Optimized Conditions of Model Processing for Ready-to-eat Style Galbi-jjim Prepared by Sous-vide and Cook-chill System

  • To develop ready-to-eat (RTE) style Korean traditional Galbi-jjim, the optimal conditions for sous-vide cooking and cookchill preparation and the sensory properties of the cooked products were investigated. During heating, the meat core temperatures reached $85^{\circ}C$ within 30 min and 45 min when a water bath and combination oven were used, respectively. Chilling to $3^{\circ}C$ within 45 min was conducted to meet the standards for microbiological safety set by the UK Department of Health and Social Security (DHSS) Guideline. Galbi-jjim that was vacuum-cooked in a water bath was much more tender than that of Galbi-jjim prepared using the cook-chill method, but had no difference in any reheating methods. The average sensory scores of juiciness and the overall acceptance of Galbi-jjim were significantly higher when water bath cooking was used, and there were no differences in reheating methods. In conclusion, the serial methods of sous-vide processing and rapid chilling can be applied to produce RTE traditional Galbi-jjim, and this can be conducted while meeting the standards specified in safety guidelines.

농작업현장에 적용 가능한 안전보건 기술지침 항목 선정에 관한 연구 (A Study on the Development of Technical Guidelines for Safety and Health in Agricultural Workplaces)

  • Objectives: This study aimed to select items for technical guidelines through the guidelines of the Korean Occupational Safety and Health Agency (KOSHA) for agricultural workplaces. Methods: All 1,308 guidelines provided by KOSHA were reviewed and categorized using a Delphi technique questionnaire on their compatibility and urgency. Results: Among all the KOSHA guidelines, 100 items related to agricultural workplaces were selected. After that, two Delphi questionnaires were conducted and 46 items were finally selected. The average compatibility was calculated as 4.26, and urgency was 2.39. As a result of measuring the content validity of 46 items, six items were identified that were not relevant to agriculture. The final selected items were classified into four categories: Health examination and management, machinery standards, safety and health standard guides, and workplace environment management. Conclusions: The various risk factors at agricultural workplaces should be prevented and managed. It was shown that related technical guidelines or work standard manuals should be prepared. The technical guidelines of KOSHA will be provided as basic categories in the agricultural sector.

지방부 도로에서 평면선형 설계관리의 필요성 (A Need of Management of Horizontal Alignment Design at Rural Roads)

  • 현 도로설계기준은 설계속도에 기반하여 선형설계에 관한 지침을 제시하고 있으며, 이는 설계속도가 도로 공용 후에 운전자의 주행 속도와 거의 동일할 것임을 전제하고 있다. 도로 평면 곡선부의 설계도 주어진 설계속도에 따라 운전자가 쾌적성을 유지한 채 통과할 수 있는 최소곡선반경을 기준으로 제시하고 있다. 그러나 쾌적성에 기초한 횡방향 미끄럼마찰계수는 실제 습윤노면에서 관측되는 물리적인 횡방향 미끄럼마찰계수보다 낮기 때문에 기준에 제시된 곡선반경은 최소의 의미보다는 권장 값으로 보는 것이 합리적이다. 아울러, 최소곡선반경보다 여유로운 설계 값을 선호하는 실무관행으로 도로 공용 후 운전자의 주행속도는 설계속도를 상회하여 설계속도가 주행속도를 대표하지 못하는 결과를 초래하고, 결과적으로 현 설계기준의 주요전제를 위반하게 될 것으로 본다. 이러한 연구 가정을 검토하기 위해 지방부 도로에서 노면 미끄럼 마찰계수와 운전자의 주행속도를 조사하였다. 연구결과로, 쾌적성에 기반한 미끄럼 마찰계수와 물리적인 미끄럼마찰계수와의 차이에 따른 안전여유를 정량적으로 제시했고, 안전여유 및 설계관행에 따른 여유로운 설계로 인해 설계속도와 주행속도 간에 괴리가 발생함을 제시했다. 이를 토대로, 현 설계속도 기반의 선형설계는 최소기준과 더불어 설계속도와 주행속도 사이의 괴리를 최소화할 수 있는 선형 설계 관리 방안이 마련될 필요가 있다.

