To compare Na intake and excretion in elementary school children in rural and urban areas of Korea, dietary intake record, urinary Na and K excretion and preference for salty taste were measured in 39 children in 4th grade in Seoul and 36 children in 4th and 5the grades in Kochang-gun)farming area) and their mothers. mean daily urinary Na excretions were 48.8mEq in children and 62.3mEq in mothers. Mothers showed significantly higher preference for salty taste compared to children(X2=16.09, p<0.01). Among the children, those in Seoul had higher preference for salty taste than those in Kochang-gun(X2=8.32, p<0.05). Since the children showed significantly lower preference for salty taste than mothers, more researches and efforts should be directed to prevent the shifts of the taste of the children in order to decrease their Na intake and the risk of hypertension later in life.

In oder to investigate the basic data for the standard of visiting nursing activities and educational program for Public Health Nurses in Health Center in Korea. the health record review carried out regard to visiting nursing services of 131 subjects with visiting nursing care. The results were as follows: 1. Rates of visiting nursing services offered by Public Health Nurse of Health Center(in decreasing order)were health education and disease management(98.5%), activity assess-ment(94.7%), counseling(90.8%), dietary care (61.1%), exercise treatment(60.3%), examination(58.8%), medication(48.9%), referral to hospital(32.8%, vaccination against flu and hepatitis(29.8%), support for welfare and administration(24.4%), position change(9.9%), connection to voluntary services(9.9%), wound dressing(7.6%) and referral for home health care nursing(3.1%). 2. The subjects consisted of 38.2% in male and 61.8% in female. 77.1% of the subjects had no job.
BACKGROUND/OBJECTIVES: The purpose of this study was to develop a dish-based semiquantitative food frequency questionnaire (FFQ) for Korean adolescents and evaluate its reproducibility and validity. SUBJECTS/METHODS: Based on 24-hour dietary recall data from the 4th Korean National Health and Nutrition Examination Survey (KNHANES), we developed a FFQ with 71 items. From a quota sample of 160 adolescents recruited using gender and age group as stratification variables, 153 participated in the complete data collection process. The FFQ was administered to each subject twice, at an interval of 3-4 weeks, to evaluate the test-retest reliability. The validity of the FFQ was assessed relative to 8-day food record data. RESULTS: The study findings demonstrated the FFQ's satisfactory reproducibility. Spearman correlation coefficients ranged from 0.64(for ${\beta}-carotene$) to 0.81(for protein). From cross-classification analyses, the proportion of subjects in the same intake quartile was highest for protein (65.4%) and lowest for vitamin A(47.1%). With regard to validity analysis, Spearman correlation coefficients ranged from 0.27(for vitamin A and fiber) to 0.90 (for energy). The proportions of subjects in the opposite categories between the first FFQ and the 8-day food record data were generally low within the range from 0.74% (for energy and carbohydrate) to 13.2% (for ${\beta}-carotene$). CONCLUSIONS: In conclusion, the dish-based semiquantitative FFQ developed in this study can be useful for grouping Korean adolescents according to major macro- and micronutrient intakes with reasonable reproducibility and validity.

Purpose: We analyzed the characteristics of women who gave birth at an obstetrician and those who received oriental medicine postpartum care, and investigated the level of their satisfaction to obtain fundamental data for Oriental-Western cooperative medicine treatment for postpartum care. Methods: The review was based on a 5-months' data, from August 1 through December 31, 2009. Information on age, labor record, level of education, and occupation of the patients who had received postpartum oriental-western cooperative medicine treatment was based on Electric Medical Record(EMR) of O O Oriental Medicine Hospital. The questionnaires were completed by the patients at the time of their discharge from the hospital. Results: The patients who were admitted to oriental medicine hospitals tended to be primiparae, and they were more likely to be younger women with higher education levels. The level of satisfaction on postpartum care program of oriental medicine hospitals was high. Conclusion: It is necessary to specialize the facilities, dietary formula, and staff training of oriental medicine hospitals through a survey of postpartum patients' demand and satisfaction level. In oriental-western cooperative medicine hospitals, it is needed to specialize the postpartum program for creating demand of premature delivery mothers.
