The physiological properties of oak mistletoe slice extracts were investigated. The total polyphenol content of mistletoe extracts was 50.28-109-69 mg%, depending on extraction conditions. The polyphenol content increased as extract concentration rose (25 mL/g>50 mL/g>100 mL/g). The electron-donating ability (EDA) of the 60% (v/v) ethanolic extract was 68.88% at 25 mL/g; this was the highest value of all extracts tested (p<0.05). The SOD-like activities of water, 30%, 60%, and 90% (all v/v) ethanolic extracts were 15.24-30.84% lower than those of 1.0% and 0.1% (both w/v) L-ascorbate solutions. Tyrosinase inhibitory activities of all samples were 3.40-30.92% lower than those of 1.0% and 0.1% (both w/v) L-ascorbate solutions. Nitrite-scavenging abilities measured at pH 1.2 and pH 3.0 were highest when the water, and the 30%, 60% and 90% (all v/v) ethanolic extracts, were tested. The results expand our understanding of the physiological properties of oak mistletoe slice extracts.
Using milled barley of four varieties Olbori, Youngsan-bori, Sacheon 6, and Suwon 228, the barley proteins were fractionated by the Osborne method and the modified Osborne method. Two fractionation methods were compared. There was a steady increase in the amount of nitrogen extracted as NaCl concentration increased, reaching a maximum at 0.5M NaCl and the extraction of nitrogen by 0.5M NaCl reached a maximum at $22^{\circ}C$. Alcohol-soluble fraction was least extracted by 70% (v/v) ethanol at $4^{\circ}C$ and most by sequential extraction with 50% (v/v) propan-1-ol alone followed by 50% (v/v) propan-1-ol plus 3% (v/v) 2-mercaptoethanol. Nitrogen was least extracted between pH 4 and 6 and most extracted at higher pH than 10. The modified Osborne fractionation of the protein complex in the four barleys showed that the salt-soluble nitrogen accounted for 21,4% to 24.1%, hordein-I varied from 30.4% to 43.4%, hordein-II varied widely from 9.3% to 19.5% and borate buffer-soluble glutelin content ranged from 17.1% to 23.7%.

The antimicrobial activity of the extract of citrus peel prepared by the method of hot water, ethanol and sugar was examined. The results showed that the extract of citrus peel prepared by hot water or ethanol did not have antimicrobial activity, but the extract by 10$\%$(w/v) sugar revealed the high antimicrobial activity. Extracted in 10%(w/v) sugar solution for 9 days, showed the highest antimicrobial activity against 8 strains of bacteria. The minimum inhibition concentration was found to be 0.5$\%$(v/v) against S. aureus, 1.5$\%$(v/v) against B. subtilis, M. luteus and E. coli, and 2.0$\%$(v/v) against S. mutans. The antimicrobial activity of the citrus peel extract was stable regardless of the treatment at 40 $\~$ 100 $^{\circ}C$C for 20 min and unstable response to the change of pH. The results suggested the development of citrus peel as heat-stable antimicrobial agents.
The consumption of radish ( Rhaphanus sativus L.) sprout, which is Cruciferae family, is increasing because of its pungent flavor and taste. Its volatile components were analyzed by SDE (simultaneous steam distillation & extraction) method and P&T(purge & cryogenic trapping) method. As a solvent, diethyl ether and diethyl ether : pentane mixture(2:1, v/v) were used in SDE method, and diethyl ether in P&T method. Analyzing by GC and GC-MS, the major component was sulfur compounds (19 species, peak area 76.6%) with diethyl ether, sulfur compounds(15. 44.0%) and hydrocarbons(23, 23.8%) with diethyl ether-pentane mixture in SDE method. Also, hydrocarbons(25, 84.1% ) was major component in P& T method. The major volatile component of fresh radish sprout were n-heptane, methyl pentane and that of boiled radish sprout were 4-methylthio-3-butenyl isothiocyanate, methyl mercaptane, 2,3-dimethyl disulfide. Low molecular volatile components were detected more by P& T method, but types and relative quantities of volatile components were measured less comparing to SDE method.

