흑임자죽 재료배합비의 최적화 연구 (A study on the optimum ratio of the ingredients in preparation of black sesame gruels)

  • 본 연구는 보양식으로 이용해 왔던 흑임자죽의 제조 조건을 최적화하기 위해 적정한 표준 조리법의 재료배합비에 따른 품질적 특성을 비교하여 최적 recipe를 산출하였다. 이로써 흑임자죽 제조를 위해 주재료인 깨의 첨가량과 쌀의 종류 및 첨가형태에 따른 죽의 물성 특성과 전체적인 선호도를 분석한 결과는 다음과 같다. 1 깨의 첨가량에 의한 흑임자죽의 품질 특성으로, 색도 변화는 깨의 첨가량이 증가할수록 명도는 감소하였고, 적색도와 황색도는 증가하였다. 또한 점도(p<0.05), 색상(p<0.01), 고소한 맛(p<0.01), 쓴맛(p<0.01), 외관(p <0.01), 전체 선호도(p<0.05)에서 깨의 첨가량에 따라 유의적인 차이를 나타내었다. 점도, 색상, 고소한 맛과 외관에 대한 선호도의 평가는 흑임자 함량 33g(40%)일 때 높은 것으로 나타났으며, 흑임자 함량 44g(52%)일 때 쓴맛에 대한 선호도가 가장 높았다. 전체적인 선호도는 흑임자 함량 40%일 때 가장 좋은 것으로 나타났다. 2. 쌀의 종류에 따른 흑임자죽의 특성으로, 색도 변화는 찹쌀 50g(60%) 첨가한 것이 명도, 적색도, 황색도 모두 높게 나타났다. 쌀의 형태에 의한 변화로는 찹쌀가루 60%를 첨가한 것이 명도가 높게 나타났고 적색도는 멥쌀가루 15g(18%), 황색도는 멥쌀가루 25g(30%)를 첨가하였을 때 높게 나타났다. 또한 점도, 색상, 고소한 맛, 쓴맛, 외관, 전체 선호도에서 유의적인 차이가 없었다. 점도에 대한 선호도의 평가는 멥쌀만 50g (멥쌀 : 찹쌀=100% : 0%) 첨가했을 때 높은 것으로 나타났으며, 색상과 고소한 맛에 대한 선호도 평가는 멥쌀 50g(60%)일 때 가장 높았으며, 쓴맛에 대한 선호도는 멥쌀 50g, 멥쌀:찹쌀=35g : 15(7:3)g과, 멥쌀 : 찹쌀=15g : 35(3:7)g일 때 가장 높았다. 외관에 대한 선호도는 멥쌀 : 찹쌀=35g:15g, 전체적인 선호도는 멥쌀 50g일 때 가장 좋은 것으로 나타났다. 쌀의 형태를 달리하여 첨가하였을 때 점도(p<0.05), 색상(p<0.01), 고소한 맛(p<0.01), 쓴맛(p<0.01), 외관(p<0.01), 전체 선호도(p<0.01)에서 유의적인 차이를 나타내고 있다. 점도, 색상, 고소한 맛, 쓴맛, 외관, 전체적인 선호도에 대한 평가는 모두 결과가 멥쌀가루 50g(60%) 첨가했을 때 가장 좋은 것으로 나타났다. 3. 소금 첨가량에 의한 흑임자죽의 색도 변화는 소금의 첨가량이 7g(9%)일 때 명도가 높게 나타났고, 적색도와 황색도는 소금함량 5g(6%)일 때 높았다. 또한 점도(p<0.01), 색상(p<0.01), 고소한 맛(p <0.01), 쓴맛(p<0.01), 외관(p<0.01), 전체 선호도(p<0.01)에서 유의적인 차이를 보였다. 점도, 색상, 고소한 맛, 쓴맛, 외관, 전체적인 선호도에 대한 평가는 모두 소금 함량 2.5g(3%)일 때 가장 좋은 것으로 나타났다. 4. 흑임자죽의 점도 특성으로는 재료의 첨가량에 비례하여 전반적으로 증가하였고, 온도 변화에 따라 온도가 높아질수록 낮은 점도를 나타내었고, 온도가 낮아질수 록 점도 값이 높았다. 5. 당도와 퍼짐성의 특성으로는 첨가재료의 첨가량에 비례하여 전반적으로 증가하는 경향을 나타냈다. 흑임자죽 제조의 최적화를 위해 첨가재료와 배합비에 따른 흑임자죽의 물성 특성 변화와 선호도 분석 결과를 통하여 흑임자죽의 최적 배합 조건이 산출되었다. 즉 흑임자죽 제조를 위한 최적 재료 배합 비는 주재료에서는 흑임자 첨가량 33g(40%), 쌀의 형태와 종류별 첨가량은 멥쌀(가루) 50g(60%), 소금 2.5g, 물 500$m\ell$ 첨가가 최적 비율로 산출되었다.

