Change of physicochemical properties, phytochemical contents and biological activities during the vinegar fermentation of Elaeagnus multiflora fruit (보리수 열매 식초 발효 중 이화학적 특성, phytochemical 함량 및 생리활성 변화)

  • This study evaluated the changes of physiochemical properties, phytochemical contents, and biological activities during the vinegar fermentation of Elaeagnus multiflora fruit. The contents of pH and reducing sugar decreased from 3.55 and 6.88 mg/mL 3.34 and 2.13 mg/mL, respectively. However the acidity increased from 0.48% to 5.48% during the vinegar fermentation. The alcohol contents increased up to a maximum value of 6.6% at 20 days, and it then decreased at the end fermentation days (2.0%). The viable numbers of acetic acid bacteria and yeasts increased from 4.32 log CFU/mL and 3.23 log CFU/mL at 10 days to 5.4 log CFU/mL and 5.5 log CFU/mL during the spontaneous fermentation, respectively. The major organic acids were acetic acid (38.84 mg/mL), lactic acid (4.92 mg/mL), and malic acid (1.51 mg/mL). The soluble phenolic and flavonoid contents increased from 0.79 mg/mL and 0.12 mg/mL of initial fermentation day to 1.22 mg/mL and 0.14 mg/mL during the spontaneous fermentation. Content of epicatechin gallate decreased from $168.1{\mu}g/mL$ at 10 days to $115.97{\mu}g/mL$. However the content of gallic acid increased from $18.52{\mu}g/mL$ to $95.07{\mu}g/mL$ during fermentation. After 60 days of the fermentation, the antioxidant and digestive enzyme inhibitory activities were 71.35% (DPPH), 79.27% (ABTS), 68.72% (${\cdot}OH$), 85.42% (${\alpha}$-glucosidase), 52.12% (${\alpha}$-amylase), and 53.66% (pancreatic lipase), respectively.

Distillation and Quality Characteristics of Medicinal Herb Wines (약용주의 증류와 품질특성)

  • Korean general medicinal herbs-sasam, gilkyung, jakyak, danggwi, hwangki, and chunkung-were added In the normal brewing procedure as a raw material or in the distilling procedure as a packing material. The distillates from the former procedure and those from the latter procedure were compared in quality and distillation properties. As distillation proceeded, pH of the medicinal herb wine distillate and the control(not added herbs) distillates were decreased, whereas that of the herb packing distillate was increased slowely of $0.05{\sim}0.97$ during $1{\sim}4$ fractions and decreased remarkably of $0.92{\sim}0.98$ afterward. Average pH was the highest of 5.70 in jakyak and lowest of 4.37 In gilkyung. Absorbances of the herb Packing distillate were decreased rapidly of $0.60{\sim}1.59$ in the $1{\sim}4$ fractions but slowely of $0.19{\sim}0.54$ in the next fractions. During distillation both fractional alcohol concentration of the distillates and distillation rate were decreased. Their values were decreased more slowly than the control. Distillation rates of medicinal herb wine distillate were varied by medicinal herb varieties and alcohol concentration of fermented wine. Danggwi and control showed the highest average distillation rate as $0.12\;m{\ell}/sec$ and gilkyung the lowest value as $0.073\;m{\ell}/sec$. Maximum concentration of index component, paeoniflorin of jakyak was observed as 293 mg% in the 5th fraction of herb packing distillate and decrusin of danggwi as 3514 mg% In the 1st fraction of herb packing distillate. The extraction rate was 41.3% for paeoniflorin and 20.5% for decrusin. From sensory evaluation, the highest overall Qualify was observed in the medicinal herb wine distillate of hwangki added wine, the next in those of danggwi and jakyak added wine.

  • A series of experiments was conducted to study the behavior of the phosphorus added to the soils having the high phorphorus fixing capacity derived from volcanic ash in Cheju Island. Soil samples were taken from different depths of 0-10, 10-30, and 30-50cm in six citrus orchards where heavy application of phosphate fertilizer has been practised.   • This study was carried out to investigate effects of iron content on the quality of soy sauce, bean paste and red pepper paste, and to elucidate the origin of iron and change of the contents during production processes. For the first step, the iron contents in commercial soy sauce and changes of the contents during brewing process were determined. The results obtained were as follows. 1, Iron contents of raw materials were 108 ppm in soy bean, 133ppm in defatted soy bean, 79 ppm in wheat, 5 ppm in sodium chloride, 58 ppm in seed koji, 300-2000 ppm in spore of Aspergillus oryzae, 240 ppm in wheat gluten, 20 ppm in sodium carbonate (above figures were of dry weight basis), 6 ppm in hydrochloric acid, 18 ppm in caramel and 0.3ppm in brewing water respectively. 2, Iron contents in koji were 200-240 ppm (as dry weight basis) and increased, more or less, in progress of koji-making period. 3. Iron contents in the mashes during fermentation were 40 rpm after 1 month, 43-47 ppm after 3 months and 49-62ppm after 6 months. 4. In chemical soy sauce, the iron content was 159 ppm after hydrolysis of wheat gluten with hydrochloric acid, and 184 ppm after neutralization. 5. Higher iron contents were detected both in fermented and chemical soy sauce when the concentration of total nitrogen increased, but the levels were higher in chemical soy sauce than in fermented one at the same concentration of total nitrogen. 6. In the case of fermented soy sauce, the iron content in the filtrate was decreased by press-filtration, but no significant change was found between before and after heat-sterilization. 7. Iron contents in commercial soy sauce were varied with the producers, however, the average value was 62.7 ppm as calculated as 1.0 percent of total nitrogen. And the average level of iron in home-made soy sauce produced by conventional method was 37.68 ppm.

