인삼을 첨가한 동치미 쥬스 발효중 화학적 및 관능적 특성 변화 (Changes in Chemical and Sensory Characteristics of Dongchiml Juice during Fermentation with the Addition of Panax ginseng C.A. Meyer)

  • This study was undertaken to examine the effects of fresh ginseng addition on the chemical and sensory properties of dongchimi juice fermented under various conditions. The contents of free sugars in dongchimi juice during fermentation increased at the initial stage, but decreased at the palatable stage and then increased again thereafter. Free sugars were higher in dongchlml juice with 4% of ginseng addition than with Soye ginseng and without ginseng addition. Analyses of organic acid contents showed that all three groups contained relatively high amounts of citric, lactic and malic acids. It was also found that, as fermentation progressed, the amounts of tactic and acetic acids in- creased, while that of malic acid decreased at the palatable stage and increased again thereafter. Total saponins were highest in dongchimi juice fermented at 4$^{\circ}C$ with 4% of ginseng addition and panax atrlol ginsenosldes were found more than panaxadiol ginsenosides in dongchimi juice The results of sensory evaluation revealed that dongchimi juice prepared with the addition of $4^{\circ}C$ and 4% ginseng was lower in sour taste and moldy off flavor than the control, thus scoring high In total acceptability. Dongchimi juice with 4% of ginseng addition was best in most sensory characteristics.

  • Since ancient times, ginseng has been cultivated in Korea, and related cultures are also rich. However, the domestic ginseng industry is currently facing many crises. As a source of ginseng, Korea needs to come up with a strategy to cope with the crisis of the ginseng industry and implement it efficiently and effectively using limited resources. This study used the Analytic Hierarchy Process (AHP) to analyze the priority of policies so that ginseng policies can be effectively implemented. The survey was conducted by dividing into two groups of experts, 'policy managers' and 'field experts'. As a result of the study, policy managers seem to believe that the consumption of ginseng is important for the development of the ginseng industry. On the other hand, the field expert group believes that the government should take the initiative to increase the supply capacity of the ginseng industry. Through this study, it will be possible to help in determining the importance of policy, recognizing that the viewpoints of policy can be different for the ginseng industry to develop.

Seasonal changes in soil acidity and related properties in ginseng artificial bed soils under a plastic shade

  • Background: In Changbai Mountains, Panax ginseng (ginseng) was cultivated in a mixture of the humus and albic horizons of albic luvisol in a raised garden with plastic shade. This study aimed to evaluate the impact of ginseng planting on soil characteristics. Methods: The mixed-bed soils were seasonally collected at intervals of 0-5 cm, 5-10 cm, and 10-15 cm for different-aged ginsengs. Soil physico-chemical characteristics were studied using general methods. Aluminum was extracted from the soil solids with $NH_4Cl $(exchangeable Al) and Na-pyrophosphate (organic Al) and was measured with an atomic absorption spectrophotometer. Results: A remarkable decrease in the pH, concentrations of exchangeable calcium, $NH_4^+$, total organic carbon (TOC), and organic Al, as well as a pronounced increase in the bulk density were observed in the different-aged ginseng soils from one spring to the next. The decrease in pH in the ginseng soils was positively correlated with the $NH_4^+$ (r=0.463, p<0.01), exchangeable calcium (r=0.325, p<0.01) and TOC (r= 0.292, p < 0.05) concentrations. The $NO_3^-$ showed remarkable surface accumulation (0-5 cm) in the summer and even more in the autumn but declined considerably the next spring. The exchangeable Al fluctuated from $0.10mg\;g^{-1}$ to $0.50mg\;g^{-1}$ for dry soils, which was positively correlated with the $NO_3^-$ (r=0.401, p < 0.01) and negatively correlated with the TOC (r=-0.329, p < 0.05). The Al saturation varied from 10% to 41% and was higher in the summer and autumn, especially in the 0-5 cmand 5-10 cm layers. Conclusion: Taken together, our study revealed a seasonal shift in soil characteristics in ginseng beds with plastic shade.

