A Study of the Anthropometric Indices and Eating Habits of Female College Students

  • A study was conducted to investigate the anthropometric indices, fat distribution, eating habits and levels of daily physical activity based on the body mass index (BMI ; kg/㎡) of 180 female college students. This stady was based on survey 2001 using a questionnaire. The results are as follow ; The mean age, height, weight and BMI were 20.41 ${\pm}$ 1.82 years, 161.86 ${\pm}$ 4.51cm, 53.49 ${\pm}$ 7.02kg, and 20.43 ${\pm}$ 2.65kg/㎡, respectively. The group with BMI of under 20 (the lean group) comprised 48.9% : the group with BMI of 20 to 25 (the normal group) comprised 44.4% and the group with BMI of over 25 (the obese group) comprised 6.7% of the subjects. Even though the lean and the normal groups were determined according to BMI. 12.5% of the lean group and 31.3% of the normal group had more than 25% body fat. Of the students, 11.5% of the lean group, 25.0% of the normal group and 58.3% of the obese group had of more than 0.8 waist/Hip Ratio (WHR). The medical problems suffered by the subjects were constipation (24.4%), gastroenteritis (20.6%), anemia(15.0%) and edema(13.3%), which was a result of their eating habits. Out of all the subjects, 27.2% ingested their meals irregularly, 74.4% skipped breakfast, and 92.4% of the lean group, 89.2% of the normal group and 81.8% of the obese group ingested snacks on a daily basis. Their favorite types of snacks were cookies breads and cakes (33.7%), spicy sliced rice cakes pork sausage and boiled fish cakes (18.5%), fruits (15.2%), juices and sodas (13.5%) and hamburgers and pizzas (3.9%). Their consumption of high calorie and processed foods was high, Of the subjects, 38.9% ate out daily. 45.1% had tried weight loss. Those with large upper bodies comprised 11.5%, large intermediate bodies 18.5% and large lower bodies 69.0%. Most of the students were dissatisfied with their body snaps. Of the subjects, 95.1% exercised irregularly. Daily physical activity tended to increase significantly with an increase in BMI : the lean group's average energy consumption was 1509.40㎉ the normal group's was 1792.21㎉ and the obese group's was 2334.63㎉, which were below the recommended value. This study suggests that the maintenance of an ideal weight, the improvement of eating habits and adequate exercise are needed for female college students to improve their health and nutritional status. Processing Effects of Feeds in Swine - Review -

  • Processing is generally employed to alter the physical and chemical properties of feeds used in pig diets, using hammer/roller mills, pellet mills and extruders/expanders. The reported optimum particle sizes of corn are approximately $500{\mu}m$, $500-700{\mu}m$, $400-600{\mu}m$, for nursery, growing-finishing, and breeder pigs respectively. Optimum particle size of grains are affected by diet complexity. There was a trend towards reducing particle size in order to increase ADG in pigs fed a simple diet, though such was not the case for pigs fed a complex diet. Uniformity of particle size also affects the nutritional values of swine feeds. Uniform particle sizes would consistently give greater nutrient digestibilities. In terms of pellet quality, it is reported that a higher incidence of fmes in pelleted feeds has a direct correlation with poorer feed conversion ratio in pigs. Particle and pellet sizes are also very important for pelleting in terms of grinding, digestibility, stomach ulceration and pellet durability. A particle size of $600{\mu}m$, or slightly less, seemed optimal for com in fmishing pigs, and the 5/32 in. diameter pellets supported the best efficiencies of gain during nursery and finishing phases. Extruder and/or expander processes would allow the feed industry an increased flexibility to utilize a wider spectrum of feed ingredients, and improve pellet quality of finished feeds. It would appear that extruded or expanded diets containing highly digestible ingredients have little effect on the growth performance of pigs, and the feeding values of the feeds over pelleted diets were not improved as pigs grew. The extruder or expander is much more effective than a pelletizer in salmonella control. Gastric ulcerations and/or keratinizations were consistently reported in pigs fed mash and processed diets containing finely ground grains, whereas carcass quality was not affected by diet processing methods such as pelleting, extruding or expanding. In corn- or sorghum-based diets, the electrical energy consumption is 4-5 times higher in the expanding than in the pelleting process. But the expander's processing cost was half of that shown by an extruder. Finally, the decision of which feed processing technology to adopt would depend on the processing cost, and any potential improvement in growth performance and digestibilities of nutrients should offset the increased operating and capital costs related to the extruder/expander technology over mash or pelleting processes in pigs.

