Antimicrobial Efficacy of Fermented Dark Vinegar from Unpolished Rice (현미 발효 흑초의 항균활성)

  • Vinegar is a widely used acidic seasoning and can be manufactured using various methods and bases, including cereals, wheat, and fruits. Most studies on vinegar have been conducted to evaluate its antioxidant activity. In the present study, fermented dark vinegar (FDV) produced from unpolished rice was examined for its antimicrobial activity, biochemical content, including the amounts of sugar, total soluble sugar, organic acid, and free amino acids, and pH and physiological activity. The antimicrobial efficiency of FDV was assessed using the paper disc-agar diffusion method. FDV exhibited strong antimicrobial activity against the pathogenic bacteria and yeast strains that were tested. In fact, the activity of FDV was shown to be higher than that of the commercial antibiotics carbenicillin (50 µg/ml) and tetracycline (50 µg/ml) against Staphylococcus aureus, Escherichia coli, Listeria monocytogenes, Pseudomonas aeruginosa, Salmonella typhimurium, Yersinia enterocolitica, and Lodderomyces elongisporus. The antioxidant activity of FDV and ascorbic acid was evaluated. Using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging method, we found that FDV has the highest activity of the antioxidants. After spreading FDV onto tryptic soy broth and yeast extract-peptone-dextrose agar media, the microbial strains were isolated and characterized through physiological and biochemical analysis. Based on 16S ribosomal DNA sequence analysis, the isolated microorganisms exhibited a close similarity to Acetobacter papayae, Acetobacter pasteurianus, and Acetobacter peroxidans.

  • The present study was undertaken to assess the efficacy of sapota powder (SP) as natural preservatives and its better utilization in food processing with the incorporation of various levels of SP (2, 4, and 6%) by replacing lean meat. Based on the sensory attributes, pork patties with 4% incorporation of SP was found optimum and selected for further storage studies with control under aerobic and modified atmosphere packaging at refrigeration temperature ($4{\pm}1^{\circ}C$) for 42 days for assessing its antioxidant and antimicrobial efficiency. During entire storage period, indicators of lipid oxidative parameters such as thiobarbituric acid reactive substances (TBARS), free fatty acids (FFA) and peroxide value (PV) followed an increasing trend for control as well as treated products; however, treated product showed a significantly (p<0.05) lower value than control. A significantly lower (p<0.05) microbial count in treated patties than control was noted during entire storage. The sensory attributes are better retained in treated product as compared to control and even on $42^{nd}$ day, overall acceptability of treated patties was found to fall in moderately acceptable category (5.95 in aerobic packets and 5.91 in modified atmosphere packets). Therefore SP has potential to enhance antioxidant and antimicrobial properties of pork patties during storage.

Biocontrol of Late Blight (Phytophthora capsici) Disease and Growth Promotion of Pepper by Burkholderia cepacia MPC-7

  • A chitinolytic bacterial strain having strong antifungal activity was isolated and identified as Burkholderia cepacia MPC-7 based on 16S rRNA gene analysis. MPC-7 solubilized insoluble phosphorous in hydroxyapatite agar media. It produced gluconic acid and 2-keto-gluconic acid related to the decrease in pH of broth culture. The antagonist produced benzoic acid (BA) and phenylacetic acid (PA). The authentic compounds, BA and PA, showed a broad spectrum of antimicrobial activity against yeast, several bacterial and fungal pathogens in vitro. To demonstrate the biocontrol efficiency of MPC-7 on late blight disease caused by Phyto-phthora capsici, pepper plants in pot trials were treated with modified medium only (M), M plus zoospore inoculation (MP), MPC-7 cultured broth (B) and B plus zoospore inoculation (BP). With the sudden increase in root mortality, plants in MP wilted as early as five days after pathogen inoculation. However, plant in BP did not show any symptom of wilting until five days. Root mortality in BP was markedly reduced for as much as 50%. Plants in B had higher dry weight, P concentration in root, and larger leaf area compared to those in M and MP. These results suggested that B. cepacia MPC-7 should be considered as a candidate for the biological fertilizer as well as antimicrobial agent for pepper plants.

  • This study focuses on the role of nanotechnology in the field of food industries. Bioactive components with antimicrobial activity against food pathogens are encapsulated into nanoparticles (NPs) to improve and extend their efficiency in food preservation. However, these NPs should be biocompatible and nontoxic for humans. Advancement in this field has resulted in the development of NPs for food packaging in some industries. The most commonly used group of NPs in the food industry is metal oxide. As metal oxide NPs such as zinc oxide and titanium dioxide exhibit antimicrobial activity in food materials, the NPs can be used for food preservation with enhanced functional properties. The application and effects of nanotechnology in correlation with the nutritional and sensory properties of foods were briefly discussed with a few insights into safety regulations on nano-based food formulation and preservation.

A simple and effective method for addition silicone impression disinfection

  • PURPOSE. Although dental impression disinfection is determinant to reduce the cross-infection risk, some studies have shown that, in real practice, the disinfection procedures vary considerably. Thus, the aim of this study was to evaluate the antimicrobial effectiveness and the impact on the dimensional stability of addition silicone' impressions of water wash and the most clinically used disinfection solutions: 3% hydrogen peroxide, commercial disinfectant MD520 (Durr) and 1% and 5.25% sodium hypochlorite. MATERIALS AND METHODS. For this investigation, dental impressions were taken on 16 volunteer dental students. The antimicrobial effectiveness of each procedure was evaluated by pour plate method. The dimensional stability was evaluated using a standardized stainless-steel model, according to ANSI/ADA nº19 specification. RESULTS. The study results showed that water wash does not alter the dimensional stability of addition silicone impressions but doesn't reduce the microbial load of the material (P>.05). On the other hand, addition silicone disinfection by immersion with 3% hydrogen peroxide, MD520 (Durr), or sodium hypochlorite at 1% and 5.25% does not alter the dimensional stability significantly but reduces > 99.9% of the microbial load of the impressions (P<.001). CONCLUSION. Addition silicone impressions should always be disinfected after water wash in order to reduce effectively the cross-infection risk. All disinfectants tested showed high antimicrobial efficiency without significant changes in three-dimensional shape of impressions. Hydrogen peroxide and sodium hypochlorite are of particular importance because are easily accessible in dental setting. The less explored hydrogen peroxide could be a valuable alternative for silicone impressions disinfection.

