한국 외식산업 인적자원관리에 관한 연구 (제주도내 특1급 호텔외식사업체 중심으로) (A Study on Human Resource Management of Korea Foodservice Industry)

  • This study aims at suggesting an alternative plan on the efficient management of human resource of Hotel Foodservice Industry. The study breaks down into education/training, wage. welfare benefits. and human relations as is shown below; First Education/training should be conducted systematically in accordance with the contents and targets of the education & training program and directly be 1inked with personnel evaluation, so that the employees who faithfully devoted themselves to the program can get a fair reward. Second, job-evaluation-based wage system should be added flexibly to the seniority system to rationalize the current wage system and thereby resolve the problems inherent in the seniority system. Third, employees are required to participate in welfare benefit program and should be encouraged to use the program as a way of making good use of spare time. the introduction of education/training system is intended to recharge the spirits of employees and induce active life style, thereby contributing to the improvement of productivity. Fourth, Human Relations Program is needed to foster good human relations. Especially called for is the program which can lead to the improved productivity of the organization and provide incentives to human resource.

대학생들의 교육서비스품질이 교육만족도에 미치는 본인참여의 조절효과 - 외식.조리전공을 중심으로 - (The Moderating Effects of Self-participation Regarding the Impact of Education Service Quality on Student Satisfaction - Focusing on the Major of Food Service and Culinary Arts -)

  • 본 연구의 목적은 대학생들의 교육서비스품질이 교육만족도에 미치는 영향에서 본인참여가 매개효과와 조절효과를 규명함으로써 효율적인 학사관리를 위한 기초자료를 제공하고자 한다. 연구의 목적을 달성하기 위하여 부산지역 외식 조리 전공 2,4년제 대학생 310명을 대상으로 SPSS 18.0 통계 프로그램을 이용하여 빈도분석, 요인분석 상관관계분석을 하였다. 또한 본인참여가 매개효과가 있는지의 검정은 3단계 회귀분석을 실시하였고, 조절효과를 검정하기 위하여서는 위계적 회귀분석을 실시하였다. 분석결과는 교육서비스 품질과 교육만족도간에는 정의 상관관계가 있었으며, 본인참여와는 후생복지 서비스를 제외한 모든 변수에서 정의 상관관계를 나타내었다. 본인참여의 매개효과 분석은 교육서비스품질에 본인참여를 추가하여 교육만족도에 미치는 영향에서 p<0.01에서 통계적으로 유의한 결과를 나타내어서 본인참여는 순수 매개효과가 없는 것으로 나타났다. 본인참여의 조절효과는 $R^2$값이 0.537에서 0.569로 0.032증가하여 교육서비스품질에 본인참여가 교육만족도를 증가시키는 것으로 분석되어 조절효과가 있는 것으로 판단할 수 있다. 하지만 실습실환경${\times}$본인참여는 통계적으로 유의한 결과를 나타내지 않았기 때문에 부분적으로 조절효과가 있는 것으로 있는 것으로 분석되었다.

호텔 연회 주방 종사원의 식품위생 중요도 인식이 수행도에 미치는 영향 (The Influences of the Important Perception on Food Hygiene to Kitchen Employee's Performance in Hotel Banquet)

  • This study was carried out to find out the effect of food hygiene awareness on kitchen employees' performance in the banquet cuisine of five-star hotels in Seoul. 279 kitchen employees were asked to fill out the questionnaire, and the collected data were analyzed by SPSS package(version 11.0). First, results of analysis on food hygiene showed that there were four factors, each respectively named as, food security regulations, food storage, period of circulation of food, and food safekeeping. Second, after analyzing each item in whole according to each of the factors, the average degree of priority on food hygiene in general was 4.52. Results according to each of the elements showed that food security regulations(4.56) and period of circulation of food(4.55) were considered as a priority. After analyzing the difference between the degree of priority and degree of performance according to each of the factors, it was found out that the latter was significantly lower than the former in all factors. Third, after analyzing the difference of food hygiene priority in accordance with general characteristics, statistically significant difference was only shown in education(F=3.308, p<0.05) and class(F=4.418, p<0.01). Fourth, after analyzing the difference of food hygiene performance in accordance with general characteristics, the only significant difference was found in food security regulation of education(F=4.418, p<0.01) and food security regulation of class(F=3.859, p<0.01). Fifth, after analyzing the effect of cook's awareness of priority on food hygiene on the degree of performance, it was found out that the awareness of priority on food hygiene had a positive effect(+) on the degree of performance. Therefore, we can conclude that as kitchen employees recognize the priority on the food hygiene better, their degree of performance was higher.