한반도 해안-하안단구 퇴적층에 대한 K 장석 pIR-IRSL연대측정법 적용가능성 고찰: 울진 하안단구와 구산단층 연대측정 (Application of Potassium Feldspar pIR-IRSL Method to Dating Quaternary Marine and Fluvial Terrace Sediments in Korea: A Case Study on a Fluvial Terrace and Gusan Fault in Uljin, Korea)

  • 이 논문에서는 K-장석 $pIR-IRSL_{290}$ 연대측정법의 한반도 해안-하안단구 퇴적층의 연대측정 적용가능성을 알아보기 위하여, 다양한 환경(해성, 하성, 풍성)에서 형성된 한반도 해안-하안단구 시료들의 K-장석 $pIR-IRSL_{290}$, $IRSL_{50}$, 석영 OSL 신호특성을 살펴보고, 경북 울진군 노음리 하안단구 퇴적층과 구산단층 퇴적물에 대한 연대측정을 실시하였다. 연구에 사용된 27개의 시료들에 대한 K-장석 $pIR-IRSL_{290}$ 신호의 $2D_0$ 값은 평균적으로 약 700 Gy로, $IRSL_{50}$ 신호의 $2D_0$ 값과 유사하였으며, 석영 OSL 신호의 $2D_0$ 값(약 250 Gy) 보다는 3배 정도 높았다. 일부 시료에 대한 K-장석 $pIR-IRSL_{290}$, $IRSL_{50}$, 석영 OSL 연대측정 결과, K-장석 $pIR-IRSL_{290}$ 연대는, $IRSL_{50}$ 및 석영 OSL 연대보다 상당히 높았다. 이는 퇴적과정동안 장시간 햇빛에 노출되어도 제거되지 않는(unbleachable) $pIR-IRSL_{290}$ 신호에서 기인했을 가능성이 있다. 경북 울진군 노음리의 하안단구 퇴적층과 구산단층 퇴적층에서 분리한 K-장석 $pIR-IRSL_{290}$ 신호와 석영 OSL 신호도 모두 방사선포화상태에 있어, 정확한 퇴적연대를 측정하는데 한계가 있었다. 하지만, 각 신호의 성장곡선으로부터 얻은 $2D_0$ 값은 노음리 하안단구 퇴적층은 109-140 ka 이전, 구산단층에 의해 절단된 퇴적층은 적어도 100-105 ka 이전에 형성되었을 가능성을 강력히 시사한다. 이 결과는, 기존 ~40-50 ka의 석영 OSL 신호를 기반으로 한 구산단층 퇴적층의 연대가 방사선포화현상에 의해 과소평가된 연대임을 의미한다.

Effect of Replacing Corn and Wheat Bran With Soyhulls in Lactation Cow Diets on In Situ Digestion Characteristics of Dietary Dry Matter and Fiber and Lactation Performance