In Vitro Bifidogenic Effect of Nondigestible Oligosaccharides Isolated from Red Ginseng Marc

  • The purpose of this research was to investigate the effects of nondigestible oligosaccharides (NDO) from red ginseng marc on the growth of Bifidobacterium spp. Red ginseng marc, a fibrous byproduct of ginseng extract from processing, was destarched by ${\alpha}$-amylase and amyloglucosidase treatment, and then treated with a commercial pectinase to produce NDO. The bifidogenic effects of NDO on B. adolescentis, B. animalis, B. breve, and B. longum were investigated in vitro. NDO significantly promoted the growth of Bifidobacterium spp. The growth, decrease of pH, and organic acid formation (acetate, lactate, formate) were markedly different among the species. B. adolescentis showed the best growth and produced the greatest amount of organic acids. When NDO was used as a carbon source in the cocultivation of Bifidobacterium spp. and Clostridium perfringens, the growth of Bifidobacterium spp. was not influenced by the existence of Cl. perfringens. The result strongly suggested that NDO from red ginseng marc could be used as a potential bifidogenic source.

인삼모상근과 캘루스의 사포닌, 지방산, 산성다당체, 페놀성 물질 및 유기산의 함량비교 (Comparison of Ginseng Saponin, Fatty Acid, Polysaccharide, Phenolic Compound and Organic Acid of Ginseng Hairy Roots and Callus)

  • 인삼원료삼의 안정적인 공급을 위하여 인삼의 기내배양에 의하여 생산된 캘루스 및 모상근으로부터 인삼사포닌, 지방산, 산상다당체, 페놀성화합물 및 유기산함량을 조사하였다. 인삼사포닌의 경우에는 캘루스에 비해 모상근에서 훨씬 많았으며 모상근 세포주간에는 약 10mg/g로 유사한 경향을 보였다. 포화지방산은 인삼 캘루스에서 높은 반면 모상근의 경우에는 불포화지방산이 오히려 많거나 비슷한 경향을 보였다. 특히 인삼 캘루스에서는 palmitic acid가 많이 존재하였으며, 인삼 모상근의 경우에는 불포화지방산인 linoleic acid가 캘루스의 5배 이상 많은 검출되었다. 산성 다당체와 페놀성화합물은 기내 배양한 인삼 캘루스 조직에서는 거의 동량으로 존재하였으나, 인삼 모상근의 경우에는 세포주에 따라서 많은 차이를 나타내었다. 특히 HR-2같은 경우에는 산성 다당체보다는 페놀화합물이 $2.26\%$로 산성 다당체보다 2배 이상 많이 존재하였는데 반하여, HR-3 인삼 모상근의 경우에는 산성 다당체가 $1.64\%$로 페놀화합물보다 4배 이상 존재하는 것으로 분석되었다. 인삼 모상근세포주와 캘루스의 유기산은 모상근 세포주가 34.64 mg으로 가장 많이 존재하는 것으로 조사되었다.

  • Effect of rice hull mulching and peat application on seedling yield of Panax ginseng was investigated in modified Yang-jig seedbed. Mulching and peat increased soil moisture content but effect was not additive. Seedling yield was positively correlated with magnesium organic matter, potassium especially with soil moisture and calcium. Straw mulching is expected to be superior for practice.

Antioxidant Properties of Ginseng (P. ginseng C.A. Meyer) Extracts by Organic Solvent Fractionation

  • The objective of this study was to investigate antioxidant activities of Panax ginseng extracted with various solvents including n-hexane, chloroform, EtOAC, n-butanol and water. Among the various ginseng extracts, ethyl acetate (EtOAC) extracts showed the most powerful scavenging activities against DPPH radicals. Among the other solvent extracts, the butanol extract seemed relatively more effective in scavenging activity, followed by chloroform, water and hexane extracts. Moreover, the highest reducing power and ferrous ion chelating activity were found in the EtOAC extract followed by other extracts of ginseng. EtOAC extracts, which exhibited the best antioxidant activities of all solvent extracts of ginseng, possessed higher concentrations of total phenolics (777.61 mg/100 g) than other extracts. These results suggest that EtOAC extracts of ginseng (P. ginseng C.A. Meyer) have the most effective antioxidant capacity compared to n-hexane, chloroform, n-butanol and water tested in this study, and has important applications for the pharmaceutical and food industries.