건조숙성에 따른 저등급 한우 채끝 등심의 품질 증진 (Quality Improvement of Strip Loin from Hanwoo with Low Quality Grade by Dry Aging)

  • This study investigated the quality change of strip loin from hanwoo with quality grade 2 produced by dry aging, and compared the quality of dry-aged strip loin with that of strip loin from hanwoo with quality grade $1^+$. Hanwoo strip loins with quality grade $1^+$ (SL1) and 2 (SL2) after a day of slaughter and dry-aged strip loin (DSL2) aged for 21 days at $2^{\circ}C$ with 85% humidity were obtained from local markets. The proximate composition, pH, cooking loss, lipid oxidation, instrumental color (CIE $L^*$, $a^*$ and $b^*$ value) and sensory properties of the strip loins were measured. DSL2 contained low moisture and high protein contents compared with SL2, and low fat, high protein, and high ash contents compared with SL1 (p<0.05). The pH and cooking loss were higher and lower, respectively, in DSL2 compared to SL2 (p<0.05). SL1 had a higher pH than DSL2 (p<0.05). However, the cooking loss was not different between SL1 and DSL2. The TBARS value was the highest in DSL2 and the lowest in SL2 (p<0.05). DSL2 had higher $L^*$ and $b^*$ value compared with SL2 (p<0.05). There were no significant differences of $L^*$, $a^*$ and $b^*$ values between DSL2 and SL1. Sensory properties such as the color, flavor, taste, texture, and acceptability of DSL2 were higher than those of SL2 (p<0.05). There was no significant different in all sensory properties between DSL2 and SL1. According to the results, dry aging can improve the nutritional and sensorial quality of strip loin with quality grade 2 to quality comparable to quality grade $1^+$.

인삼의 지용성 추출물 투여가 면역기능에 미치는 영향 (Effects of Lipid Soluble Ginseng Extract on Immune Response)

  • 인삼의 지용성 성분을 2개월 및 6개월 동안 암환자에게 복용시킨 결과, 인삼의 지용성 성분은 CD4/CD8 비율과 자연살해세포의 수를 정상적으로 유지시킴으로써 암환자의 면역기능 유지에 효과가 있음을 보여주었다. 인삼의 지용성 성분을 2개월간 투여한 실험군의 87.5%에서, 6개월간 투여한 실험군의50%에서 암환자의 종양수치가 낮아지거나 정상범위에서 안정하게 유지되는 긍정적인 효과가 나타났다. 인삼의 지용성 성분을 6개월간 투여한 실험군에서 간 기능을 나타내는 GOT,GPT 및 ALP 수치와 신장 기능을 나타내는 BUN과 creatinine수치도 역시 정상 범위로 유지되어 인삼의 지용성 성분의 장기 복용이 간과 신장 기능에 긍정적인 효과를 가짐을 확인하였다. 따라서 인삼의 지용성 성분이 암환자들의 면역성 강화,간·신장 기능을 유지 및 개선시켜 건강에 도움을 주는 것으로 평가됨으로써 인삼의 지용성 성분을 암환자의 식이 및 항암보조제로서 적용할 수 있는 가능성을 제시하였다. 이러한결과는 비록 통계학적인 유의성은 없지만 본격적인 임상실험의 수행을 위한 기초 자료로서 충분한 가치를 가지므로, 이를바탕으로 대단위 개체를 대상으로 하는 본격적인 추가 임상실험 연구를 수행하여 인삼의 지용성 성분이 암환자의 항암및 면역기능 강화에 효과가 있음을 임상적으로 증명할 수 있을 것으로 기대한다.

Meat Quality of Crossbred Porkers without the Gene RYR1T Depending on Slaughter Weight

  • The first aim of the study was to compare selected meat quality parameters in porkers without the gene $RYR1^T$ (ryanodine receptor gene). These were porkers slaughtered at 100 to 115 kg and 116 to 130 kg live weight. The second aim of the study was to determine the occurrence frequency of standard-quality meat (red, firm, nonexudative [RFN]) and the occurence frequency of defective meat (pale, soft, exudative [PSE] and acid, soft, exudative [ASE]). The analysis was conducted on the longissimus lumborum muscle in 114 crossbred porkers. The porkers were a cross of Camborough 22 sows and boars from lines 337PIC (Pig Improvement Company), Norsvin Landrace and Pietrain. All of the animals were provided with identical environmental and nutritional conditions. The average weight of the slaughtered animals in the light and heavy groups was 110 kg and 122 kg, respectively. Both groups had the same average post-slaughter meatiness (56.5%). A statistical analysis of selected meat-quality parameters did not show any significant differences between the weight groups. On the other hand, the classification based on carcass quality showed an occurence frequency of defective meat in heavier crossbred porkers (116 to 130 kg) that was three times higher than in those cross bred animals which weighed 100 to 115 kg when slaughtered. In porkers without the gene $RYR1^T$, the defective meat types PSE and ASE occurred with a frequency of 17.54%.