  • An in situ digestion trial (Experiment 1) and a lactation trial (Experiment 2) were conducted to determine the effects of replacing corn and wheat bran with soyhulls (SH) in lactating dairy cow diets on the extent and kinetics of digestion of DM and NDF, and lactation performance. In experiment 1, five mixed feeds consisting of mixed concentrate and roughages (50:50 on a DM basis) were formulated on isonitrogenous and isoenergetic bases to produce five levels (0, 25, 50, 75 and 100%) of SH replacement for corn and wheat bran. SH had high in situ digestion (92 and 89% for potentially digestible DM and NDF) and fairly fast digestion rate (7.2 and 6.3 %/h for DM and NDF). Increasing level of SH replacement resulted in increased NDF digestibility (linear, p=0.001-0.04) and similar DM digestibility (beyond 12 h incubation, p=0.10-0.41). As level of SH replacement increased, percentage of slowly digestible fraction (b) of DM increased (linear, p=0.03), percentage of rapidly digestible fraction (a) of DM tended to decrease (linear, p=0.14), and DM digestion lag time tended to be longer (linear, p=0.13). Percentage of potentially digestible fraction (a+b) and digestion rate (c) of slowly digestible fraction of dietary DM remained unaltered (p=0.36-0.90) with increasing SH in the diet. Increasing level of SH for replacing corn and wheat bran in the diet resulted in increases in percentages of b (quadratic, p<0.001), a (linear, p=0.08), a+b (quadratic, p=0.001) and a tendency to increase in c for NDF (linear, p<0.19). It was also observed that there was a satisfactory fit of a non-linear regression model to NDF digestion data ($R^2=0.986-0.998$), but a relatively poor fit of the model to DM digestion data ($R^2=0.915-0.968$). In experiment 2, 42 lactating Holstein cows were used in a randomized complete block design. SH replaced corn and wheat bran in mixed concentrates at 0, 25, and 50%, respectively. These mixed concentrates were mixed with roughages and fed ad libitum as complete diets. Replacing corn and wheat bran with SH at 0, 25 and 50% levels did not influence (p=0.56-0.95) DM intakes (18.4, 18.6, and 18.5 kg/d), milk yields (27.7, 28.4 and 27.6 kg/d), 4% fat-corrected-milk (FCM) yields (26.2, 27.6, and 27.3 kg/d) and percentages of milk protein (3.12, 3.17 and 3.18%), milk lactose (4.69, 4.76 and 4.68%) and SNF (8.50, 8.64, and 8.54%). On the other hand, milk fat percentges linearly increased (3.63, 3.85 and 3.90% for SH replacement rates of 0, 25 and 50% in the diet, p=0.08), while feed costs per kg FCM production were reduced.

pH 저하가 소백옆새우(Gammarus sobaegensis Ueno)에 미치는 급, 만성 생태독성학적 특성 -1. 정체성 조건- (Ecotoxicological Characteristics of Gammarus sobaegensis Ueno by Acute and Chronic pH Depression on Artificial Static Waters)

  • 인위적인 산성스트레스가 담수산 소백옆새우(Gammarus sobaegensis Ueno)에 미치는 영향을 정체성 수조건 하에서 급, 만성 생태독성실험을 통해 알아보았다. 급성독성 실험 시 pH 3 대역에서의 반수치사시간($LT_{50}$)은 평균 0.271($\pm$0.146)day로 개체의 크기 또는 먹이의 유무 그리고 주변 환경에 대한 적응능력에 관계없이 일정한 모습을 나타내고 있었다. pH4.0대역에서의 $LT_{50}$은 0.812($\pm$0.377) day로 연장되는 것이 확인되었다. 만성 독성실험의 경우 본 종의 반수치사시간은 pH 3.0일 때 약 6-7 day로 평균 6.313 ($\pm$0.828) day 인 것으로 나타났으며, pH 5.0일 때는 평균 9.475($\pm$4.881)day의 오랜 적응 기간을 갖는 것으로 확인되었다. 이러한 차이는 먹이의 공급유무에 따라 변동이 있다는 것을 알 수 있었고, 또한 주변 환경에 적응이 잘 된 개체일수록 오랜 기간동안 생존한다는 것을 알 수 있었다. 그리고 급, 만성 pH스트레스가 가해진 소백옆새우(G. sobaegensis)의 제 2아가미 표면조직에서 심한 주름현상을 확인할 수 있어, 결국 산성스트레스는 소백옆새우(G. sobaegensis)에 있어서 급성뿐만 아니라 만성적인 영향에서도 최종적으로는 매우 치명적으로 작용한다는 사실을 알 수 있었다.

Inorganic sulfur reduces cell proliferation by inhibiting of $ErbB_2$ and $ErbB_3$ protein and mRNA expression in MDA-MB-231 human breast cancer cells

  • Dietary inorganic sulfur is the minor component in our diet, but some studies suggested that inorganic sulfur is maybe effective to treat cancer related illness. Therefore, this study aims to examine the effects of inorganic sulfur on cell proliferation and gene expression in MDA-MB-231 human breast cancer cells. MDA-MB-231 cells were cultured the absence or presence of various concentrations (12.5, 25, or 50 ${\mu}mol/L$) of inorganic sulfur. Inorganic sulfur significantly decreased proliferation after 72 h of incubation (P < 0.05). The protein expression of $ErbB_2$ and its active form, $pErbB_2$, were significantly reduced at inorganic sulfur concentrations of 50 ${\mu}mol/L$ and greater than 25 ${\mu}mol/L$, respectively (P < 0.05). The mRNA expression of $ErbB_2$ was significantly reduced at an inorganic sulfur concentration of 50 ${\mu}mol/L$ (P < 0.05). The protein expression of $ErbB_3$ and its active form, $pErbB_3$, and the mRNA expression of $pErbB_3$ were significantly reduced at inorganic sulfur concentrations greater than 25 ${\mu}mol/L$ (P < 0.05). The protein and mRNA expression of Akt were significantly reduced at an inorganic sulfur concentration of 50 ${\mu}mol/L$ (P < 0.05), but pAkt was not affected by inorganic sulfur treatment. The protein and mRNA expression of Bax were significantly increased with the addition of inorganic sulfur concentration of 50 ${\mu}mol/L$ (P < 0.05). In conclusion, cell proliferation was suppressed by inorganic sulfur treatment through the ErbB-Akt pathway in MDA-MB-231 cells.

