초등학교 급식의 수산물 이용실태 및 소비촉진 방안에 관한 연구 (A Study on Utilization and Consumption Promotion of Seafood in Elementary School Lunch Program)

  • The objective of this study consists in promoting seafood consumption by increasing its intake opportunities for children through analysis of seafood using frequency in the elementary school lunch program. For that purpose, randomly sampled out from elementary schools through the county were 155 dietitians and 5th grade 3581 children, on whom a mail survey was conducted to analyse their seafood using frequency, and preference, and lunch menu by seasons. Results of this study are as follows : The seafood using frequency of the respondents represented the highest value in one or two times a week, while obstacles in seafood use presented high values in the safety of food by 71.6% and children preference by 68.4%. The seafood intake frequency of the respondents showed the highest value in three or four times a week by 34.5% and the places of seafood intake indicated the highest response in the home by 43.5% and then school lunch and dining out. The dietitians responded that children for the most part had not a preference for seafood, whereas the children pointed out average by 46.2%. As for reasons for avoidance of seafood, the dietitians expressed the highest response in it depends cooking methods by 45.8%, while the children because of its peculiar taste and smell by 42.1%. Their required improvement showed the highest response in the taste improvement by 51.8%. The children most preference for seafood that dietitians thought included fried Alaska pollack and shrimp cutlet, while dislikes braised mackerels and seasoned cold jelly fish. Cooking methods frequently used were represented in order of soup, hot soup, and stew, and the children's preferred cooking method was from fried food. Above results suggested that the intention to increase seafood using frequency is needed to at the time of planning the menus so that more seafood-providing opportunities can be given. The development of cooking methods is urgently needed that can change the taste or the smell of seafood, and concurrently with this conveniences be taken into account in eating such as elimination of bones, etc. as early as the states of purchase or checking of seafood. The reflection of the preferred cooking methods is thought to contribute to the enhancement of satisfaction with the seafood as well as to the reduction of food remnants. The recommendation of intake of low preference but nutritionally good seafood is required to be expanded in nutrition education.

생식용 굴(Crassostrea gigas) 작업장의 위생안전성에 대한 모니터링 (Safety Monitoring of a Processing Plant for Preparing Raw Oysters Crassostrea gigas for Consumption)

  • This study assessed the safety of raw oysters Crassostrea gigas for consumption during processing in a processing plant. Bacterial contamination (e.g., viable cell counts, coliform groups, Escherichia. coli and pathogenic bacteria) and chemical contamination (e.g., heavy metals and shellfish toxins) were measured on raw oysters, a processing equipment, employees and work areas. No total mercury, lead, paralytic shellfish poison, diarrheic shellfish poison or norovirus was detected in any post-harvested oyster samples. However, the cadmium level ranged from 0.1-0.2 mg/kg. The viable cell count, E. coli and coliform group levels in post-harvested oysters ranged from 4.00-4.54 log CFU/g, ND-210 MPN/100 g and 110-410 MPN/100 g, respectively. The viable contaminating cell counts on employees, equipment and work areas were in the range of $0.90-3.46log\;CFU/100cm^2$. Airborne bacteria in the work areas ranged from 0.60 to 1.81 log CFU/plate/15 min. Thus, no significant health risks were detected in the processing plant.

Developing the Vulnerability Factor Structure Affecting Injuries and Health Problems Among Migrant Seafood Processing Industry Workers

