Food Safety and Health Issues of Cultured Meat

  • The use of cultured meat, also known as in vitro meat, is claimed to be a way of meeting the growing demand for meat worldwide in a safe and disease-free manner, without sacrificing animal and lowering greenhouse gas emissions. However, its economic feasibility is limited by its cost, scale-up complexity, public neophobia and technophobia, and an imperfect knowledge of its impacts on human health. Cultured meat, which is obtained from stem cells using tissue engineering techniques, has been described as a potential alternative to the current meat production systems, which have extensive negative effects. To ensure that a food product is safe for human consumption, it is important to consider all aspects of its life cycle. In this context, the current review analyzes the major elements of the cultured meat life cycle, including the incorrect use of chemicals, such as pesticides or antibiotics, as well as improper processing and storage methods that determine the food safety of cultured meat. The purpose of this review is to determine food safety, health issues, and the potential risks associated with cultured meat production.

A Study on Worker-Exposure to Formaldehyde in Some Histological Laboratories of Hospitals (일부 종합병원 조직검사실에서의 포름알데히드 노출에 관한 연구)

  • This Study was conducted at nine Histological Laboratories in the hospitals located in Seoul from August 20 to October 10, 1996. The main purpose of this study was to assess the TWA & STEL exposure to formaldehyde and to evaluate factors affecting formaldehyde concentration in Histological Laboratory. With evaluated factors, proper improvement strategy to minimize exposure was suggested. The results are summarized as follows ; 1. The TWA concentrations of the personal samples ranged from 0.02 to 3.86 ppm and that of one laboratory out of nine was exceeding 0.75 ppm, USA OSHA standard. The TWA concentrations of the area samples ranged from 0.08 ppm to 1.49 ppm and those of three laboratories out of nine were exceeding OSHA standard. 2. When measurement was conducted on the working tables. around Formaldehyde vessel, fixation container and storage cabinet, the geometric means of TWA concentrations were 0.62 ppm, 0.64 ppm. 0.58 ppm and 0.37 ppm respectively. 3. When overnight fixed specimens were examined, the STEL concentrations of personal samples ranged from 0.59 ppm to 5.01 ppm, those of three laboratories out of nine were exceeding 2 ppm, OSHA standard and the STEL concentrations of area samples ranged from 0.31 ppm to 3.08 ppm, those of four laboratories from nine were exceeding OSHA standard. 4. Factors affecting Formaldehyde exposure level were sanitation state of laboratory, volume of the room and opening state of fixation container & formaldehyde vessel(p<0.05).

A Study on the Sanitation Condition of Public Facility (다중이용시설의 위생상태에 관한 조사연구)

  • Indoor air Quality in public facility same as bus terminal and subway station is very important for civil health. The purpose of this study was to investigate the concentration and distribution of PM10 and falling microorganism at the 5 subway stations and bus terminals from Summer 2003 to Summer 2005 in Kyunggi Province. The results were as follows. 1. The highest concentration of PM10 was $187ug/m^3$ at Bucheon Bus Terminal in 2005 while the lowest concentration of PM10 was $78ug/m^3$ at Suwon Bus Terminal in 2003. The year variation of PM10 concentration at the bus terminals in Kyunggi Province was in order of 2005 > 2004 > 2003. The average concentration of PM10 at the five Bus Terminal was $127ug/m^3$. 2. The highest concentration of PM10 was $225ug/m^3$ at Euijungbu Station l in 2004 while the lowest concentration of PM10 was $115ug/m^3$ at Suwon Station in 2003. The year variation of PM10 at the subway stations in Kyunggi Province was in order of 2004 > 2005 > 2003. The average concentration of PM10 at the five subway stations was $164ug/m^3$. 3. The average amount of falling microoganism at the five bus terminal in Kyunggi Provinc was 201CFU/plate. The minimum is 124 CFU/plate at Seongnam Bus Terminal in 2004 while the maximum is 268CFU/plate at Euijungbu Bus Terminal in summer 2005. The higher concentration of PM10 was 206CFU/plate in 2004 than 199CFU/plate in 2003 and 2005. 4. The minimum is 107CFU/plate at Anyang station in 2003 while the maximum was 263CFU/plate at Euijungbu station in 2003. The average amount of falling microoganism at the five subway stations in Kyunggi Province was 179 CFU/plate. The year variation of falling microorganism at the subway stations in Kyunggi Province was in order of 2004 > 2005 > 2003.

