Onion juices supplemented with different concentrations of puffed red ginseng extract were fermented using Pediococcus pentosaceus KC-007 and their biologically functional properties were investigated. When onion juices were supplemented with puffed red ginseng extract at the concentration of 0.5, 1, 2, and 4% (v/v) each, viable cell number of lactic acid bacteria was the highest at 24 hr of fermentation in all samples. The titratable acidity increased as the fermentation proceeds irrespective of the added amount of red ginseng extract, and the pH of fermentation broth decreased until 36 hr of fermentation. The reducing sugar of fermentation broth decreased until 24 hr of fermentation and did not change thereafter. The electron donating ability and nitrite scavenging ability were highest when red ginseng extract was added at the concentration of more than 1% (w/v). The overall acceptance in sensory evaluation was the best when red ginseng extract was added at the concentration of 1% (w/v). From these results, it is confirmed that the optimum concentration of puffed red ginseng extract for the lactic acid fermentation of onion juice was 1% (w/v).
To prepare useful foods from Acanthopanax koreanum, extraction of major constituents by water and ethanol solutions were investigated Reflux extractions of 300 g of dried material of particle size less than 0.5 cm, were carried out in 7.5 L of water, or ethanol solutions (30 -95% v/v) for 9 hr at $100^{\circ}C$. The pH values of extracted solutions were 4.0-6.5. The Color b-value of extracted solutions increased as ethanol concentrations dropped and with longer extraction times. The amounts of material in extracts increased rapidly in the first 2-3 hr of extraction. The extract levels from 30-70% ethanol solutions were 0.27-0.47 g/100 g. The main free sugars of extract were sucrose, fructose and glucose. Eleutherosides were extracted rapidly (within 3 hr), and eleutheroside extraction was best in water or in 30-70% ethanol 95% ethanol solutions were less effective. The eleutherosides were extracted to 97% by water or 30-70% ethanol solutions after 3-5 hr. Acanthoic acid extraction was more affected by ethanol level than by extraction time water achieved only trace extinction. In summary, reflux extraction in 40-70% ethanol for 3-5 hr was adequate for the extraction of functional materials from Acanthopanax koreanum.
Physiological activities in mulberry leaf and fruit were examined. Electron-donating ability (EDA), tyrosinase activity, SOD-like action (SOD), angiotensin I-converting enzyme-(ACE) inhibitory activity,and nitrite-scavenging ability of mulberry leaf and fruitextracted with water, with 50% (v/v) or with 100% ethanol, were measured. The EDA of mulberry leaf and fruit extracted with water or 50% (v/v) ethanol were greater (by 65.72-81.30%) than that with the 100% ethanol extract, whereas the activities of both former extracts were lower than those with 1.0% and 0.1% (both w/v) L-ascorbate solutions. The SOD-like activities of water, 50% (v/v) and 100% ethanol extracts of all samples were 24.13.26.80% lower than those of 1.0% and 0.1% (both w/v) L-ascorbate solutions. Nitrite-scavenging activity at pH 1.2 was observed in all extracts. The results further our understanding of the physiological activities of mulberry leaf and fruit extracts.

Response surface methodology (RSM) was used to optimize extraction conditions for functional components of buckwheat (Fagopyrum esculentum). A central composite design was applied to investigate the effects of three independent variables, namelyextraction temperature (X1), extraction time (X2), and ethanol concentration (X3), on responses including extraction yield (Y1), total phenolic content in the extract (Y2), $\alpha$-glucosidase inhibition activity (Y3), and acetylcholine esterase (ACE) inhibition activity (Y4). Data were analyzed using an expert design strategy and statistical software. The maximum yield was 24.95% (w/w) at $55.75^{\circ}C$ extraction temperature, 8.75 hextraction time, and 15.65% (v/v) ethanol. The maximum total phenolic yield was 222.45 mg/100 g under the conditions of $28.11^{\circ}C$ extraction temperature, 8.65 h extraction time, and 81.72% (v/v) ethanol. The maximum $\alpha$-glucosidase inhibition activity was 85.38% at $9.62^{\circ}C$, 7.86 h, and 57.58% (v/v) ethanol. The maximum ACE inhibition activity was 86.91% under extraction conditions of $10.12^{\circ}C$, 4.86 h, and 44.44% (v/v) ethanol. Based on superimposition of a four-dimensional RSM with respect to levels of total phenolics, $\alpha$-glucosidase inhibition activity, and ACE inhibition activity, obtained under various extraction conditions, the optimum ranges of conditions were an extraction temperature of $0-70^{\circ}C$, an extraction time of 2-8 h, and an ethanol concentration of 30-80% (v/v).
This study was devised to observe the cytotoxic activities of garlic extracts against various cancer cells, that is, murine leukemic lymphocyte(L1210 and P388) and human rectal(HRT-18) and colon cancer cells(HCT-48 and HT-29) in vitro, and murine ascitic tumor cell(S-180) in vivo. Each cell-line except S-180 was cultured in medium containing serial concentration of the garlic extract in vitro. Inhibitory effect n the growth rate of the cancer cells was stronger in extracts of petroleum ether than that of ethanol. A lipid soluble compound in the extracts of garlic was cytocidal to murine leukemic cells, human rectal and colon cancer cells in vitro. The growth rates of the cancer cells in medium containing garlic extracts were inhibited gradually to a significant degree in proportion to the increase of the extract concentration. The cytotoxic activity of garlic active fraction from TLC was about 2.3 times more potent than that of crude garlic extract, one unit of cytotoxic activity against L1210 cells being equivalent to 4.2$\mu\textrm{g}$ and 1.8$\mu\textrm{g}$ from the crude garlic and active fraction, respectively. The Rf value of the active fraction on silica-gel TLC was 0.18 in condition that petroleum ether/ethyl ether/acetic acid mixture(90:10:1, v/v/v) was used as a developing solvent. The survival times of mice inoculated with S-180 cells were extended about 1.5 to 2 times in the groups treated with garlic extract(through i.p. and oral administration) compared with their control group(no garlic extract treatment). Observations were carried out on S-180. Ethanol extracts of garlic injured markedly tumor cells within 3 hours after injection.

