우리 나라 식품수급표 자료을 분석한 티아민, 리보플라빈, 나이아시신의 주요 급원식품 (Food Sources of Thiamin, Riboflavin and Niacin Based on Food Composition Table and National Annual Food Supply Data in Food Balance Sheet)

  • The purpose of the study was to find out the rich sources of vitamin B-complexes in Korea. Thirty kinds of vitamin B-complex (thiamin, riboflavin, and niacin) rich foods were selected based on vitamin content in 100g edible portion, single serving size, 100kcal energy content, and 1999 national annual food supply data. The results were summarized as follows: \circled1 Most of the thiamin rich foods selected were fishes: half of the foods selected was fishes when based on the contents in single serving size. On the other hand, about half of the foods selected were vegetables when based on the thiamin contents in 100kcal energy content. A relatively large number of food groups were included such as fishes, vegetables, beans, grains, meats, etc. when based on the contents in 100g edible portion, and national food supply data. \circled2 Most of the riboflavin rich foods selected were fishes and shellfishes, and vegetables: half of the foods selected were fishes and shellfishes when based on the content in 100g edible portion; two-thirds of the foods selected were vegetables when based on the content in single serving size; half of the foods selected were vegetables when based on the content in 100kcal. \circled3 The most important niacin sources are fishes: Most than 60% of the foods selected were fishes when based o the 100g edible portion, single serving size, and 100kcal energy content. Laver is very important source of all 3 vitamin B-complexes in Korea when based on the content in 100g edible portion, 100kcal energy content, and national annual food supply but not in single serving size. On the other hand, rice is rice is sources of all 3 vitamin B-complexes when based on the national annual food supply, but not in single serving size. On the other hand, rice sources of all 3 vitamin B-complexes when based on the national annual food supply, but is not included in 30 rich foods selected based on the content in 100g edible portion, single serving size, and 100kcal energy content. Mushrooms are also very important food sources of thiamin, riboflavin, and niacin when based on the vitamin content in 100g edible portion, single serving size, and 100kcal energy content but not included in 10 rich food selected based on the national food supply data.

중.고등학교 가정과 교과서에 제시된 상용식품의 1인분량 설정 및 영양성분 함량 산출 (Determination of Single Serving of Cooked Food and Its Nutritive Values Calculation Presented in Home Econmics Text Books)

  • The purpose of this study is to revise the food composition table based on commonly consumed single serving size of cooked food so the people can easily use the table in each meal. With this revised food composition table, everybody can easily calculate how much they eat, and plan the menu according to how much they need, so hopely contribute to reduce the leftover foods. Eighty-nine kinds of prepared food dishes were selected based on 13 home economics text books of the junior and high schools. The results are summarized as follows: Cooked food dishes comprise various kinds of rice dishes, korean style soups and stewes, fried, roasted or steamed fishes, vegetables and meats, and desserts. Single serving size of cooked food dishes are presented below: 1) rise : 180∼250g, 1(1/3)∼1(2/3)cup 2)soup:320∼400g, 1(1/2)∼2cup 3)pan fried fish or vegetable : 40∼70g 4)deep fried vegetable, fish or meat; 60g 5)kimchi :50g Single serving size of all other dishes are presented based upon the most commonly consumed amount in each meal by adult male.

비타민 A와 비타민 C의 급원식품 선정 (Food Sources of Vitamin A and Vitamin C)