Rural Health subcenter Utilization Pattern and Its Related Factors (일부 농촌지역 주민의 보건지소 이용 양상과 관련요인)

  • In order to estimate the utilization pattern of a rural health subcenter, and to identify the recognition for it among the inhabitants in Kogsung district, a questionnaire survey was carried out for objects of 708 population. The results observed were as follows; 1. The annual utilization rate of a rural health subcenter for a basic health service unit was 27.5 per 100 persons, and annual mean visiting times was 1.43 times. 2. The most frequent disease by, annual health subcenter utilization illness was respiratory disease(26.5%), and the next was musculoskeletal disease(23.9%), gastrointestinal disease(15.9%) by order. 3. Favorite reasons for community health subcenter utilization were lower medical cost(23.4%), near distance from living place(20.7%) and lower disease severity(19.5%) by order. But disfavorite reasons for it were non effective treatment(26.2%), insufficient equipment(25.4%) and absence of specialist(17.4%) by order. 4. Insufficient items about community health subcenter utilization were restriction of treatment limit(47.1%), lower reliance(22.4%) and not punctral(21.8%) by order. 5. The results of logistic regression analysis suggested that statistically significant factors in health subcenter utilization were age, educational level and the nearest medical facility class. 6. There was no difference between recognition for a community health subcenter's work and actual utilizing service, and desirable works for it were disease preventing service, disease control of elderly and sanitation control by order. These results suggested that to increase the utilization of rural health subcenter and to promote the accessibility of rural residents to primary health care, there must be considered public relation about health subcenter, expansion of health equipment and recognition about access time.

  • The purpose of this study was to verify the dietitian’s job description(2000) for dietitians working at business and industry foodservice. The survey was carried out for the frequency, criticality and difficulty of each job description with 4 point. The number of subject was 39 dietitians, who have been working over 3 years at their position. The results are following ; 1. Duties with high frequency and criticality were menu managements, purchasing, storage and inventory controls, food productions, meal services, waste managements and sanitation managements. 2. Duties with middle frequency and high criticality were managing equipments and facility, human resources managements, financial managements, self promotions. 3. Duties with low frequency and high criticality were nutrition assessment (life cycles, certain diseases, specific conditions), medical nutritional theraphy, nutrition education and public health nutrition. 4. For difficulty, duties related food service had lower points than that of nutrition service.

  • The purpose of this study was to verify the dietitian’s job description(2000) for dietitians working at schools. The survey was carried out for the frequency, criticality and difficulty of each job description with 4 point scales. The number of subject was 125 dietitians, who have been working over 3 years at their position. The results are following ; 1. Study on Mutagenicity of the Water from Chung-gye and Joong-rang Streams (청계천 및 중랑천의 돌연변이원성 조사)

  • This paper is examine the mutagenic activities of the water samples from Chun-gye and Joong-rang streams in March, 1968. For this examination, adsorbed of mutagens by 'blue cotton' and Ames method using Salmonella typhimurium was used. The results were as follow; 1. The average revertant colonies of the Chun-gye stream on TA 98 was 120/plate and TA 100 was 267/plate. 2. The average revertant colonies of the Joong-rang stream on TA 98 was l06/plate and TA 100 was 407/plate. 3. Chun-gye and Joong-range streams showed about the same mutagenic activities. 4. The mutagenic activity of treated sewage was higher than of untreated sewage. It is considered that, among the influent materials with Zimpro oxidation fluid, human feces and urine increased mutagenic activities.

  • The elevation of present medical service using advanced science contributes to offer medical examination and treatment of good quality under the subject of patient satisfaction as well as patient impression. The dental service field charging some part of public health promotion and public welfare promotion also intends to improve the dental examination and treatment quality utilizing advanced science. The object of this research is the development of dental patient education system (DPES) using multimedia of new technology. DPES can be employed for these object, harmonious operation of dental examination and treatment, treatment quality improvement, disease notice to patient under the subject of patient satisfaction and patient impression, explanation of some selective treatment course, the verification of treatment necessities and treatment validation, and the improvement of treatment effect through the oral cavity sanitation education in the sense of prevention. This research also serves the development environment, the step to collect educational document, visual information and to structure those, and the examination of DPES efficiency in clinic.

Investigation of a Series of Brucellosis Cases in Gyeongsangbuk-do during 2003-2004 (2003-2004년 경상북도에서 발생한 브루셀라증)

  • Objectives : We conducted an investigation on 14 cases of brucellosis in Gyeongsangbuk-do during 2003-2004 to understand the source of infection and the transmission routes of brucellosis. Methods : The authors visited the each of the health centers and we examined the patients, their written epidemiologic questionnaire and the occurrence of bovine brucellosis. We visited the patients' living and work areas, and we examined their occupations, the date they developed symptoms, the progress of their symptoms, whether or not they were treated, their current status, whether or not they consumed raw milk and raw meat, and if their work was related to cattle breeding and the related details. We reviewed the results of the blood tests and medical records and we examined the cattle's barn. Results : There were 3 patients in 2003 and 11 patients in 2004. All of their brucella antibody titer exceeded 1:160. The patients' symptoms were fever, myalgia, malaise, chills and an influenza-like illness, but the clinical signs were absent on the medical records. Brucella abortus were cultured from 3 of the patients' blood samples. Conclusions : When the authors discovered the transmission routes, they were divided into 4 different sorts. The first route was related to cattle birth such that patients touched the calves or placentas that were infected with the Brucella species. The second route was related to performing artificial insemination on the cattle and the semen that was used for artificial insemination. The third route was due to the ingestion of raw meat and milk. The last route was due to sexual intercourse between the patients.