  • Currently, the consumer pattern is directed to small quantity and high variety these days. World market is led by technological innovations and changes rapidly. To survive in this environment, the raising of small and medium enterprises is highly desirable. In the context of nationwide restructuring, competitive medium and small industries which are in good financial status should lead the nation's economy. But general ignorance of the safety issues could lead to a miss management of this industry in this field. In this study, actual condition and improvement of safety management are as follows; We have to 1) find out the factors which endangers this industry, and set a proper guideline for safety management. 2) encourage safety management of these industries by themselves, and advertise and provide technical support for using PC and internet. 3) set a higher standard of safety issue when accrediting a prospective medium and small industry, and have a firm control of this issue once accredited. 4) supply more governmental financial aids to terms of safety issues for medium and small industries.

스쿨존 안전성 평가지수 개발 (A Development of the Integrated Evaluation Criteria for Safety of School Zones)

  • In recent years, there have been a number of concerns and measures surrounding 'Traffic Safety' for children. But, actually, safety measurements of 'School Zone' lack. This research thesis was designed to quantify risk degrees of 'School Zone', in a simple way, with the development of evaluation indicators to evaluate risk degrees of 'School Zone'. This is deems to be used for a guideline necessary for devising improvements or safety measures against 'School Zone' in the future. And, this is expected to be useful for managing and controlling safety each local facility about elementary schools.

Construction Safety Management Framework based on Smart Mobile

  • With increasing number of serious construction disasters such as death, a safety management in real-time is more required recently. One of the ways to support the needs, a convergence with Information Technology (IT) has been noticed. Although number of inefficiencies including a limitation of IT equipment (weight, control inconveniences) has been concerned, data exchanging and processing fields have been improved at a wide range with an advance of mobile communication and an introduction of smart mobiles that are simple and convenient. In this research, a framework is realized in connection with smart mobile to find the problems of current safety management and derive demands in order to support effective safety management. Two smart mobile applications, Safety Management application and Safety Guideline application, enable a real-time safety management and less re-work by provided safety information.

기계식 해체공사의 안전관리 매뉴얼 개발 (Development of Safety Management Manual for Deconstruction Works - Focused on the Mechanical Deconstruction Method -)

  • The primary focus of this study is to develop a practical safety management manual that can be served as a guideline for building deconstruction works over the entire deconstruction processes; say, pre- and during the deconstruction process. Built upon the analysis findings of domestic deconstruction codes and laws, deconstruction manuals from several countries, and actual deconstruction practices, a safety manual is proposed. Total of 940 safety items are included in the manual according to the predetermined 15 safety categories. To improve the efficiency of end users' utilization, the proposed manual is embodied in the form of e-safety manual. Detailed descriptions and discussions on research findings are elaborated. in the main text.

울산항 위험물 부두의 안전계류에 관한 기초연구 (A Basic Study on Safe Mooring Guide for Dangerous Goods Berths in Ul-San Port)

