Effect of Carcass Traits, Sarcomere Length and Meat Quality Properties on Beef Longissimus Tenderness at 24 hr Postmortem (한우육의 도체특성, 근절길이 및 품질특성이 연도에 미치는 영향)

  • This study was conducted to investigate the effect of sarcomere length, carcass and quality traits on tenderness of Hanwoo beef at 24 hr postmortem. Immediately after slaughter, a total number of 30 carcasses(Hanwoo bull) selected, and sarcomere length was determined during rigor development(1, 3, 6, 12 and 24 hr). Tenderness group of longissimus dorsi muscle classified into tender group($\leq$7.5 kg/$\textrm{cm}^2$, n=9), or tough group($\geq$9.0 kg/$\textrm{cm}^2$, n=9) by shear force value at 24 hr postmortem, and estimated carcass traits, meat color, connective tissue and sensory property at 24 hr postmortem. Results showed that tender group had heavier carcass weight, thicker back fat, higher marbling score, lighter meat color, more white fat color and lower texture score(p<0.05). The change of sarcomere length was linearly decreased(p<0.05) from 3 hr postmortem, and the sarcomere length of tender group was significantly(p<0.05) longer than that of tough group at 3, 6 and 24 hr postmortem. The tender group showed significantly lower(p<0.05) shear force value of intramuscular connective tissue(IMCT), better(p<0.05) tenderness and overall acceptability compared to the tough group. Results indicated that tenderness of beef longissimus dorsi muscle could be improved by thicker back fat, higher marbling score and lower texture score, and predicted by sarcomere length of pre-rigor(3 and 6 hr postmortem). Also, the tenderness of beef longissimus dorsi muscle could be closely related to shear force value of IMCT, compared to total collagen and soluble collagen content in the same age.

  • This study was carried out to investigate the carcass grade and characteristics of pigs by carcass weight and backfat thickness. Data used in this experiment were collected and analyzed from a total of 656 pigs composed of 128 gilts and 528 barrows at commercial public slaughter house. The carcass grade of gilts was superior to that of barrow. The carcass weight by gender tended to be heavier in castrated pig than in gilt. Backfat was significantly (p<0.05) thicker in castrated pig than in gilt. Differences between castrated pig and gilt on meat colour, marbling standard, water holding capacity, and marketing age were not significantly found. However, the level of carcass grade was higher ratio in gilt group than in castration. The appearance of percentage of PSE (pale, soft, exudative) of gilt group was superior to that of castrated group. There were significant differences among carcass weight in the marbling score (p<0.05) and water holding capacity (p<0.05). There was significant difference among backfnt thickness in carcass weight (p<0.05), marbling score (p<0.05) and water holding capacity (p<0.05).

Effects of varying nursery phase-feeding programs on growth performance of pigs during the nursery and subsequent grow-finish phases

  • The present study investigated the effects of varying durations of nursery diets differing in percentages of milk products on growth performance of pigs during the nursery phase (NP) and subsequent grow-finish phase (GFP) to find the feasibility of reducing the use of nursery diets containing costly milk products. A total of 204 21-d-old weanling female and castrated male pigs were subjected to one of three nursery phase feeding programs differing in durations on the NP 1 and 2 and GFP diets containing 20%, 7%, and 0% lacrosse and 35%, 8%, and 0% dried whey, respectively, in 6 pens (experimental units) for 33 d: HIGH (NP 1, 2 and 3 diets for 7, 14, and 12 d), MEDIUM (NP 2 and 3 for 14 and 19 d), and LOW (NP 2 and 3 and GFP 1 for 7, 14, and 12 d). Subsequently, 84 randomly selected pigs [14 pigs (replicates)/pen] were fed the GFP 1, 2 and 3 diets during d 54-96, 96-135, and 135-182 of age, respectively. The final body weight (BW) and average daily gain (ADG) of nursery pigs did not differ among the HIGH, MEDIUM, and LOW groups (14.8, 13.3, and 13.7 kg in BW and 273, 225, and 237 g in ADG, respectively). The average daily feed intake during the nursery phase was greater (p < 0.01) in the HIGH group than in the MEDIUM and LOW groups, whereas the gain:feed ratio did not differ across the treatments. The BW on d 182 and ADG during d 54-182 were greater in the HIGH and MEDIUM groups vs. the LOW group (110.0, 107.6, and 99.6 kg in BW, respectively; p < 0.01). The backfat thickness and carcass grade at slaughter on d 183 did not differ across the treatments. In conclusion, the MEDIUM program may be inferior to the commonly used HIGH program in supporting nursery pig growth. Nevertheless, the former appears to be more efficient than the latter in production cost per market pig whereas the LOW program is thought to be inefficient because of its negative effect on post-nursery pig growth.

