  • A supplemental effect of Undaria Pinnatifida extract on the composite flour prepared from a blend of wheat, barley, sweet potato, potato, and defatted soybean flours was studied in terms of binding properties, cooking test, and sensory analysis. Dry noodle of the composite flour was made by the conventional method and air dried. Instant noodle was prepared in a hot vegetable oil bath after the noodle was made. The standard was made of wheat flour only. 1. The noodle prepared with composite flour (wheat flour : barley flour, 5 : 5) and Undaria Pinnatifida extract (1 or 2%) showed same results of cooking and sensory tests as well as properties of texture as the standard. 2. The mixture of wheat, barley and defatted soybean flour (10%) had a less efficient binding capacity with Undaria Pinnatifida extract. The binding effect was, however, significantly improved with the wheat and barley flour mixture with either sweet potato or potato flour. 3. The instant noodle prepared with the composite flour (either barley, or sweet potato, or potato was mixed with wheat flour up to 70% separately) and hydroxypropyl methyl cellulose (1% as final) showed the higher oil absorption and the sensory results were the same as the standard. Nevertheless, the binding properties and cooking quality were less efficient.

Effects of Antimicrobial and Cytotoxicity of Undaria pinnatifida Sporophyll Fractions (미역귀 분획물의 항균 · 암세포 성장저지 효과)

  • In this study, we investigated antimicrobial and cytotoxicity effects of Undaria pinnatifida Sporophyll, which using methanol, dichloromethane and ethanol were extracted and fractionated into four different types: methanol (UPMM), hexane (UPMH), butanol (UPMB) and aqueous (UPMA). The antimicrobial activity was increased in proportion to its concentration by the paper disc method. Among the solvent fractions, UPMM and UPMB showed relatively strong antimicrobial activities in the order. Among various partition layers, the methanol partition layer (UPMM) was showed the strongest cytotoxic effects on all cancer cell lines. We also observed quinone reductase (QR) induced effects in all fraction layers of UP on HepG2 cells. The QR induced effects of UPMH on HepG2 cells at $320\mu g/mL$ concentration indicated 2.36 with a control value of 1.0.

Risk Analysis and Safety Assessment of Microbiological and Chemical Hazards in the Dried Sea Mustard Undaria pinnatifida Distributed in Markets (유통중인 건미역(Undaria pinnatifida)의 미생물학적·이화학적 위해요소 분석 및 안전성 평가)

  • For the safety assessment of microbiological and chemical hazards in dried sea mustard, fifteen samples of dried sea mustards Undaria pinnatifida were purchased from the supermarkets distributed throughout Korea. The contamination levels of total viable bacteria, coliforms, Escherichia coli, and nine pathogenic bacteria [Staphylococcus aureus, Salmonella spp., Listeria monocytogenes, Bacillus cereus, Vibrio spp., Clostridium perfringens, Enterohemorrhagic Escherichia coli (EHEC), Yersinia enterocolitica and Campylobacter jejuni/coli] were quantitatively or qualitatively assessed. Also, the heavy metals (lead, cadmium, total mercury, and inorganic arsenic), and radioactivity (131I, 134CS+137CS) were quantitatively assessed. This microbial and chemical analysis was performed using standard methods in Korean food code. The total viable bacteria ranged from 4.3×102 (5.0×10-1.5×103) CFU/g. Coliforms and E. coli were not detected in all samples (ND, <1 log10 CFU/g). All nine pathogenic bacteria were qualitatively detected as negative. The contamination levels of lead, cadmium, total mercury, and inorganic arsenic were 0.036 (0.015-0.051), 0.117 (0.088-0.156), 0.030 (0.017-0.048), and 0.058 (0.056-0.064) mg/kg, respectively. Radioactivity was also not detected in any sample. The microbial contamination levels determined in the current study may be potentially used as basis for performing microbial risk assessments of dried sea mustards.

Investigation of Brassinosteroid Substances in Undmia pinnatifida (미역의 Brassinosteroid 활성물질검색)

  • In order to examine the presence of brassinosteroid substance in sea mustard(Undaria pinnatifida), leaves of sea mustard were extracted with MeOH. The extract was purified by slovent fractionation, counter current distribution, silica gel adsorption chromatography, charcoal adsorption chromatography, Bondesil chromatography, and reverse phase HPLC, successively. The activity was monitored by the rice inclination test and its prescence could be confirmed in each purification step. Although sea mustard contained a less amount of the active substance than the vegetative tissue of higher plants, brassinosteroid was clearly present endogenously in sea mustard. We acknowledge that our work is probably the first publication reporting the presence of brassinosteroid in marine algae plants.