  • The purpose of this study was to find out and advocate the intake of vitamin A and C rich foods in Korean people. Forty kinds of vitamin A and C rich foods were selected by the vitamin quantity in 100g edible portion. in single serving size. and by the 1997 national food supply data. The results were summarized as follows. 1. The vitamin A rich foods 1) The food sources of vitamin A presented in the middle and high school home economics textbooks were liver. egg/egg yolk. milk/dairy products. and green and yellow vegetables. etc. 2) The vitamin A rich foods by 100g edible portion ere in order of red pepper(dried). laver(dried). carrot. meat edible viscera. eel. etc. And the vitamin A rich foods by the vitamin A content in single serving size were in order of carrot. eel. meat edible viscera. water shield. red pepper(dried). etc. 3) The vitamin A suppling foods according to the 1997 national food supply data were in order of red pepper(dried). meat edible viscera. laver. carrot. etc. The green and yellow vegetables. fish and shellfish. and seaweeds were the most important sources of vitamin A in Korean. 2. The vitamin C rich foods 1) The food sources of vitamin C presented in the textbooks of middle and high school were strawberry. citrus fruits. and vegetables such as spinach. chinese cabbage. radish. crown daisy. etc. 2) The vitamin C rich foods on the basis of the vitamin C content in 100g edible portion were in order of sweet pepper. goose berry. citron. strawberry. water shield. etc. And the vitamin C rich foods by the quantity in single serving size were in order of strawberry. goose berry. citron. sweet pepper. lemon. etc. 3) The vitamin C suppling foods according to the 1997 national food supply data were in order of chinese cabbage. radish. citrus fruits. strawberry. etc. Not only vegetables and fruits but also seaweeds like dried laver and sea mustard were the most important source of vitamin C in korean.

One portion size of foods frequently consumed by Korean adults

  • This study aimed to define a one portion size of food items frequently consumed for convenient use by Koreans in food selection, diet planning, and nutritional evaluation. We analyzed using the original data on 5,436 persons (60.87%) aged 20~64 years among 8,930 persons to whom NHANES 2005 and selected food items consumed by the intake frequency of 30 or higher among the 500 most frequently consumed food items. A total of 374 varieties of food items of regular use were selected. And the portion size of food items was set on the basis of the median (50th percentile) of the portion size for a single intake by a single person was analyzed. In cereals, the portion size of well polished rice was 80 g. In meats, the portion size of Korean beef cattle was 25 g. Among vegetable items, the portion size of Baechukimchi was 40 g. The portion size of the food items of regular use set in this study will be conveniently and effectively used by general consumers in selecting food items for a nutritionally balanced diet. In addition, these will be used as the basic data in setting the serving size in meal planning.

Comparison of Anti-oxidative Activity in a Single Serving Size of the Commercial Coffees and Teas

  • 커피와 다류에 대한 소비는 전 세계적으로 해마다 증가하는 추세이며, 한국을 포함하여 아시아권에도 물 다음으로 가장 많은 소비가 이루어지는 음료는 커피와 차(녹차, 케모마일차, 페퍼민트차, 둥글레차, 보이차, 홍차, 대추차)이다. 본 연구는 국내에서 시판되는 커피전문점의 브랜드 커피 5종과 침출차 20종(녹차 4종, 홍차 3종, 보이차 3종, 케모마일차 3종, 페퍼민트차 3종, 둥글레차 3종, 대추차 1종), 고형차 2종(대추차 2종)에 대하여 각 음료 1잔에 함유되어 있는 비타민C, 카페인, 총폴리페놀, 플라보노이드를 분석하였고, 이들의 항산화활성을 측정하여 서로의 상관관계를 살펴보았다. 추가적으로 항산화활성이 높은 커피와 다류 총 4종을 대상으로 과산화수소($H_2O_2$)로 유도된 산화적 스트레스로부터 세포 보호효과를 평가하여 시판 커피와 다류의 항산화 연구를 위한 기초자료를 확보하고자 하였다. 녹차와 홍차 각각 1잔당 비타민 C 함량은 0.04~1.58 mg 이었고 커피와 나머지 차는 비타민 C가 검출되지 않았다. 카페인 함량은 브랜드 커피가 1잔당 150.17~202.75 mg으로 다른 종류의 음료보다 높았다. 음료에 함유된 총 폴리페놀 함량은 gallic acid의 등량값(GAE)으로 표시할 때 브랜드 커피 A($BC_A$)가 265.54 mg / serving size으로 가장 높았고, 플라보노이드 함량은 quercetin 등량값(QE)으로 브랜드 커피 B($BC_B$)가 12.14 mg / serving size으로 가장 높았다. 음료 4종(브랜드 커피 A, C 그리고 녹차 D, 홍차 A) 시료의 농도가 높아질수록 HeLa 세포 내활성산소종(reactive oxygen species, ROS) 생성 억제효과 및 $H_2O_2$의 소거활성이 증가하였다. 본 연구결과 브랜드 커피 및 홍차, 녹차는 각각 1잔당 비타민 C의 등량값으로 590, 330, 300 mg의 항산화능을 가지며, HeLa 세포 내에서도 활성산소 감소효과가 확인되는 우수한 항산화 음료로 평가되었다.