  • Background: The vulnerability of international migrant workers is on the rise, affecting the frequency of occupational accidents at workplaces worldwide. If migrant workers are managed in the same way as native workers, the consequences on safety assurance and risk management will be significant. This study aimed to develop the vulnerability factor model for migrant workers in seafood processing industries because of significant risk-laden labor of Thailand, which could be a solution to control the risk effectively. Methods: A total of 569 migrant workers were surveyed (432 Burmese and 137 Cambodian), beginning with 40 initial vulnerability factors identified in the questionnaire established from experts. The data were analyzed through descriptive analysis; exploratory factor analysis (EFA) and confirmatory factor analysis (CFA) were used to ascertain the model. Results: The result of content validity >0.67 and the Cronbach's alpha of 0.957 specified the high reliability of 40 factors. The EFA indicated a total variance of 65.49%. The final CFA validated the model and had an empirical fitting; chi-square = 85.34, Adjust Goodness-of-Fit Index = 0.96, and root mean square error of approximation = 0.016. The structure concluded with three dimensions and 18 factors. Dimension 1 of the structure, "multicultural safety operation," contained 12 factors; Dimension 2, "wellbeing," contained four factors; and Dimension 3, "communication technology," contained two factors. Conclusion: The vulnerability factor structure developed in this study included three dimensions and 18 factors that were significantly empirical. The knowledge enhanced safety management in the context of vulnerability factor structure for migrant workers at the workplace.

고품질 수산물 생산지원시스템 설계 (Design of a High-quality Seafood Production Support System)

  • 식품선택에 있어서 소비자들은 철저한 품질관리를 통한 식품의 안전성과 신뢰성을 중요하게 여긴다. 또한 지역과 환경을 고려한 지속 가능한 생산과 소비에 관심이 많다. 본 연구에서는 소비자의 요구와 세계적인 식품인증 흐름에 따른 안전성과 신뢰성 있는 수산물 생산을 위해, 국제적 위생관리 기준인 HACCP인증과 이력제 인증, 친환경 수산물인증의 기반시스템이 되도록 고품질 수산물 생산지원시스템을 제안하고 설계하였다. 고품질 수산물 생산지원 시스템은 양식장 HACCP, 환경 제어모니터링, 생산이력, 질병예방/질병알림, 수산물 가격조회 등 5개 부분으로 구성된다. 제안 시스템은 다양한 u-IT 기술인 USN, 네트워크 CCTV, 모바일 기기 등의 첨단 융 복합 기술을 활용한다.

수산물을 첨가한 배추김치의 영양성분 분석 (Analysis of Nutrient Composition of Baechu Kimchi (Chinese Cabbage Kimchi) with Seafoods)

  • 수산불(멍게, 키조개, 가리비, 자가비, 황석어, 도미, 낙지, 병태, 전어, 가오리, 숭어, 홍어, 갈치 및 멸치) 14종을 첨가한 배추김치의 레시피를 확립하여 제조하였고 저온숙성 7일차의 시료를 취하여 일반성분, 비타민, 무기질, 구성 및 유리 아미노산 함량을 조사하였다. 수산물을 첨가하여 제조한 배추김치 14종의 수분함량은 82.09~88.56% 범위였고, 조지방 함량은 0.31~0.64%, 조회분 함량은 2.70~3.50% 범위를 나타내어 시료별로 큰 차이를 보이지 않았다. 그러나 수산물을 첨가한 배추김치의 조단백질의 함량은 2.42~5.l5% 수준으로, 수산물을 첨가하지 않은 대조구 배추김치의 2% 보다 높은 값을 나타내었다. 수산물을 첨가한 배추김치 14종 중, 가자미 배추김치의 철 및 칼슘 함량이 각각 4.1 mg/100 g 및 74 mg/100 g으로 가장 높은 함량을 나타내었고 인 함량의 경우는 홍어배추김치가 117 mg/100 g으로 가장 높게 나타났다. 비타민 A의 함량은 수산물 14종을 첨가한 배추김치가 대조구보다 높게 나타났고, 비타민 $B_2$ 및 비타민 C의 함량은 멍게배추김치가 각각 0.90 mg/100 g 및 8.48 mg/100 g으로 수산물을 첨가한 배추김치 중에서 가장 높게 나타났다. 한편 수산물 14종을 첨가한 배추김치의 주요 구성 아미노산은 glutamic acid, aspartic acid, proline 및 alanine 이었고 그중에서도 glutamic acid의 함량이 가장 높게 나타났다. 수산물을 첨가하여 제조한 배추김치 14종에 대한 유리아미노산 함량의 50% 내외를 차지하고 있는 것은 hydroxyproline으로 나타났고 다음으로 glutamic acid, alanine, proline, leucine, valine 순이었다. 수산물을 첨가한 배추김치는 우리의 식생활에서 단백질 공급원으로 중요한 역할을 담당할 것으로 생각되어지고, 배추김치에 수산물을 첨가함으로서 기존의 배추김치보다 철, 칼슘, 비타민 A 함량이 높아지고 아미노산 조성 및 함량에도 긍정적인 영향을 미침을 알 수 있었다.