Effects of Avocado Yoghurt, Three Beans Cookie, and Tiger Nut Galsu Drink on Fibroblasts (Hs68) and Keratinocytes (HaCaT)

  • The present study aimed to investigate the effects of skin care foods on the synthesis of pro-collagen type I C peptide and suppression of matrix metalloproteinase (MMP)-1 secretion through an in vitro study using fibroblasts (Hs68 cells) and keratinocytes (HaCaT cells). Among the three skin care foods developed in this study, three beans cookie and avocado yoghurt influenced the production of pro-collagen type I C peptide and suppressed MMP-1 secretion; however, tiger nut Galsu drink did not exhibit these effects. All skin care foods, including three beans cookie and plain yoghurt ($50{\mu}g/mL$, p<0.001) influenced the suppression of MMP-1 in addition to other commercially available breast milk production support foods examined, such as Heath Heather ($50{\mu}g/mL$, p<0.001), Happy Mama ($50{\mu}g/mL$, p<0.01), BioLys ($50{\mu}g/mL$, p<0.001), Enfamama ($25{\mu}g/mL$, p<0.0001), and Pregnagen ($25{\mu}g/mL$, p<0.001). Avocado fruit yoghurt ($25{\mu}g/mL$, p<0.05), avocado fruit jam yoghurt ($50{\mu}g/mL$, p<0.01), Enfamama ($100{\mu}g/mL$, p<0.05), and Pregnagen ($100{\mu}g/mL$, p<0.05) influenced the production of pro-collagen type I C peptide and suppressed MMP-1 secretion. This result indicates that only avocado jam yoghurt significantly influenced both the prevention of skin keratinization and acceleration of recovery of skin fibrous structure. Therefore, avocado is a favorable ingredient for nutrition-balanced dietary foods or an essential ingredient in products for revitalization of human skin.

Effects of Ensiling Period and Bacterial Inoculants on Chemical Compositions and Fermentation Characteristics of Rye Silage

  • The present study was aimed to estimate the effect of ensiling period and bacterial inoculants on chemical compositions and fermentation characteristics on rye silage harvested at delayed stage. Rye (Secale cereale L.) was harvested after 20 days of heading stage (29.4% dry matter, DM). The harvested rye forage was applied with different inoculants following: applications of distilled water (CON), Lactobacillus brevis (LBB), Leuconostoc holzapfelii (LCH), or mixture of LBB and LCH at 1:1 ratio (MIX). Each forage was ensiled into 20 L mini bucket silo (5 kg) for 50 (E50D) and 100 (E100D) days in triplicates. The E50D silages had higher in vitro digestibilities of DM (IVDMD, p<0.001) and neutral detergent fiber (IVNDFD, p=0.013), and lactate (p=0.009), and acetate (p=0.011) than those of E100D, but lower pH, lactic acid bacteria (LAB), and yeast. By inoculant application, LCH had highest IVDMD and IVNDFD (p<0.05), while MIX had highest lactate and lowest pH (p<0.05). The CON and LCH in E50D had highest LAB and yeast (p<0.05), whereas LBB in E100D had lowest (p<0.05). Therefore, this study concluded that LCH application improved the nutrient digesbility (IVDMD and IVNDFD) of lignified rye silage, and longer ensiling period for 100 days enhanced the fermentation characteristics of silage compared to ensiling for 50 days.