Effect of Feeding Periods of Dietary Rhus verniciflua Stokes on the Quality Characteristics of Hanwoo Beef during Refrigerated Storage (옻나무 급여기간이 한우육의 냉장저장 중 품질특성에 미치는 영향)

  • This study was carried out to investigate the effect of feeding periods of dietary Rhus verniciflua Stokes (RVS) on the quality characteristics of Hanwoo beef during refrigerated storage. Hanwoo steers were fed a 4% RVS-contained diet for 0 (control), 3, 4, 5, or 6 mon prior to slaughter (28 mon of age). The M. semitendino년 from carcasses were stored at $3{\pm}0.2^{\circ}C$ for 7 d. The crude fat content was lower in the 4 and 5 mon groups than in the other groups (p<0.05), however the crude protein content and water-holding capacity (WHC) were higher in the 4 and 5 mon groups than in the other groups (p<0.05). The monounsaturated fatty acid (MUFA) content was higher in the 3, 4, and 5 mon groups than in the other groups (p<0.05). During storage. the TBARS content was reduced in the RVS groups, and the MetMb content showed slower accumulation in the 3, 4, and 5 mon groups than in the other groups. With regard to meat color, the 3, 4, and 5 mon groups had higher L, a, and C values than the other groups until 7 d, and in particular, the a value at 7 d was the highest in the 4 mon group (p<0.05). Consequently, the beef from 4% RVS-fed Hanwoo for 4-5 mon was effective at improving the WHC, MUFA content, and color stability relative to the other beef.

Study on the Weight of Visceral Organs and Live Weight of Korean Native Cattle (한빈우(韓牝牛)의 생체중(生體重)과 장기중량(臟器重量)에 관한 연구(硏究))

  • This study was conducted to determine the interrelationship between the weight of various visceral organs and the live weight of Korean native cattle with particular regard to female ones. One hundred and eighty-five of 2 to 6 years and one hundred and fifty-six Korean native cow of over 7 years of age were examined at the Busan slaughter house during the lest quarter of 1979. The results obtained are summarized as follows: 1. The average live weight of 72 years old cows examined was 297.09kg, while these weight of visceral organs such as liver, lung, heart, left kidney, right kidney and spleen being 4301.09, 2165.22, 1355.43, 346.74, 350 and 991.30g, respectively. The length, width and thickness of the spleen were 49.0, 12.92 and 2.95cm, respectively. 2. The average live weight of 3 years old cows examined was 306.56kg, while these weight of visceral organs such as liver, lung, heart, left kidney, right kidney and spleen being 4099.07, 2144.44, 1383.33, 326.85, 325.93 and 964.82g, respectively. The length, width and thickness of the spleen were 43.3, 12.37 and 2.80cm, respectively. 3. The average live weight of 4 years old cows examined was 314.67kg, while these weight of visceral organs such as liver, lung, heart, left kidney, right kidney and spleen being 4186.67, 2292.50, 1392.50, 346.67, 343.33 and 932.50g, respectively. The length, width and thickness of the spleen were 47.01, 12.55 and 3.08cm, respectively. 4. The average live weight of 5 years old cows examined was 328.90kg, while these weight of visceral organs such as liver, lung, hearts left kidney, right kidney and spleen being 4465.32, 2394.35, 1493.55, 370.16, 335.97 and 997.58g, respectively, The length, width and thickness of the spleen were 49.17, 12.76 and 3.16cm, respectively. 5. The average live weight of 6 years old cows examined was 334.97kg, while these weight of visceral organs such as liver, lung, heart, left kidney, right kidney and spleen being 4585.29, 2552.79, 1555.89, 364.70, 373.24 and 985.29g, respectively. The length, width and thickness of the spleen were 48.27, 12.66 and 2.78cm, respectively. 6. The average live weight of 156 cows (over 7 years of age) examined was 344.91kg, while these weight of visceral organs such as liver, lung, heart, left kidney, right kidney and spleen being 4730.77, 2651.44, 1554.39, 407.37, 409.42 and 1101.06g, respectively. The length, width and thickness of the spleen were 51.04, 13.21 and 3.08cm, respectively. 7. Total average live weight of 341 cows (from 2 to 6 and over 7 years of age) examined was 332.44kg, while these weight of visceral organs being 4550.95, 2497.13, 1500.76, 380.18, 382.27 and 1047.98g, respectively. The length, width and thickness of the spleen were 52.01, 12.96 and 3.02cm, respectively. 8. The Influence of Carcass Traits on Carcass Price in Mature Hanwoo Cow (한우 암소에서 도체형질과 도체가격간의 상관관계)

