The coffee demand market in Korea is growing every year, and the adults drink an average of one cup of coffee every day. In order to investigate the effect of coffee on oral malodor, 15 Korean subjects were recruited. There were no significant differences in the values of oral malodor using BB checker(Taiyo, Japan) in the factors of sex, smoking, drinking, feeling oral malodor by themselves, feeling oral malodor by others, periodic scaling, activity of Streptococcus mutans, bleeding on probing, and coffee drinking habits. Patient hygiene performance index, calculus index, index of coat on the tongue, toothbrushing time, toothbrushing frequency had no correlation with oral malodor. The difference between before and after drinking coffee with syrup(17.93±16.54) was significant, but the difference between before and after drinking coffee without syrup(1.13±14.75) was not significant. We suggested the cause of oral malodor after drinking coffee was syrup, but not coffee.
The purpose of this study was to investigate the factors influencing body mass index of 618 university students located in the Gwangju area, from Nov. 20th to 30th, 2002. The subjects included 301 males(48.7%) and 317 females(51.3%). This survey was conducted using a self-administered questionnaire. The percentage of students who were underweight, normal and overweight based on their body mass index(BMI) was 3.7, 88.0 and 8.3 for the males, and 29, 71 and 0 for the females, respectively. Most students (73.8%) skipped breakfast. This was because of lack of time(65.1%) of the cases. Self-reported eating habit problems were eating irregular meal(52.4%), overeating(21%), prejudiced meal(12.4%) and skipping meal(7.4%). The type of favorite snack was biscuit(31.9%) and cup Ramyon(31.9%). The type of favorite beverage was juice(23.3%). The coffee intake was higher in males compared to females. The rates of alcohol drinking in male and female students were 88.0% and 85.8% respectively, and the rates of smoking were 35.9% and 2.8% respectively. Percentages of weight control experience were 30.2 and 51.4 in the male and female, respectively. The BMI of students living in home and eating breakfast was higher than that of the other students. The BMI of students eating cup Ramyon and water increased. The BMI of students taking regular exercise and weight control tended to be higher than that of subjects not doing so. When the amount of pocket money available and the rates of coffee intake, alchol drinking and smoking increased, the BMI was increased. Therefore, nutritional education for university students is needed so as to improve their health and to modify life habits and nutritional education program should be developed to meet the various needs of these students.
This study was conducted to investigate whether there is a difference in calcium intake between elementary school students who are participating in the school milk program and those who are not. The study samples consisted of 240 milk program participants and 120 non-participants in the fifth and the sixth grades at a school located in Cheong-ju. The survey questionnaire included questions related to general status, drinking milk at school, and intake of milk and dairy products at home. An FFQ (food frequency questionnaire) was composed of 30 calcium-supplying foods, which surveyed the normal intake amount at one time and the frequency per month. The average daily intake of calcium by the participants (1052.3 mg) was higher than that of the non-participants (772.5 mg) by 279.8 mg, and the major consumed food item contributing to the difference was milk. The major sources of dietary calcium were 'milk' for the participants and 'ice cream' for the non-participants. In a question asking the reasons for participation in the program, 48.8% of the participants answered 'benefits to health', and the primary reason why the nonparticipants did not drink milk at school was 'stomach pain' (55.0%). Among the participants, 80.4% said they 'are drinking milk at home', which was in contrast to only 50.8% of the non-participants. And 48.7% the participants said they drank 'more than 1 cup' of milk at home, and 47.5% of the non-participants said they drank 'less than 1 cup'.
This paper is for studying interrelation between Stress perception, Todai Index(THI) test and coffee. this study was done on 163 college women whose ages were 18 to 33 and who were in University in Wonju. The Stress perception test and THI test shows the following results. 1. The Stress test on the group that drunk coffee and beverage shows high degree of oppression sense about school and daily life. 2.The total THI test on the group that drunk coffee shows high degree of complaint on mouth, evacuation and lie scale, but shows the lowest piont on nervousrness. 3. The D-group womrn who drink a cup of coffee, two or three show the highest complaint on mouth and evacuation. E-group shows the lowest lie scale. 4 The Stress test and health examination on the group that drunk coffee show high degee of stress. And it also shows stimulative relation between the condition of body health and drinking coffee. The above shows that coffee and some beverage can affect on mental and physical health. Especially they are considered as a factor of stimulus on stress response. Through the THI test, the effect on mouth and evacuation, lie scale and nervousness could be obseved. So the drinking coffee and beverage requires circumspection.
The present study addresses the tea utensils and tea drinking methods seen in tomb mural paintings of Song, Liao, Jin, and Yuan, which were Koryo's foreign exchange countries. The paintings illustrate the pointing tea method, which was popular during dynasty times. Tea utensils observed in the paintings include a tea mill, mill stone, and tea pestle necessary for making cake tea into powder. The tea stove and boiling bottle are depicted as being required to boil water. Some mural works vividly depict how a tea drinker pours hot water from a boiling bottle into a cup with a stand, mixes it with a tea spoon, and whisks tea powder for foaming with a tea whisk. The tea drinking method of the Southern race Han is also similarly described in the tomb mural paintings of Liao, Jin, and Yuan from Northern nomads. The distribution of tea culture had an enormous influence on the development of tea utensil manufacturing methods. The significance of this study is that these findings can be used as basic data to provide food culture insights into Koryo celadon tea utensils.