강황분말을 첨가한 Sugar-snap cookies의 품질 특성 (Quality Characteristics of Sugar-snap Cookies by additions of Curcuma Longa L. Powder)

  • 본 연구는 강황분말의 첨가량(0, 3, 6, 9, 12, 15%)을 달리 한 sugar-snap cookies의 품질 특성과 관능특성을 평가한 것으로 강황분말을 첨가한 sugar-snap cookies 반죽의 pH는 6.58~7.32 범위였으며 sugar-snap cookies의 수분함량은 9.09~10.77% 사이의 범위였다. 퍼점성은 유의적으로 낮아지는 경향을 보였으며, 강황분말 첨가량이 증가할수록 쿠키의 명도는 감소하고 a값과 b 값은 유의적으로 증가하는 경향이 나타났다(p<0.05). 경도(hardness)는 강황분말 첨가량이 증가할수록 증가하였으며 관능검사는 맛, 색, 향, 조직감, 전체적인 기호도의 항목에서 강황분말 첨가향이 6%일 때 전반적으로 가장 높게 평가되어, 6%의 강황분말을 첨가한 sugar-snap cookies 제조가 적합하다고 사료된다.

어린이의 식품안전에 대한 관심도와 행동평가 (A Study on the Knowledge, Attitudes and Practices of Food Safety in the Elementary School Students)

  • This study was carried out to investigate the children's knowledge, attitudes and practices of food safety. A total of 355 data were collected from elementary school students. The concern of food safety was moderate in 5 point Likert scale and relatively high correlated with food safety knowledge(r=0.571) and education(r=0.534). The experience and knowledge of terminology on food safety were estimated. The level of food safety was classified into 5 groups and the consideration of food purchase was classified into 3 groups by factor analysis. A few children were aware of the food safety knowledge and could hardly understood English terminology. And the food safety practices were surveyed, and most of children checked with expiration dates and packaging conditions of food. Personal hygiene practice of children was significantly affected by gender, self hygiene evaluation and the knowledge level of food safety. Providing more food safety information affects personal hygiene and the practices of food purchase, so educational programs on food safety for children were required.

전문대학 조리관련 학과의 국가직무능력표준(NCS) 직업기초능력 기반 교육과정 개발을 위한 교육요구도 분석 (Educational Needs Assessment for the Development of Curriculum based on Key Competencies of National Competence Standard(NCS) for Department related Culinary Arts in a 2-Year College)

  • The purpose of this study was to assess priority of educational needs for the development of curriculum based on key competencies of NCS for departments related to culinary arts in a 2-year college. In order to achieve this objective, the survey has been distributed to cooks working in hotel restaurants or restaurant companies by social network service and a total of 360 responses were analyzed excluding 18 responses. The collected surveys were analysed by using paired t-test, Borich's needs analysis and the locus for focus analysis. The results of this study were as follows. First, the difference between the level of importance and present level about key competencies recognized by cooks working in restaurant company was statistically significant in 9 fields of key competencies excluding mathematical competence. The difference recognized by cooks working in hotel was statistically significant in all 10 fields of key competencies. Second, the results of Borich's needs assessment showed that the education needs of problem solving competence were the highest, followed by interpersonal, resource management, communication, information competence. Finally, considering both Borich's needs assessment and the locus for focus analysis, cooks working in hotel restaurants recognized that educational needs of communication, interpersonal, problem-solving, information competence were the top priority, and cooks working in restaurant companies recognized that educational needs of communication, interpersonal, skill, resource management competence were the top priority. Therefore, it is necessary to develop curriculum for culinary arts specialists based on key competence of top priority.

향토 음식 상품화 연구 - 보성 지역 중심으로 - (Studies on Commercialization of Korean Native Foods - Focused on Boseong Area -)

  • 보성 중심으로 향토 음식 상품화 주제로 연구하였으며, 연구의 목적은 보성의 향토 음식이 산재되어 있으나, 지방색을 살린 지역의 전통 조리법에 따른 코스 음식 개발로 지역 농특산물 부가가치를 향상시키는데 그 목적이 있다. 통계기법은 표본의 인구통계학적 특성, 농가 맛집 빈도 분석, 상차림 빈도 분석, 사업에 관한 빈도 분석을 하였다. 조사는 2009년 6월부터 8월 말까지 보성에 소재한 향토 음식 전문가 27명을 대상으로 실시되었다. 조사 방법은 응답자가 직접 기입하는 자기 기입형 설문지법을 이용하였다. 배포된 총 27부의 설문지 중에서 27부가 회수되었으며, 27매가 최종 분석에 사용되었다. 분석 결과 보성의 4계절 상차림 메뉴를 개발하였다.