  • We investigated the influence of carcass traits on carcass price for Hanwoo cow using multiple regression and path analyses. Data for carcass traits and price were collected on mature Hanwoo cow raised in private farms in Kangwon province that were slaughtered in 2008. A total of 96 animals with the average slaughter age of 51 months were used in the current study. Of the carcass traits studied, marbling score (MAR), dressing percentage (DP), and eye-muscle area (EMA) showed moderate and positive correlations with auction price (AP), while correlation coefficients of meat yield index (MINDEX) with AP were low or even negligible. In multiple regression analyses of AP and carcass price (CP) on cold carcass weight (CWT), back fat thickness (BFT), EMA, MAR, and DP, estimates of $R^2$ were 69.86 and 85.43%, respectively. Partial regression coefficients for CWT, BFT, EMA, MAR and DP were -0.028, -0.106, 0.107, 0.814, and 0.075 in the equation of AP and 0.561, -0.060, 0.083, 0.590, and 0.051 in the equation of CP. In path analyses, MAR's total contribution on the variation of AP was largest (0.667), and the total contributions of MAR and CWT on the variation of CP were 0.403 and 0.397. The current study suggested that marbling was the most influential trait on the variation of auction price, and marbling and cold carcass weight were critical traits on the variation of carcass price.

Comparison of pH, Water Holding Capacity and Color among Meats from Korean Native Chickens

  • This study investigated the initial pH measured at 15 min post-mortem, ultimate pH, water holding capacity (WHC), and color of meats obtained from five lines of Korean native chicken (KNC) for the development of breed for high-quality meat. In addition, the effect of sex was examined. In total, 595 $F_1$ progeny (Black [B], Grey-Brown [G], Red-Brown [R], White [W] and Yellow-Brown [Y]) from 70 full-sib families were used. Chickens were slaughtered at 20 wk of age and the measurement traits of all breast and thigh meats from 595 chickens were analyzed. The initial pH at 15 min post-slaughter of the breast and thigh meats was affected by the line and sex of Korean native chicken (P<0.05). However, there was no line and sex effect on ultimate pH and WHC of the breast and thigh meat except that the ultimate pH of thigh meat had line effect. Except for the $L^*$ value of breast meat, the meat color was significantly affected by line and sex (P<0.05). The ultimate pH showed consistently negative correlation with the $L^*$ value and positive correlation with the $a^*$ value in breast and thigh meats. Based on the results, we concluded that the line W in male chickens and the line G and W in female chickens may be good candidates for the selection to develop breed for high-quality meat because these lines showed property of high initial pH or/and ultimate pH.

Feeding Effect of Whole Crop Rice based TMR on Meat Quality of Hanwoo Steers (사료용 벼 위주 TMR 급여가 거세 한우의 육질 특성에 미치는 영향)