This study examined the optimization of hot-water extraction conditions for maximizing the total polyphenol compounds (TPC) extracted from amaranth leaf. The effects of three independent variables, including extraction temperature, extraction time and ethanol concentration on TPC were investigated using central composite design (CCD). The concentration of TPC increased with increased levels of extraction temperature and time. The extraction temperature and the ethanol concentration showed the significant effect on TPC production (p<0.05). The predicted values at the optimized condition were acceptable when compared to the experimental values ($R^2=0.9566$). The optimum extraction conditions were as follows: temperature of $90.1^{\circ}C$, time of 50 min and ethanol concentration of 61.6% (v/v) for the maximum TPC of 12.6 mg GAE/g DM.
Allelopathic activity of dominant upland weed species was determined using aqueous and methanol extracts and dried residues of the weeds. Germination and seedling growth of radish (Raphanus sativus L.) and sesame (Sesamum indicum L.) were greatly inhibited by 2% (w/v) aqueous extracts of Artemisia asiatica Nakai and Portulaca oleracea L., respectively. Great phytotoxicity on both indicator plants occurred by 2% (w/v) aqueous extracts of Capsel/a bursa-pastoris (L.) Medik. A complete inhibition in germination and seedling growth of radish was caused by 2% (w/v) methanol extract of A. asiatica. There was about 90% inhibition in germination and seedling growth of sesame due to 2% (w/v) methanol extracts of A. asiatica, P. oleracea and Trifolium repens L. Phytotoxic effects varied with extract solution, weed species and indicator plants employed, indicating that the weed species contained different contents and kinds of allelopathic chemicals. Water potential and pH adjusted to those of the extracts did not affect germination and seedling growth of the indicator plants. Phytotoxicity increased with increasing concentration of the extracts obtained from four suspected alleopathic weeds. Soil-incorporated plant residues of A. asiatica and P. oleracea caused greater phytotoxicity on radish than those of C. bursa-pastoris and T. repens.

In this study, two species of algae, Ecklonia stolonifera, Sargassum thunbergii and one species of marine plant, Zostera marina(rhizoid and stem) were collected and extamined to determine the extractability of water soluble protein and the influences of various factors including extraction time, temperature, ratio of sample vs solvent and pH upon the extractability were tested. The effects of precipitation treatments for isolation of algal protein from the extracts(TCA treatment, methanol treatment and pH control) were also tested. Amino nitrogen and total nitrogen of purified samples made by obtained optimum conditions were estimated. The effect of the ratio of sample vs solvent on extractability differed from species to species which was enhances at 1:100(w/v) in Sargassum thunbergii and Zostera marina while 1:150(w/v) for Ecklonia stolonifera. The effect of extraction time and temperature was revealed differently in all species which might be considered to be caused by differences in the constitution of algal tissues. But in case of TCA insoluble nitrogen, it was showed the maximum extractability at $40-50^{\circ}C$ for 1 hour extraction. The optimum pH for the ext action of total nitrogen was 9-12 while the optimum pH was 6-7 for TCA insoluble nitrogen. And the pH control appeared to be most effective in the influence of precipitation treatment for isolation of algal protein.
This study was performed to develop new functional red ginseng drinks with Astragali Radix and Opuntia humifusa. Optimum extraction conditions such as solvent property and temperature for Astragali Radix were determined by distilled water vs. ethanol (95%) ratio (0:100, 25:75, 50:50, 75:25) and 60 vs. $80^{\circ}C$. Water-soluble extracts at $80^{\circ}C$ showed higher antioxidant activities than fat-soluble extracts at $60^{\circ}C$. Viscosities of 1-2% (w/v) of Opuntia humifusa solution were similar to that of the 0.1% guar gum solution. Addtion of Astragali Radix (3% and 5%, w/v) and Opuntia humifusa (1.2%, w/v), especially, had effect on the changes of pH of the red ginseng solution(5%, w/v) during storage for 7 days. A significant difference during the storage was shown in total plate counts by addition of Opuntia humifusa (1.2%, w/v) and microorganisms were reduced by six log cycles. Significant antiproliferation effects of red ginseng (5%, w/v) solution with Astragali Radix (3% & 5%, w/v) and Opuntia humifusa (1.2%, w/v) on Colon26m-3.1 carcinoma (colorectal carcinoma) cell and U87-MG neuronale glioblastoma (brain carcinoma) cell were not observed.

The physiological activities of extracts from the leaf, stem, and fruit of Cudrania tricuspidata were investigated. The electron-donating ability (EDA) of the 70% (v/v) ethanolic extract of stem was 90.20%; this was the highest value of all the extracts tested and higher than the L-ascorbate solutions. The total polyphenol contents were the highest in the leaf extracts under all extraction conditions. Especially, 70% (v/v) methanolic extract of leaf contained the highest total polyphenol content of 224.48 mg%. SOD-like activity showed the highest activity in water extract of leaf at 64.53%. Tyrosinase-inhibitory activities were the most effective in all extracts of fruit. ACE inhibitory activities were the highest in water extract of fruit. Nitrite-scavenging abilities under acidic conditions (pH 1.2 and pH 3.0) were the most effective in all the extracts. The results of this study will be useful for understanding the physiological activities of Cudrania tricuspidata extracts.

The dried cinnamon was extracted with water and 70% ethanol and studied for the several extraction conditions of temperature, time, solvent addition ratio and number of extraction on mineral components and physical properties of the extracts. Mineral components significantly increased as the extraction temperature increased. More than 8 hours of extraction showed a little improving while solvent ratio (V/W) up to 60 times (V/W) significantly increased the mineral components, particularly Cu, Zn, Fe, Na in water extracts and Fe, Mn, K in 70% ethanol extracts. Absorbance at 285 mm decreased as the temperature raised up to the range of $60{\sim}80^{\circ}C$. The Hunter a-value was much affected with extraction conditions and L-value and transmittance were changed similarily while pH was little changed.
