Synthesis of Vitamin $D_3$ and It′s Analogues in Dorsal Skin of 8 Week-Old Broiler Chicks Irradiated by UV Light (자외선 조사에 의한 8주령 브로일러 병아리 등 피부에서의 비타민 $D_3$ 및 그의 유사물질 합성)

  • This study was conducted to investigate the synthesis of previtamin D$_3$(PreD$_3$), lumisterol$_3$($L_3$) and vitamin $D_3$ ($D_3$) in dorsal skin of 8 week-old broiler chicks irradiated by UV light. The Hubbard line day-old broiler chicks were fed with vitamin D-depleted ration (or 3 weeks and with medium broiler diet for 5 weeks. The 3$\times$3cm area of dorsal skin was defeathered one day before the experiment. The 310nm UV light was utilized to irradiate the dorsal skin, which was separated into epidermis and dermis after irradiation. The irradiated epidermis was extracted with 60% ethyl acetate in n-hexane and PreD$_3$, $L_3$, D$_3$ and 7-dehydrocholesterol (7-DHC) were analyzed by HPLC. When UV light was treated for 0, 90 or 150min. the L$_3$ content in the separated epidermis was 219, 298 or 248ng/$\textrm{cm}^2$, respectively. The irradiation for 90min produced 79ng/$\textrm{cm}^2$ of L$_3$, and the synthesizing rate was 0.9ng/$\textrm{cm}^2$/min. The PreD$_3$ content was 23, 33 or 12ng/$\textrm{cm}^2$ when exposed for 0, 60 or 150min The 10ng/$\textrm{cm}^2$ of PreD$_3$ was produced for 60min. The D$_3$ was generated by 27ng/$\textrm{cm}^2$ when exposed for 90min. The 7-DHC contents were decreased gradually from initial 123 to 35ng/$\textrm{cm}^2$ when exposed for 150 min, showing the rate of disappearance as 0.6ng/$\textrm{cm}^2$/min.

The Association of Metabolic Syndrome and Vitamin D in Korean Menopausal Women: Korea National Health and Nutrition Survey, 2010~2012 (한국 폐경기 여성에서 대사증후군과 비타민 D의 관련성: 2010~2012 국민건강영양조사에 근거하여)

  • The aim of this study was to assess the association of metabolic syndrome and Vitamin D in Korean adults. The study subjects were Korean menopausal woman (n=4,340) who participated in the Korea National Health and Nutrition Examination Survey 2010~2012. After adjusting for factors such as age, body mass index, total cholesterol, smoking, and regular exercise, the mean 25(OH)D levels ($M{\pm}SE$) decreased with increasing metabolic syndrome score (MSS) (MSS 0, $18.18{\pm}0.29ng/Ml$; MSS 1, $18.09{\pm}0.21ng/mL$; MSS 2, $18.07{\pm}0.19ng/mL$; MSS 3, $18.04{\pm}0.21ng/mL$; MSS ${\geq}4$, $17.27{\pm}0.23ng/mL$), and the mean 25(OH)D level ($M{\pm}SE$) for metabolic syndrome ($17.66{\pm}0.16ng/mL$) decreased in comparison to non-metabolic syndrome ($18.11{\pm}0.14ng/mL$). In conclusion, our results suggest that an increase in metabolic syndrome score or metabolic syndrome are inversely associated with the vitamin D levels.

Effects of UV-B Irradiation on the Physicochemical Characteristics of Oyster Mushrooms (Pleurotus ostreatus) (자외선 B파 조사가 느타리버섯의 이화학적 특성에 미치는 영향)

  • The aim of this study was to investigate the effects of UV-B irradiation on the physicochemical characteristics of oyster mushrooms (Pleurotus ostreatus). Vitamin $D_2$ concentration, weight loss rate, color value, total plate counts and consumer acceptability of irradiated oyster mushrooms were measured. UV-B irradiation at doses of $0\;kj/m^2$, $20\;kj/m^2$ and $40\;kj/m^2$, significantly increased the vitamin $D_2$ concentrations from $0\;{\mu}g/g$ dry weight (control) to $85.87\;{\mu}g/g$ dw and $116.28\;{\mu}g/g$ dw, respectively, at 5% level. Rate of weight loss was also significantly increased from 0% (control) to 2.21% and 4.31% at $20\;kj/m^2$ and $40\;kj/m^2$ UV-B irradiation, respectively, at 5% level. Although there was no significant difference between the UV-B irradiated groups, total plate counts were significantly decreased from $1.0{\times}10^5$ (control) to $9.4{\times}10^3$ and $1.9{\times}10^3$at $20\;kj/m^2$ and $40\;kj/m^2$ of UV-B irradiation, respectively, at 5% level. There was no significant difference in L values and consumer acceptability between the groups. Therefore, UV-B irradiated oyster mushrooms could be used as health promoting ingredients for many foods.

