The purpose of this study was to assess the nutritional status of Korean workers with occupational exposure to lead by estimating nutrients and flood intakes so that we can eventually establish the dietary guidelines to be recommended for the lead workers. Food consumption survey was conducted by a 24-hr recall method with 135 lead workers and 50 non-exposed controls. Food intake data were convened into nutrients intake using computer aided nutritional analysis program. Mean daily energy intake and percentage of recommended daily allowance (RDA) of male lead workers were 2138 local and 87% of RDA while those of control were estimated as 2234 kcal and 91% of RDA. Mean daily intakes of nutrients of male lead workers were 78 g (111% RDA) for protein 502 mg (71% RDA) for calcium, 11.7 mg (97% RDA) for iron, 665 $\mu$g R.E (95% RDA) for vitamin A, 1.39 mg (108% RDA) for thiamin, 1.14 mg (77% RDA) for riboflavin, 15 mg N.E (92% RDA) for niacin and 66 mg (94% RDA) for vitamin C. On average, male lead workers showed significantly lower protein, calcium, iron, sodium, potassium, niacin and vitamin C intakes than control group while cholesterol intake of the male lead workers was significantly higher than that of control group. Intakes of calcium of male lead workers were Less than 75% RDA meaning that nutritional intake of calcium of male lead workers was insufficient and could possibly result in nutritional deficient. Some food groups such as milk, meat and fish must be strongly suggested to improve nutritional status of lead workers. Continuing nutrition monitoring and appropriate nutrition intervention for lead workers most be conducted further.
The purpose of present study was to assess the change of bone mineral density (BMD) by age and the dietary factors influcencing on BMD in Korean women in Taegu. The subjects were 242 healthy female in the range of 7-67 years old, and were divided into 4 age groups. BMD of lumbar of lumbar spine, femur(neck, ward's triangle, trochanter)and total body was measured by dual energy X-ray absorptionmetry. The nutrient intake measured by convenient method was similar to or more than the level of RDA. The significant relationship between nutrient intake and BMD was observed. Particularly for lumbar spine and total body in group 4 (50-60yr), such as energy, carbohyrate, protein, fat, Ca, animal Ca, meat Ca, Fe, thiamin and niacin were found significantly positive correlations. By analysis of multiple regression, significant relationships were shown between protein and lumbar spine and total body BMD in group 4, between ascorbic acid and total body BMD in group 2(17-34 yr). Energy expenditure showed better corrlations with BMD rather than nutrient intake. BMD was significantly greater in subjects consuming a mean dietary Ca intake more than 125% of RDA compared with less than 75% of RDA. In high Ca intake group ($\geq$125% of RDA), there were the significantly negative correlations between animal (meat) Ca and BMD in each bone of 7-9 years. The excessive intake of animal protein in this age group was found. And the correlations between BMD and past milk consumptin were significant in all skeletal sites of group 1(7-16 yr). This study confirms that the most effective way of preventing osteoporosis and the fractures is to maximize peak bone mass in early life and to minimize bone loss through the balanced adequate intake of Ca and other nutrients and regular physical activity.
In this study, nutrient intake status and energy expenditure were examined to investigate the nutritional status of the elderly in a rural community. The results obtained by questionaries, the 24 hour recall method, and time-diary were as follows: The elderly men surveyed were 73.8 years old, on the average. The elderly women surveyed were 73.5 years old, on the average. The proportion of the elderly with diseases was 51.9%. Most of the subjects (86.1%) had a regular meal pattern of consuming three meals a day. The average daily energy intake of the rural elderly was much lower than the Korean RDA. The dietary assessment data showed that each energy intake of the males and the females was 79.5% and 84.3% of the RDA, respectively. The dietary intake of Ca, Fe, niacin, thiamin, and riboflavin was lower than the Korean RDA, and that of P and Vitamin C was adequate. The Fe intake was significantly different with respect to age and sex (p < 0.05). Although, in both elderly men and elderly women it decreased with age, the elderly men's intake was lower than the elderly women's. The heights of the elderly men and the elderly women was 159.7 cm and 147.5 cm, respectively, and the weights were 60.0 kg and 52.2 kg, respectively, and the BMI was in the moderate range. Heights significantly decreased with age (p < 0.05). According to daily living schedules, leisure time (11.0 hour) was the longest, physiological time (9.6 hours) was next, and work time (3.4 hours) was the shortest. Energy expenditure significantly decreased with age (p < 0.01). Energy intake also decreased with aging. Energy balance (energy expenditure/energy intake) was 93.4% in elderly men and 104.0% in elderly women. Especially, in elderly men in the 65 to 74 age range, the energy balance was the lowest, and the nutrient intake was also much lower than that of elderly women.