Policy Suggestions Regarding to Soil Quality Levels in Korea from a Comparison Study of the United States, the United Kingdom, Germany, the Netherlands, and Denmark's Soil Quality Policies (토양질 기준에 관한 주요 외국 정책의 비교분석을 통한 우리나라의 토양질 기준 개념설정과 적용)

  • Policies regarding to soil quality of the United States, the United Kingdom, the Netherlands, Germany, and Demark were analyzed to suggest Korean policy for improving soil quality concept and it's implementation. All countries met four criteria: I) Soil quality levels of contaminants are indebt to concept of contaminant risk to recipients (human and ecosystem); ii) Any soil quality value can't be a magic number to determine whether a site is contaminated or not. To determine risk of sites, risk assessment of the sites should be followed; iii) Concentrations of contaminants of sites are not always significantly certain to risk of human and ecosystem of the sites; and iv) Soil quality levels are adopted based on land uses and plans. Considering our rooms to improve policies and analysis of the other country reports on their legislations about soil quality levels, our policy implementation could be approached from these directions: i) Our concept for soil quality levels needs to develop in scientific and rational. ii) Soil quality levels and risk assessment should be implemented as determining tools of site contamination in parallel, and iii) Soil quality levels depending on land uses and plans should be developed in debt with rational and scientific concept of risk. Increasing efficacy of Korea policy regarding the soil quality levels would be in dept to applying concepts of SCL (Soil Contamination Level) and SRL (Soil Regulatory Level) developed, implementing soil quality levels and risk assessment of contaminated sites in conjunction, and classifying three distinctions of land uses based on sensitiveness of recipients (human and ecosystem) to contaminants in soil in this research.

Assessment of Silicate Fetilizers Application Affecting Soil Properties in Paddy Field (논토양에서 규산질비료 시용이 토양 환경에 미치는 영향)

  • Application of silicate fertilizers is typically practiced with several year's interval to amend soil quality and improve rice productivity at the paddy field in Korea. Most of silicate fertilizers applied in Korea is slag-originated silicate fertilizer. Some water soluble silicate fertilizers are manufactured and commercially available. The objective of this study was to assess changes of soil chemical properties in paddy field by applying slag-originated silicate fertilizer and water soluble silicate fertilizer. Field experiment was conducted on a silt loam paddy soil, where four levels of each silicate fertilizer were applied in soil at the rate of 0, 1, 2, 4 times of the recommended levels. Application of slag-originated silicate fertilizer increased soil pH, while no significant pH increase occurred with the treatment of water soluble silicate fertilizers. Soil pH increased 0.4~0.5 with the 1 time of recommended level of slag-originated silicate fertilizer. Available $SiO_2$ contents also significantly increased with the treatment of slag-originated silicate fertilizer at 15 and 35 days after treatment, while decreased after 60 days after treatment possibly due to rice uptake. Exchangeable Ca, Mg and available phosphate contents in soil increased with application of slag-originated silicate fertilizer, while a little increases for them were shown with the application of soluble silicate fertilizer. $SiO_2$/N ratios in rice straw for 1 time of recommended level of slag-originated silicate fertilizer was 11.5, while that of control was 8.4, which was much lower value. Throughout this study, soil application of slag-originated silicate fertilizer enhanced soil chemical properties, while water soluble silicate fertilizer application in soil needs further study resulting in a little effects on soil property.

Ginsenosides from the fruits of Panax ginseng and their cytotoxic effects on human cancer cell lines (인삼(Panax ginseng) 열매로부터 분리한 ginsenoside의 동정 및 암세포독성 효과)

  • The fruits of Panax ginseng were extracted with 80% aqueous MeOH and the concentrates were partitioned into EtOAc, n-BuOH, and $H_2O$ fractions. The repeated $SiO_2$ and octadecyl $SiO_2$ column chromatographies for the EtOAc fraction led to isolation of five ginsenosides. The chemical structures of these compounds were determined as ginsenoside F1 (1), ginsenoside F2 (2), ginsenoside F3 (3), ginsenoside Ia (4), notoginsenoside Fe (5) based on spectroscopic analyses including nuclear magnetic resonance, MS, and infrared. Compounds 2-5 were isolated for the first time from the fruits of P. ginseng in this study. All isolated compounds were evaluated for cytotoxic activities against human cancer cell lines such as HCT-116, SK-OV-3, human cervix adenocarcinoma (HeLa), HepG2, and SK-MEL-5. Among them compounds 2, 4, and 5 showed significant cytotoxicity on cancer cells. Compound 2 exhibited cytotoxicity on SK-MEL-5, HepG2, and HeLa cells with $IC_{50}$ values of 82.8, 86.8, and $78.3{\mu}M$, respectively. Compound 4 showed cytotoxicity on HCT-116, SK-MEL-5, SK-OV-3, HepG2, and HeLa cells with $IC_{50}$ values of 24.5, 25.4, 26.3, 22.0, and $24.9{\mu}M$, respectively. Compound 5 did on SK-MEL-5 cell with $IC_{50}$ value of $81.7{\mu}M$. The cytotoxicity of ginsenoside 2, 4, and 5 isolated from the fruits of Panax ginseng showed strong inhibition effect against on cancer cells, all of which have a glucopyranosyl moiety on C-3.

