This study was carried out to investigate the future plan for infant feeding practice and its associated factors among university students so as to develop focus for nutritional education program for the promotion of breastfeeding. The subjects were 301 students (males 130, females 171). The results obtained were as follows. In this survey, the subjects had a basic knowledge of breastfeeding and lactation, especially of the ingredient of breastmilk. However they were not well informed about the physiology and method of breastfeeding and benefits of breastfeeding for mothers. The average scores far attitude toward breastfeeding and lactation were 3.09 points on a 4 point scale, which indicated a slightly positive attitudes toward breastfeeding. However the participants had a negative attitude toward its emotional and practical aspects. Their future plan for infant feeding was breastfeeding 40.3%, formula feeding 3.0% and mixed feeding 56.7%. A concern was that the students showed a high rate with regard to a mixed feeding plan, and Dey decided this based on an incorrect knowledge of breastfeeding. The group who planned to breastfeed in the future (BF) showed higher scores with respect to knowledge and attitudes than those who planned to formula feed or mixed feed (FF + MF). Therefore, to encourage mothers to breastfeed and support breastfeeding, breastfeeding nutritional education is urgently needed among university students. In addition, nutrition education programs should promote the benefits of breastfeeding for mothers and the physiology and practical method of breastfeeding. Nutrition knowledge of mothers who had middle-school studients was investigated using questionnaire about nutrition knowledge and food habit. The results were summerized as follows ; The mean score of nutrition knowledge was 25.3 (out of possible-80-80points), which score was slightly lower than those of other studies. the percentage of perceived knowledge and accuracy of the knowledge were 77.7% and 79.6%, respectively. these scores were influenced by general characteristics such as age, education, occupation, income, food expense. With decreasing age and increasing education level, family income, nutritional knowledge score, the percentage of perceived knowledge and accuracy were significantly getting higher. The levels of both perceived knowledge and accuracy on the necessi쇼 of vitamins and minerals were above 90%. However, the accuracy on protein quality and dietary fiber was below 40%. The better food habit a subject had, the higher was the nutrition knowledge score.
During the first half of twentieth century, even though the importance of non-calorie essential micronutrients of 13 vitamins and 17 minerals has been known to alleviate nutritional disorder; the primary objective of agriculture and plant breeding programs has been to increase the productivity and seed yields, and macronutrients of proteins, fats, and carbohydrates made up the bulk of foodstuff which were used primarily as an energy source. In the last decade it has been found that non-essential micronutrients encompass a vast group of phytochemicals including antioxidants that are not strictly required in the diet but when present at sufficient levels work as health-promoting chemicals. Nowadays agricultural crops are grown for health rather than for food or fiber, and modifying the nutritional compositions of plant foods has become an urgent health issue. To ensure an adequate intake of essential vitamins and minerals, and to increase the consumption of health-promoting phytochemicals, the researches on plant secondary metabolism have been made. The attempt to improve nutritional quality of crops has been blocked by a lack of basic knowledge of plant metabolism. The advent of genomics era enabled new approaches to make crossing regardless of species, family, or phylum barriers, and the accumulation in our basic knowledge on plant secondary metabolism during the coming decade would be tremendous. As the major staple crops contain insufficient amount of many micronutrients, fortification strategy will be a necessary practice. Elevated intake of specific vitamins, C, E, and $\beta$-carotene, mineral selenium, antioxidants, and phytochemicals significantly reduces the risk of chronic disease such as cancer, cardiovascular disorder, diabetis, and other degenerative disease associated with aging. As the attempt to improve the nutritional quality of crops requires the basic knowledges on plant metabolism, plant biochemistry, human physiology, and food chemistry, strong interdisplinary collaboration among plant biotechnologists, human nutritionists, and food scientists will be needed. Inhibition of cancer, cardiovascular disease, and other degenerative disorder may be the biggest goal facing nutritional plant breeders. But the assumption that simply increasing dietary level of any compound will necessarily improve human health is a dangerous idea because many plant secondary products and dietary contaminants have paradoxical (hermetic) effects. Before biotechnical manipulation is undertaken to elevate or reduce any individual constituent of crops, the contribution of the micronutrient to human health must first be investigated.
