A Comparative Study on Food Behavior with Self-Evaluation of Dietary Life for Korean Adults (한국성인의 식품소비행동과 식생활 자기평가에 관한 비교연구)

  • The purpose of this study was to explore socio-economic factors as determinants of food behavior and self-evaluation on meeting dietary guidelines. The data were derived from the KNHANES collected in 2007. A multidimensional framework of the determinants of food behavior was used, including age, gender, region, occupation, education, income and nutritional knowledge. The determinants of food behavior and self-evaluation were estimated by ordered logistic regression models. Food behavior was measured by dietary diversity scores including six food groups, which were cereals, vegetables, meats, fruits, milk, and oils. Self-evaluation on meeting dietary guidelines was based on responses from questionnaires for implementing Korean dietary guidelines. In general, the respondents who fulfilled all criteria were few. There were some differences between dietary diversity scores and self-evaluation on meeting dietary guidelines. Age, gender, and educational level showed effect on food behavior and self-evaluation. For dietary diversity scores, the individuals who were younger male, graduated from college were more likely to consume more various foods. The individuals who were older female, graduated from high school were more likely to meet dietary guidelines. Occupation was associated only with self-evaluation. Age and gender were associated with food behavior as well as self-evaluation. Income and marital status were associated only with dietary diversity scores. Reading food label and occupation were associated only with self-evaluation. The food behavior of married individuals was less in line with the dietary diversity scores than singles. In conclusion the differences between objective measure and subjective measure on individuals' diet showed more efforts like segmented nutritional education would be needed to increase the quality of dietary life.

A Survey on the Perception of Food Sanitation Officers Toward the Genetically Modified Foods (유전자재조합식품에 대한 관련 식품위생공무원의 인지도 조사)

  • A survey was conducted to investigate the perception of food sanitation officers toward the Genetically Modified Foods. They were mainly from Regional Agencies of KFDA, City/Province office, and National quarantine station. Some of them were professors of university and researchers of research institute. Most of respondents had experiences of hearing or reading GM foods (over $95\%$) and over $90\%$ of respondents much needed the label of GM foods. Although some of officers of city/province office and national quarantine station showed less knowledge than other respondent groups, most of respondents had basic knowledge about biology. The frequency of respondents worked over 20 years and worked in the general administration was higher than that of other groups in the question of unsafe of GM foods. The answer frequency of careless treatment of foods was highest in the question of risk factor, and the frequency of GM foods was lowest ($4.4\%$). It was concluded that food sanitation officers had positive opinion about GM foods, but there were some differences in the knowledge among agencies. Therefore, it is necessary more educations and informations are needed for food sanitation officers.

The Evaluation on the Meal Pattern and Nutritional Balance for University Foodservices in Seoul - Comparison between Self-operated and Contracted management- (서울지역 대학교 구내식당의 점심식단 분석 -직영급식 및 위탁급식 식당의 식단 비교-)

  • The purpose of this study was to evaluate the meal pattern and the nutritional balance in university foodservices of Seoul. The survey was conducted using a questionnaire with 317 students at five different cafeterias that served 23 meals. We weighed all the meals offered by the university foodservices, separated the foods, and calculated their nutritional content using a computer program $\ulcorner$DS24$\lrcorner$. We also checked the dishes and those amount students consumed from the menu. The results of this study is summarized as follows. : 1) The most prevalent menu patterns included rice, soup, two side dishes, and kimchi. 2) Most nutrient contents per meal in a given menu was lower than one third of the recommended dietary allowance(RDA). 3) The mean energy content for the amount of rice that was served was 399㎉, for the side dish, it was 107㎉, and for the kimchi, it was 9.9㎉. 4) The number of total dishes and side dishes was five and two, respectively. The dietary variety score was 16.7, and the dietary diversity score was 3. 5) The mean energy intake by students at self-operated managements were 545㎉, and at one contracted management, the energy intake were 494㎉. Both of them did not serve enough to meet one third of the RDA. Nutrient adequacy ration(NAR) was 0.4∼0.9, and Index of nutritional quality(INQ) was above 0.9 for most nutrients with the exception of calcium and vitamin B$_2$.

Nutritional Evaluation of Muscle Protein of Flounder, Limanda herzensteini, Dried by Different Methods (참가자미 육단백질(肉蛋白質)의 건조방법(乾燥方法)에 따른 영양학적(營養學的) 품질변화(品質變化))

  • Muscle fillets of flounder, Limanda herzensteini, were sliced into small pieces and dehydrated by the methods of sun drying, hot air drying and vacuum freeze drying, and evaluated for the protein quality by the method of shortened pepsin pancreatin digest residue (SPPDR) index which is the modified method of shortened pepsin digest residue index. In the analysis of the muscle protein hydrolysates, glutamic acid, aspartic acid and lysine comprised about 39% of the total amino acids of the protein. The content of pure protein in flounder muscle was 18.8%. The result of nutritional evaluation of the dried muscle protein by the computation of the SPPDR index showed that the freeze dried flounder muscle protein was superior in the nutritional efficiency to the others, sun dried. The freeze dried flounder muscle protein marked 89 of the SPPDR index number which is quite similar to the muscle protein of terrestrial animal in nutritional quality.

