Isoflavonoid Contents, Antibacterial Activities, and Physiological Activities of Cheonggukjang Made from Sword Bean (작두콩 첨가 청국장의 Isoflavonoids 함량과 항균력 및 생리활성)

  • This research aimed to examine the isoflavonoid contents, antibacterial activities, and physiological activities of Cheonggukjang made from sword bean (CS). The effects of adding sword bean were compared with those of raw materials (RM), steamed materials (SM), and traditional Cheonggukjang (TC). In the case of the antibacterial activity on Gram-positive bacteria, the result of CS in ethanol extract was the highest in Bacillus cereus, and the result of water extract was the highest in Staphylococcus aureus. However, in the case of Gram-negative bacteria, Salmonella Typhimurium was the highest in all the extraction. Antioxidant activity and total flavonoid contents were present in the order of TC

Study on the Change in Physical and Functional Properties of Paper by the Addition of Chitosan (키토산 섬유를 첨가한 종이의 물성 및 기능성의 변화에 관한 연구)

  • This study was carried out to develop new application field and obtain the basic data of mixed paper with wood pulp and chitosan fiber for producing functional paper. Two types of wood pulp, such as SwBKP and HwBKP, were mixed with chitosan fiber. Physical and optical properties, water vapor absorption, air permeability, antibacterial activity and ash were measured. And the surface morphology of manufactured paper was observed using SEM. The results are as follows. It was revealed that density, breaking length, burst index, tear index, folding endurance and brightness were reduced but water vapor absorption and air permeability were on the rise in the structural view of SwBKP according to increasing the chitosan fiber ratio. Those HwBKP added chitosan fiber were great not only in the strength but also water vapor absorption and air permeability except for brightness. The water vapor absorption was lower and the air permeability was higher in the HwBKP added various chitosan fiber ratios than those with no chitosan fiber. It is estimated that these properties were related with various mixed rate of chitosan fiber. Particularly, air permeability was strongly dependent on the mixed rate of chitosan fiber. The chitosan fiber has superior antibacterial property, comparing with wood fiber. Adding chitosan fiber to the wood pulp was found to have an excellent antibacterial activity, more than 90%. The ashes were determined within 0.5%. Special bonds between chitosan fiber and wood pulp was observed by SEM and it means that the chitosan fiber were combined equally in the interior of wood pulp. In conclusion, mixing wood pulp with chitosan fiber can not only improves the quality of paper but also extend the usage of paper as a functional paper by using inherent property of chitosan. After all, production of functional paper added chitosan fiber is expected for new valuable industry of paper.

Quality Characteristics and Storage Improvement of Seasoned Pork Added with Phlomis umbrosa Turcz. Extracts (속단추출물의 첨가로 인한 양념 돈육의 품질특성 및 저장성 향상)

  • Antioxidant and antibacterial activities of Phlomis umbrosa Turcz. (PU) ethanol extracts were investigated in vitro. Total polyphenols, flavonoids and FRAP values of PU extracts were $57.32{\pm}2.30{\mu}g$/mg, $21.44{\pm}2.52{\mu}g$/mg and 0.26 mmol $Fe^{2+}$/g, respectively. The PU extracts also showed strong DPPH scavenging activity and antibacterial effects against Staphylococcus aureus. In addition, the DPPH scavenging effect of the seasoning sauces was increased by the addition of PU extracts. This study was also conducted to evaluate the quality characteristics of seasoned pork treated with PU extracts during storage at $4^{\circ}C$ for 21 days. Seasoned pork was produced containing 0, 0.5, and 1% PU extracts and 0.1% BHA. The total bacteria and TBARS values of seasoned pork added with PU were decreased compared to the control, whereas coliform bacteria were not detected after longer storage periods. With regards to sensory evaluation, seasoned pork treated with 0.5% PU had higher juiciness, flavor and overall acceptability compared to seasoned fork. These results suggest the possibility of manufacturing seasoned pork with PU extracts for the improvement of shelf-life and quality.