다양한 곤충에 의한 계분의 분해능력에 대한 연구(1) (A Case Study on the Degradability of Poultry Manure by Various Insect Larvae (1))

  • This study was conducted to investigate the efficacy of larval stages of three species, namely, Tenebrio molitor, Protaetia brevitarsis seulensis, and Ptecticus tenebrifer larvae, in degrading poultry manure, specially, broiler and duck manure. The survival rates of larvae were also noted. For the experiment, T. molitor (n=300), P. brevitarsis seulensis (n=60), and P. tenebrifer (n=300) hatched larvae were randomly divided into six groups with three replicates. The degaradation efficacy tests were then performed for 30 days in a laboratory. The test groups were as follows: T1, 110 g broiler manure + T. molitor larvae (n=50); T2, 110 g duck manure + T. molitor larvae (n=50); T3, 125 g broiler manure + P. brevitarsis seulensis larvae (n=10); T4, 125 g duck manure + P. brevitarsis seulensis larvae (n=10); T5, 105 g broiler manure + P. tenebrifer larvae (n=50); and T6, 105 g duck manure + P. tenebrifer larvae (n=50). The groups showed significant efficacy in degrading broiler and duck manure (p<0.05). The highest survival rates were recorded for T. molitor larvae in both manure types [T1 (92.67%) and T2 (50%)], followed by P. brevitarsis seulensis larvae (T4, 40%) and P. tenebrifer larvae (T6, 14.67%) in duck manure. Next, the survival rates of P. brevitarsis seulensis (T3) and Ptecticus tenebrifer larvae (T5) in broiler manure were 0%. In conclusion, these results point to the feasibility of using insect larvae to degrade broiler and duck manure.

구강환경과 구취와의 관련성 (Relationship between oral environment and halitosis)

  • Objective : This study was performed in order to provide basic data for halitosis prevention and establish a device to efficiently eliminate halitosis and to analyze the factors that affect the halitosis. Methods : Oral examination on the Gingival index, CPITN, Tongue Plaque index, and OHI-S as well as halitosis measurement among 293 rural residents. Results : Gingival index was high at mild on female and at moderate on male(p=0.025). Sorting the result by age, mild was 54.1% in the 40s, and moderate was 49.5%, 42.0% and 70.0% each in the 50s, 60s, and the 70s(p=0.005). The need for dental plaque management was 100%. The need for scaling was high with 78.3%, 93.0%, 89.9%, and 90.0% each for the 40s, 50s, 60s, and 70s. The need for complex periodontal treatment was also high with 32.4%, 47.5%, 48.7% and 60.0%, each for the 40s, 50s, 60s, and 70s(p=0.050). The highest bad condition for OHI-S was 69.5%, and good being 18.9%, and very bad being 11.6%. For moderate tongue plaque index was 74.4% as the highest. As the level of education increased, the slight tongue plague was increased, but in contrast, the moderate and higher tongue plague index was decreased(p=0.010). OG under 50ppm was 61.1% on male and OG over 50ppm was 50.9% on female(p=0.041). In OG over 50ppm, CPITN was 52.1% and 41.9% in scaling and complex periodontal treatment group(p=0.018). OHI-S, in bad and very bad condition with OG, over 50ppm, was 48.7% and 46.9%(p=0.019). The higher tongue plague index showed significant amount of increase at OG and EG above 50ppm(p=0.006). $NH_3$, as the tongue plaque index increased, the wider range of distribution was shown(p=0.000). As for the multiple regression analysis result, there have been selected females and tongue plaque index as factors affecting OG. There have been selected age and tongue plaque index as factors affecting EG and there have been selected females as factors affecting on $NH_3$. Conclusions : With the aforementioned results in mind, the status of halitosis among rural residents is considered to bare a close relation with oral environments. we have to focus on correct tooth brushing methods and tongue brushing, with using tongue cleaner to remove fur of tongue plaque. Also, in order to analyze exactly the factors of individual halitosis, we need continuous and systematic study.

Expression of EGFR and p53 in Head and Neck Tumors among Sudanese Patients

  • Background: The aim of this study was to assess EGFR and p53 expression in head and neck tumors among Sudanese patients using immunohistochemistry. Materials and Methods: A retrospective descriptive study was performed on 150 samples from patients diagnosed with HNCs as well as 50 from individuals with benign head and neck tumors. EGFR and p53 expression was assessed using immunohistochemistry (IHC). Results: EGFR was expressed in 126/150 (84%) of HNCS and 6/50 (12%) benign head and neck tumors where as p53 was expressed in 29/150 (19.3%) of HNCs and 2/50 (4%) of benign head and neck tumors, with significance at p values of 0.001 and 0.009 respectively. Conclusions: There is a significant association between EGFR, P53 expression and head and neck cancers among Sudanese patients.
