Cultural and nutritional conditions for Lyophyllum decastes and its chemical composition in a synthetic medium were investigated. The optimal temperature and pH for the production of mycelium were $25^{\circ}C$ and pH 7.5. The mycelium yield was the highest on 15th day. Among the carbon sources, glucose and CMC were the best for the production of mycelium and their optimal concentrations were 3 and 6%, respectively. As an organic nitrogen, proteose peptone was the best and $(NH_4)_2HPO_4$ as an inorganic nitrogen was good. The optimal concentration of proteose peptone and $(NH_4)_2HPO_4$ were 2 and 0.2%, respectively. The optimal ratio of glucose to proteose peptone for production of mycelium was 10 : 1. Also, the optimal concentrations of $K_2HPO_4$ and $MgSO_4$ were 0.2 and 0.06%, respectively and that of $CaCl_2$ was 0.1%. Among the bioextracts, yeast extract was the most effective and its optimal concentration was 1.5%. In chemical components of the mycelium of Lyophyllum decastes, total sugar, crude protein and crude fat were 34.80, 28.35 and 2.50%, respectively. Its ash was 7.57% and crude fiber 11.99%.

A total of 120 pigs were used to investigate the effects of yucca extracts on the growth performance, nutrient digestibility and excretion of growing pigs fed different levels of dietary protein. Pigs were allotted into $2{\times}3$ factorial design by the supplementation with yucca extract (YE, 0 and 120 mg/kg) and 3 levels of dietary protein (16, 18, 20%). During the whole experimental period (18 to 52 kg body weight), there were no significant differences in ADG, ADFI or F/G by YE addition or different protein levels among treatments (p>0.05). Overall, although addition of YE to the diet and elevation of protein level showed better ADG, there were no significant differences in growth performance among treatments. Pigs fed diets with YE showed significantly (p<0.05) higher dry matter (DM), crude ash (CA) and crude protein (CP) digestibility than did the others during the growing period. Concerning the levels of dietary protein, only the CP digestibility was significantly higher in pigs fed high protein diet. Pig fed the low protein diet without YE showed a significantly low CP digestibility (p<0.05). No significant differences were found in crude fat (CF), calcium (Ca) and phosphorus (P) digestibilities regardless of YE supplementation or dietary protein levels. Pigs fed YE supplemented diets showed significantly (p<0.05) higher amino acid digestibility. Also, high CP level diets showed a higher amino acid digestibility than low CP diets (p<0.05). DM and N excretion did not show any significant differences among treatments, there was a slightly lower excretion with increase in dietary protein level. Supplementation with YE significantly decreased the DM and N excretion. Interaction (YE$\times$protein) was found in P excretion. Pigs fed a medium protein diet without YE showed the lowest P excretion during the growing period. The NH3-N content in the feces tended to be increased by the increased dietary protein levels and with YE supplementation. During the whole experimental period, the cost for YE supplementation was similar to value of the improvements of performance obtained. The cost of feeding high level protein was significantly higher than that of medium level protein by 10% and low level protein by 9% (p<0.05). It could be concluded that the effects of dietary protein level and yucca extract on growth performance, nutrient digestibility and excretion might play a role to some extent in growing pigs from the aspect of pollution control.
This study examined the general components and biological activities of fruit from different cultivars of Prunus mume. The average moisture content of fruit ranged from 89.94-90.62%. The levels of crude protein, crude fat and crude fiber were not significantly different in the different cultivars. In an antimicrobial activity test, methanol extracts showed the highest activity and extracts from the Chunmae and Baekgaha cultivars had higherantimicrobial activity than other cultivars. The extract of fruit. However, there was no antimicrobial activity against the lactic acid- producing bacteria and yeasts, even at a concentration of 1.5 mg/mL or higher. Antimicrobial substances in methanol extracts of the fruit maintained their activity after heating at $100^{\circ}C$ for 30 minutes and were also unaffected by changes in pH. The antioxidant activities of extracts isolated with different solvents were: methanol > ethylacetate > water> ether> hexane. Antioxidant activity was not significantly different at different harvest times. The antioxidant index of the methanol extract was also the highest in electron donating activity.
In order to improve wine quality, the selection of yeast strain and of additives in the manufacture of Bokbunja (Rubus coreanus Miq.) wine was investigated. The chemical composition of the edible portions of Bokbunja fruits was 86.5% moisture, 0.2% crude protein, 0.9% crude fat, 6.6% crude fiber, 0.5% ash and $10^{\circ}Brix$ sugar, and was 2.99% fructose, 2.53% glucose and 0.07% sucrose in fruit extract. The predominant organic acids in the fruit were citric acid (14.57 mg/mL) and malic acid (2.24 mg/mL) with smaller amounts of shikimic, pyroglutamic and oxalic acid. During fermentation, citric and malic acid levels decreased, while formic and acetic acid were released. Saccharomyces cerevisiae KCCM 12224 (Sc-24) was more favorable for alcoholic fermentation of Bokbunja and the addition of 200 ppm of potassium metabisulphite to must was more efficient than other $SO_2$ sources with a higher overall acceptability score. Sc-24 increased alcohol production from 9.8 to 14.8% in a sugar concentration dependent manner $(18-28^{\circ}Brix)$. The color value of early stage Bokbunja must was improved by supplementing with Japanese apricot extract, but this did not influence the color value of Bokbunja wine after primary fermentation. The astringent taste of Bokbunja wine was reduced by removing the seed from the fruit. Sugar solution (50%, w/v) was used instead of sugar power to prevent the possibility of undissolved sugar due to insufficient mixing. This substitution did not influence sensory evaluation.