  • Tomato has a limited shelf life and is highly perishable due to its high moisture content. As fruit leather, is a traditional food of Nepal, it can be beneficial to move towards value addition and diversification of the traditional product. The main aim was to analyze the nutritional values and phytochemicals of the tomato pulp and prepared leather, and sensory evaluation of prepared tomato leather. Five samples A, B, C, D and E were prepared with 80:20, 72.5:27.5, 95:5, 87.5:12.5 and 65:35 fruit pulp: sugar ratio respectively. Analysis of raw tomato pulp and all the five samples was performed. Sensory quality of the product sample A was found superior to that of other samples but chemical and phytochemical properties of product sample C was found superior than that of other prepared samples. Therefore, we had two best products, in terms of sensory properties and in terms of nutritional properties. The best product on the basis of nutrients (sample C) had acidity (%), TSS (°Bx), pH, total ash content (%), crude protein (%), crude fat (%), crude fiber (%), carbohydrate (%), vitamin C (mg/100 g), total energy (Kcal/100 g), TPC (mg GAE/g of dry extract), TFC (mg QE/g of dry extract), DPPH scavenging activity (% of inhibition) and lycopene content (mg/100 g) was found to be 3.70.1, 20 ± 0.02, 3 ± 0.1, 2.30 ± 0.05, 2.69 ± 0.04, 0.87 ± 0.02, 5.46 ± 0.01, 69.68 ± 0.02, 25.17 ± 1.25, 297.31 ± 0.01, 85.35 ± 0.02, 65.39 ± 0.02, 59.23 ± 0.03 and 98.57 ± 0.02 respectively. A tasty and nutritious product of tomato, leather can be prepared which can be more appealing to the consumer.

Evaluation of Nutrition Status on the Basis of Orphan Home Children's Anthropometry (사회복지시설 어린이들의 체위를 이용한 영양상태판정)

  • This study aims to evaluate the degree of malnutrition of children by three nutritional indicators-Weight for Age, Hight for Age, Weight for Height. The results are as follows; The average height and weight of children are much lower than Korea average height and weight. In terms of Weigh for Age, 20-40% of the samples belongs to below-2 standard deviation from the mean of reference group. 90% of the samples falls into the region below the mean. The standard deviation score indicates negative sign for eighty to ninety percent of the samples. The malnutrition of the samples is also confirmed in terms of Height for Age. In terms of Weight for Height, the mean of the samples is not significantly different from that of the reference group. Tests of the nutritional status under basis of three nutritional indicators show that approximately 50% of the samples had suffered from malnutrition and 17% of the samples have suffered from malnutrition.

An Evaluation of the Nutritional Quality of Packaged Meal(Dosirak) Feeding of Adolescent Males in Kangnung (강릉지역 고등학교 도시락 급식에 있어서의 영양적 품질 평가)

  • This study was carried out to evaluate nutritional quality of the dosirak severed by 3 Dosirak manufacturing establishment in Kangnung. The subjects of this study came from 3 different male high schools in Kangnung. The portion amounts of Dosirak were weighed and the food intake was measured by substracting the leftover from the averaged portion amount. The leftover was measured by a modified aggregate selection plate waste measurement technique. The nutrient intakes were analyzed by a computer aided nutritional analysis program for professionals(CAN pro). The menu of the dosirak was too simple. The total amount of Dosirak was 714g and the percent of plate waste was 714g and the percent of plate waste was 7.2%. The male high school students were taking adequate energy, but the nutrients which did not meet 75% of the 1/3RDA(Recommended Dietary Allowances) were Ca, Fe, and vitamin B$_2$.

  • A diet habit, which is developed in childhood, lasts for a life time. In this sense, nutrition education and early exposure to healthy menus in childhood is important. Children these days have easy access to the internet. Thus, a web-based nutrition education program for children is an effective tool for nutrition education of children. This site provides the material of the nutrition education for children with characters which are personified nutrients. The 151 menus are stored in the site together with video script of the cooking process. The menus are classified by the criteria based on age, menu type and the ethnic origin of the menu. The site provides a search function. There are three kinds of search conditions which are key words, menu type and "between" expression of nutrients such as calorie and other nutrients. The site is developed with the operating system Windows 2003 Server, the web server ZEUS 5, development language JSP, and database management system Oracle 10 g.

Cheese Manufacturing and Bioactive Substance Separation: Separation and Preliminary Purification of cAMP from Whey

  • Cheese consumption has been gradually increased in China. However, both the manufacturing process of cheese and the utilization of its main by-product were not well developed. Based on the sensory evaluation, Box-Behnken Design (BBD) was performed in the present study to optimize the cheese processing, which was proved more suitable for Chinese. The optimal parameters were: rennet 0.052 g/L, start culture 0.025 g/L and $CaCl_2$ 0.1 g/L. The composition analysis of fresh bovine milk and whey showed that whey contained most of the soluble nutrients of milk, which indicated that whey was a potential resource of cyclic adenosine-3', 5'-monophosphate (cAMP). Thus, the cAMP was isolated from whey, the results of high-performance liquid chromatography (HPLC) analysis showed that the macroporous adsorption resins (MAR) D290 could increase the concentration of cAMP from $0.058{\mu}mol/mL$ to $0.095{\mu}mol/mL$. We firstly purified the cAMP from the whey, which could become a new source of cAMP.