  • This study was conducted to investigate the effect of whole crop rice based TMR on the meat quality of Korean Native Cattle (Hanwoo). Sixteen Hanwoo steers (average 8 months old) were divided into the control group (commercially marketed TMR) and the WCR-TMR group (whole crop rice based TMR). Feeding trials were carried out up to 30 months of age, and after slaughter, the strip loin were collected and analyzed for meat quality. There were no significant differences in proximate compositions of Hanwoo (P>0.05), and crude protein, crude fat and crude ash were 19.51~20.23 %, 11.53~11.35 % and 1.10~1.12 %, respectively. There was no significant difference in water holding capacity and cooking loss between treatments (P>0.05), but it was slightly lower in the control group. Among the various functional components in meat, β-carotene was not detected, but α-tocopherol was significantly higher in WCR-TMR group and vitamin A content in control (P<0.05). The a-value in the meat color index decreased significantly with longer storage period in the control group, whereas the WCR-TMR fed group showed no significant difference (P>0.05) according to the storage period. There were no difference between the treatments in the TBARS (2-Thiobarbituric acid reactive substances) value used as an indicator of lipid oxidation and in fatty acid content. But the control group had high myristic acid content, whereas the WCR-TMR supplemented group showed higher oleic acid and linoleic acid content. In conclusion, feeding of WCR based-TMR increased the α-tocopherol content, which is a functional ingredient in meat, and the other components were not significantly different from the control. Therefore, it was judged that there was no significant difference between WCR based and conventional TMR in meat quality characteristics.

Study on the Recognition of Brucellosis for Rural Residents (일부 농촌지역 주민의 브루셀라증 인지도)

  • Objectives: This study was conducted to understand the recognition on brucellosis in rural communities and to apply the results to counterplan for brucellosis control and prevention. Methods: The authors conducted a questionnaire survey from September 8 to 13, 2004 among the residents in 2 rural communities: 507 people at Gigye-myeon and 521 people at Buk-myeon. The authors developed a questionnaire which investigated age, gender, general recognition of brucellosis, status of cattle breeding, compensation for loss due to brucellosis and so on. Results: The study group contained 195 (19.0%) stock breeders (veterinarians and cattle merchants were included) and 833 (81.0%) non-stock breeders. For the question, 'Have you ever heard about brucellosis or do you know about brucellosis?', 283 respondents (27.5%) replied affirmatively. For the question, 'Do you know that pregnant women who suffer brucellosis may have a miscarriage?', 98 respondents (35.1%) replied affirmatively. For the question, 'Have your cattle ever aborted or calved a premature calf?', 28 respondents (14.9%) replied affirmatively. For the question, 'Have you ever handled an abortus or a premature calf with your bare hands?', 10 respondents (5.3%) replied affirmatively. For the question, 'Do you know that the government compensates for slaughter loss due to brucellosis?', 46 respondents (25.0%) replied affirmatively. Conclusions: Many people were ignorant about brucellosis. Therefore, their ignorance must be corrected by a publicity campaign. Some stock breeders handled the cattle abortus with their bare hand. Stock breeders must wear protective equipment during working. The authors expect that this study will assist in establishing both a safe cattle breeding environment and preventive strategies for diminishing the incidence of brucellosis.

Effects of the Raising Period on Meat Quality in Two New Strains of Korean Native Chicken (사육기간에 따른 신품종 및 상용토종닭의 육질특성 비교분석)

  • This study was conducted to determine the nutritional quality of two newly-developed native chicken strains, compared to the commercial Korean native chicken. A total of 600 chickens (CON: Hanhyup No. 3, CL1: candidate line C, CL2: candidate line D) raised under the same conditions were slaughtered at either 5 or 12 weeks. Leg meat was then obtained and analyzed for its physicochemical properties. The results showed that regardless of the growing period, there was no variation in proximate composition (P>0.05), except for crude protein, between strains. Water holding capacity did not differ between strains at either slaughter age; however, it was significantly lower in the 12-week group than in the 5-week group (P≤0.05). For both skin and muscle color, a* and b* values were lower at 12 weeks than at 5 weeks (P≤0.05). DPPH radical-scavenging activity tended to be lower at 12 weeks than at 5 weeks (P≤0.05). Furthermore, all chickens slaughtered at 5 weeks were found to have greater contents of linoleic acid (18:2) and polyunsaturated fatty acids (PUFA) and lower atherogenicity and thrombogenicity indices than those slaughtered at 12 weeks (P≤0.05). However, anserine, betaine, and glucose were more concentrated among the lines at 12 weeks than at 5 weeks (P≤0.05). In conclusion, the quality traits of native chickens were distinct by different production stages rather than chicken lines.