An experiment was conducted to investigate the effects of environmentally friendly agents (yucca extract, mineral feed additive, acidifier, nonspecific immunostimulating anionic alkali solution) on the growth performance, nutrient digestibility, nutrient excretion and carcass characteristics in growing-finishing pigs. A total of 125 pigs were allotted into 5 treatments with 5 replications, 5 pigs per pen in a completely randomized block design. Dietary treatments consisted of 1) control: basal diet, 2) YE: basal diet+120 mg/kg of yucca extract, 3) MFA: basal diet+50 mg/kg of mineral feed additive, 4) NIS: basal diet+3% of NIS (nonspecific immunostimulating anionic alkali solution), and 5) Acidifier: basal diet+0.5% of acidifier (organic acid complex). During the growing phase of the feeding trial, There were no significant differences in average daily feed intake (ADFI) and feed conversion ratio (F/G) among treatments, but the Acidifier group showed higher average daily gain (ADG) than the MFA group (p<0.05). During the finishing phase, there were no significant differences in growth performance among treatments, however YE supplementation increased ADG and F/G by 3.1 and 6.15%, respectively, when compared to control group. Proximate nutrients (dry matter, DM; crude protein, CP; crude ash, CA; crude fat, CF; gross energy, GE; calcium, Ca and phosphorus, P) digestibility did not show any significant differences among the treatments. And there were no significant differences in DM, N and P excretion as well. The supplementation of environmentally friendly agents tended to increase carcass weight compared to control group. Pigs fed MFA showed significantly heavier (p<0.05) carcass weight than those fed control or Acidifier diets. Addition of these agents except for NIS to diet for growing-finishing pigs caused a similar feed cost/kg weight gain than control group. Therefore, present study suggested that the optimum environmentally friendly agent would be yucca extracts, considering the effects on growth performance, nutrient digestibility, nutrient excretion, carcass characteristics and feed cost in growing-finishing pigs.

The nutritional compositions and antioxidative activities of Korean commercial blueberry and raspberry were investigated. The proximate compositions were 10.47% and 22.67% in moisture, 2.66% and 2.64% in crude protein, 2.04% and 1.67% in crude fat, 81.36% and 70.19% in nitrogen free extracts, 1.48% and 0.85% in crude fiber, and 1.99% and 1.98% in ash of blueberry and raspberry, respectively. Total phenolics content were higher in blueberry (9.028 mg/g) than in raspberry (5.340 mg/g). Major elements of blueberry and raspberry were Ca (451.34 and 97.48 mg/100 g), K (355.40 and 215.20 mg/100 g), P (321.10 and 294.04 mg/100 g), and Na (137.58 and 137.67 mg/100 g). The total amino acid contents of blueberry and raspberry were 2,011.44 mg /100 g and 2,098.82 mg/100 g, respectively. Amino acid were mainly composed of glutamic acid, aspartic acid and leucine. The DPPH and ABTS radical scavenging activities of the 80% methanol extract from blueberry and raspberry were 88.67% and 62.77%, 76.34% and 30.53% at a concentration of 5 mg/mL. The 80% methanol extract from blueberry and raspberry showed considerable antioxidative activity against reducing power in dose-dependent manner. Antioxidative activities using $\beta$-carotene-linoleate and FTC method were twice higher in blueberry than raspberry.