봄철 영·호남 지역에서 유통되는 생바지락(Ruditapes philippinarum)의 미생물학적·화학적 위해요소 분석 및 안전성 평가 (Risk Analysis and Safety Assessment of Microbiological and Chemical Hazards in the Raw Short-Neck Clams Ruditapes philippinarum Distributed in the Yeongnam and Honam Area During the Spring Season)

  • For the safety assessment of microbiological and chemical hazards in raw short-neck clam Ruditapes philippinarum distributed in the Yeongnam and Honam areas during the spring season, the contamination levels of total viable bacteria, coliforms, Escherichia coli, and nine pathogenic bacteria (Staphylococcus aureus, Salmonella spp., Vibrio parahaemolyticus, Clostridium perfringens, Listeria monocytogenes, enterohemorrhagic Escherichia coli, Yersinia enterocolitica, Bacillus cereus, Campylobacter jejuni) as microbiological hazards, and heavy metals (lead, cadmium, total mercury), benzopyrene, shellfish poison (paralytic, diarrhetic, amnesic), and radioactivity (131I, 134Cs+137Cs) were also analyzed in 15 samples based on the methods of the Korean Food Code. The average contamination levels of total viable bacteria were 3.11 (1.40-4.49) log CFU/g, and coliforms were detected in 5 out of 15 samples (1.18-1.85 log CFU/g). E. coli and S. aureus were not detected in all samples. Furthermore, the presence of 8 pathogens were not detected in all samples. The average contamination levels of lead, cadmium, and total mercury were 0.155 (0.079-0.264), 0.160 (0.040-0.287), and 0.017 (0.008-0.026) mg/kg, respectively. Benzo(a)pyrene, shellfish poison, and radioactivity were not detected in all samples. The results of this study suggest that the safety against all microbiological and chemical hazard factors in raw short-neck clams distributed in markets has been assured.

시판 유통 마른 김(Pyropia tenera)의 미생물학적·화학적 위해요소 분석 및 안전성 평가 (Safety Assessment of Microbiological and Chemical Hazards in Commercial Dried Laver Pyropia tenera)

  • Fifteen samples of dried laver Pyropia tenera were collected from markets and processing plants in Korea for an assessment of their microbial and chemical hazards, in accordance with the Korean food code. The contamination levels of total viable bacteria, coliforms, Escherichia coli, and nine other pathogenic bacteria (Staphylococcus aureus, Salmonella spp., Vibrio parahaemolyticus, Clostridium perfringens, Listeria monocytogenes, Enterohemorrhagic Escherichia coli, Yersinia enterocolitica, Bacillus cereus, and Campylobacter jejuni) were evaluated The concentrations of heavy metals (lead, cadmium, total mercury, and total arsenic) and radioactive isotopes (131I, and 134Cs+137Cs) in the laver samples were also determined. The total viable count of bacteria was 2.62±0.80 (1.48-4.45) CFU/g. The contamination levels of lead, cadmium, total mercury, and total arsenic were 0.024±0.005 (0.018-0.035), 0.090±0.038 (0.041-0.146), 0.008±0.005 (0.003-0.018) and 1.315±0.372 (0.814-1.930) mg/kg, respectively. All samples tested negative for significant levels of radioactivity, the nine pathogenic bacteria, coliforms, and E. coli (<1.00 CFU/g). We assume that ensuring the microbiological and chemical safety of dried laver can increase the demand for its exportation. The present study may serve as a basis for microbiological and chemical hazard assessment of dried lavers.