일상식 상차림 패턴과 1인 1회 분량에 근거한 중학생의 식단계획 평가 (Assessment of Menu Plan Prepared by Middle School Students According to Ordinary Meal Pattern and Single Serving Size)

  • It is important to prepare and execute the menu plan for proper and balanced intake of nutrients in the adolescence. This study investigated the new approach for planning menu by ordinary meal pattern based on cooked foods groups. The amounts of cooked foods in the menu plan assumed to be single serving size. The middle school second graders participated for the study. A total of 313 questionnaires were analyzed using CAN-pro 3.0 and SPSS WIN 12.0 program. The average content of energy in the menu plan was 2,453 kcal, the average ratios of energy contribution by carbohydrate, protein and fat were 54.3%, 17.9%, 27.8%, respectively. A total of 56.9% menu plans (94.9% of male and 8.7% of female students') were below the lowest limit of optimum carbohydrate energy ratio of 55%. A total of 29.1% menu plans (33.1% of male and 23.9% of female students') were exceed the highest limit of optimum fat energy ratio of 30%. The NAR of minerals and vitamins were all 1.0 except for calcium (0.92) and folate (0.88). When INQ of the individual cooked food groups were calculated, kimch was the highest in all minerals and vitamins examined, suggesting that kimch may be the best source for all minerals and vitamins, including calcium and folate with the minimum change in energy content. In conclusion, the menu plan by ordinary meal pattern in this study was low in carbohydrate, high in fat, and contained enough minerals and vitamins except for calcium and folate for middle school students.

Characterization of Individual Atmospheric Aerosols Using Quantitative Energy Dispersive-Electron Probe X-ray Microanalysis: A Review

  • Great concerns about atmospheric aerosols are attributed to their multiple roles to atmospheric processes. For example, atmospheric aerosols influence global climate, directly by scattering or absorbing solar radiations and indirectly by serving as cloud condensation nuclei. They also have a significant impact on human health and visibility. Many of these effects depend on the size and composition of atmospheric aerosols, and thus detailed information on the physicochemical properties and the distribution of airborne particles is critical to accurately predict their impact on the Earth's climate as well as human health. A single particle analysis technique, named low-Z particle electron probe X-ray microanalysis (low-Z particle EPMA) that can determine the concentration of low-Z elements such as carbon, nitrogen and oxygen in a microscopic volume has been developed. The capability of quantitative analysis of low-Z elements in individual particle allows the characterization of especially important atmospheric particles such as sulfates, nitrates, ammonium, and carbonaceous particles. Furthermore, the diversity and the complicated heterogeneity of atmospheric particles in chemical compositions can be investigated in detail. In this review, the development and methodology of low-Z particle EPMA for the analysis of atmospheric aerosols are introduced. Also, its typical applications for the characterization of various atmospheric particles, i.e., on the chemical compositions, morphologies, the size segregated distributions, and the origins of Asian dust, urban aerosols, indoor aerosols in underground subway station, and Arctic aerosols, are illustrated.

Beamforming Optimization for Multiuser Two-Tier Networks

  • With the incitation to reduce power consumption and the aggressive reuse of spectral resources, there is an inevitable trend towards the deployment of small-cell networks by decomposing a traditional single-tier network into a multi-tier network with very high throughput per network area. However, this cell size reduction increases the complexity of network operation and the severity of cross-tier interference. In this paper, we consider a downlink two-tier network comprising of a multiple-antenna macrocell base station and a single femtocell access point, each serving multiples users with a single antenna. In this scenario, we treat the following beamforming optimization problems: i) Total transmit power minimization problem; ii) mean-square error balancing problem; and iii) interference power minimization problem. In the presence of perfect channel state information (CSI), we formulate the optimization algorithms in a centralized manner and determine the optimal beamformers using standard convex optimization techniques. In addition, we propose semi-decentralized algorithms to overcome the drawback of centralized design by introducing the signal-to-leakage plus noise ratio criteria. Taking into account imperfect CSI for both centralized and semi-decentralized approaches, we also propose robust algorithms tailored by the worst-case design to mitigate the effect of channel uncertainty. Finally, numerical results are presented to validate our proposed algorithms.