This study was conducted to determine the nutritional characteristics of horsemeat and bone meal in comparison with those of beef and pork presented by Dietary Reference Intakes For Koreans. Longissimus muscle and large metacarpal bone samples were collected from 20 fattened Jeju horses. Muscle samples were subjected to proximate analysis, assays for fatty acid profile and minerals, and bone samples to mineral assays. Horsemeal had similar levels of protein (21.1 vs 21.0 or 21.1%) and lower levels of fat (6.0 vs 14.1 or 16.1%) compared with beef or pork, respectively. Horsemeat had much higher levels of palmitoleic (8.2 vs 4.4 or 3.3%) and $\alpha-linolenic$ (1.4 vs 0.1 or 0.6%) acids than beef or pork, respectively. Linoleic acid was much higher in horsemeat (11.1%) and pork (10.1%) than in beef (1.6%). PUFA:SFA and n-6:n-3 ratios in horsemeat were 0.29 and 10.2, respectively. There were no big differences in mineral contents between horsemeat, beef and pork. For daily recommended mineral intakes of male adults (Dietary Reference Intakes For Koreans), phosphorus, sodium, potassium, iron, zinc and copper can be provided up to 24, 2.5, 6.7, 21, 26 and 40%, respectively, by 100 g raw horsemeat, but calcium and manganese levels are negligible. Horse cannon bone had much higher mineral contents especially in calcium (10,193 mg/100 g), phosphorus (5,874 mg/100 g) and copper (0.79 mg/100 g). Thiamin, riboflavin, niacin and retinol contents were 0.20, 0.21, 1.65 mg/100 g and $30{\mu}g/100g$, respectively. But ascorbic acid and beta-carotene were not detected. Our data demonstrated that higher levels of palmitoleic and $\alpha-linolenic$ acid in horsemeat than in beef and pork may be beneficial for human health. Horsemeat and bone meal are a good source of some minerals and vitamins.
The purpose of this study is to investigate the relationship between of weight control attempts with concern about weight control. nutrition knowledge, eating behavior and nutrients Intake among high school girls in Seoul, Korea. A self-administered questionnaire was distributed to 355 subjects. The subjects were then divided into two groups, one with experience in attempting to control their weight, and one with no experience in attempting to control their weight. The mean averages of height, weight. obesity index (OI) and BMI of the subjects were 161.1cm, 53.1kg, -5.2% and 20.4, respectively. 49% of the subjects were experienced in attempting weight control. The majority of the group that had experience in weight control expressed dissatisfaction of with their self body image (66.7%), and was concerned about weight control (94.9%). This group also had more abnormal eating habits than the group that had no experience in weight control attempts, such as missing meals, eating irregularly, not eating a variety of foods and snacking. The mean averages of perceived knowledge (PK) and correct knowledge (CK) regarding nutrition on a 30 point scale were 23.6 (78.7% of total score) and 15.8 (52.7%), respectively. There were no significant differences of the PK's and the CK's between the two groups. Nutrients intakes of the two groups were not significantly different and the mean nutrient intakes revealed adequate consumption of energy. protein, Fe, Ca. thiamin. riboflavin, niacin, vitamin A and C. The higher the dissatisfaction of their self body image, PK score. and abnormal eating habits, the higher the level of concerns about of being overweight.