Quantitative Analysis of Aucklandia Lappa Using Costunolide and Dehydrocostuslactone (Costunolide와 Dehydrocostuslactone을 이용한 목향의 함량분석)

  • Aucklandia lappa Decne (Compositae) has been used for treatment of abdominal pain, vomiting, diarrhea, chronic inflammation, and antibacterial effect. The quality of these herbs has been affected by many factors such as collection time, place, temperature, cultivation environment and manufacturing process. We used costunolide and dehydrocostuslactone as marker compounds for quality evaluation of rhizome of Aucklandia lappa. 66 samples of Aucklandia lappa were collected from those habitats in Korea and China. The developed HPLC-DAD method was applied to investigate for quality control of Aucklandia lappa samples. The average contents of the costunolide and dehydrocostuslactone were 2.3895% and 0.9258%, respectively. The principal component analysis (PCA) exhibited that classification of Aucklandia lappa according to origin not separated. Results of this study may be satisfactory applied to determination of content criteria of Aucklandia lappa.

PMFs Analysis of Krachaidum Products by HPLC and GC

  • Polymethoxyflavones (PMFs) are a group of polymethoxylated bioactive flavones with diverse biological activities, including anticancer, anti-inflammatory, antibacterial, and antiviral activities. PMFs are found from various plants such as orange, tangerine, and krachaidum. To establish the simple quantitative analytical methods for PMFs, chromatographic analysis was applied to the selected krachaidum foods because krachaidum contains diverse PMFs compared to other PMF-containing foods. Krachaidum is the rhizome of Kaempferia parviflora, and many commercial krachaidum products, such as tea, juice and wine, are commercially available and consumed as health functional foods in Asian countries. Apart from the claimed health promoting benefits, reliable quality assurance and legal guideline for the registration of these products are not available yet. Twelve PMFs were analyzed from the commercial krachaidum foods by GC-FID and HPLC-DAD. No single chromatographic method could not analyze 12 PMFs simultaneously. HPLC-DAD method was found more sensitive to detect PMFs. Based on our analysis data, we proposed 5,7-dimethoxyflaone and 5,7,4'-trimethoxyflavone as index components for the food products.

Quality Characteristics of Dried Type Sodium-Reduced Bibimbap using Dandelion Complex Powder (민들레복합분말을 첨가한 건식형 저염 비빔밥의 품질특성)

  • We investigated the antioxidant, physicochemical, and sensory characteristics of dried type sodium-reduced Bibimbap using dandelion complex powder (DCP). DCP is known to add moisture to the skin and relieve symptoms of atopic dermatitis. The sodium content of the standard sample was 1,110.87 mg per serving. The sodium was significantly reduced by 30%, resulting in 762.62 mg of sodium for the reduced sodium group (p<0.05). The ash contents of the standard sample group with DCP showed the highest value (3.17%) in all samples and was affected by minerals of DCP (p<0.05). The total flavonoid contents and ABTS radical scavenging activity, indicators of antioxidant, anticancer and antibacterial activities, showed significantly high activities with addition of DCP (p<0.05). In the sensory results, bulgogi and savory flavor of the samples with DCP showed significantly higher values, and samples with DCP received the highest scores for after-taste. All samples were confirmed to be microbiologically safe according to the food code applied to food manufacturers. Pathogenic microorganisms tests were either negative or not detected in all samples.

Quality Characteristics of Songgi Garaetteok (송기가래떡의 품질특성)

  • We conducted comparative analysis on the quality characteristics five different classes of the Songgi (Pine inner bark) Garaetteok with different pine inner bark 0%, 1%, 2%, 3%, and 4%, respectively. The experiment results show that color values of the Songgi Garaetteok pine inner bark powder, the L value highest in control group 72.91 while a value was highest in 4% group. As a result of measurements for three days, the moist content for control group and 1% group 48.89 and 51.65, respectively two hours production. On day 1, the moist content of all samples peaked. Harness peaked in control group 954.13, followed by 4% group. The DPPH radical scavenging ability of pine inner bark powder and the Songgi Garaetteok containing 4% pine inner bark highest at 11.61% and 7.14%, respectively. In evaluating antibiosis, the Songgi Garaetteok containing 4% pine inner bark the highest level of antibacterial activity. In sensory evaluation, the Songgi Garaetteok containing 2% pine inner bark received the highest score color, flavor, texture, taste and overall preference. The experiment that the Songgi Garaetteok pine inner bark powder has better antioxidative effect regular Songgi Garaetteok. Therefore, the Songgi Garaetteok 2% pine inner bark powder the most desirable of the Songgi Garaetteok containing pine inner bark.