The purpose of this study was to utilize it as useful basic data for improving oral health and for developing educational guidelines, by surveying the intake frequency in cariogenic food and the dietary intake status in detergent food through dietary life diary of some female undergraduates, and by researching into relationship between dietary intake factor and dental caries. It allowed dietary life diary for 5 days to be recorded targeting female undergraduates for the Dept. of Dental Hygiene, selected dietary life diary of 66 people without omission of record, and used it in this study. The following conclusions were obtained. 1. As a result of surveying the food intake status, it was indicated to be 12.82 for cariogenic food intake frequency, 256.36 for caries incidence available time and 8.32 for detergent food intake frequency. 2. As a result of surveying in order to examine relationship between cariogenic food intake frequency, detergent food intake frequency & cariogenic light-meal intake frequency and dental caries by dividing group with caries and group with non-caries, the group with caries was indicated to be a little higher than the group with non-caries. However, statistically significant difference wasn't indicated. 3. In the correlation between dietary intake status and dental caries, it was indicated that the more rise in cariogenic food intake frequency leads to the more rise in detergent food intake frequency and even in total light-meal intake frequency, but wasn't shown correlation with dental caries. In light of the above results, many limitations were indicated in finding and analyzing the dental caries incidence level and cause just with a method through surveying dietary intake. However, given the more in cariogenic food intake frequency and detergent food intake frequency, the possibility of dental caries incidence could be predicted.
Purpose: This study examined the effects of a mobile app-based program to reduce the dietary sugar intake according to the stages of the behavioral change in dietary sugar reduction in female college students. Methods: The program used in this study can monitor the dietary sugar intake after recording the dietary intake and provide education message for the reduction of dietary sugar intake. In an eight-week pre-post intervention study, 68 female college students were instructed to record all the food they consumed daily and received weekly education information. At pre-post intervention, the subjects were asked to answer the questionnaire about sugar-related nutrition knowledge, sugar-intake behavior, and sugar-intake frequency. For statistical analysis, ANOVA and a paired t-test were used for comparative analysis according Precontemplation (PC), Contemplation Preparation (C P), and A M (Action Maintenance) stage. Results: Significant differences were observed in the frequency of snacking, experience of nutrition education, and preference for sweetness according to the stages of behavior change in dietary sugar reduction. After finishing an intervention, the sugar-related nutrition knowledge score was increased significantly in the stages of Precontemplation (PC) and Contemplation Preparation (C P). The score of the sugar intake behavior increased significantly in all stages. The intake frequency of chocolate, muffins or cakes, and drinking yogurt decreased significantly in the PC stage and the intake frequency of biscuits, carbonated beverages, and fruit juice decreased significantly in the C P stage. Subjects in the PC and C P stages had an undesirable propensity in nutrition knowledge, sugar-intake behavior, and sugar-intake frequency compared to the A M stage, but this intervention improved significantly their nutrition knowledge, sugar-intake behavior, and sugar-intake frequency. Conclusion: This program can be an effective educational tool in the stages of PC and C P, and is expected to further increase the usability and sustainability of mobile application if supplemented appropriately to a health platform program.
The purpose of this study was to investigate nutrients or food factors related to cognitive function of elderly having Alzheimer's disease. In this study 38 subjects who were over 65 years old have participated in dementia clinic at A medical center. After they were diagnosed to Alzheimer's Disease (AD) through blood analysis, neuropsychological test, brain image and interview by medical specialist, we examined for their general information, anthropometry, blood pressure and dietary intakes. Dietary intakes were investigated using the 24-hour recall record. Energy intake was adequate and the energy composition of carbohydrate, protein and fat was 60.8 : 16.2 : 23.0, but dietary intakes of calcium, vitamin A and folate were less than 75% of the recommended intake levels for Koreans. The multiple regression analysis adjusted with age, sex and educational level showed that cognitive function was positively related to intakes of zinc, fishes and shellfishes, beans & nuts, sugars and fats, and negatively related to intakes of plant calcium and eggs. These results indicate that intakes of specific nutrients or food groups are associated with the specific domains of cognitive function in elderly with AD.