This study aimed to evaluate the necessity of updating current nutritional standards for school lunch programs in Korea. The study was performed both theoretically and practically considering the present physiques and nutrient intakes of school students. Theoretically, adequacy of types of nutrients and nutrient reference values were analyzed. Specifically, the adequacy of the types of nutrients were reviewed by applying the same selection procedures used in the 2007 revision of current standards in order to evaluate the necessity of updates. The nutrient reference values were compared with those in the U.S., Japan, and Taiwan in terms of setting year, basic data, and setting method. Practically, a focus group interview with six school nutrition teachers was conducted to investigate any operational difficulties in applying the current standards to school foodservices in Bucheon on October 1, 2015. As a result, nine types of nutrients were decided, which excluded protein and thiamin from the current ones. The nutrient reference values needed updating toward more adequate levels by reflecting more various and recent basic data considering daily nutrient intakes and the actual percentages of intakes from lunches of school students. The results showed that school nutrition teachers found it difficult to apply the current standards to school foodservices, especially as school level increased from elementary through middle to high schools mainly due to protein and calcium. Overall, the study results imply that the current nutritional standards for school lunch programs in Korea need updating to reflect the current physiques and actual nutrient intakes of school students.
시중에 유통 중인 영양보충용 제품의 수용성 비타민 $B_1$(thiamin), $B_2$(riboflavin), $B_3$(nicotinic acid and nicotine amide), $B_6$(pyridoxine), C(ascorbic acid)의 신속한 동시분석 방법을 확립하기 위하여 본 연구를 실시하였다. 영양보충용 제품은 정제, 연질캅셀, 분말, 액상의 4가지 제형에 대해 27종의 제품을 구입한 후, Ion-pair 분리기법을 사용하여 HPLC-UVD를 이용한 동시분석 방법을 검토하였다. 비타민 $B_1$, $B_2$, $B_3$, $B_6$, C의 HPLC에 의한 동시분석 조건을 검토한 결과, 이동상은 0.02% triethylamine, 17.5% 메탄올, $5{\mu}M$ sodium hexanesulfonic acid가 함유된 pH 3.5(acetic acid로 조절)의 수용액을 사용하였고, 용출시간은 다른 피크의 영향을 받지 않도록 30분으로 하였다. 수용성 비타민의 회수율은 96% 이상이었다. 본 연구에 의해 확립된 수용성 비타민의 동시분석 조건은 검량선의 직선성, 정밀성, 정확성, 기기적합성 등이 USP 및 ICH 기준에 적합하여 HPLC의 동시분석 방법으로 합당하였다. 수용성 비타민의 추출 용매는 제형에 따라 약간의 차이를 보이긴 했으나, 물이나 산성조건을 갖춘 HPLC의 이동상이 에탄올이나 메탄올보다 높은 추출 효율을 보였다. 초음파 추출기에 의한 추출 시간은 20분이 가장 적당하였다. 본 연구의 결과는 수용성 비타민의 신속한 추출 및 분석에 매우 효율적으로 이용될 것으로 기대된다.