For the purpose of developing ‘Web-Based Nutritional Education Program’, this study did instructional analysis, analysis of entry behaviors and learner characteristics to select instructional contents for nutritional education program for junior/senior high school students. Survey questionnaires were distributed from October 21, 2002 to October 26, 2002 to a total of 564 junior/senior high school students in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. As a result of the curriculum analysis of ‘Technology-Home economics’, subjects related with ‘food and nutrition’ in the 7$^{th}$ educational course study result, lessons including the contents of food and nutrition were ‘nutrition and meal of adolescent’ in 7th grade, ‘family meal management’ in 9th grade and ‘practice of home life’ in 10th grade. According to the curriculum analysis, ‘nutrition’ and ‘food’ were chosen for the superior subjects of nutrition education program and four subordinate subjects per superior one were developed. Then, entry behaviors and learner characteristics were analyzed: life characteristics, internet usage, anthropometrics data and nutritional knowledge. Students were interested in using computer and preferred passive activity to dynamic activity. According. to the analysis of internet usage, WBI for students should composed active parts such as game, moving image, immediate reply and follow-up bye-mail, bulletin board and com- munity activity. Students’ BMI were in normal range but they were lacked nutritional knowledge. We wrote performance objectives that were specific behavior skills to be learned, the conditions under which they must be performed and the criteria for successful performance. The next step for developing the WBI nutrition education program would be based on the results mentioned above.
This study was performed to investigate the effect of dietary intakes and nutritional status for fatty liver male patients with fatty livers. General characteristics, nutritional knowledge, and dietary intakes were obtained from fatty liver male patients aged 20-60yr living in Seoul and Kyunggi province by individual interview and blood samples. The Results were as follows : the mean age of the subjects was 39yrs. Old and over half the subjects were overweight. Although nutritional knowledge, recognition, and accuracy scores were good, these did not affect the subject's health. The average alcohol intake of subjects was 79.8g/day and the drinking duration was 5-40yrs(average : 17yrs). The subjects drank alcohol over 4tiles/week and preferred Soju. Most side dishes taken with alcohol drinking by the subjects were foods from animal sources. Half of the subjects also drank alcohol the next day for breakfast as a hangover-chaser. The reasons for drinking were due to social relationships and by habit. Vitamin D and folate were lower than the RDA for Koreans, and other nutrient amounts were higher than the RDA. The amounts of aspartate amino-transferase(AST), Alanine amino-transferase(ALT), ${\gamma}$-glutamyl transpeptidase(${\gamma}$-GTP), Triglyceride(TG) for the subjects were higher. In conclusion, fatty liver patients drank excessively and frequently. It seems that heavy alcohol drinking is more prone to overweight or obese people and contributes to fatty livers. Therefore, the subjects need to be taken effectively educated about alcohol-induced liver damage and the importance of a balanced diet for on healthy liver.
BACKGROUND/OBJECTIVES: The prevalence of malnutrition among hospitalized children ranges between 12% and 24%. Although the consequences of hospital malnutrition are enormous, it is often unrecognized and untreated. The aim of this study was to identify the current status of in-hospital nutrition support for children in South Korea by carrying out a nationwide hospital-based survey. SUBJECTS/METHODS: Out of 345 general and tertiary hospitals in South Korea, a total of 53 institutes with pediatric gastroenterologists and more than 10 pediatric inpatients were selected. A questionnaire was developed by the nutrition committee of the Korean Society of Pediatric Gastroenterology, Hepatology and Nutrition. The questionnaires were sent to pediatric gastroenterologists in each hospital. Survey was performed by e-mails. RESULTS: Forty hospitals (75.5%) responded to the survey; 23 of them were tertiary hospitals, and 17 of them were general hospitals. Only 21 hospitals (52.5%) had all the required nutritional support personnel (including pediatrician, nutritionist, pharmacist, and nurse) assigned to pediatric patients. Routine nutritional screening was performed in 22 (55.0%) hospitals on admission, which was lower than that in adult patients (65.8%). Nutritional screening tools varied among hospitals; 33 of 40 (82.5%) hospitals used their own screening tools. The most frequently used nutritional assessment parameters were weight, height, hemoglobin, and serum albumin levels. In our nationwide hospital-based survey, the most frequently reported main barriers of nutritional support in hospitals were lack of manpower and excessive workload, followed by insufficient knowledge and experience. CONCLUSIONS: Although this nationwide hospital-based survey targeted general and tertiary hospitals with pediatric gastroenterologists, manpower and medical resources for nutritional support were still insufficient for hospitalized children, and nutritional screening was not routinely performed in many hospitals. More attention to hospital malnutrition and additional national policies for nutritional support in hospitals are required to ensure appropriate nutritional management of hospitalized pediatric patients.
