The Formation of N-Nitrosamine during Storage of Salted Mackerel, Scomber japonicus (고등어 염장중 N-Nitrosamine의 생성 요인)

  • Salted mackerel(Scomber japonicus) is favorite diet in Korea from ancient times. The formation of N-nitrosamine and amines such as VBN, TMAO, TMA and DMA in salted mackerels were investigated when nitrite was added to salting water at the concentration of 0, 100, 500 and 1000mg/kg and influence of cooking method on the formation of N-nitrosamine was also analyzed. The content of VBN in mackerel during the salting increased contineously; after 50 days it was approximately more than 23.8 times as compared with that of raw sample. The TMAO nitrogen decreased while TMA increased in mackerel during the salting, the amounts of TMAO and TMA were 3.7~21.0mg/100g and 15.0~20.4mg/100g in salted mackerel, respectively. The content of DMA nitrogen increased remarkably in mackerel during the salting; DMA in sample salted for 50 days reached about 16.0 times more than that of raw sample. N-Nitrosodimethylamine (NDMA) content of control sample was detected less than 1.0$\mu\textrm{g}$/kg, but nitrite addition to salting water at 100, 500 and 1000ppm resulted in NDMA content of 8.1~14.6$\mu\textrm{g}$/kg, 24.5~45.5$\mu\textrm{g}$/kg and 53.8~77.2$\mu\textrm{g}$/kg, respectively. In contrast, cooked counterparts contained 3.3~12.6$\mu\textrm{g}$/kg of NDMA. In general, more NDMA were produced during cooking when samples cooked using direct heating methods such as a gas range and a briquet fire than when samples were cooked using indrect heating methods such as an electric range.

Effects of Ethanol and Organic Acids on Color, Fishy Odor and in vitro Absorption Rate of Calcium of Dried Large Anchovy (자건대멸의 색택, 어취 및 in vitro 칼슘 흡수율에 미치는 주정과 유기산 처리의 효과)

  • The optimization of ethanol treatment was carried out by response surface methodology (RSM) which was expressed through change of ${\Delta}$E value for improvement of color of dried large anchovy. The optimum condition was shown as treatment with 7 volumes (v/m) of ethanol at $50^{\circ}C$ for 9 hrs. At this condition, the removal rates of trimethylamine (TMA) and fat considered as fishy odor-causing materials were 81.1 and $77.4\%$, respectively, when analyzed by solid phase microextraction (SPME)/gas chromatography and soxhlet method, respectively The effect of citric acid on the removal rate of TMA was the highest one among organic acid treatments. The removal rate of TMA was affected greatly by the concentration of organic acid rather than the temperature and time of treatment. $73\%$ of TMA was removed by treatment of $1\%$ of citric acid at $20^{\circ}C$ for 20 min. Specially, above $90\%$ of TMA could be removed by the combination of alcohol and citric acid treatment. In vitro absorption rate of calcium was also increased to $12.3\%$ by the combination of alcohol and citric acid treatment compared with $2.9\%$ of control.

Characteristics of TMA Gas Detection of a ZnO Thin Films by Annealing (열처리에 따른 ZnO 박막의 TMA 가스 검지 특성)

  • ZnO thin-film sensors were fabricated by RF magnetron sputtering method. The composition of the device material was 4 wt. % $Al_{2}O_{3}$, 1 wt. % $TiO_{2}$ and 0.2 wt. % $V_{2}O_{5}$ on the basis of ZnO material for developing the high sensitive TMA gas sensor which have an appropriate resistivity and the stability for practical use. They were also grown on the $SiO_{2}/Si$ substrates heated at $250^{\circ}C$ under a pure oxygen pressure of about 10 mTorr with a power of about 80 watts for 10 minutes. So as to enhance the stability of the resistivity, the thin films were annealed from $400^{\circ}C$ to $800^{\circ}C$. The sensors made with the thin film which were annealed at $700^{\circ}C$ for 60 minutes in pure oxygen gas exhibited a good sensing properties for TMA gas. The thin film grown at this condition showed the maximum sensitivity of 550 in TMA gas concentration of 160 ppm, and exhibited a good stability and excellent linearity.

  • In the field of computer graphics, we have several research results to display the ocean waves on the screen, while we still not have a complete solution yet. Though ocean waves are constructed from a variety of sources, the dominant one is the surface gravity wave, which is generated by the gravity and the wind. In this Paper, we Present a real-time surface gravity wave simulation method, derived from a precise ocean wave model in the oceanography. There are research results based on the Pierson-Moskowitz(PM) model[1], which assumes infinite depth of water and thus shows some mismatches in the case of shallow seas. In this paper, we started from the Texel, Marsen and Arsloe(TMA) model[2], which is a more precise wave model and thus can be used to display more realistic ocean waves. We derived its implementation model for the graphics applications and our prototype implementation shows about 30 frames per second on the Intel Pentium 4 1.6GHz-based personal computer. Our major contributions to the computer graphics area ill be (1) providing more user-controllable parameters to finally generate various wave shapes and (2) the improvement on the expression power of waves even in the shallow seas.