Substitution effect of white radish (Raphanus sativus L.)' by-product and tunic of sea squirt (Halocynthia rorentzi, von Drasche) for Undaria pinnatifida in feed of abalone (Haliotis discus, Reeve 1846)

  • Substitution effect of white radish' by-product (WRB) and tunic of sea squirt (TSS) for Undaria in feed on growth and carcass composition of abalone was determined. Eight-hundred forty juveniles were distributed into 12 containers. Three formulated diets were prepared in triplicate. A 15% Undaria was included in the control diet. The 15% Undaria was substituted with a same amount of WRB and TSS, referred to as the DRG and TSS diets, respectively. Finally, dry Undaria was also prepared to compare effect of the formulated diets on performance of abalone. The experimental diets were fed to abalone once a day at a satiation level with a little leftover. The feeding trial lasted for 16 weeks. Crude protein, crude lipid, and ash content of the experimental diets changed over all period of time. Higher crude protein and lipid and ash contents retained in all formulated diets compared to the Undaria were observed at 24 and 48 h after seawater immersion. Survival of abalone was not affected by the experimental diets. Weight gain and specific growth rate (SGR) of abalone fed the TSS diet was greater than all other diets. Weight gain and SGR of abalone fed the control diet was not different from those of abalone fed the WRB diet. Proximates of the soft body of abalone was affected by the diets. In conclusion, WRB and TSS are the promising feed ingredients to replace Undaria in abalone feed; especially, TSS is superior to either Undaria or WRB. The formulated diets produced improved growth performance of abalone over the single Undaria.

Feeding Stimulants and Feeding Preference of Haliotis discus Reeve (Jeju Island) to Marine Algae (제주도산 까막전복의 해조류 섭식선호도와 섭식자극물질)

  • Haliotis discus, a useful abalone of herbivorous gastropod, shows feeding preference to marine algae depending upon their growth stage and recognition of taste. This study was carried out to investigate this abalone's algal preferences and the presence of feeding stimulants. In single-choice experiments the small (S) group generally preferred Ulva pertusa (Chlorophyta), whereas the medium (M) and large (L) group preferred both Laminaria japonica (Phaeophyta) and Undaria pinnatifida (Phaeophyta). In multi-choice experiments using 4 algal species of L. japonica, U. pertusa, U. pinnatifida and Ecklonia cava (Phaeophyta), the results were same as in the single-choice experiments; the S group preferred U. pertusa the most, while the M and L group preferred both U. pinnatifida and L. japonica. However E. cava was not preferred by any groups. In order to examine the presence of feeding stimulant, chemical compounds from algae used as feed were isolated and identified. The abalone responded to water soluble matters of L. japonica, U. pinnatifida and U. pertusa, but those of E. cava and Sargassum sagamianum (Phaeophyta) were not attractive to them. In feeding stimulant experiments using fat soluble matters, the S group preferred the fat soluble matter of U. pertusa the most, while the M group and the L group preferred those of U. pertusa and U. pinnatifida, and those of L. japonica, respectively. However the fat soluble matter of S. sagamianum was not attractive to the abalone. The results of feeding stimulant experiments were same as those of single-choice or multi-choice experiments, which showed that compound lipids in fat soluble matter might act as feeding-stimulant.

Community Structure of Subtidal Macroalgae around Neobdo Island on the West-southern Coast of Korea

  • Community structure of subtidal macroalgae was investigated at 3 sites of Neobdo Island in August 1994. In total, 66 taxa of red, 21 brown, 14 green, and 2 blue-green algae were identified. The number of species and biomass decreased with increasing depths. Gelidium amansii, Ulva pertusa, Dictyota dichotoma, Sargassum thunbergii, Undaria pinnatifida, Ecklonia cava, and Sargassum horneri had higher frequency and biomass. The vegetation of deeper zone was composed mainly of a few red algae. Substrate characteristic and light intensity were considered as environmental factors determining the underwater vegetation.