  • Intramolecular Diels-Alder cycloadditions of 2-pyrone-3-carboxylates with trans-vinyl silaketal groups tethered via a chiral, non-racemic 1,3-butanediol auxiliary proceeded in unexpected stepwise cycloadditions through ionic intermediates to provide cis-disubstituted bicylolactones. The ratio of two isomers, exo and endo, was 5 to 1, and each isomer was found to be diastereomerically pure (>99% de). Their relative and absolute stereochemistries were determined by $^1H$ NMR spectroscopy and confirmed by X-ray crystallography of minor, endo-adduct 9. The major exo-adduct was successfully transformed to (-)-2-butyl substituted A-ring phophine oxide 16, a key element for the synthesis of 2-butyl vitamin D3.

Iron Deficiency Anemia and Vitamin D Deficiency in Breastfed Infants (모유수유아에서의 철결핍 빈혈과 비타민 D 결핍)

  • Purpose: Iron deficiency anemia (IDA) is one of the most common nutritional problems, despite a recent improvement of nutritional status of infants and children. We assessed the risk factors for IDA in infants and vitamin D deficiency and IDA by nutrition analysis. Methods: We analyzed blood tests and evaluated 103 children with IDA and 123 children without IDA, 6-36 months of age, who were cared for in our hospital between March 2006 and July 2010. Nutritional analysis using Canpro was performed among breastfed infants 6~12 months of age who had been diagnosed with IDA and had detailed diet histories. Results: Breastfed infants accounted for 87.4% and 40.7% of the IDA and comparison groups, respectively. The IDA and comparison groups began weaning food at 6.4${\pm}$1.8 and 5.9${\pm}$1.3 months, respectively. In the IDA and comparison groups, 46.4% and 53.5% began to adapt to weaning food within 4 weeks, respectively. The most common reason for hospital care of the IDA group was respiratory symptoms constituting 36.2%. Only 18.6% visited the hospital for palloror anemia. The Canpro analysis, performed on 11 infants with IDA, showed that iron and vitamin D were <40% and 30% of recommended intakes, respectively. Conclusion: Weaning food should be started 4~6 months of age in breastfed infants. In infants at high risk for IDA and vitamin D deficiency, screening tests should be recommended. The high-risk infants may require iron, vitamin D fortified formula, or oral supplements.

Effects of Antioxidant Supplementation on Lipid Profiles in Elderly Women (여자노인에서 항산화 비타민 보충이 혈장 지질 개선에 미치는 영향)

  • Antioxidant vitamin supplementation focuses one's attention on the prevention of age-related diseases. This study was conducted to investigate the antioxidant status and lipid profiles and to look into the antioxidant vitamin supplementation that affects lipid metabolism in 20 elderly non-smoking Korean women (placebo group: n = 6, vitC suppl: n = 7, vitE suppl: n = 7). Age, height, weight, muscle, percent of fat and WHR were not significantly different among the groups, however $\%$ of fat was above $33\%$ and WHR was above 0.9. And blood pressure of the placebo group was 131.7/81.7 (border line hypertension), that of vitamin C supplement was 141.4/87.1 (hypertension) and that of vitamin E supplement was 151.4/92.9 (hypertension). Although nutrient intakes of all groups were poor, antioxidant status (blood vitamins C, E, A, and beta-carotene) and lipid profile (TG, total-cholesterol, VLDL-cholesterol, LDL-cholesterol, HDL-cholesterol) were normal. For nutritional intervention, the vitamin C supplement group received L-ascorbic acid 1,000 mg, and vitamin E supplement group received d-alpha-tocopherol 400IU for 4 weeks, showing the effects of vitamin E supplementation. Response total cholesterol of HDL-cholesterol (T-Chol/HDL) in vitamin E supplement group was significantly decreased from 4.3 to 3.2. And response LDL-cholesterol of HDL-cholesterol (LDL/HDL) in the vitamin E supplement group was also significantly decreased from 2.6 to 1.7. In addition, after the adjustment for plasma lipids (TG, total cholesterol), plasma vitamin A levels in vitamin E supplement group were significantly increased from 7.89 mg/g to 14.91 mg/g. And systolic blood pressure in vitamin E supplement group was significantly reduced. These results suggested that vitamin E supplementation affects the lipid profiles and blood pressure in elderly non-smoking women. So various nutrition programs must be implemented against age-related diseases and further studies are needed regarding sorts and amounts of antioxidant nutrients and supplementation periods.