ZnO thin film Gas sensors for detection of TMA gas with Pt/Ti thin film heater (Pt/Ti 발열체가 내장된 TMA 가스 측정용 ZnO 박막 가스 센서)

  • To increase the sensitivity and the selectivity of the sensors to TMA gas, the composition ratio and the growth conditions of the ZnO films are studied. Annealing of the ZnO films in the various time ranges and temperatures in the oxygen is carried out to enhance the stbility of the electrical resistance. Pt/Ti heater deposited on backside of the substrates in used to control the operating temperature of th esensor. The ZnO thin film sensors doped to 4.0 wt% $Al_{2}$O$_{3}$ 1.0wt.% TiO$_{2}$ and 0.2wt.% V$_{2}$O$_{5}$ exhibited a high sensitivity and an excellent selectivity for TMA gas. The sensors made with the thin films annealed at 700$^{\circ}$C for 60 minutes in the oxygen atmosphere had a good stability and linearity. The heater deposited in the ratio of 1 to 1 (Pt:Ti) had a good heating properties. The sensors fabricated using above conditions showed a good response to the actual gases of a mackerel at a step of deterioration after death.

  • Organic bases in the dorsal meat of wild common carp, Cyprinus carpio, were analyzed as a part of the studies on the taste compounds of fresh-water fishes. The male and female meat showed no significant differences in contents of total creatinine, betaine, TMA and TMAO. The most abundant basic compound was total creatinine $(ca.\;400mg\%)$. The amount of betaine was poor $(ca.\;66.5mg\%)$ and TMA and TMAO were trace in content $(below\;1mg\%)$.

  • In this paper, the performance enhancement of a time-modulated array is described. The proposed time-modulated array is based on the topology of a conventional array but uses apodized discrete time switching, instead of phase shifters, to achieve beamforming functions with side-band suppression. Numerical simulations are carried out to examine the performance of this beamforming system based on apodized time sequence of 16 elements linear array. Numerical results reveal that the proposed method provides a more flexible and accurate way of producing desired beampatterns with low or ultralow side-lobe level (SLL) compared with the conventional methods.

  • Using bearing measurement only, target motion state is not directly obtained so that TMA (Target Motion Analysis) is needed for this situation. TMA is a nonlinear estimation technique used in passive SONAR systems. Also it is the one of important techniques for underwater combat management systems. TMA can be divided to two parts: batch estimation and sequential estimation. It is preferable to use sequential estimation for reducing computational load as well as adaptively to target maneuvers, batch estimation is still required to attain target initial state vector for convergence of sequential estimation. Selection of batch time interval which depends on observability is critical in TMA performance. Batch estimation in general utilizes predetermined batch time interval. In this paper, we propose a new method called the BTIS (Batch Time Interval and Initial State Estimation). The proposed BTIS estimates target initial status and determines the batch time interval sequentially by using a bank of GMM-TS (Gaussian Mixture Measurement-Track Splitting) filters. The performance of the proposal method is verified by a Monte Carlo simulation study.

Trimethylamine Sensing Characteristics of Molybdenum doped ZnO Hollow Nanofibers Prepared by Electrospinning (전기방사방법에 의해 합성된 ZnO 중공 나노섬유의 trimethylamine 가스 감응 특성)

  • Pure and Mo-doped ZnO hollow nanofibers were prepared by single capillary electrospinning and their gas sensing characteristics toward 5 ppm ethanol, trimethylamine (TMA), CO and $H_2$ were investigated. The gas responses and responding kinetics were dependent upon sensing temperature and Mo doping. Mo-doped ZnO hollow nanofibers showed high response to 5 ppm TMA ($R_a/R_g=111.7$, $R_a$: resistance in air, $R_g$: resistance in gas) at $400^{\circ}C$, while the responses of pure ZnO hollow nanofibers was low ($R_a/R_g=47.1$). In addition, the doping of Mo enhanced selectivity toward TMA. The enhancement of gas response and selectivity to TMA by Mo doping to ZnO nanofibers was discussed in relation to the interaction between basic analyte gas and acidic additive materials.

Weakly Nonlinear and Dispersive Wave Equations for Random Waves (불규칙파를 위한 약비선형 약분산 파랑 방정식)

  • In this study, a couple of ordinary differential equations which can describe random waves are derived from the Boussinesq equations. Incident random waves are generated by using the TMA(TEXEL storm, MARSEN, ARSLOE) shallow-water spectrum. The governing equations are integrated with the 4-th order Runge-Kutta method. By using newly derived wave equations, nonlinear energy interaction of propagating waves in constant depth is studied. The characteristics of random waves propagate over a sinusoidally varying topography lying on a sloping beach are also investigated numerically. Transmission and reflection of random waves are considerably affected by nonlinearity.