시판 커피 한 컵에 함유된 생리활성 성분과 항산화활성 (Antioxidant Capacity and Bioactive Composition of a Single Serving Size of Regular Coffee Varieties Commercially Available in Korea)

  • 시판중인 레귤러커피 한 컵에 함유되어 있는 대표적인 생리활성 성분의 함량과 항산화 활성 등을 측정한 결과는 다음과 같다. 총 페놀함량은 gallic acid 등량 값으로 나타낼 때 63.83-110.12 mg이며, 총 플라보노이드 함량은 catechin 등량 값으로 35.27-69.27 mg이었다. 커피용액 시료에 있는 이들 물질의 분포는 수용성층에 각각 96%와 91% 이상 함유되었다. 레귤러커피 한 컵에 함유된 CGA와 카페인의 함량은 각각 5.17-69.78 mg과 74.38-146.32 mg으로 측정되었다. DPPH와 ABTS 라디컬 소거능 및 환원력 등의 방법으로 평가한 5개 브랜드의 레귤러커피의 항산화 활성은 표준 항산화제인 Trolox 등량 값으로 88.78-487.52 mg의 범위로 나타나 생리활성 성분의 농도에 따라 브랜드 커피의 항산화 활성은 매우 다르게(p<0.05) 나타남을 알 수 있다. 커피음료의 항산화활성은 수용성 항산화물질 특히 플라보노이드(r2=0.8705) 및 폴리페놀 함량($r^2$=0.7732)과 매우 높은 상관도를 보였으며, 그 밖에 카페인($r^2$=0.6194)과 CGA ($r^2$=0.3871)의 함량도 커피의 항산화활성에 기여하는 주요 항산화성분으로 나타났다. 본 실험에 사용된 5종의 브랜드 커피 중 전체적으로 브랜드 B와 C의 커피가 생리활성 성분의 함량과 항산화활성이 가장 높은 것으로 평가되었다(p<0.05).

영양권장량과 식사구성안에 대한교과서 내용 분석 및 학생의 이해도 연구 (A Study of Textbook Contents Analysis and Students' Understanding on the Korean Recommended Dietary Allowance and Food Guide in Middle School Home Economics Education)

  • 본 연구는 양적, 질적으로 균형있는 식생활을 하기 위한 기본적인 지식이 된다고 여겨지는 영양권장량과 식사구성안에 대하여 중학교 1학년 기술${\cdot}$ 가정 교과서 10종의 내용을 분석하였고 중학교 1학년 학생의 영양권장량과 식사 구성안에 대한 이해도를 살펴보았다. 영양권장량과 식사구성안에 대한 교과서 설명이 대부분 충분하지 못한 것으로 나타났으며, 특히 영양권장량과 영양필요량의 차이에 대하여 오해를 일으킬 만한 표현들이 많았다. 그리고 식사구성안에 대한 정의 규정이 대체로 미흡하였으며, 식품구성탑과 1인 1회 분량에 대하여 표현이 정확하지 못하였거나 또는 실제 식품 예에서 오류가 있었던 교과서도 확인되었다. 학생 가운데 많은 수가 영양권장량이 대다수 국민의 영양 필요량을 충족시키는 여유있는 양임을 이해하지 못하고 있는 것으로 나타났으며, 식사구성안에 있어 식품구성탑은 다른 개념에 비해 비교적 이해도가 높았으나, 1인 1회 분량은 정확히 이해하지 못하는 경향을 보였다. 결과적으로 영양권장량과 식사구성안의 정의와 설명을 포함하는 기술${\cdot}$가정 교과서의 내용 수정 및 보완이 필요하며. 또한 학생의 이해도를 확인할 수 있는 조사도구 개발의 후속 연구가 필요하다고 생각한다.