The objective of this study was to set the optimal extraction condition of flavonoids from onion peels as a by-product generated from the onion industry without suitable processing. Four independent variables, affecting extraction conditions, which are solvent concentration ($X_1$), extraction temperature ($X_2$), pH of the solvent ($X_3$), and solvent ratio to onion peel ($X_4$) were optimized using response surface methodology (RSM). A model equation obtained from RSM is 0.772 of R-square and 0.278 of lack of fit (p>0.05) for the optimal extraction conditions. From the ridge analysis, the conditions flavoring the highest extraction were solvent concentration (v/v) of 70%, extraction temperature of $40^{\circ}C$, extraction solvent pH of 5.3, and a solvent ratio to onion peel ratio of 1:63 (w/v). The flavonoid content obtained under optimal conditions showed 302.63 mg/g, which is 1.12 times higher than the prediction value.

The effects of pine needle extract and horseradish on the growth of Vibrio isolated from crab and flat fish were investigated. The isolated Vibrios were identified as Vibrio parahaemolyticus HY I and V. vulnificus FST I by Api 20E kit. The growth of V. parahaemolyticus HY 1, V. vulnificus FST I and V. perahaernolytich ATCC17802 were inhibited in tryptic soy broth (TSB) containing 1% pine needle ethanol extract. The growth of the Vibrios was more 2 log inhibited in TSB containing 1% pine needle extract and 1% horseradish than in TSB containing 1% horseradish alone. Viable cells of tile Vibrios were decreased more rapidly about 2~3 log in soysauce containing 1% pine needle extract and 1% of horseradish than in soysauce and in soysauce containing 1% horeseradish. Sensory quality of horseradish sauce containing 1% of pine needle extract was similar to that of horseradish sauce (p<0.05).
A new type of drinkable yoghurt was prepared to develop a functional yoghurt. Skim milk containing 0.4-1.0%(w/v) water extract of omija(Schizandra chinensis Baillon) was fermented by the mixed strains of Lactobacillus acidophilus and Streptococcus thermophilus. Quality characteristics of the drinkable yoghurts were evaluated in terms of compositions, keeping-quality(pH, titratable acidity, number of viable cells) and sensory properties. The drinkable yoghurts added with water extract of Schizandra chinensis were composed of 2.92-3.03% protein, 9.98-10.23% lactose, 0.81-1.08% fat, 16.21-16.64% total solid, and 14.57-15.17% solid-not-fat. The L values(brightness) were significantly lower in the yoghurts containing water extract of Schizandra chinensis than that of the control which had no water extract of Schizandra chinensis, while the a values(redness) and b values(yellowness) were significantly higher than those of the control. The pH, titratable acidity and number of viable cells of the lactic acid bacteria of all yoghurts were not changed during the storage at 4$^{\circ}C$ for 15 days, while the pH and titratable acidity were remarkedly changed during the yoghurts stored at 20$^{\circ}C$ for 15 days. The drinkable yoghurts containing 0.4%(w/v) water extract of Schizandra chinensis added 15%(w/v) oligosaccharide, or 0.6%(w/v) water extract of Schizandra chinensis added 20%(w/v) oligosaccharide had the highest sensory score in taste and overall acceptability among the treatments. From the results, Schizandra chinensis was a useful natural additive with the bioactive effect by provision of a acceptable physicochemical and sensory properties in the drinkable yoghurt.
To protect healthy and beautiful hair, the hair protection effect was tested by adding an aloe extract from the hair solution. The treatment groups were grouped into four categories: Group II (Famma Treatment Only), Group III (Oxidase+aloe), Group IV (Reduce+aloe), and Group V (Oxidase+aloe, Release+aloe). The test hair is collected from women's hair in their 20s, 30s and 40s who have not undergone chemical treatment such as permanent and dying for one year and use 100% aloe stock solution. In order to evaluate hair thickness, cuticles, tensile strength, elongation and formation rate, the experiment environment was 28.9 degrees and 72% humidity. All statistical tests were done at 5% significant level. Cuticle, elongation, and formation rate were significantly improved (P<.05) and cuticle was best in group V, elongation was group III. In conclusion, aloe added to perm treatment were effective in improving cuticle, elongation rate, and formation of hair.
Soybeans contain the phytoestrogens genistein and daidzein, their glucosides genistin and daidziin and coumesterol. These isflavonoid compounds are capable of producing an estrogenic response in a number of diverse species. This study determined optimum conditions for extraction of isoflavones in defatted soybean meal. Extraction of isoflavones was conducted at various conditions such as difference concentrations of extraction solvent, temperature, time and pH to extact. The most optimum extraction conditions was achieved at 75% ethanol, $80^{\circ}C$, pH4 and extract for three hours. In addition. isoflavones with high purity were separated by adding up to 4%(w/v) of calcium chloride dihydrate.