This study was conducted to identify the impact of adolescents' dietary behavior on their stress perception and provide basic data for education programs linked to customized nutrition education by gender. In this study, the 2019 Korea Youth Risk Behavior Web-based Survey was used, and a total of 57,303 middle·high school students were selected. Controlling adolescents' age, school record, economic status, residence type, subjective health and body type perception, and the dietary life variables designed with breakfast, fresh foods(fruit, vegetables, milk, water), processed foods(carbonate beverage, energy beverage, sweet beverage, fast food) were analyzed to have an effects on the stress recognition of adolescents. Breakfast had a negative(-) effect on stress perception in all genders of adolescents, and in the case of fresh food, water for boys and fruit for girls had the highest negative(-) effect on stress perception, and in the case of processed foods, energy drink was the dietary factor that had the highest positive(+) effect on adolescents' stress perception. These results suggest that it is necessary to develop a dietary education program tailored to the gender of adolescents to improve their stress perception, and to provide continuous guidance to form a healthy diet.
The prevalence of atopic dermatitis (AD) in school-age children has increased in industrialized countries. As diet is one of the main factors provoking AD, some studies have suggested that food additives in processed foods could function as pseudoallergens, which comprise the non-immunoglobulin E-mediated reaction. Eosinophil cationic protein (ECP) is an eosinophil granule protein released during allergic reactions to food allergens in patients with AD. Thus, serum ECP levels may be a useful indicator of ongoing inflammatory processes in patients with AD. The purpose of this study was to investigate the effect of consuming MSG in processed foods on serum ECP levels among children with AD. This study was performed with 13 patients with AD (age, 7-11 years) who had a normal range of total IgE levels (< 300 IU/ml). All participants ate normal diets during the first week. Then, six patients were allocated to a processed food-restricted group (PRDG) and seven patients were in a general diet group (GDG). During the second week, children in the PRDG and their parents were asked to avoid eating all processed foods. On the third week, children in the PRDG were allowed all foods, as were the children in the GDG throughout the 3-week period. The subjects were asked to complete a dietary record during the trial period. Children with AD who received the dietary restriction showed decreased consumption of MSG and decreased serum ECP levels and an improved SCORing score on the atopic dermatitis index (P < 0.05). No differences in serum ECP levels or MSG consumption were observed in the GDG. Serum total IgE levels were not changed in either group. In conclusion, a reduction in MSG intake by restricting processed food consumption may lead to a decrease in serum ECP levels in children with AD and improve AD symptoms.
To study the factors related to childhood obesity, 75 subjects were selected as an obese group and 75 subjects were selected as a control group according to their obesity index and BMI among the 583 children of 5th and 6th grade in elementary school in Seoul. For each subject, skinfold thickness was measured, information on the characteristics of family, nutrient intake and activity time of the subjects were obtained by questionnarie. The results were summarized as following: 1) Parents' obesity indices of obese group were significantly higher than those of control group(Father's Obesity Index : P<0.01, Mother's Obesity Index : P<0.05). 2) Questions about eating rate and behavior showed that subjects in obese group were significantly faster in their eating rate(p<0.05) and always more eager to eat food(p<0.001) compared to control group. 3) Dietary intake data showed that average daily intake of all the nutrients exceeded Korean recommended dietary allowances for the age group. In female children, fat intakes of obese group were significantly higher than control group(P<0.05). There was no such significant difference in male subjects. 4) Activity time record of subjects reveal that there was a trend for males to spend more time in moderate and high activity and less time in light activity compared to females. Subjects in obese group spent significantly more time for light activity(P<0.001) and significantly less time for moderate activity (P<0.001) compared to subjects in control group. The difference of activity was more pronounced in male subjects. 5) Correlation matrix of the variables showed that obesity index, BMI, and skinfold thickness of the subjects were highly correlated with each other. These indices were positively correlated to parent's obesity indices and the time spent for light activity, but negatively correlated to the time spent for moderate activity. Nutrient intakes were not significantly correlated to obesity indices. Form the results shown above, although both obese and control groups are from high socioeconomic class, obese children tended to come from family with fat parents. They eat fast and are always eager to eat. They tend to eat more fat but are very different from controls in nutrient intake. Obese children are significantly lower in their actinity compared to controls. So, for the prevention and treatment of childhood obesity, it seems to be more important to increase their activity levels.