  • 항만물동량이 증가하고 선박의 대형화가 급격하게 이루어짐에 따라 부두의 설계 접안능력보다 큰 선박이 부두를 이용하는 사례가 빈번하게 발생하고 있다. 본 연구에서는 우리나라 주요 위험물 취급항만인 울산항을 대상으로 접안능력을 초과하여 위험물 부두를 이용한 선박 실태를 조사하였고 기존 부두 접안능력의 최대 3배가 넘는 선박이 이용하는 것으로 분석하였다. 그에 따라, 50,000 DWT급 부두를 모델링하여 50,000 DWT급, 70,000 DWT급, 100,000 DWT급 선박을 대상으로 계류 프로그램을 통해 선박 규모의 변화에 따른 계류 안전성 평가를 수행하였다. 평가는 OCIMF에서 제시하고 있는 표준환경기준에 따라 수행되었으며 50,000 DWT급 선박은 대체로 허용기준을 만족하는 것으로 평가되었으나, 70,000 DWT급 선박의 경우 풍속 60 kts, 파고 1.5 m 이상의 기상조건에서 100,000 DWT급 선박은 풍속 60 kts 조건 등에서 허용한계를 초과하는 것으로 분석되었다. 도출된 결과를 바탕으로 평가 대상부두에 대한 안전 계류 가이드라인 사례를 제시하였고 향후 다양한 사례에 대한 평가를 수행하여 해당항만에 일반적으로 적용 가능한 가이드라인을 수립하도록 제언하였다.

RULA 평가기법을 활용한 분말소화기 디자인 연구 (A Study on Powder Fire Extinguisher Design with RULA Technique Used)

  • This study was intended to find methods of fire extinguishing system designs that can improve the equipment's usability. In this study, the fire suppression experiment through fire extinguishers and the data drawn through the experiment were analyzed, and then the guideline for the improvement of designs was presented. The procedure is as follows. A fire suppression experiment with the use of fire extinguishers was done by 43 average adults. The whole process of the fire suppression was videotaped, and then captured major scenes were analyzed with the use of RULA, a human engineering measurement tool. The analyzed data were divided into 4 steps, and then the guideline for design improvement was presented. The summary of the study is as follows. Step 1, Fire extinguisher distance step. To reduce overload occurring at the process of holding fire extinguishers suddenly, wheels are attached to the body of extinguishers, or pedestals are installed. Step 2, Fire extinguisher transportation step. The length of hose is extended, or fire fighting water is sprayed far, so that overload of legs occurring at the process of travel can be reduced. In addition, the weight of fire extinguisher shouldn't be over 2 kg. Step 3, Safety pin removal stage. Safety pins should be applied with button type, so that excessive posture of lower limbs and excessive twisting of wrists won't happen during safety pin removal process. Besides, safety pins should be designed for easy identification and operation. Step 4, Fire extinguishing agent spraying step. To reduce overload occurring at sudden spraying of fire fighting water, pressure should be increased gradually until high pressure. With the above study results applied to existing fire extinguisher design, it may contribute to reducing any fire damage.

가설구조물 안전성 확보 방안 연구 (Study on the Safety Assurance for the Temporary Structures)

  • According to the statistics publication of KOSHA, more than half of serious accidents at the construction sites were related to the temporary works and/or the temporary structures such as scaffoldings, shores, earth retaining walls, etc. The structural failures are occurred because of the overload acting on the structures or lack of performance of the one or more members of the structures. For the prevention of the collapse accidents relating to the temporary structures at the construction sites, we have to control construction processes not to occur the overload and also to control the performance and quality of each member of the temporary structures. MOLIT has amended the "Construction Technology Promotion Act" on Jan. 7th, 2015 to ensure the structural safety of the temporary structures. According to the Act, the designers of the construction design projects should check the structural integrity of the structures including the temporary structures and the construction companies have to let 'the Relative Professionals' confirm the structural integrity of temporary structures, the shores(${\geq}5m$ high) and the scaffolds(${\geq}31m$ high), before construction. Also, MOLIT has amended the "Regulation for Construction Technology Promotion Act" on Jul. 4th, 2016 for quality management and testing of temporary equipments. According th this regulation, the construction companies and supervisors should manage and test the temporary equipments before using them. In this paper, the standard drawings of the shores(< 5 m high) and the scaffolds(< 31 m high) and the amended "Business Guideline for Quality Management of Construction Work" are presented. As the result of this study, MOLIT noticed the amended "Business Guideline for Quality Management of Construction Work" on Jul. 1st, 2017.