Objectives: The aim of this study was to examine self-management status, nutritional knowledge, barrier factors in dietary management and needs of nutritional management program for women with Gestational Diabetes Mellitus (GDM). Methods: A total of 100 women with GDM were recruited from secondary and tertiary hospitals in Seoul. The questionnaire composed of general characteristics, status of self-management, dietary habits, nutrition knowledge, barrier factors in dietary management, needs for nutrition information contents and nutritional management programs. Data were collected by a self-administered questionnaire. All data were statistically analyzed using student's t-test and chi-square test using SAS 9.3. Results: About 35% of the subjects reported that they practiced medical nutrition and exercise therapy for GDM control. The main sources of nutrition information were 'internet (50.0%)' and 'expert advice (45.0%)'. More than 70% of the subjects experienced nutrition education. The mean score of nutrition knowledge was 7.5 point out of 10, and only about half of the subjects were reported to be correctly aware of some questions such as 'the cause of ketosis', 'the goal of nutrition management for GDM', 'the importance of sugar restriction on breakfast'. The major obstructive factors in dietary management were 'eating more than planned when dining out', 'finding the appropriate menu when dining out'. The preferred nutrition information contents in developing management program were 'nutritional information of food', 'recommended food by major nutrients', 'the relationship between blood glucose and food', 'tips on menu selection at eating out'. The subjects reported that they need management program such as 'example of menu by calorie prescription', 'recommended weight gain guide', 'meal recording and dietary assessment', 'expert recommendation', 'sharing know-how'. Conclusions: Based on the results of this study, it is necessary to develop a program that provide personalized information by identifying the individual characteristics of the subjects and expert feedback function through various information and nutrition information contents that can be used in real life.
The purposes of the study were to analyze nutritional status, psychosocial stimulation, and factors affecting the cognitive development of preschool-age children. This study was conducted in the Village of Babakan, Sub-District of Dramaga, Bogor Regency, West Java. This cross-sectionally designed study was conducted with mothers who had preschool children aged 3-5 years as respondents. Fifty-eight children were included. The distribution of mother's educational level was quite diverse, and the largest percentage (44.8%) had senior high school education. Approximately 78% of the family income per capita was classified into the non-poor category and 22.4% into the poor category. The average mother's nutritional knowledge score was $76.7{\pm}2.5$ (moderate category). Most of the preschool children (84.4%) had psychosocial stimulation scores in the moderate category (30-45). The nutritional status of children showed that 15.5% were underweight, 5.2% were wasted, 3.4% were severely wasted, and 19% of the children were in the short and very short categories (stunted). The stepwise regression results showed that psychosocial stimulation (P < 0.001), participation in early childhood education (P = 0.002) and nutritional status based on the height index for age (P = 0.028) had a positive and significant effect on cognitive development of the preschool children (adjusted $R^2$, 0.434; P = 0.028).

This study was conducted to survey students' current eating behavior and nutritional knowledge to provide researchers with basic data that can help students with positive, practical, and healthy eating habits. For this purpose, a self-administered questionnaire was distributed to students of a vocational high school located in Gyeongsangnam-do. A total of 270 questionnaires were collected from a convenience sample and the data were analyzed using SPSS Version 25.0. The results are as follows. First, 57.40% of students lived with "parents," and 55.56% of students' household monthly income levels were "Low." Second, as for the eating behavior of the subjects, the students who ate 'two meals' a day showed the highest at 64.81%, 'one meal' occupied 17.41%, and those who ate one meal a day, 'School cafeteria' was the eating place most frequently mentioned (65.96%). Third, when students were classified based on their nutritional knowledge levels, "High" group comprised 37.78%, "Moderate" group 37.41%, and "Low" group 24.81% of the total students. Regarding the experience of nutrition education, 64.44% answered 'no experience of nutrition education' in the last 12 months, and among the 35.56% of students who had received nutrition education, 72.92% received the education from school teachers. Based on these results, to prevent problems with the eating habits that can occur to vocational high school students, organic cooperation between families, schools, and local communities is required. Furthermore, full support from the government is needed. In addition, more efforts are needed for practice-oriented dietary education so that nutritional knowledge can be converted into correct eating behavior.
This study was carried out to investigate 192 female college students in Seoul area in order to know their dietary behavior regarding weight control, awareness of body image and weight, methods of weight control, meal volume, eating rate, frequency of eating, health score and nutritional knowledge score. Obesity was determined using body mass indes(BMI=Wt/Ht$^2$). The finding revealed that the average BMI was 19.7$\pm$ 1.94 Subjects were divided into 3 groups according to body image : lean group, moderate group and obese group, respectively. The results of this study are summarized as follows : 1) 48.9% of subjects thought they were obese, however their BMI was 20.9 2) 56.1% of subjects anted to attend a weight control program and the sources of information concerning weight control were newspapers and magazines, TV and radio in that order. 3) There were no significant difference among groups in the meal volume, frequency of eating and health score. 4) There were significant differences among groups in the eating rate and nutritional knowledge score. These results suggest that an accurate self perception of their bodies, and nutritional education are important for female college students.
