indicated that the thermally treated precipitate consisted mainly of hydroxyapatite. For dried precipitate, the bonds in the component materials which used for the precipitate formation were observed by FT-IR, and after thermal treatment the major bonds in the precipitate were shown to be $OH^{-}$, $PO_4^{3-}$ , and $CO_3^{ 2-}$ , which were main comprising bonds of hydroxyapatite.
Background : Ginseng has traditionally been used in oriental countries to recover vital energy from Qi deficiency, and has shown various biomedical effects in the scientific literature. Recent reports suggest that ginseng could regulate blood pressure (BP), but much controversy still remains. Therefore, we intended to assess the anti-hypertensive effect of several ginseng types frequently used in clinics. We also investigated the anti-hypertensive effect on Koreans and Chinese, and by the body type according to Sasang Constitution Medicine (SCM). Methods : The study subjects were recruited from mildly hypertensive patients who exhibited pre-hypertension(120/80 to 139/89 mmHg) and stage I hypertension (140/90 to 159/99 mmHg) in Korea and China. After assigning the subjects into a Korean, a Chinese, a red, and an American ginseng group by randomization, we prescribed ginseng at a dose of 4.5 g per day for 4 weeks. To assess the anti-hypertensive effect, we compared the mean of systolic and diastolic BP between before and after ginseng medication using a 24-hour ambulatory blood pressure monitor (24 hr ABPM. We also monitored adverse effect and laboratory findings to secure the subjects' safety. In addition, all of the subjects in Korea consulted a specialist of Sasang Constitution Medicine to identify their constitutional type. Results : There were 64 subjects treated with Korean ginseng, 58 treated with Chinese ginseng, 33 treated with red ginseng, and 64 treated with American ginseng. Korean, Chinese, and American ginseng all reduced subjects' BP; Korean and Chinese ginseng showed more effect. The secondary analysis on the subjects' nationality revealed that all of the ginseng types showed more significant anti-hypertensive effect in Chinese patients than in Koreans. The third analysis on the constitutional type of SCM showed there was no significant difference in the effectiveness and the safety of ginseng among the constitutional types. Conclusions : We suggest ginseng, especially Panax ginseng without any steaming-drying process, could be useful for mild hypertension. Further, ginseng is safe regardless of subjects' constitutional type or type of ginseng within a dosage of 4.5g per day.

In this study, it was conducted to produce wood pellets using domestic forest thinning residues and examine their quality according to Korean pellet quality standard. Raw materials were composed of larch and mixed broad leaves species. Based on the small-end diameter (6 cm), they were classified into four different types of raw materials such as LM (larch with middle diameter), LS (larch with small diameter), MM (mixed broadleaf with middle diameter), and MS (mixed broadleaf with small diameter). After crushing and drying process, wood pellets were produced by a ring-die type pelletizer using each raw material. Wood pellets made from four different types of raw materials were tested for their quality such as calorific value, moisture content, ash content, inorganic matters and so on. As results of quality analysis, the calorific values of all wood pellets were higher than 198 kcal/kg, and satisfied with the first grade of Korea wood pellet standard. The ash content was slightly increased after pelletizing. Mechanical durability of wood pellets was highly dependent on the types of raw materials. The quality differences among wood pellets were turned out due to different physical and chemical characteristics of raw materials even though the same pelletizing condition was applied.
The alkaliphilic, calcium carbonate precipitating Bacillus sp. strain AK13 can be utilized in concrete for self-repairing. A statistical experimental design was used to develop an economical medium for its mass cultivation and sporulation. Two types of screening experiment were first conducted to identify substrates that promote the growth of the AK13 strain: the first followed a one-factor-at-a-time factorial design and the second a two-level full factorial design. Based on these screening experiments, barley malt powder and mixed grain powder were identified as the substrates that most effectively promoted the growth of the AK13 strain from a range of 21 agricultural products and by-products. A quadratic statistical model was then constructed using a central composite design and the concentration of the two substrates was optimized. The estimated growth and sporulation of Bacillus sp. strain AK13 in the proposed medium were 3.08 ± 0.38 × 108 and 1.25 ± 0.12 × 108 CFU/ml, respectively, which meant that the proposed low-cost medium was approximately 45 times more effective than the commercial medium in terms of the number of cultivatable bacteria per unit price. The spores were then powdered via a spray-drying process to produce a spore powder with a spore count of 2.0 ± 0.7 × 109 CFU/g. The AK13 spore powder was mixed with cement paste, yeast extract, calcium lactate, and water. The yeast extract and calcium lactate generated the highest CFU/ml for AK13 at a 0.4:0.4 ratio compared to 0.4:0.25 (the original ratio of the B4 medium) and 0.4:0.8. Twenty-eight days after the spores were mixed into the mortar, the number of vegetative cells and spores of the AK13 strain had reached 106 CFU/g within the mortar. Cracks in the mortar under 0.29 mm were healed in 14 days. Calcium carbonate precipitation was observed on the crack surface. The mortar containing the spore powder was thus concluded to be effective in terms of healing micro-cracks.