Design of Educational Model for Convergence Minor in Culinary Art·Robot Technology Fields

  • 이 연구에서는 조리 전공과 로봇 기술을 융합함으로써 소프트웨어 분야가 아닌 조리 전공 학생의 코딩 능력을 기를 수 있는 융합부전공 교육 모델을 제안한다. 이 교육 모델은 4차산업혁명 기술 발전 추세를 따르는 것이고, 비전공 학생을 소프트웨어 전문가로 성장시키는 기능이 있어 그 의미가 크다고 할 수 있다. 그러나, 조리 전공과 로봇 기술은 기술적으로 거리가 있기 때문에 융합부전공 설계에 어려움이 있다. 이 어려움을 극복하기 위하여 로봇을 이용한 조리, 디저트 제작, 바리스터 작업, 자동 서빙 등의 교육 주제를 체계적으로 구성해서 조리 전공 학생들이 전공적 흥미를 유지할 수 있도록 연계부전공을 설계하였다. 또한, 실질적인 코딩 능력을 기를 수 있게 여러 로봇을 사용하는 실습 과정이 포함되도록 하였다. 기존의 다른 분야 융합부전공과 비교하여 평가하여보니, 20%정도 개선된 교육 효과가 있는 우수한 모델로서 판단된다.

요리직업전문학교의 재취업 교육 환경이 취업 만족도에 미치는 영향에 관한 연구 (A Study on the Influence of Educational Environment for Reemployment of Cooking Schools on Job Satisfaction)

  • 본 연구는 요리직업전문학교 재취업 교육을 받은 수강생들이 취업 후 요리직업전문학교의 교육 만족도가 취업 만족도에 영향 관계를 파악하기 위하여 요리직업전문학교를 수료한 후 취업한 243명 대상으로 만족도를 조사하였다. 이를 확인하기 위하여 SPSS 통계프로그램 14.0을 활용하여 빈도분석, 요인 및 신뢰도분석, t-test, ANOVA 분석과 다중회귀분석을 실시하였다. 분석결과, 교육환경 만족도는 교육 시간 만족, 교육 시설 만족, 교육 내용 만족으로 3개의 요인으로 분석되었고, 취업만족도는 급여 만족도와 업무 수행 만족도 요인으로 분석되었다. 가설을 검정하기 위한 차이검정에서 남녀와 자격증 유무에서 교육 시간과 교육 내용에서 통계적으로 유의하였고, 교육 시설에서는 유의하지 않는 것으로 분석되었다. 분산분석에서는 교육 만족도에서 부분적으로 가설이 채택되었고, 교육 만족도와 취업 만족도간의 회귀분석에서는 모두 통계적으로 유의한 결과가 나와서 가설이 채택되었다.

조리교육학원의 교육환경이 교육만족도와 행동의도에 미치는 영향에 관한 연구: 교육기간 조절효과 (The Influence of the Educational Environment of the Cooking Institute on the Educational Satisfaction and the Behavior Intention: Moderating Effect of Educational Period)

  • The data collection and questionnaire survey were conducted from July 1, 2016, to August 30, 2016, and the final analysis was conducted with 273 copies. The collected data were analyzed using SPSS (V 23.0) and AMOS (V 21.0) programs. In order to identify the characteristics of the respondents, the frequency analysis was performed, and the reliability analysis and confirmatory factor analysis were performed for each measurement item. The conceptual reliability (CR) and standard variance extraction (AVE) values were calculated to verify the validity. Correlation analysis was conducted to measure the associations among the derived factors. For the hypothesis test, a structural equation modeling was used to test the jointness and organic causality of the whole model. In addition, an alternative model with a nested relationship with the basic model was set up to test the adjustment effect of the learner's educational environment on the educational satisfaction and behavioral intention. The purpose of the study was to examine the effect of educational environment on the educational satisfaction and behavioral intention of students at a cooking education institute in Busan. The implication of this study is that the operators of educational institutions should recognize the human factors as important means of marketing for the activation of cooking education and select instructors by applying more systematic and objective criteria when hiring instructors. Also, consideration should be given to support programs such as training programs and incentives to develop instructor's abilities. In addition, the positive educational outcomes of students may have a positive impact on financial performance, such as livelihood of other students and sales of educational institutions.