국민건강증진을 위한 영양 부문의 2000년 잠정목표와 전략 (Provisional National Nutrition Targets and Strategies for Health Promotion of Koreans)

  • This study attempts to propose a priority of national nutrition targets and strategies for health promotion by the year 2000 in Korea, as a part of the task set for national health promotion objectives and strategies. Among all of the important health issues raised, ten were chosen, nutrition was one priority area. In the first part, the current status of the nutrition-related health problems and risk factors are reviewed, in conjunction with the newly arisen health phenomena, such as changes in prevalence of lifestyle disease and causes of death, changes of food consumption patterns in our country. In the second section this study suggests six feasible national nutrition targets, eight implementing strategies and current major tasks on the basis of the assessment of present status and in consideration of the other health promotion goals and strategies, with reference to that of other developed countries. The main targets and strategies are suggested as follows ; Firstly, the national nutrition monitoring and surveillance system should be established for identifying the nutritional problems for our people, and current National Nutrition Survey is a strong need for improvement to a more comprehensive and reliable one. Secondly, effective administrative mechanism should be operation at national level for the development of nutrition policy. Ministry of Health and Welfare (MOHW) as well as local health department must be remarkably renewed and strengthened the nutrition section. And it is recommended that MOHW organize and operate “The Council of Nutrition”, in which all government authorities related with foodstuffs and nutrition would incorporated. The Council of Nutrition would act as an adjustor as well as a coordinator in nutrition related policy-making. Thirdly, healthy eating pattern will be supported by activities of introducing a nutrition labeling for providing consumers with the necessary information and skills for food selection. Fourthly, nutrition education, and nutrition intervention programs will be carried out in various settings such as health centers, schools, and clinical fields and workplace. Fifthly, the current dietary guidelines shall be continuously improved in detail, and publicly circulated to particular levels of people by age group and by health condition. And finally, researches and epidemiological studies particularly in regard to diet for development of chronic diseases are needed for more investigation and up-to-date national health and nutrition data should be collected with the support and cooperation from the various medical professional teams . Production of Bioactive Yoghurt containing Cichorium intybus L. (Chicory) Extract - Preliminary Study

  • Cichorium intybus L. (chicory) roots and leaves are widely used in herbal preparations, which have beneficial effects on the stimulation of digestion and metabolism of food ingredients, gastric juice excretion, diuretic action, and bile excretion. Notably, chicory root is well known as a source of polyphenols, compounds with recognized value in health improvement. In this study, we examined the physicochemical characteristics (TA, pH, and sensory evaluation) of bioactive yoghurt containing different concentrations of chicory. With increasing incubation time (5 h), the TA of the yoghurt increased whereas the pH decreased, regardless of the amount of chicory. As the amount of chicory increased, the scores for color, flavor, taste, and overall acceptability generally decreased. Among the tested groups, yoghurt with the addition of 1% chicory attained the highest scores. Further studies on the production of bioactive yogurt with optimum chicory concentration are needed.

Child health promotion program in South Korea in collaboration with US National Aeronautics and Space Administration: Improvement in dietary and nutrition knowledge of young children

  • BACKGROUND/OBJECTIVES: Childhood obesity has become a global epidemic. Development of effective and sustainable programs to promote healthy behaviors from a young age is important. This study developed and tested an intervention program designed to promote healthy eating and physical activity among young children in South Korea by adaptation of the US National Aeronautics and Space Administration (NASA) Mission X (MX) Program. SUBJECTS/METHODS: The intervention program consisted of 4 weeks of fitness and 2 weeks of nutrition education. A sample of 104 subjects completed pre- and post- surveys on the Children's Nutrition Acknowledgement Test (NAT). Parents were asked for their children's characteristics and two 24-hour dietary records, the Nutrition Quotient (NQ) at baseline and a 6-week follow-up. Child weight status was assessed using Korean body mass index (BMI) percentiles. RESULTS: At baseline, 16.4% (boy: 15.4%; girl: 19.2%) of subjects were overweight or obese (based on $BMI{\geq}85%tile$). Fat consumption significantly decreased in normal BMI children ($48.6{\pm}16.8g$ at baseline to $41.9{\pm}18.1g$ after intervention, P < 0.05); total NQ score significantly increased from 66.4 to 67.9 (P < 0.05); total NAT score significantly improved in normal BMI children (74.3 at baseline to 81.9 after the program), children being underweight (from 71.0 to 77.0), and overweight children (77.1 at baseline vs. 88.2 after intervention, P < 0.001). CONCLUSIONS: The 6-week South Korean NASA MX project is feasible and shows favorable changes in eating behaviors and nutritional knowledge among young children.