A Development of Polyester-based Non-woven Fabric Filter for Air Purifier Treated with Self-actuated Photocatalyst

  • We studied the photocatalytic functionality such as deodorant, antibacterial, fine dust collection efficiency of polyester-based non-woven fabric filter treated with self-actuated photocatalyst. According to UV/visible result, the UV-visible peak of visible-light responsive photocatalyst was found to be red shift at 420 nm sensitive in the visible light region. The deodorizing performance was shown to be reduced more than 80% even without dark conditions. Fine dust particles collection efficiency was shown to be excellent at the size of not only $2.5{\mu}m{\sim}10.0{\mu}m$ but also less than $2.5{\mu}m$. Also antimicrobial and antifungus was shown to be reduced more than 99.9%.

Eco-friendly Dyeing using Houttuynia cordata Extract: Dyeability and Functionality of Wool Fabrics (어성초 추출색소를 이용한 친환경 염색: 양모직물의 염색성과 기능성을 중심으로)

  • The objective was to study the efficiency of Houttuynia cordata extract colorants as eco-friendly and functional dye for wool fabrics. Effects of dyeing conditions and mordanting on dye uptake, color change, and colorfastness were investigated. Also, antimicrobial activity and deodorization performance were evaluated. The Houttuynia cordata colorants showed good affinity to wool fabrics and produced YR Munsell color. The optimum condition of dyeing was 2.0% of colorants concentration(o.w.b.) at 100℃ for 60 minutes under pH 5.3. Regardless of the mordant type and mordanting method, mordants improved dye uptake and the increase in dye uptake by Fe mordant was higher than that of Al mordant. Al post-mordanting and Fe mordanting changed the color of dyed fabrics with Y Munsell color. The colorfastness of un-mordanted and Al post-mordanted fabrics were excellent above grade 4. Bacteria reduction rate(Staphylococcus aureus) of wool fabrics dyed with Houttuynia cordata colorants was excellent at 98.2%. Also, the deodorization was good at 81%. The results show Houttuynia cordata colorants can be used as a functional natural dye for wool fabrics.

Antimicrobial Drug Release Scaffolds of Natural and Synthetic Biodegradable Polymers

  • A series of biodegradable polymeric scaffolds was prepared by using a combination of natural (collagen) and synthetic (poly(caprolactone)) (PCL) polymers in various compositions. These scaffolds were soft, spongy, porous and transparent in nature and were characterized by thermogravimetric analysis (TGA) and Fourier transform infrared (FT-IR) spectroscopy. The entrapment efficiency and drug release activity of the scaffolds were analyzed using penicillin and tetracycline as antimicrobial drugs. The drug release activity of the scaffolds with various combinations of collagen and PCL were studied by measuring the optical density in a spectrophotometer at the following time intervals: 1,4, 24, 48 and 60 h. These scaffolds showed better and continuous drug release for up to 60 h. Even after such a long duration, a portion of the drug remained entrapped in the scaffolds, indicating that they can be utilized for wound healing applications.

A Study on Function of Natural Dyeing with Cotton Fabrics Using Jeju scoria (제주 송이를 이용한 천연염색 면직물의 기능성 연구)

  • For the application of Jeju scoria scattered around the island as a natural dye, cotton fabrics were dyed with the dye and their properties were measured including dyeability, colorfastness, antibacterial activity, deodorization efficiency, ultraviolet protection, and far-infrared emission. The dyed cotton fabrics were in yellowish red and optimal dyeing conditions were obtained with a colorant concentration of 25%(o.w.b) at a temperature of $80^{\circ}C$ for the dyeing time of 120 minutes. The ratings of colorfastness to light, rubbing, perspiration, and washing were 8, 5, 5, and 4~5 respectively. After 15 wash cycles, colorfastness remained as much as 4~5 rating. The cotton fabric dyed with Jeju scoria demonstrated excellent antimicrobial activity and deodorization efficiency of 99.9% and 93.9% respectively. Ultraviolet protection factor was 50+. Far-infrared emission rate and far-infrared emission intensity were 90% and 362(W/$m^2{\cdot}{\mu}m$) respectively. The Jeju scoria can be introduced as a new colorant for the natural dyeing of cotton.

Synthesis of Phosphoric Polymer Coating Solution with Antimicrobial Activity and Flame Retardant Efficiency (항균성과 난연성을 함유하고 있는 인계고분자 코팅용액의 합성)

  • A polymeric coating solution based on poly(acryloyl diphosphoric acid)(poly(ADP)) was prepared via a radical polymerization of acryloyl diphosphoric acid using ammonium persulfate (APS) as an initiator in water at 70 $^{\circ}C$. The prepared polymeric coating solution exhibited significant antibacterial activity against salmonella typhimurium, pseudomonas aeruginosa, escherichia coli, and staphylococcus aureus. It also exhibited good antifungal activity against Asperigillus niger and good antiviral activity against the influenza (H1N1) virus. Additionally, it exhibited good flame retardant efficiency after applying it as a coating to a cotton fabric.