Purpose : The purpose of this study is giving the healthy promotion and it's related data base for out-patients who had stroke via evaluating the general characters of their active daily living and physical therapy Method : This study researched 81 patients who had received physical therapy service in 6 general hospitals located Pusan city responded to the self-assessment questionnaires from July 2002 to August 2002. Conclusion : In this study, patients were composed of 61.7% of male, 65.4% of 50's-60's in the age, 56.8% of cerebral infarction, and 60.5% of right hemiplegia. 74.1% of patients received physical therapy after 6 months from an attack, only 62.9% used orthosis & gait aids, and 59.2% received medical care 2 or 3 times per week. 40.7% of patients had over 9 hours sleeping time and 22% had reduced $1{\sim}2hours$ before hospitalization. 90% did not have drinking and smoking. 91.4% had 3 times eating per day, and 67.7% did not have good nutrition. The reasons of that were their eating habit, 542% of eating-giver, 3.7% of economic problem. 46.9% of patients used healthy food. In active daily living, patients can't do drinking by cup, voiding & defication by themselves, however patients can't do wearing/take off, etiquette for dressing, bathing, stepping by themselves. 40.7% of patients don't wear orthosis, 55.6% of patients don't use W/C. Part of physical therapy that patients concerned importantly exercise for prevention of joint distortion, management of affected side, and 80% of patients was also concerned other's part, significantly. 71.8% of patients & care-givers want to receive physical therapy at home, and 74% of patients do physical therapy by themselves at home along teached hospitalization.

Males ate fiequently cup Ramyon (2.08 $\pm$ 2.95), fries (pork cutlet, fried potato) (1.91 $\pm$ 2.58), Ramyon (1.81 $\pm$ 3.00) and kimbab (1.70 $\pm$ 3.17) more frequently, while females ate kimbab (2.25 $\pm$ 3.26), cup Ramyon (1.89 $\pm$ 2.09), fries (pork cutlet, fried potato) (1.77 $\pm$ 2.67), Ramyon (1.46 $\pm$ 1.1.95) and fish paste (1.45 $\pm$ 2.22) more frequently. The nutritional knowledge score was higher in females than in males. The mean consumption patterns of convenience foods of students living in home were lower than that of students living in dormitory and boarding w/cooking. When the amount of pocket money available and the body mass index increased and the nutritional knowledge level was low, the mean consumption of convenience foods increased. The mean consumption of convenience foods correlated negatively with nutritional knowledge (p < 0.01). Therefore, nutritional education for university students is needed so as to improve their health and nutritional education program should be developed to meet the various needs of these students. Customer satisfaction concerning foodservice quality characteristics were evaluated by using importance performance analysis(IPA) techniques in middle school foodsevice operations. One hundred students from each of 17 middle schools in Gangwon province were surveyed by self-developed questionnaire. Total of 1,675 questionnaires(female 943 and male 732 respectively) were collected and data were analyzed using SAS program. The results of this study are summarized as follows: 1.The male and female students scored the importance level as 3.99 and 4.03 out of 5 respectively, which means 'important' The performance level of female(2.71) was significantly lower than male(2.86) which means 'between bad and so-so'. it is suggested that the statistical analysis should be conducted respectively according to gender. And there is no performance level over 4(good). 2. Dissatisfied quality attributes identified were convenience of dinning room and the managerial attitude of dissatisfaction in the female and male students. 3. Satisfied quality attributes identified were hygiene of food and dinning room and spoon and cup and drinking water table and distribution process, taste of food, variety of food in the female and male students. 4. The performance scores of lower price(less than 1500 won) lunch group was higher than higher price(more than 1800 won) lunch group in the female and male students.
In adolescents, sleep deprivation problem is getting worse, and increased caffeine consumption is considered to relieve the stress caused by sleep deprivation and academic burden. In this study, immediate neurologic effects of caffeine intake on adolescents were evaluated in three high school students using the ${\gamma}-aminobutyric$ acid (GABA)/creatine ratio on magnetic resonance spectroscopy (MRS). MEGA-PRESS MRS and TE 135 ms single voxel MRS were performed in the anterior cingulate cortex before and after drinking a cup of coffee, which contained 104 mg of caffeine. GABA and creatine were measured on LCModel 6.3, respectively. In all three students, GABA/creatine ratios were decreased after caffeine intake. The GABA/creatine ratios obtained before caffeine intake were decreased after caffeine intake in all the three adolescents. In this preliminary study, caffeine intake caused an immediate decrease in the GABA/creatine ratio in the brain and it may be related to the neurologic effects of caffeine on an adolescent's brain.
The purpose of this study was to investigate the dietary and the living habits of 606 university students located in the Chonnam area. The subjects included 290 freshmen (47.9%) and 316 undergraduate students (52.1%). This survey was conducted using a self-administered questionnaire. Most students (73.9%) skipped breakfast because of lack of time (65.8%) of the cases. Self-reported eating habits problems were eating irregular meal (52.8%), overeating (21.1%), unbalance diet (13.0%) and skipping meal (7.3%). The type of favorite snack was biscuit (31.8%) and cup Ramyon(31.8%). The weight control was higher in freshmen compared to undergraduate. The rates of smoking in freshmen and undergraduate were 21.0% and 26.6% respectively. The coffee intake and alcohol drinking frequency was higher in undergraduate compared to freshmen. The living habits of undergraduate students were undesirable. Therefore they should have a nutritional program to improve their food habits and the dietary behaviors for students' health. And nutritional education program should be organized practically and systematically.