Nutritional composition, contents of phenolic compounds, and antioxidative activities of small black soybean were investigated. Proximate composition of the soybean was crude fat, crude protein, carbohydrate, and crude ash at 15.9, 34.7, 38.5, and 3.7%, respectively. Potassium was the predominant mineral, followed by phosphorus, calcium, and magnesium. Glucose and galactose were the major sugars. Twelve different kinds of fatty acids were identified in whole soybean, dehulled soybean, and soybean hull. The 75% methanol and ethyl acetate extract fractions from the soybean hull contained total phenolic compounds at 4.64 and 13.53 g/100 g, respectively. The methanol extract of soybean hull showed strongest antioxidative activity among samples tested. Ethyl acetate fraction of the soybean hull exhibited DPPH radical scavenging activity at level similar to those of ${\alpha}-tocopherol$ and BHT. Phenolic compounds were the major biological components in the soybean hull. These results suggest that small black soybean can be used as a new material for functional food.

Quality of noodle processed by addition of hot water extract powder from roasted safflower seed (RSHE) was investigated. Proximate compositions of RSHE was 4.70% of moisture, 32.63% of crude Protein, 6.52% of crude fat, 15.62% of crude ash and 40.53% of carbohydrate. There was no significant difference (p<0.05) in hunter's color value between noodles with and without RSHE. The ‘L’vague of noodle processed by addition of powder from roasted safflower seed (RSP) was very low and significantly different (p<0.05) from other products. With the increase of RSHE addition, the volume and weight of cooked noodles increased (R$^2$=0.9688). The breaking force of dry noodle decreased with the increase of RSHE addition. In the mastication test of cooked noodles, max. weight, strength and hardness increased with the increase of RSHE addition. Dry noodle with 0.3% and 0.5% RSHE recorded high rank, but that with RSP recorded the lowest rank in score of appearance and color by sensory evaluation. The noodle processed with 0.3∼0.5% RSHE showed high sensory quality.

This study investigated the nutritional properties and biological activities of Ganoderma lucidum (GL). The round type of GL contained higher carbohydrate content, while the Nokgak type of GL contained higher crude ash, crude fat, and crude protein content. The most abundant amino acid, fatty acid, mineral, and soluble vitamin observed were valine (round type: 11.90 mg/g and Nokgak type: 17.18 mg/g), linoleic acid (round type: 47.56% and Nokgak type: 75.68%), potassium (round type: 116.50 mg/100 g and Nokgak type: 184.36 mg/100 g), and vitamin B3 (round type: 1.78 mg/100 g and Nokgak type: 1.81 mg/100 g), respectively. In addition, the ${\beta}$-glucan content were 34.15 g/100 g (round type) and 30.07 g/100 g (Nokgak type). The GL 70% ethanol extract at $40^{\circ}C$ showed higher radical scavenging as well as carbohydrate and lipid enzyme inhibition than other conditions. At 1 mg/mL of treatment with the 70% ethanol extract at $40^{\circ}C$ of round type GL, the DPPH, ABTS, hydroxyl radical scavenging, and ${\alpha}$-glucosidase, ${\alpha}$-amylase, and pancreatic lipase inhibition activities obtained were approximately 92.85, 99.74, 58.09, 89.68, 44.68, and 67.56%, respectively.

Jeju native sorghum was grown at six spot seeding rates (1, 2, 3, 4, 5 and 6) from April 3 to september 6, 2000 in Jeju island to determine influence of number of seeds per hill in dibbling on agronomic characters, forage yield and qualities. Days to heading was increased as number of seeds per hill was increased. Plant height with three seeds per hill (206.7 cm) was the longest, while with six seeds per hill (175.2 cm) was the shortest. Fresh forage, dry matter and crude protein yield and total digestible nutrient (TDN) were the greatest at the three seeds per hill (48.1, 10.1, 0.9, 5.1 MT/ha). Crude protein, crude fat and nitrogen-tree extract (NFE) increased with the number of seeds per hill increased but crude fiber and crude ash decreased.