Processing of Onion Vinegar Beverage containing Omija Extract and Its Antimicrobial and Antioxidative Activity (오미자 첨가 양파초음료 제조 및 항균·항산화 활성)

  • Onion vinegar, which has an undesirable flavor and taste formed through alcohol and acetic acid fermentation, possesses additives that can improve sensory quality. Thus, the objective of this study was to present an optimized blending ratio using response surface methods for an onion vinegar beverage by adding Omija extracts. This study was performed to formulate an Omija-onion vinegar beverage (OOVB) and investigate its antioxidant properties and antimicrobiological effects. The experimental design was conducted using an optimal mixture model of response surface methodology which generated eighteen experimental trials with overall acceptance as the responses. According to the statistical analyses, OOVB demonstrated a ratio containing onion vinegar, water, brown sugar, apple extracts and Omija extracts of 10, 72.3, 4.4, 12.2 and 1.1 (weight ratio), respectively. The OOVB revealed desirable nutrition values (phenolics compounds 19.3 mg/100 g, total flavonoids 3.1 mg/100 g, quercetin 1.9 mg/100). The OOVB displayed antibacterial effects in Gram negative Enterobacter aerogenes, Escherichia coli, Salmonella typhimurium and Gram positive Staphylococcus aureus. The findings revealed that OOVB was 18% in DPPH radical inhibitionand 11% in superoxide dismutase-like activity thus, OOVB has nutritional value and good quality as well as potential biological activities for functional beverages.

Effect of Marination with Black Currant Juice on the Formation of Biogenic Amines in Pork Belly during Refrigerated Storage

  • The effect of marination with black currant juice (BCJ) was investigated for their effects on meat quality and content of biogenic amines (BAs) [putrescine (PUT), cadaverine (CAD), histamine (HIM), tyramine (TYM), and spermidine (SPD)] in pork belly during storage at 9℃. BCJ was shown to have antibacterial activities against Escherichia coli and Pseudomonas aeruginosa. Additionally, the pH of pork belly marinated with BCJ (PBB) was significantly lower than that of raw pork belly (RPB) during storage. No significant difference in microorganisms between RPB and PBB was observed at day 0 of storage. However, at days 5 and 10 of storage, volatile basic nitrogen (VBN) was significantly decreased in PBB compared to RPB, and PBB also demonstrated significantly lower numbers of bacteria associated with spoilage (Enterobacteriaceae and Pseudomonas spp.) at these time-points. PBB was also associated with significantly reduced formation of BAs (PUT, CAD, TYM, and total BAs) compared to RPB at days 5 and 10 of storage. These results indicated that BCJ can be regarded as a natural additive for improving meat quality by preventing increased pH, VBN, bacterial spoilage, and inhibiting BAs formation during refrigerated storage.

Antimicrobial Activity of Prunus mume and Schizandra chinenis H-20 Extracts and Their Effects on Quality of Functional Kochujang (매실과 오미자 추출물의 항균성과 기능성 고추장의 제조)

  • Prunus mume and Schizandra chinenis H-20 were found to have antibacterial properties against B. subtilis, S. aureus, E. coli KCCM 11591, and P. aeruginosa KCTC 1750. Prunus mume and S. chinenis H-20 showed clear zones of $6{\sim}10\;mm$ for the microbes used, while jujube, Lycii fructus and pine needle showed clear zones of $0.1{\sim}1\;mm$. In the experiment on DNA action, S. chinenis H-20 completely inhibited the growth of B. subtilis, S. aureus, and E. coli KCCM 11591 in the beginning of cultivation and even when added 5 hr after initiating cultivation. Moreover, as the microbes of about $l0^8$ cfu were shown by this test to have strong antibacterial power, they will most likely have an effect in vivo. Prunus mume and S. chinenis H-20 extracts were added to kochujang and fermented at $30^{\circ}C$ for 35 days. Prunus mume kochujang showed a sensory score of 4.29 (somewhat good), suggesting that Prunus mume can he utilized as a functional food ingredient.