The in vitro antioxidant, α-amylase and α-glucosidase inhibitory ability of different parts of passion fruit (Passiflora edulis) extract (패션프루트 부위별 추출물의 in vitro 항산화와 α-amylase 및 α-glucosidase 저해 활성)

  • The purpose of this study is to investigate the various functionalities of the peels, pulps, and seeds of passion fruit. Proximate composition, mineral contents, phenolic acid contents, total polyphenols, total flavonoids, 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activities, 2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities, reducing power, α-glucosidase, and α-amylase inhibitory activities were measured for each part of passion fruit. Proximate composition analysis of the passion fruit indicated that moisture content contained (4.78-8.20%), carbohydrate (68.33-73.23%), protein (8.78-13.63%), fat (1.19-11.60%), and ash (1.51-8.80%). K, Ca, Na and Fe were the predominant mineral in the peels. P and Mg were the predominant mineral in the pulps. All the antioxidant activities (total polyphenols, total flavonoids, DPPH radical scavenging, ABTS radical scavenging, and reducing power) showed high results in the seeds. α-Glucosidase and α-amylase inhibitory activities IC50 were in the peels (5.59 and 63.16 mg/mL), in the pulps (3.80 and 31.90 mg/mL), and in the seeds (0.06 and 1.02 mg/mL). These results indicated that the pulps, peels, and seeds of passion fruit have value as natural antioxidants with the high quality functional components.

Status and Improvement of Metropolitan Government Urban Agriculture Ordinances for the Enhancement of Multifunctionality in Urban Agriculture (도시농업의 다원적 기능 활성화를 위한 광역지방자치단체 도시농업 조례 현황 및 개선 방향)

  • This study analyzed the status of urban agricultural regulation of metropolitan governments on supporting multi-dimensional values to suggest a direction for improving urban agriculture regulations. Moreover, a Delphi survey was conducted to derive ways to identify improvement opportunities for functions that showed relatively insufficient support for urban agricultural regulations. As a result of the study, 12 out of 17 metropolitan governments and 116 of 226 municipalities have enacted urban agricultural regulations. However, the enactment of urban agricultural regulations has generally declined since 2011. Analysis of the contents of the urban agricultural regulations showed that they focused on matters relating to the creation and expansion of the foundation of urban agriculture. Among the multi-dimensional values of urban agricultural regulations, the foundation for supporting the securing of green spaces and utilizing food production functions was most widely available. On the other hand, the foundation for support of resource recycling, healing and health, social welfare, economic imbalance mitigation, and job creation functions has been shown to be relatively insufficient. A Delphi survey conducted to determine potential measures to improve urban agricultural regulations to support these functions found that 17 of the 18 ordinance improvement measures were valid. Therefore, to revitalize the multi-dimensional values of urban agriculture, it is first necessary to enact new ordinances. Also, to revitalize the multi-dimensional values of urban agriculture evenly, it is necessary to revise the ordinances to include resource recycling, healing and health, social welfare, mitigation of economic imbalances, and job creation functions. In this process, the development of urban agriculture technology, legal review of various urban farming spaces, and fostering of industries related to urban agriculture are necessary. Above all, steady interest in the multi-dimensional values of urban agriculture and the efforts of local governments to foster urban agriculture must be supported.

Topographical Chemical Properties of Paddy Soils in Gyeongnam Province (경남지역 논토양 지형과 화학성의 관계)

  • Sustainable agriculture requires reliable information on the spatial distribution of the soil chemical properties for effective management of paddy fields. In order to provide adequate soil nutritional information for environmental-friendly agriculture, we investigated the soil chemical properties for 260 paddy soils sampled in Gyeongnam Province from 1999 to 2011 by four years of interval. Soil chemical properties of pH, organic matter, available phosphate and silicate, exchangeable potassium, calcium, and magnesium contents were analyzed. The pH value, organic matter, available phosphate and silicate, and exchangeable calcium and magnesium in paddy soils were significantly elevated in 2011 compared to 1999. The excessive levels of organic matter and available phosphate in paddy soils were detected in 2011. The soil available phosphate was highest in mountain foot-slope (p<0.05) and the soil organic matter was highest in diluvial terrace (p<0.05). It revealed that the soil available phosphate was the responsible factor for the differentiation of soil chemical properties by the topography in paddy soils.