This study was conducted with 20 female gymnasts and 23 age-matched controls to examine the relationship of diet, menstrual function and bone mineral density (BMD). The results obtained are summarized as follows : Energy intake of gymnasts was 968.9$\pm$421.4kcal, and energy expenditure was 2091.4$\pm$361kcal showing negative energy balance(-1,122.5$\pm$534.6kcal). The average intakes of calcium, iron, vitamin A, thiamin, riboflavin and niacin did not meet the Recommended Dietary Allowances for their age groups. Mean age at menarche in gymnasts is 15.8$\pm$1.2 years compared with 11.8$\pm$2.8 years in age-matched controls. The profile of estradiol, progesterone, and luteinizing hormone was lower than age-matched controls but not significant. Athletic amenorrheic gymnasts(n=12) have the menstrual irregularity(n=10) and amenorrhea(n=2). A number of variables as such nutritional deficiency in diet, negative energy blasnce and hypogonadotropic hormonal status were included. The bone mineral density (BMD) of female gymnasts were significantly higher than controls for the lumbar neck(p<0.001), trochanter(p<0.01), and Ward's triangle(p<0.001), but there were no significant differences for the lumbar spine and forearm. The lumbar spine BMD had a positive correlation with age and lean body weight. The femoral neck BMD was significantly associated with age, group and lean body mass. The trochanter BMD had significant relationship with group, body mass index, energy expenditure and follicular stimulating hormone. Ward's triangle BMD were related to body mass index and follicular stimulating hormone. The significant association was deterced between forearm BMD and age and lean body weight. The major finding of this investigation is that the BMD of gymnasts were higher than age-matched controls despite the fact that gymnasts as a group had inadequate dietary calcium and a higher propensity to have an interruption of their menstrual cycle. These data indicate that grymnsts involved in sports producing significant impact loading on the skeleton had greater femoral neck, trochanter and Ward's triangle bone density than age-matched controls.
Almost all Korean women in rural area breast feed their children for average 18 to 24 months. Since they breastfeed their children for long period the need for the lactating mothers to be nutritionally refurnished becomes evidently great. However the studies on the nutrient intake level of these mothers has been very scarce. We have studied the food and nutrient intake level of 93 lactating women randomly selected from rural areas of South Korea. Thirty one well trained and experienced surveyors conducted the dietary survey by the. combination method of precise weighing and interview for two 'consecutive days. Briefly stating the findings 1) The dietary pattern of the lactating women in rural Korea was not different from the ordinary Korean diet-i.e no conscientious effort to improve the quality of the diet was apparent. 2) Consequently over 90% of the total food intake was made up with the typical ricekimchi diet. 3) The quantity of the total food intake was greater than the national average sufficient intake of calorie was observed. 4) No milk or the milk products were consumed by the lactating women in rural Korea. 5) Average intake of protein was 88 grams. Only 5% of these was provided by the animal foods. 6) Mean daily intakes of niacin, thiamin and ascorbic acid exceeded the recommended allowances. But vitamin A intake was 1171 IU-about 33% of the RDA-and the riboflavin intake was 0.92 mg. which is about 54% of the recommended level for the lactators. 7) Average calcium intake was 490 mg.-41% of the RDA. The iron intake was adequate.
For the purpose of developing 'Web-Based Nutritional Education Program', this study analyzed nutritional problems of junior/senior high school students and set appropriate instructional goals for nutritional education program. Survey questionnaires were distributed from October 21,2002 to October 26, 2002 to a total of 564 students at three junior high schools and five senior high schools located in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. According to the survey results, three student groups (male and female students at junior high schools and female students at senior high schools) had lower than an ideal body weight. In case of their Basal Metabolic Indices (BMI), the female students and junior high school students showed a tendency to be underweight, while the other three student groups were within the normal range. The result of the survey showed that all four groups of students showed a deficiency in nutrient intake of calories, calcium and thiamin when compared with Korean RDA. Particularly, in the case of the female students at senior high schools, the deficiency of iron intake was a problem. The survey about food attitudes and food habits of the students showed that the senior high school students had more problems when compared with their junior high school counterparts (p < .001). Therefore, the instructional goals of nutritional education program were set as follows: 1) To improve the level of understanding and the perception of junior and senior high school students about the importance of a dietary lifestyle. 2) To change food attitudes and nutritional knowledge related to individual dietary 1ifestyle, so as to maintain good health through the enhancement of the students' physical activities. We found out that it is critically important to factor in the existing problems of food attitudes and food habits, as well as nutrient intake among junior and senor high school students when setting objectives for nutritional education programs.