유통 조미건어포 중 프로피온산, 안식향산, 소브산 함유량 조사 (Determination of Propionic, Benzoic, and Sorbic Acids in Dried Seasoned Seafood Products in Korea)

  • 본 연구는 국내 유통 조미건어포 27건 중 프로피온산, 안식향산, 소브산 함량을 분석하였다. 식품의약품안전처 식품공전의 분석 방법으로 GC-FID를 이용하여 프로피온산을 분석하였고 HPLC-DAD를 이용하여 안식향산과 소브산을 분석하였다. 그 결과 총 27건 중 프로피온산은 16건(검출률 59%), 안식향산은 불검출, 소브산은 7건(검출률 26%)이 검출되었다. 조미건어포에서 프로피온산은 ND-125.10 mg/kg의 농도로 검출이 되었으며 이는 미생물 최소저해농도 이하의 수치로 보존 효과를 나타낼 수 없는 농도로 보여 의도적으로 첨가되지는 않았을 것으로 사료된다. 또한, 소브산의 경우 소르빈산 칼륨이 표기된 시료에서만 검출되었으며 표기된 시료 8건 중 7건에서만 검출이 되었다. 소브산 검출 시료의 경우 658.18 mg/kg의 농도까지 검출이 되었으며, 이는 그 사용 기준에 적합한 수치였다. 본 연구는 향후 조미건어포에 대한 안전 관리를 위한 기초자료로 사용될 수 있을 것으로 사료된다.

국내 시판 주요 냉동수산식품의 영양 특성 (Nutritional Characteristics of the Major Commercial Frozen Seafood Products in Korea)

  • We investigated the nutritional components of the major commercial frozen seafood products (MCFSP) [sliced frozen-skipjack tuna (ST), -bigeye tuna (BET), -bluefin tuna (BFT), -yellowfin tuna (YT), fish steaks (FST), fish pancakes (FP), fish cutlets (FC), seafood cake balls (SCB), fried shrimp (FS), shrimp patties (SP), shrimp cutlets (SC)] in Korea. All species of sliced frozen tuna and FST were classified as low-calorie foods; the other frozen seafood products were classified as medium-calorie foods. The MCFSP were significant sources of nutritional and functional minerals: the SCB and SC provided calcium; the FST, FC, and SCB provided phosphorus; the BET, YT, and FST provided potassium; the FST, FC, and BFT provided magnesium; the FST, FP and SC provided iron; the SCB, FS, SP, and SC provided zinc; the YT and SCB provided copper; and the FC provided manganese. The total amino acid contents of the MCFSP were in the range of 6.85-26.34 g/100 g. Glutamic acid was the major amino acid in the SCB, FS, SP, and SC. Fatty acid contents were in the range of 386-2,925 mg/100 g; the major fatty acids in the ST, BFT and YT were 16:0, 18:1n-9, 22:6n-3. The MCFSP were not a significant source of vitamin A or riboflavin.

수입 수산물 검역 지원 시스템 ‘M-LIMS’의 설계 및 구현 (Implementation and Design of the Fisheries Quarantine Support System ‘M-LIMS’)

  • Over time, the import of seafood has been increased causing a corresponding increase in recall and recall costs of the fishery on the threshold level. In order to reduce recall costs and to ensure the safety of imported seafood, a moveable lab and its supporting software specialized in seafood inspection were designed. A new fishery quarantine support system software, ‘M-LIMS’ is proposed to strengthen an inspection and quarantine process for the imported seafood at the local level. This new software reads data from an external inspection equipment when it is connected to a USB or RS232 cable inspection equipment on a regular basis to save a report sent to the server after its use. Reading was possible by reading records on a central server. Each time users can check own data through a mobile device.