Determination of dietary Ca and P levels and their equivalence values of phytase and vitamin D3 for improved growth performance in weanling pigs

  • In Experiment 1, the impact of using diets sufficient in P on the performance of weaned piglet growth with or without a super dose of phytase was investigated. One hundred and twelve piglets were randomized into four treatments with 7 replicates (4 piglets·cage-1). Bodyweight (BW), daily gain (ADG), daily intake (ADFI) and feed conversion ratios (FCR) were measured over three weeks. Treatments included a positive control (PC) with a Ca : P ratio of 0.80 : 0.50%. and the negative control (NC) had a Ca : P ratio of 0.60 : 0.50%. The PC plus phytase was denoted as PC+, and the NC with the phytase diet was designated as NC+. The PC diet was formulated to meet or exceed the NRC (2012) standards for pigs weighing 7 - 25 kgs. Better results were obtained with the PC diet (p > 0.1) compared to the NC diet. The super dose of phytase in the PC+ diet significantly improved the overall FCR (p < 0.1). For Experiment 2, the impact of different calcium (Ca)/phosphorous (P) ratios with or without supplementation of vitamin D3 was determined. Ninety-six piglets were randomized into four treatments with 6 replicates (4 piglets·cage-1). The PC, NC1 and NC2 diets had ratios of 0.80 : 0.50, 0.80 : 0.45, and 0.60 : 0.45%, respectively. The fourth diet (PCV) was the PC diet fortified with vitamin D3. Improved results were observed with the PC diet (p > 0.1) compared to the NC diets. Supplementing dietary 25-OH-D3 in the PCV diet led to numerically higher ADG and ADFI scores with lower FCR values at the early nursery stage (p = 0.0044), but the vitamin supplement did not significantly influence the growth.

Preparation and Quality Characteristics of Different Mackerel Scomber japonicas-based Processed Products as Senior-friendly Seafoods (물성을 달리한 고등어(Scomber japonicus) 활용 고령친화식품의 제조 및 품질특성)

  • Mackerel Scomber japonicus is an excellent source of vitamins (A, D and B12), omega-3 fatty acids, dietary protein and minerals. This study was conducted to prepare mackerel-based processed seafood products such as grilled product with super-heated (GM), tang (TM) and salad with sweet potato (SSM) using mackerel as senior-friendly seafoods and to examine their quality characteristics. The hardness of GM, TM and SSM were 240.3×1.03, 21.7×1.03 and 7.4×1.03 N/m2, respectively. The viscosity of SSM was 25,450 m·Pas. The nutritional content of mackerel-processed products was within the senior-friendly standard specifications for protein, vitamin C, vitamin B2 (riboflavin) and vitamin B3 (niacin) ing GM, protein, vitamin B3 and calcium for TM, and protein, vitamin D, vitamin B2 and vitamin B3 in SSM. All the mackerel-processed products were safe as senior-friendly seafoods, since digestibility rates were 81.5% for GM, 87.9% for TM and 93.5% for SSM. The physical, nutritional and the sanitation results indicated that senior-friendly seafoods classified of the mackerel-processed products was step 1 for GM, step 2 for TM and step 3 for SSM according to the Korean Food Code and Korean Indusrty Standards.

Effect on Milking Performance of Vitamin-Trace Element Supplements to Early Lactation Italian Brown Cows Grazing Ryegrass (Lolium multiflorum) Pasture

  • The objective of this study was to examine the effects of concentrates containing different levels of a vitamin-trace elements premix on milk yield and composition of dairy cows. The trial, which lasted 14 weeks, was conducted from January to March and used 45 multiparous Brown cows in the early phase of lactation. Cows (n = 15 per treatment) were randomly allocated to three dietary treatments: the first group (control, C-0) was fed pelleted concentrate containing background vitamins and trace elements that supplied 1.0 times cows' daily requirements; the second group were fed the same concentrate, but containing 2.5 g/kg of vitamin and trace mineral premix per kg of concentrate (C-2.5); the third group were fed the same concentrate, but containing 5 g/kg of vitamin and trace mineral premix per kg of concentrate (C-5). The daily ration included ad libitum chopped oat hay, and the cows also had 8 h/d grazing on a ryegrass (Lolium multiflorum) pasture. During the performance trial, cow milk yield was daily recorded and individual milk samples were analysed for milk composition and to determine milk renneting properties. Cows fed the intermediate premix level (C-2.5) in diet showed the highest fat-corrected milk production (p<0.05) compared to other groups. None of the milk quality parameters studied were influenced by dietary treatment, except for milk rheological parameters (rennet clotting time and curd firmness) that were positively improved in cows fed the C-2.5 diet (p<0.05). The findings from this study show that intermediate level of vitamin-trace elements premix in concentrate can be advantageously used in grazing dairy cows without negative effects on yield and quality of milk produced.