게르마늄강화효모의 게르마늄결합 단백질의 분리 및 확인에 관한 연구 (Study on Identification and Purification of Germanium-fortified Yeast)

  • 본 연구는 게르마늄 강화 효모의 제조 공정을 위한 최적의 조건을 확인하고 제조된 게르마늄 강화 호모 내의 게르마늄 결합 상태 확인을 목적으로 수행하였다. 그 결과 영양소별 최적조건은 글루코스 3.0%, 효모추출물 0.3%, 펩톤 0.5%이었으며, 이 때 생성된 균체량은 67.4 mg/ml이었다. 또한 균체와 게르마늄 용액 혼합 비율은 1 : 0.5(50%), pH는 6.5 및 온도는 $35^{\circ}C$로 배양하는 조건이 높은 함량의 게르마늄을 효모 균체 내로 흡수시켜 게르마늄 강화 효모를 생산하는 것을 가능하게 하였다. 배양 과정을 통해 생산된 게르마늄 강화 효모는 배양 과정동안의 구조적 변화에 의해 효모 내에 흡수된 무기 형태인 $GeO_2$ 게르마늄과는 다른 구조를 나타내었다. 게르마늄 강화 효모는 효모 배양 과정을 통해 인체에 안전한 형태인 천연 유기 게르마늄을 형성하였다. 이는 각종 암, 성인병의 예방과 치료, 인체 면역력의 증진 등 건강 증진을 위한 새로운 기능성 원료로의 활용이 기대되며, 이에 대한 안전성 등의 지속적인 연구가 필요할 것으로 사료된다.

Apparent and standardized ileal nutrient digestibility of broiler diets containing varying levels of raw full-fat soybean and microbial protease

  • Background: Although soybean meal (SBM) is excellent source of protein in diets for poultry, it is sometimes inaccessible, costly and fluctuates in supply. The SBM can partially be replaced by full-fat SBM, but the meals prepared from raw full-fat soybean contain antinutritional factors. To avoid the risk of antinutritional factors, heat treatment is always advisable, but either excessive or under heating the soybean could negatively affect the quality. However, the potential for further improvement of SBM by supplementing with microbial enzymes has been suggested by many researchers. The objective of this study was to evaluate the performance and ileal nutrient digestibility of birds fed on diets containing raw soybeans and supplemented with microbial protease. Methods: A $3{\times}2$ factorial, involving 3 levels of raw full-fat soybean (RFFS; 0, 45 or 75 g/kg of diet) and 2 levels of protease (0 or 15,000 PROT/kg) was used. The birds were raised in a climate-controlled room. A nitrogen-free diet was also offered to a reference group from day 19 to 24 to determine protein and amino acid flow at the terminal ileum and calculate the standardized ileal digestibility of nutrients. On days 10, 24 and 35, body weight and feed leftover were recorded to calculate the body weight gain (BWG), feed intake (FI) and feed conversion ratio (FCR). On day 24, samples of ileal digesta were collected at least from two birds per replicate. Results: When RFFS was increased from 0 to 75 g/kg of diet, the content of trypsin inhibitors was increased from 1747 to 10,193 trypsin inhibitors unit (TIU)/g of diets, and feed consumption of birds was also reduced (P < 0.05). Increasing RFFS level reduced the BWG from hatch 0 to 10 d (P < 0.01) and hatch to 24 d (P < 0.05). The BWG of birds from hatch to 35 was not significantly (P = 0.07) affected. Feed intake was also reduced (P < 0.05) during 0 to 35 d. However, protease supplementation improved (P < 0.05) the BWG and FCR during 0 to 24 d. Rising levels of RFFS increased the weight of pancreas (P < 0.001) and small intestine (P < 0.001) at day 24. Except for methionine, apparent and the corresponding standardized ileal digestibility of CP and AA were reduced (P < 0.01) by increasing levels of RFFS in diets. Conclusion: This study showed that some commercial SBM could be replaced by RFFS in broiler diets, without markedly compromising productivity. The AID and SID of CP and lysine were slightly improved by dietary supplementation of microbial protease.