  • pH, 유기산(有機酸), ascorbic acid 및 자외선조사(紫外線照射)가 홍삼갈색화반응촉진(紅蔘褐色化反應促進)에 미치는 영향(影響)을 조사(調査)하였다. 홍삼(紅蔘)의 갈색화반응(褐色化反應)은 약(弱) alkali성(性) 범위(範圍)에서 갈변(褐變)이 촉진(促進)되는 경향(傾向)을 보였으며 citric acid, succinic acid, tartaric acid등(等)의 유기산(有機酸) 첨가(添加)도 홍삼(紅蔘)의 갈변반응(褐變反應)을 촉진(促進)하였다. Fumalic acid의 단독첨가(單獨添加)는 홍삼(紅蔘)의 갈색화반응(褐色化反應)을 촉진(促進)하였으나 glucose, glutamic acid , $glucose{\times}glutamic$ acid의 혼합처리(混合處理)는 갈변(褐變)을 저하(低下)시켰다. 0.1M 이상(以上)의 ascorbic acid 처리(處理)는 홍삼갈색화반응(紅蔘褐色化反應)에 아주 큰 촉진효과(促進效果)가 있었으며 동시(同時)에 양질홍삼(良質紅蔘)의 특유(特有)한 색상(色相)인 홍색도(紅色度)도 크게 증대(增大)되었다. 자외선조사(紫外線照射)는 홍삼건조(紅蔘乾燥) 초기(初期)에는 갈변(褐變)을 상당히 촉진(促進)하였으나 그 이후(以後)에는 갈색도(褐色度)가 감소(減少)되었다.

국내 유기와 관행 재배 인삼의 토양화학성과 생육 특성 조사 (Research of Chemical Properties of Soil and Growth Characteristics of Panax ginseng under Organic and Conventional Cultivation Systems in Korea)

  • 본 연구는 유기재배와 관행재배지의 토양화학성 및 인삼의 생육특성을 비교 분석하기 위하여 수행하였다. 유기재배 인삼과 관행재배 인삼 시료 채취는 전국 14개 지역 52개 포장에서 4, 5, 6년근을 대상으로 2013년부터 2015년까지 3년에 걸쳐 10월부터 11월까지 2개월 동안 이루어졌다. 인삼 유기재배에서는 수량을 높이기 위해 관행재배지와 비슷하게 양분의 함량이 높아지고 있어 토양화학성기준에 맞는 적합한 관리가 요구된다. 유기재배 인삼은 관행재배 인삼보다 생육기간이 60일 이상 짧은 특징을 보였으며 1 ha당 평균 수량도 관행 수량의 60% 수준이었다. 근중은 유기재배 인삼이 관행재배 인삼의 54% 정도였다. 동직경 및 체형계수도 유기재배 인삼이 관행재배보다 더 작아 유기재배 인삼이 가늘고 긴 특징을 보였다. 근장은 답전윤환지의 비율이 낮은 관행재배 인삼 5년근에서 길었다. 지근의 수는 직파재배의 비율이 높은 유기재배 인삼 5, 6년근에서 적었다. 건물중은 관행재배보다 조기낙엽이 발생된 유기재배 인삼의 5, 6년근에서 뚜렷하게 낮았다. 동할과 뿌리썩음병은 관행재배에서 많은 경향이었는데 동할은 4, 6년근에서 뚜렷하게 많았으며 뿌리썩음병은 5, 6년근에서 많이 발생되었다. 토양수분의 영향을 많이 받는 적변과 선충의 피해는 유기재배 4년근에서 많았다. 즉 유기재배 인삼은 관행재배보다 조기낙엽 현상이 뚜렷하여 수량 및 근중이 낮은 반면 생리장해는 적었다. 유기재배 인삼의 수량을 높이기 위해서는 조기낙엽의 문제를 극복할 수 있는 재배 기술적인 연구가 필요하며 생리장해를 줄일 수 있는 토양 수분관리가 필요하다.

  • 인삼산지포장(人蔘産地圃場)에서 토양유기물함량(土壤有機物含量)은 토양수분(土壤水分)과 근수량(根收量)과 유의정상관을 보였다. 토양수분(土壤水分)은 근수량(根收量), 경직경, 경장, 유의정상관을, 지상부(地上部) 상대 결주율(缺株率), 낙엽율(落葉率), 반점병리병율(斑点病罹病率)과는 유의부상관을 보였다. 현(現) 재배법으로 칸당 2kg 이상(以上)의 수량(收量)을 내려면 토양수분(土壤水分)이 17% 이상(以上) 유기물(有機物)은 2%이상 이어야 할 것으로 나타났고 이에 미달(未達)인 포장(圃場)이 58% 였으며 이들은 대부분(大部分) 사양토(砂壤土)와 양토(壤土)였다.
